Mark Martin, Ric Gifford and Mary Capra organized the event sponsored by Duffy’s, Hacienda Tamarindo, Weddings in Vieques and the Inn on the Blue Horizon along with the Vieques Tennis Club. Members of the club will continue to host sessions for interested players on Saturday mornings from 9 to 11. All Vieques kids, ages 10 to 16, are invited to take part; all they need is a desire to learn the game and a pair of sneakers. A los nueve novatos se les habló del espíritu dinámico de Susan Wilson y su lema para jugar cada partido como si fuera “por todo el dinero del mundo”. Los jóvenes estuvieron atentos, entusiastas y demostraron cierta aptitud. Como una grata coincidencia, todos los participantes recibieron una camiseta con un logo diseñado por Susan originalmente a ser utilizado por el Club de Tenis de Vieques, pero igualmente adecuado para el Campamento de Tenis de Vieques. Mark Martin, Ric Gifford y Mary Capra organizaron el evento, que fue auspiciado por Duffy’s, Hacienda Tamarino, Weddings in Vieques y el Inn on the Blue Horizon, junto con el Club de Tenis de Vieques. Puenta La Chiva - Paseo Tablado Laguna Kiani Puente de La Chiva - ya está abierto al público. Paseo Tablado de la Laguna Kiani - Los jóvenes del programa YCC, junto a voluntarios de TICATOVE y empleados de FWS participaron en la reparación de este tablado. Gracias a su esfuerzo y dedicación, el área ha sido abierta al público. Este tablado fue parcialmente destruido por la Tormenta Jeanne. El puente que está localizado en la laguna tiene un muelle para pescadores. La Chiva Bridge / Kiani Lagoon Boardwalk On November 17th a half-day tennis camp for viequense kids was held at the Inn on the Blue Horizon to honor the memory of Susan Wilson, who loved Vieques and tennis and was very interested in encouraging island youth to achieve great things. The nine novices were informed of Susan’s dynamic spirit and her motto to play as if every game were “for all the money in the world.” The kids were attentive, enthusiastic and showed some promise. As a nice coincidence, all of the participants received a tee shirt sporting a logo designed by 16 La Chiva Bridge - is open to the public. Kiani Lagoon Boardwalk - The YCC program enrollees, with TICATOVE volunteers and FWS staff participated in the repair of this boardwalk. Thanks to their effort and dedication, the area is open to the public. This boardwalk was partially destroyed by Storm Jeanne. The bridge at the lagoon has a fishing pier. ............................................................ Semana del Refugio Nacional / El Refugio Nacional de Vida Silvestre de Vieques celebró en grande la Semana Nacional de Refugios, con una Casa Abierta, donde participaron alrededor de 500 visitantes. Las escuelas y grupos que nos visitaron fueron: Escuela María M. Simons, 20 de Septiembre de 1988, Proyecto Nuestra Escuela, Programa Oasis, Hogar Infantil Miliví, estudiantes universitarios y miembros de la comunidad, entre otros. Además, como parte de esta celebración, el Refugio Nacional de Vieques, y el de Culebra visitaron la Escuela Ecológica de Culebra, donde se ofreció a los estudiantes de 4to, 5to y 6to grado un taller de las Arenas de Culebra. Además, nuestro Refugio participó en la actividad de Servidores Públicos que se llevó a cabo en la Escuela Juanita Rivera Albert y Montesori. Agradecemos a todas las personas que nos visitaron y estén en sintonía para más actividades. National Refuge Week The Vieques National Wildlife Refuge celebrated the National Wildlife Refuge Week with an Open House, where around 500 visitors participated. The schools and groups were: María M. Simons, 20 de Septiembre de 1988, Nuestra Escuela Project, Oasis Program, Miliví, college students and community members, among others. Also, as part of this celebration, the Vieques NWR and Culebra NWR visited the Ecological School in Culebra, where students from 4th, 5th and 6th grade participated in a Culebra’s Sand workshop. In addition, our Refuge participated in the Public Employees Activity at the Juanita Rivera and Montesori schools. Thanks to all our visitors and stay tunned for more activities. ............................................................ LIBERACION DE BEBE DE TORTUGA MARINA / El trabajo en equipo entre personal de agencias gubernamentales y no gubernamentales dirigidos a la conservación, nos permite la bendición de darles una segunda oportunidad de vida a tortugas marinas bebés (neonatos) que quedan rezagados en los nidos (ver video en la página de facebook: Vieques National Wildlife Refuge). BABY SEA TURTLE RELEASE Teamwork between govermental and non govermental agencies dedicated to conservation, give a second chance of life to baby sea turtles (hatchlings) that were left behing in nests (see video at the facebook page: Vieques National Wildlife Refuge). Vieques tiene varias organizaciones que trabajan afanosamente para beneficio de nuestra comunidad, tales como Alcanzando el Éxito, El Fideicomiso de Conservación e Historia de Vieques, la Sociedad Protectora de Animales de Vieques, entre otras. Ahora, con la creación del Club Rotario de Vieques, contamos con una organización internacional de servicio comunitario de gran alcance y soporte mundial. El nuevo club se une a los 33 ya existentes en Puerto Rico y a más de 33,000 a nivel mundial todos donando de su tiempo y talento para servir y fortalecer a sus comunidades y al mundo. El Club Rotario de Fajardo ha prestado ayuda en Vieques ayudando al club de Vieques a establecer sus credenciales con el Distrito 7000 (Puerto Rico). Los miembros fundadores en Vieques decidieron centrar sus esfuerzos en apoyar a las iniciativas comunitarias existentes, especialmente los que se dedican a ayudar a la juventud de Vieques en su bienestar y desarrollo. Uno de los primeros proyectos ha sido con la Liga Atlética Policiaca, una iniciativa sustentada por la Policía, en la cual 70 niños participan en un programa deportivo luego del horario de clases. En apoyo al Programa y al Agente Benjamín, los rotarios donaron botellas reusables, hielo y Gatorade. Cada uno de los atletas tiene su nombre escrito en una botella, que además de calmar su sed, les enseña la responsabilidad personal y el reciclaje, para reducir la acumulación de basura en la hermosa Isla Nena. En conjunto con los rotarios internacionales, el Club ha logrado conseguir, transportar y donar una nueva mesa de operaciones al hospital de Vieques. Gracias a este donativo, el modelo actual de 30 años de edad, fue reemplazado por un equipo moderno sin costo extra. Es aquí donde el alcance global de los rotarios internacionales entra en acción; proyectos similares se han llevado a cabo en San Juan y Haití, mediante la ayuda de capítulos de Puerto Rico. Originalmente fundado en Chicago en 1905, los Rotarios Internacionales han crecido hasta llegar a ser una organización mundial muy eficaz. La Fundación es auspiciada por Fideicomisos y rotarios de todo el mundo y administra un gran fondo que se utiliza para ayudar con proyectos a nivel mundial que persiguen los objetivos del Club. Now, with the establishment of Club Rotario de Vieques, we have an International community service organization with global reach and global support. The newly formed club joins 33 existing clubs in Puerto Rico and more than 33,000 worldwide - all volunteering time and talents to serve and strengthen their communities and the world. The Fajardo Rotary Club has provided assistance in Vieques helping the Vieques Club establish its credentials with District 7000 (Puerto Rico) and Rotary International. The founding members in Vieques quickly decided to focus efforts on support for existing community initiatives, especially those focused on helping the new generation - the youth of Vieques - in their health and development. One of the first projects has been with the Police Athletic league, a Police funded initiative for 70 children involved in an after-school sports program. Working with Agent Benjamin, Rotary members donated refillable drinking bottles (and supporting ice and Gatorade). Each of the athletes has their name written on a bottle and, other than quenching thirst, the project highlights personal responsibility and recycling, to reduce trash creation on the beautiful Isla Neña! Working with Rotary International, the Club has also managed to locate, transport, and donate a new operating table to the hospital here in Vieques. By deeding the table to the Municipality the existing 30 year old model was replaced by a modern functioning piece of equipment at no extra cost. This is where the global reach of the Rotary International organization helped; similar projects have been undertaken in San Juan and Haiti by local Puerto Rican chapters. It can also be