Nariz compleja dominada por fruta negra y especias. De estructura media-alta. Acidez bien integrada que le da mucha vivacidad. Tanino redondo con notas de fruta negra y tostado al fondo. Caza mayor, carnes a la barbacoa. Cordero al horno. Cochinillo asado, carnes rojas, y quesos curados VENDIMIA: Octubre 2007 BOTELLAS: 9.500 ELABORACIÓN: Vendimia manual, por separado de cada una de las variedades y parcelas. Previo a la fermentación se hace una maceración en frío a 8°C durante una semana. Fermentación maloláctica con lías finas en barrica de roble francés.
