All this, mixed into that quilt of colors of the many plantations all around. On the walls, murals, and light posts painted with many invitations to take care of the soil and the animals on the verge of extinction. It is also present in its small but treasured bullring. Present in its herons; herons that pass the night in its many trees. It is also present in the uniforms of children of the local school, that holds the privilege to have its very own bridge and crystal clear water stream within the facilities. Yes, Anaime is a colorful place. And it is cold and fresh air. As it is also farmers who were born to work the land. And women with conviction. And youngsters with power of decision. Sí, Anaime es puro color. Y aire frío y limpio. Y agricultores de vocación. Y mujeres con convicción. Y jóvenes con decisión. Anaime es un pueblo tranquilo, con poco tráfico, silencioso. Casi todo lo contrario a Cajamarca –en its younger brother – a town in constant movement, edad su hermano menor–, en constante movimiento, full of vehicles, and noisy. Anaime and Cajamarca are separated by four miles of a paved road that runs parallel to the Anaime River. With around twenty thousand residents, from the corner to the Roma Café – the oldest in town, located by the side of the park–, soothing the cold weather with a black cup of coffee freshly brewed in a classic Italian coffee maker, one can feel Cajamarca passing by: its trucks, which are a part of the landscape, full of containers headed for the country’s capital, Bogotá, and the international port of Buenaventura; its own enterprises, like the coffee factory or the factory of fried goods of arracacha and plantain; its transport, agricultural and milk co-ops; its local television channel and radio stations, its teachers, its musical and sports talents, its expert farmers. In Quechua language (the official language of the Inca empire), Cajamarca means cold region, but this definition is merely related to its climate: 66 degrees Fahrenheit in average. In every other way, the Cajamarcunos are warm people; they stand out for their drive to survive, to work, to progress, to have well being. walkinGtHroughCAJAMARCA quiet. No se sabe de dónde vienen y cuál es su destino en las madrugadas, pero sí es claro que vuelan kilómetros sobre las cordilleras, para llegar hasta allí. Desde muy temprano, con la marcha de las garzas, Anaime comienza a cobrar vida. Llegan los estudiantes a pie o amontonados en esos vehículos a los que llaman “La línea”. Los cafés ya tienen el tinto caliente. El párroco, Luis Fernando Medina, abre las puertas de su hermosa casa cural, se prepara para la misa en esa iglesia blanca y Dos pueblos hermanos moderna –consagrada a San José, el carpintero–, de la que se siente orgulloso, y para dar después clase de religión a los niños de la escuela. La mañana transcurre con normalidad. Al mediodía los estudiantes van al parque, a conversar, a jugar, mientras esperan el jeep que los llevará a sus veredas, a su casa, a hacer las tareas y ayudar en los oficios agrícolas. Siete de ellos, Raúl, David, Diana, Marley, Sebastián, Edwin y Dylan, deciden quedarse para trabajar en el vivero, del que son responsables. Entre sus fundaciones se llevan 46 años de diferencia. Inicialmente Cajamarca fue corregimiento y Anaime fue municipio. Pero, cosas de la vida, entre ellas el paso de la Carretera Nacional, llevó a que el más pequeño se creciera, se volviera grande, importante y municipio. Anaime pasó a ser corregimiento. Están separados por siete kilómetros de una vía pavimentada que bordea el río Anaime. La aparición de los cementerios, ambos de muchas sepulturas y pocas bóvedas, anuncian la salida y la entrada, o viceversa, de ambos pueblos. Al llegar a Cajamarca lo que más se destaca es el cerro de la Virgen –un pequeño mirador desde el que se ve toda la meseta– y la imponente iglesia, construida gracias al empuje de monseñor Hernando Rojas, entre 1952 y 1961, consagrada a San Miguel Arcángel. A diferencia de la de Anaime, sobria por dentro, este templo, orgullo de los cajamarcunos, sorprende por las franjas rosadas y azules, que le dan un cierto ambiente festivo, de alegría, a su interior. Afuera, el único parque del pueblo. Amplio y poco habitado, es obra