challenging to fit the commitment of time into your schedule. And, to be honest, while it can seem romantic to help feed and clean the shelter animals, after a session or two surrounded by mountains of dog poop, it can become tedious. This is why our kennel staff are absolutely the most remarkable people, but that is a story for next time. So, what can you do that will help the shelter tremendously and enable you to pick your time to volunteer? You can be a short term foster parent and/or an animal transporter. Most of the shelter adoptions are to stateside locations, whether to individual homes or partner rescue groups. This means that the animals (mostly dogs) need a way to get there. The first step in the process is to move the dogs out of the shelter for about two weeks or so prior to their flight. This gives them time to become used to being away from the shelter and to socialize. The dogs can also be kept flea and tick free much easier if they are not surrounded by seventy dogs and a couple of horses. Perhaps the most important aspect of this job is observing the dog in your home. You may be able to pick up on a behavioral issue or health issue that was not apparent while the animal was in the shelter. The second step is to get them to San Juan International. This entails picking the dogs and kennels up at the shelter, loading them onto the ferry, loading them onto the publico, loading them into the cargo warehouse or airline check in, completing all the documents necessary. This is a job only for the calm, cool and collected. On just about every trip something goes a bit awry. The ferry is late or a dog chews his water cup and you need two. You must have the ability to think on your feet and solve any problem that comes up. If you don’t, you end up coming home with an animal that didn’t get its chance at a forever home. The bonus for the transporters is that on many occasions there is enough time for a quick stop at Costco before heading back to the ferry. The old adage of many hands makes light work is true here. Smokey inmediatamente fue un éxito entre los demás soldados heridos. El Dr. Mayo (de la famosa clinica Mayo) fue el comandante que permitió que Smokey hiciera rondas y que durmiera con el cabo Wynne en su cama de hopital. The most important characteristic of a therapy dog is her temperament. A good therapy dog must be friendly, patient, confident, gentle and well behaved and must enjoy human contact. A therapy dog is trained to provide affection and comfort and upon invitation may legally visit hospitals, nursing homes, schools, hospices and other institutions where their services are desired. The history of therapy dogs dates back to WW II where Corporal William Wynne came into possession of a young pup abandoned on the battlefield on the island of New Guinea. Smokey, this wise and grateful pup, began therapy service when Corporal Wynne was hospitalized for jungle fever. Smokey immediately became a hit with the other wounded soldiers. Dr. Charles Mayo (of the famed Mayo Clinic) was the commanding officer who allowed Smokey to go on rounds and also permitted her to sleep with Wynne in his hospital bed. Smokey’s work as a therapy dog continued for 12 years during and after WW11. The therapeutic effects that animals have on people is now fully recognized and documented. Therapy dogs can relieve stress, lower blood pressure and raise spirits. In recent years therapy dogs have been enlisted to help children overcome speech and emotional disorders. El Departamento de la Familia en Vieques, también ofreció una serie de quince diferentes talleres relacionados al liderato, con temas como responsabilidad, valores, autoestima, no violencia, “bullying”(lo abuso escolar) y comunicación. Luego de ser completados, treinta y cinco miembros de RFS viajaron al Centro de Convenciones de San Juan para recibir su certificado de mérito, donde también disfrutaron de un excelente almuerzo. Chefs and sponsors from far and near outdid each other in creating fantastic food and drinks, while the festivities and silent auction offered fun and memories for all. Proceeds were given to the scholarship fund of Reach for Success, which has enabled a total of 70 students to continue their education in schools throughout Puerto Rico. After seeing a video about Reach for Success on television, Walmart/Colgate Palmolive contacted RFS and