PATAGONIA BEEF & WINE Con sabor ARGENTINO A orillas del Mediterráneo, en la hermosa ciudad de Barcelona, un restaurant argentino es la cita obligada de fieles y exigentes comensales que concurren a degustar carnes y vinos argentinos. Este reducto gastronómico de lujo ya es un clásico que ha sido incluido en la Guía Michelin de Hoteles y Restaurantes. Por Vanesa Barraco Fotos: Patagonia Beef & Wine Con sabor ARGENTINO E mplazado en el local que desde 1914 fuera la antigua y prestigiosa Joyería Sunyer en la Gran Vía de las Cortes Catalanas, allí, en la ciudad de Barcelona, Patagonia Beef & Wine es un referente de la parrilla argentina en el mundo. Empresarios europeos en sociedad con la empresa Quickfood, parrillero argentino, maître uruguayo y nuestra mejor carne de animales criados libremente sobre pasturas, son los ingredientes que dan forma a este reducto gastronómico de lujo cuya idea es promocionar la carne argentina exhibiéndola con todo su valor. Allí, comer utilizando un típico cuchillo de gaucho hecho a mano en Tandil con mango de alpaca, trenzado incaico de colores y grabado con sus iniciales, es un privilegio que tienen 78 los fieles comensales de ese restaurant argentino. La pieza queda guardada en una vitrina del local, como una joya, para que los clientes la utilicen cada vez que van. Sin duda se trata de un verdadero reconocimiento como miembro de un club exclusivo. Los dueños han logrado un ambiente que trasmite elegancia, serenidad y calidez. Conservaron los pisos modernistas de la joyería y también sus arcadas, vitrales y techos altos, a los que los arquitectos sumaron una ambientación que hace recordar a la Argentina, con toques de modernidad pero sin estridencias. En el local se ha logrado una fusión perfecta entre la cultura europea y argentina. El estudio Country Brand Index, realizado por la consultora FutureBrand el año pasado, ubica a la Argentina en el 10º puesto entre las gastronomías internacionales por la calidad de sus carnes y la excelencia de sus vinos. Nuestro país está en vías de transformarse en destino de máxima importancia con una oferta culinaria de nivel superior donde el líder es Francia seguido por Italia y Singapur. Esta excelencia en gastronomía también se exporta, creando marca Argentina en el exterior. En la actualidad, existen en Nueva York media docena de locales de origen argentino, y en Miami, en los últimos dos años, hubo una invasión de restaurantes y bares procedentes del Río de la Plata. Por su parte, España es otro mercado en el que la oferta gastronómica local ya tiene una fuerte presencia y sólo en Madrid se calcula que hoy existen más de 70 restaurantes de origen argentino. Patagonia Beef & Wine tiene solo dos años y medio y ya fue incluido en la “Guía Michelin de Hoteles y Restaurantes de España y Portugal 2008” con una calificación de 2 tenedores. Tiene el mérito de ser el único restaurante de carnes argentinas en esta edición en el universo de las principales ciudades españolas (Madrid, Barcelona, Valencia) y también figura en la Guía Michelin “Main Cities of Europe 2008” que selecciona 3000 hoteles y restaurantes de 20 países europeos en las mismas ciudades. Además, figura en el site de reservas más importante del Reino Unido, “TopTable”, como la mejor cocina en Barcelona y entre los tres primeros en el Diner Rating, compitiendo con restaurantes de cocina de autor. La Parrilla anida varios de los secretos del éxito de Patagonia Beef & Wine. Una de sus particularidades son los hierros que tienen forma de “V” por donde se desliza la grasa hasta el grasero, a diferencia de la española, de hierros redondos, entre los cuales el jugo y la grasa caen sobre el carbón, ahumando el corte y cambiándole el gusto. El carbón, que le da sabor y aroma a la carne, es de quebracho blanco de Santiago del Estero. El parrillero es argentino y asegura que el secreto del éxito está en conservar la cultura de nuestro país, cocinar con mucho afecto y cuidado a la vista de los comensales. Este aspecto no es menor. De hecho, una gran vidriera hace posible que los comensales vean al parrillero en acción. Asimismo, el local está decorado con fotos de los campos donde se crían los animales, paisajes de la Cordillera de los Andes, viñedos de Mendoza y cuadros con imágenes relacionadas con el tango. La carta de Patagonia Beef & Wine tiene como principal ingrediente la carne argentina servida en generosas porciones y acompañada de entradas típicas como el chorizo criollo, los riñoncitos, las mollejas de ternera, provoletas y sabrosas empanaditas, así como una cuidada selección de ensaladas. Los cortes que se destacan en el menú son lomo, bife de chorizo, ojo de bife, tapa de cuadril (picanha), pollo deshuesado y solomillo entre otros. Si bien la propuesta es “la carne al estilo argentino”, los comensales de PB&W reciben su corte de carne en el punto justo que la pidieron ya que el parrillero trabaja siete puntos de cocción, desde el “blue francés” hasta el “muy cocido” argentino. Los postres acompañan el final de la velada con repostería que incluye 79 With ARGENTINEAN flavor los tradicionales panqueques de dulce de leche, el postre Patagonia (pastelitos de dulce de leche con helado) o un Tiramisú. El vino juega un rol importante. El establecimiento dispone de una gran bodega que ofrece vinos argentinos