The first cool climate vineyard of Chile - 100% D.O Casablanca Valley MERLOT 2009 Planted area – Superficie plantada: 4.7 ha (of a total of 148 ha) Average Yield – Rendimiento promedio: 6 tons/ha Harvest - Vendimia: April 29th to May 6th - Entre el 29 de abril y el 6 de mayo. Hand picking of the selected bunches in 10 kilogram baskets in the early morning until temperature of grapes reached 10ºC. Strict manual selection of the best bunches on sorting table. Se realiza una primera selección a mano en el viñedo, cuidando de llevar a bodega sólo los mejores racimos. La cosecha se hace durante las primeras horas de la mañana, trasladándose en cajas pequeñas de 10 kilos hasta la bodega. Se realiza una segunda selección de los granos en mesas largas de selección. Composition: 95% Merlot – Clon 184 and 181 (2001) 5% Malbec Winemaking - Vinificación The wine was fermented in stainless steel tanks with 3 to 4 pump-overs per day and 1 rack and return at the peak of the fermentation. Tannin management was carefully monitored to ensure appropriate extraction just looking for nice and gentle tannins using low temperatures fermentation (22°C). Once fermentation was complete, there was post-maceration for 5 days with 1 pump-over per day. Then 40% of the wine was aged in second and third used French oak barrels. Bottling in July 2010. The wine has been not fined and filtrated. La fermentación se realizó en cubas de acero inoxidable con 3 a 4 remontajes diarios y 1 delestage en el momento óptimo de fermentación. Con el fin de extraer con delicadeza taninos agradables y suaves, se monitorean permanentemente los procesos de extracción, realizando fermentaciones a baja temperatura (22°C). El vino pasó por una maceración post-fermentativa durante 5 días con 1 remontaje al día. Un 60% permaneció en cubas de acero inoxidable mientras el 40% restante fue envejecido en barricas de roble francés de segundo y tercer uso durante 12 meses. El vino se embotelló en julio 2010 sin realizar filtrado. Chemical analysis - Análisis Químico Alcohol – Grado alcohólico: 14% vol. Total Acidity – Acidez total: 3.60 g/L Volatile Acidity – Acidez volátil: 0.41 g/L Residual Sugar – Azúcar residual: 1.52 g/L pH: 3.52 Tasting Notes An intense ruby and dark purple color. The nose is round and fruity, full of fresh dark fruit jam, orange peel and white flowers. The mouth is fresh, supple, with great volume and expressing blackcurrant jelly, orange blossom and rosebud soft aromas. The finish is very elegant and pleasant, bringing complex notes of candied sherry and a very subtle and fine touch of anise. Drink now or wait for its peak in 2013. Intenso color rojo rubí oscuro con tonos violetas. En nariz es redondo, de gran expresividad frutal, con notas a mermelada de fruta negra, cáscara de naranja y flores blancas. En boca se despliega gran frescura y suavidad, entregando aromas a grosella negra, azahar y botón de rosa. Un final elegante y complejo ofrece notas ajerezadas y un toque de anís.