invited 43 students to attend a workshop which was given at the W Hotel. Dentists from the Caguas talked to the students about their careers, and checked their teeth. Each student received a Walmart gift card, as well as breakfast and lunch, and RFS was awarded a $10,000 grant. También puede ser un reto tratar de ajustar el tiempo comprometido a su itinerario. Y, para ser honestos, si bien puede parecer romántico el ayudar a alimentar y limpiar a los animales del refugio, después de una o dos sesiones rodeado de montañas de caca de perro, puede llegar a ser tedioso. Por ello, nuestro personal de la Sociead es uno de los más notables, pero eso es una historia que dejaremos para la próxima vez. Así, ¿qué puedes hacer para ayudar al refugio y te permita escoger el tiempo que desees para ser voluntario? Puede ser a corto plazo padre/madre de crianza y/o un(a) transportador(a) de animales. La mayoría de las adopciones del refugio son a lugares en Estados Unidos, ya sea para hogares individuales o grupos de socios de rescate. Esto significa que los animales (en su mayoría perros) necesitan llegar al lugar. El primer paso en el proceso es sacar a los perros del refugio dos semanas antes de su viaje. Esto les da tiempo suficiente para acostumbrarse a estar lejos del refugio y poder socializar. Los perros también pueden mantenerse libre de pulgas y garrapatas mucho más fácil si no están rodeados por setenta perros y un par de caballos. Tal vez el aspecto más importante de este trabajo es poder observar al perro en su casa. De esta forma, podemos ser capaces de detectar un problema de comportamiento o de salud que no era evidente mientras el animal estaba en el refugio. El segundo paso es llevarlos al Aeropuerto Internacional de San Juan. Esto implica recoger los perros y perreras en el refugio, cargarlos en el ferry, cargarlos en el carro público, llevarlos al almacén de carga o verificarlo en el mostrador de la aerolínea, además de completar todos los documentos necesarios. Esto es un trabajo que requiere personas pacientes y calmadas. En casi todos los viajes pueden ocurrir algunos inconvenientes. Por ejemplo, el ferry se retrasa o el perro mordió su embase de agua y son necesarios dos embases. Se debe tener la habilidad de pensar rápidamente y resolver cualquier problema que se presente. Si la persona no tiene la habilidad, termina regresando a casa con un animal que no tuvo la oportunidad de tener un hogar permanente. El bono para los que transportan a los animales es que en muchas ocasiones tienen suficiente tiempo para ir a Costco antes de regresar en el ferry. El viejo dicho de que muchas manos hacen el trabajo ligero es muy cierto en este caso. Mientras más padres adoptivos y transportadores tenemos, más cantidad de animales podemos mover. Y más aún, ¿si tuviéramos que decirle que un alimento humilde y con frecuencia pasado por alto, descansando tranquilamente en la carnicería de la tienda de Morales, no sólo ha desempeñado un papel protagónico en la suerte de las grandes naciones, sino que también en uno de los capítulos más oscuros de la humanidad? ¿Hemos captado su atención? Nos lo imaginábamos. Damas y caballeros, le presentamos al bacalao. ¿Bacalao? ¿En serio? ¿Estamos hablando de ese pedazo feo y amarillento de pescado salado, ese que es duro como un ladrillo? De echo, sí. Quédese con nosotros y le diremos la verdad de todo ésto. El bacalao, para los que no lo saben, es simplemente un pescado que ha sido preservado mediante el proceso de salarlo y secarlo. Este pescado era tradicionalmente el pescado de preferencia, pero cualquier pescado blanco sin grasa sirve. De echo, debido a que este pescado fue sobre pescado durante el siglo 20, no hay muchos de ellos actualmente y el bacalao que compramos en la tienda es ahora más accesible (por lo tanto más barato) que el abadejo. Verifique si está cocido a través del punto más grueso, separándolo para ver si la carne expuesta está cocida y no fibrosa. Si está listo, remueva y enfríe para luego usarlo. Do we have your attention? Thought so! Ladies and Gentlemen, may we present...bacalao! Bacalao, for the uninitiated, is simply fish that has been preserved by salting and drying. Cod was traditionally the fish of choice, but any non-oily white fish is suitable. In fact, because cod was so heavily overfished in the 20th century there isn’t a lot of it left and the bacalao