La presse à canard est une pièce typique d’hôtellerie créée pour réaliser le canard au sang dont le restaurant La Tour d’Argent à Paris s’est
fait une spécialité.
Cette recette implique une sélection des canards avant abattage qui doivent être étouffés et non saignés pour garder leur sang. Une fois cuit,
le volatile est découpé devant l’hôte, la carcasse, placée dans la presse, est écrasée toujours devant le client. Toujours sur socle en bois, la
presse est actionnée par un volant qui fait tourner la vis écrasant la carcasse placée dans son réceptacle ajouré. Le jus s’écoule alors dans le
récipient placé sous le bec. La porte frontale permet d’éviter les projections pendant l’écrasement.

The duck press is an object usually found in hotels and restaurants. It was created to make pressed duck, which is a specialty of the Tour d’Argent restaurant
in Paris.
To make this recipe, ducks are selected before slaughtering and are then smothered rather than bled to preserve their blood. Once cooked, the duck is cut
up before the customer and the carcass placed in the press and then crushed. The press has a wood base and works through a wheel that makes the screw
turn and crush the carcass placed in its openwork receptacle. The juice then flows into a recipient placed under the spout. A door on the front of the press
prevents projections from escaping during the crushing process.