de William Clark, un extranjero que hizo el trazado general. A su lado está la vía Panamericana. Cientos de tractomulas, de vehículos, pasan a diario por ahí y le dan una sensación de eterno movimiento. Campesinos, comerciantes y líderes gremiales y políticos están atentos y pensando estrategias. Como bien lo explica Raúl Parra, ingeniero agrónomo y gerente de la cooperativa lechera, la solución es simple. A la par con las tractomulas que están ahí cargando y descargando, con los coteros que vienen y van con los bultos en sus hombros y espaldas, un sonido menudo, reiterativo, como de lluvia cuando cae granizo, predomina en el ambiente. Es el ruido que hacen los granos buenos al caer de la mesa por un hueco, al costal, a los costales, que luego bien sellados irán a las plazas mayoristas de Ibagué, Bogotá, Cali y Medellín. Cada mesa de madera tiene dos orificios a lado y lado. Por parejas, cuatro seleccionadores de fríjol son los encargados de buscar, minuciosa pero rápidamente, los granos viejos, carcomidos, sucios, para separarlos de los que están perfectos, con sus tonos rojos, púrpuras y brillantes. Su secreto para ser buena seleccionadora, dice, es hacerlo con seriedad, con responsabilidad, y eso implica tener buen ojo, que la rapidez no signifique una deficiente clasificación. Y es mejor hacerlo un poco menos veloz, que dejar caer en el costal un grano malo. Cuando terminan cada bulto, un bodeguero, encargado de la supervisión, mete la mano o una pequeña pala, saca un puñado de fríjol y si encuentra mugre o algunos granos que no debieron pasar, tiene la autoridad para devolver el bulto a la mesa… y otra vez a volver a comenzar. El “fríjol cajamarcuno” está mezclado con el que viene de otras regiones, como Cabrera (Cundinamarca), Pitalito (Huila) y Rovira, Playa Rica, Anzoátegui y Santa Isabel (Tolima). Recorren muchos kilómetros para llegar a Cajamarca. Una de las razones para hacerlo es que se aplica un estricto control de calidad y no sale una sola carga sin antes comprobar, grano a grano, que el comprador y el consumidor van encontrar un producto bien escogido, libre de impurezas. De lo cuidadosas que sean las seleccionadoras no sólo depende su sustento, sino una buena parte de la imagen que el municipio ostenta como productor del grano más limpio y de mejor sabor de la región y sus alrededores. Dos clases de grano produce Cajamarca: el voluble, que crece colgado, y el arbustibo, que nace precisamente de un arbusto. El lote o tajo se debe preparar enterrando palos gruesos de madera a lo largo de los surcos, para luego conectarlos entre sí con alambres, todo instalado con firmeza para aguantar el peso del fríjol maduro. En lo comercial, buscan desarrollar una estrategia de mercadeo que incluya registro de la marca Fríjol Cajamarca, adopción de código de barras y acceso directo a mayoristas y minoristas. En lo tecnológico, apuntan a capacitar a los cultivadores en planeación y manejo de plagas, pero, sobre todo, en la utilización de semillas en vez del fríjol mismo, para evitar enfermedades y los costos asociados a su tratamiento. Por último, piensan en crear un organismo de asociación para enfrentar a los intermediarios y posicionarse en el mercado. El plazo es tres años, en el cual estarán acompañados financiera y tecnológicamente durante los dos primeros; luego, dice don Jairo, ya estarán listos para crecer solos. Beans Bet. La primera fue Dorotea y la Abelardo Matallana nació el 10 de julio de 1918, en Saboyá, aquel municipio de Boyacá en el que le regalaron a Jorge Velosa, el cantante carranguero, esa cucharita de hueso que luego se le perdió. Los sucesos de su vida se le mezclan en la memoria, no recuerda las fechas pero sí los hechos. Sabe que la noticia del asesinato, en Bogotá, de su líder liberal, Jorge Eliécer Gaitán, le llegó cuando ya estaba viviendo en Cajamarca, pueblo en el que se instaló, como muchos otros de su departamento, huyéndole a la violencia política entre liberales y conservadores. Comenzó a poblar de Matallanas la tierra boyacense y tolimense, cuando apenas tenía 16 años. Tuvo cuatro hermanos, pero es él quien se ha encargado juiciosamente de multiplicar el apellido, al igual que los panes y los peces de aquel conocido milagro. Sin que se tenga la plena