on our store shelves now is more likely to be a plentiful (therefore cheaper) fish called pollock. Vikings were apparently the first Europeans, as far back as 1200 years ago, to have utilized the amazing nutritional properties of dried fish which they cured by exposing it to sun and wind. The fearsome mariners relied on its remarkable ability to remain preserved for very long periods of time, and on its super food status; in its dehydrated state it packs an incredible near-80% protein content, and that’s exactly what those brawny oarsmen needed while roaming the high seas for months at a time. 600 years later Spanish and Portuguese sailors were heavily fishing the cod banks off the New England and Atlantic Canada coasts. They carried no cargo as they left their home ports, so their ships required something to act as ballast. They also needed a way to preserve their catch for the long journey home. A ship filled with salt was the ingenious solution. Once back home, the salt-preserved cod was so long lasting and inexpensive that it swept through Europe’s Mediterranean nations, leaving many a rich merchant in its wake. The word bacalao (or Bacalhau in Portuguese, or Baccalà in Italian) became forever embedded in our languages. Bacalao’s amazing longevity and economy would unfortunately also ensure that it played a role in one of mankind’s most shameful endeavours, the enslavement and forcible transport of millions of Africans to colonies in the Americas and the Caribbean. Naturally it would have been used (in very limited portions) to keep the human cargo alive on the miserable crossings to the new world. At the same time it was also shipped from Europe as a saleable commodity and once landed would be purchased by plantation owners who would provide a weekly ration to their slave labor. It’s difficult to determine accurately when bacalao would have taken hold here in Puerto Rico. One of the island’s favourite bacalao dishes- Bacalao Guisado or Stewed Bacalao- is composed mainly of ingredients that were likely brought to the island from Spain, suggesting salt cod may have first made inroads at the time of original Spanish settlement. However another island favourite, Bacalaitos Fritos or salt cod fritters, has strong signs of African influence. The first clue is in the use of deep frying, a means of cooking that actually came to the Caribbean via African slaves, but another hint is in the mixing of the fish directly into the batter. This technique of adding a small quantity of valuable protein to an abundant starch was used by slaves to stretch their rations. Of course, trying to determine its Puerto Rican origins soon becomes an irrelevant “chicken or egg” discussion. It’s obvious that bacalao is so versatile and so delicious that no matter when or where it came from it has managed to find its way into every corner of Puerto Rico’s vibrant cuisine! Bruce & John’s Bacalao Guisado a la Isla Niña All ingredients including the wine are easily available at supermarkets on Vieques. Each recipe serves 2- 4, depending on your appetite. If you need to feed more, scale up accordingly! Basic Preparation of Bacalao: Soak the bacalao in ample water for at least 18 hours, changing the water three times per day. Keep the bacalao covered, in the fridge, throughout the soaking process. Drain and hold the desalinated fish till you’re ready to cook it. In a saucepan large enough to hold the cod in a single layer, cover the fish with milk and poach very gently for about 5 minutes (water is OK, too). If the bacalao is of uneven thickness trim off the thin ends and add them about half way through the poaching process. Test for done-ness by flaking the fish at the thickest point- it should separate easily and the exposed flesh should look slightly under cooked and not stringy. If ready, remove and cool for use later. (It’s better to undercook rather than overcook the fish or it will become tough!) Ingredients for El Guiso: 6- 8 oz poached salt cod (see above), broken into small chunks 1/2 medium onion 1 cubanelle (mild) pepper 1 medium carrot 1 clove of garlic, minced 1 small can pimentos (two whole sweet red peppers in brine) 1 28 oz can of stewed tomatoes 4- 6 green olives, drained, pitted and halved 1 1/2 Tbsp capers, drained 1 tsp ground cumin (or to taste) olive oil chopped cilantro or recao for garnish Preparation: 1. Chop the onion, carrot and pepper coarsely into 1/2” dice. 2. Over medium heat, warm about 2 Tbsp of olive oil in a wide sauté pan. Make a coarse sofrito by adding the onion, carrot, and pepper, reducing the heat to medium low, and cooking gently till the carrots have softened but are not completely cooked through. 