de gamas intermedias y altas con sus varietales malbec, cabernet sauvignon, bonarda, syrah, tempranillo, chardonnay, torrontés y sauvignon blanc. De todas maneras y a pesar de tener una carta española de vinos muy buena y bien seleccionada, desde la apertura del local se ha vendido entre el 70-75% de vinos argentinos. Cada noche el cliente disfruta de nuestra excelente carne y de la ceremonia que tiene lugar en el momento en que se sirve la carne y le cambian los cuchillos. The owners have succeeded in creating an atmosphere which irradiates elegance, serenity and coziness. They have kept the modernist floors, the arcades, the stained- glass windows and the high ceilings of the jewelry, to which the architects have added modern but not strident touches creating an atmosphere which reminds of Argentina. The room achieved a perfect combination between the European and the Argentinean cultures. The Country Brand Index research, carried out last year by FutureBrand consulting agency, has ranked Argentina in the 10th position among the international gastronomies, due to the high quality of its meat and the excellence of its wines. Our country is gradually becoming a destination of great importance with a worldclass culinary offer, where the leader is France, followed by Italy and Singapur. This gastronomic premium quality is also exported, thus creating the Argentinean brand abroad. At present there are half a dozen Argentinean stores in New York, whilst in the city of Miami, during the last two years there has been an invasion of restaurants and bars arriving from the River Plate. Patagonia Beef & Wine was inaugurated only two years and a half ago and it has already been included in the “2008 Michelin Guide of Hotels and Restaurants of Spain and Portugal” with a 2-Forks rating. It holds the merit of being the only restaurant of Argentinean meat included in this edition within the universe of the main Spanish cities (Madrid, Barcelona and Valencia), while it has also been added to the Michelin Guide “Main Cities of Europe 2008” which chooses 3000 hotels and restaurants from 20 European countries in those same cities. Furthermore, it also appears in “Top Table”, the most important booking site of the United Kingdom, as the best cuisine in Barcelona, as well as among the top three in “Diner Rating”, competing with restaurants offering author’s cuisine. The grill holds many of the secrets for the success of Patagonia Beef & Wine. One of its main characteristics is given by the V-shaped irons which make grease slide down to the grease container. The Spanish grill, however, has round irons which make both meat juice and grease fall on top of the charcoal, thus causing smoke and changing the flavor of the cuts. The charcoal that grants the meat its special flavor and aroma is obtained from white quebracho (a South American hard wood 81 With ARGENTINEAN flavor tree) from the province of Santiago del Estero. The cook is also Argentinean and he assures that the key to success lies in keeping our countries´ customs, cooking lovingly and carefully and allowing clients to observe all this process, and this is not a minor aspect. In fact a great shop window makes it possible for the clients to see the cook in action. Moreover, the place is decorated with pictures of the fields where the animals are raised, the landscapes of the Andes, the wineries of the province of Mendoza, in addition to pictures with images related to the Tango. The main ingredient in the menu at Patagonia Beef and Wine is Argentinean meat, which is served in very generous helpings and accompanied with typical starters such as the criollo pork sausage, kidneys, veal sweetbread, provoletas (a 82 grilled slice of seasoned provolone cheese) and tasty empanadas (pasties), as well as selected variety of salads. The beef cuts that stand out from the menu are the loin, the tenderloin, the rib eye, the rump cap (picanha), the boned chicken and the sirloin, among others. However, despite the fact that the slogan is “meat made in the Argentine style”, PB&W’s customers get their meat cut just as they have asked for, since the cook manages seven cooking points, from the “French Blue” to the Argentinean “Well Done” point. The desserts accompany the end of the experience with confectionery that includes the traditional dulce de leche pancakes, the Patagonia dessert (dulce de leche muffins with ice cream) or the classical Tiramisú. The wine plays a leading role. The restaurant owns an extraordinary wine cellar which offers Argentinean wines ranging from intermediate to premium quality and including grape varieties such as malbec, cabernet sauvignon, bonarda, syrah, tempranillo, chardonnay, torrontés and sauvignon blanc. Anyway, and despite having a Spanish wine list of premium quality and careful selection, ever since the inauguration, between the 70 and 75 % of the wines sold have been of Argentinean origin. Every night clients enjoy our excellent meat and the ceremony that takes place when the meat is served and the knives are changed. This is a moment of distinction where loyal clients are given their “special” and personal knife that will be carefully kept after each meal in a numbered box waiting for its owner to come back and enjoy once again the excellent quality of our food in Barcelona.