certeza –pueden ser más, no menos–, tiene 186 nietos, 50 bisnietos, algunos tataranietos, y de solo tres años una chorlita, que es como se le dice a la sexta generación de una familia. Muchos viven en última, de la que se separó hace seis años, fue Blanca. En medio de que fue muy estricto con ellos, hasta con Fredy, que es el menor de ellas dos están María de la Paz, Adelaida, Hermelinda, Carlina, Saturia todos y no pasa de los treinta años. Otro Abelardo es aquel famoso monje que en plena Edad Media se enamoró de una religiosa, Eloísa. Como castigo por ese amor prohibido, fue castrado y, por supuesto, tampoco dio descendencia. Este Abelardo, el Matallana, el boyacense de Cajamarca, la tuvo por ellos dos. “Aquel que es un hijo fuerte” y “el gran trabajador” son los distintos significados que tiene el nombre de Abelardo. Y a este viejo tronco Matallana, tan recio, como el pino que le da sombra a su casa, sí que le casan esas definiciones. Hace cinco años estuvo muy enfermo, y aunque se recuperó, ya no ha podido volver a trabajar la tierra. Sin embargo, ahí sigue, sin quitarse su sombrero, hablando, recordando, resistiendo. Por algo dice la sabiduría popular que los árboles mueren de pie. Entre los Incas, quienes gracias a un eficiente manejo de sus consumos calóricos y al almacenamiento de granos y procesamiento de tubérculos lograron expandirse rápidamente por un vasto territorio, desde el sur de la actual Colombia hasta el norte de hoy Chile, era valorada como fuente óptima de energía. Los Muiscas o Chibchas, el pueblo precolombino de mayor población del actual territorio colombiano, ubicados sobre el altiplano que hoy ocupan los departamentos de Boyacá y Cundinamarca, la usaron sin falta en su dieta diaria. Cajamarca es la capital nacional de la arracacha. En unas cuatro mil hectáreas, el municipio produce alrededor de unas 40 mil toneladas al año. Sus ventas le representan 50 mil millones de pesos aproximadamente, y le dan trabajo directo a unos 600 mil jornaleros. Se cosechan alrededor de 30 variedades, entre las que sobresalen la yema de huevo, la más exquisita y costosa, y la paliblanca y la palirusia, las más comunes. Hace cerca de una década llegó una nueva variedad, llamada cartagenera, que desplazó a las demás y trajo un nuevo virus, que solo tiene solución de laboratorio. Sin embargo, su sembrado sigue siendo tan extendido que sirve de unidad de medida para los cultivos con los que comparte lote: si alguien produce una arroba de maíz, es porque muy seguramente cultiva una hectárea de arracacha. Due to the grower normally being the one that has to give in to the brokers’ rates, a growers association was established in 1980, twelve years later became the cooperative with a multi active character that seeks to protect the producer by establishing a united front for the commerce of their products. Since the beginning of the greenhouse – which they still own – the women have been carrying out more ambitious projects, so now they have a riskier business, but probably a more profitable one: to make handicrafts using the shoots of the plantains. Coffee While Playing a Three-Ball Game The secret of Café Roma’s longstanding success is the Italian coffee-maker’s machine that brews the best and most renowned black coffee in Cajamarca, creating a unique flavor that is unmatched. On one of the bustling corners in the main square of Cajamarca, on the first floor of an old building, whose architecture dates back to the Spanish colonization of Antioquia, is an inscription etched into the stone floor which reads “Esgaro” in golden letters decorated with arabesques. This text is an abbreviation for Essaú García Romero, the owner of the café. Founded in 1927 by Tomás Ortiz, the café was given to Essaú García Romero when he married one of Tomás Ortiz’s daughters. Twentytwo years ago, Alberto Salinas became manager of the café. The reason is simple: another marriage. Though the café is a heritage of these families, it is also a part of the community’s history and tradition. Behind the wooden frames of the windows, a dozen men play three-ball game and pool. There are many departmental and national professional champions who have been trained in the art of creating caramboles on those very tables.