3. Cut the pimentos into 1/2” chunks and add to the sofrito. 4. Add tomatoes, cumin and garlic and stir to incorporate, then simmer gently for about 10 minutes. 5. Gently fold in the cod, olives, and capers and gently heat the stew for another 6- 8 minutes, till the fish has warmed through but has not overcooked. 6. Serve immediately. We serve bacalao guisado with cooked rice, and we like to enjoy a nice Spanish Tempranillo with it. Ingredientes para El Guisado: 6- 8 oz filetes de bacalao hervidos (ver arriba), cortados en pequeños trozos 1/2 cebolla mediana 1 pimiento 1 zanahoria mediana 1 diente de ajo, machacado 1 lata pequeña de pimientos morrones 1 lata (28 oz) de tomates guisados 4- 6 aceitunas verdes, escurridas, sin pepita y cortadas a la mitad 1 1/2 cucharada de alcaparradas escurridas 1 cucharada de comino molido (o a gusto) Aceite de oliva Cilantro o recao machacado Preparación: 1. Corte la cebolla, zanahoria y pimiento en trozos de ½”. 2. A fuego mediano, caliente 2 cucharadas de aceite de oliva en una sartén grande. Haga un sofrito añadiendo la cebolla, zanahoria, y pimiento, baje el fuego de mediano a lento, y cocine hasta que las zanahorias estén tiernas, pero no sobre cocidas. 3. Corte los pimientos morrones en trozos de ½” y añádalos al sofrito. 4. Añada los tomates, el comino, ajo y mezcle para incorporarlos, luego cocine a fuego lento por 10 minutos. 5. Añada el bacalao, las aceitunas y alcaparras y cocine a fuego lento por otros 6-8 minutos, hasta que el pescado esté caliente, pero no sobre cocido. 6. Sirva inmediatamente. Eric Torres y Guelymar Pérez se hicieron cargo de la pescadería hace tres años, luego de comenzar su negocio fuera de su casa con un congelador y 1,000 libras de carrucho para vender. En ocasiones, no pueden satisfacer la demanda de pescado fresco de la isla. Siempre que queda algo al final de la semana, se vende al restaurante El Mako en Naguabo, PR, para que no quede nada que haya estado congelado por más de una semana. Me presenté en la Pescadaría a las 10 y de 13 a 15 pescadores que pescan diariamente para su sustento iban y venían. Los turistas y los locales hacían sus órdenes de pescado, langosta y carrucho. Mientras Eric rebana un pez capitan congelado en la sierra, Tomas está fileteando un mero de 2lbs. para una joven pareja y su hijo de 2 años de Michigan. Guellymar está haciendo el recuento de los drones de la langosta traídos por Georgie, uno de los capitanes de ferry, que es también uno de los mejores pescadores de langosta en la isla. They battle the heat, the glaring sun, sharks, barracuda and the pressure of the sea on their bodies as they hunt for their catch on the sea floor. They work everday weather permits to bring the provisions of the sea to land to sell to the market, restaurants and locals. Their day starts long before the pescadaria or fish market is even open but when their doors open at 9:30, the activity is constant and the energy flowing until they close at 2 or 3. Eric Torres and Guelymar Perez took over at the market three years ago after starting their business out of their house with one freezer and 1,000 lbs of conch to sell. Now they sometimes can’t keep their freezers full enough to meet the demand for fresh fish on the island. Whenever there is something left at the end of the week they sell to the restaurant El Mako in Naguabo, PR so that nothing is ever frozen for more than one week. I showed up at the Pescadaria at 10 am and 13-15 fisherman who fish daily for their livelihood were coming and going. Tourists and locals show up to put in thier orders for fish, lobster and conch. As Eric is slicing a frozen hog fish or “capitan” on the slicer, Tomas is filleting a 2 lb grouper for a young couple and their 2 year old child visiting from Michigan. Guelymar is tallying up the drums of lobster brought in by Georgie, one of our ferry boat captains who is also one of the best lobster fishermen on the island. Today he has brought in 98lbs. An average day for Georgie, Guelymar says. There is someone sport fishing from the pier for the 5 or six tarpen who make a daily appearance for breakfast as Tomas tosses them the remains of a fish he is filleting. It is catch and release but the tarpon weighs about 12lbs, is 3-4 ft long and puts up a tremendous fight. Sergio “Papo” and Jose, Guelymar’s uncles pull up to the pier with buckets of conch and joking around about “the shark with big teeth”. They have brought in about 80 lbs of conch today and used 3 tanks of oxygen. Jose, the captain of the boat, cleans the conch and keeps track of Papo while he dives for the conch. Despite the laborous day of work, the toll on their bodies, the constant dangers and risks, there is constant joking and I’m amazed at the good nature of everyone. I can only think that is the sun, the rythm of the sea, fresh air and true work that benefits Vieques in so many ways that keeps these fishermen with constant smiles on their sunburned faces. Sin embargo, es raro encontrar rabos de langostas del Caribe (siempre congelados y muy caros) en pescaderías gourmet o en el menú de restaurantes caros. Nunca parecían ser tan buenas como sus homólogas del norte - y ¿porqué solamente se comía el rabo? Por supuesto, aquí en Vieques puedo encontrar langostas frescas (conocidas por sus deliciosos grandes rabos) en cualquier momento, a través de los pescadores locales, los cuales son verdaderamente maravillosos. ¿Tengo alguna preferencia? However, rarely you could encounter Caribbean spiny lobster tails – always frozen and exceedingly expensive – in gourmet seafood markets or on the menu in high-end eateries. They never seemed to be as good as their northern counterparts - and why was there only the tail to eat? Of course here on Vieques I can get fresh Caribbean spiny lobsters –known for their large delectable tails - at any time from our resourceful local fishermen, and they are truly wonderful, too. Do I have a preference? I do not because I consider them two entirely different seafoods – and indeed, they are - but many people do take sides and that debate will forever wage on! Although both species are marine arthropods (animals with jointed legs) that is the only thing they have in common, they are not closely related at all. The Atlantic or Maine lobster is native to the cold waters of the Atlantic Ocean as far south as S. Carolina and use their powerful claws as their primary means of defense against predators. The spiny Caribbean lobster is only found in the warm waters of the southern United States through the Caribbean to Brazil and uses their formidable spines to protect them. Incidentally, lobsters turn red when prepared because a proteinbound pigment in their bodies called astaxanthin is released with the exposure to the heat of cooking. Classic Lobster Stock As many shells and any uneaten portions of Atlantic or spiny lobsters as possible ¼ cup white wine or vermouth 1 teaspoon black peppercorns 2 whole bay leaves 1 teaspoon thyme 3 stalks of celery, halved or 2 teaspoons celery seed 1 small onion, quartered 2 small carrots, halved 1 bunch parsley with stems Place all ingredients (except salt) in an adequately sized stockpot and cover with cold water by several inches. Bring to a boil, reduce heat, and simmer gently 45 minutes – do not let ingredients burn. Remove from heat, let ingredients cool completely in liquid, uncovered. Strain, discarding solids. Salt to taste can be added at this point. Package, label, date and freeze. Will keep frozen up to one year. Use as a base for lobster or seafood soups, chowders, stews, bisques or for white, cream or béchamel sauces for seafood. Caldo de Langosta Clásico Tantos caparazones y porciones sin comer de langosta Atlántica o espinosa como sean posibles 1/4 taza de vino blanco o vermouth 1 cucharadita de pimienta negra en grano 2 hojas de laurel 1 cucharadita de tomillo 3 tallos de apio picados o 2 cucharaditas de semillas de apio 1 cebolla pequeña cortada 2 zanahorias pequeñas picadas 1 manojo de perejil con tallos Coloque todos los ingredientes (excepto la sal) en una olla de tamaño adecuado y cubra con agua fría. Deje hervir, baje el fuego y cocine a fuego lento por 45 minutos - sin dejar que los ingredientes se quemen. Retire del fuego, deje que los ingredientes se enfríen, destapados. Cuele y descarte la parte sólida. Añada sal a gusto en este punto. Favor de embazar, etiquetar, fechar y congelar. Puede mantenerse congelado hasta por un año.
