La contaminación del agua y la irrupción de la pesca de arrastre contribuyeron a su extinción. Nada queda de aquellos pescadores valerosos y solidarios que vivían de lo que pescaban. Y a no queda rastro alguno de la pesca tradicional en Castelldefels, una actividad que durante siglos fue el sustento de muchas familias de la población. Las barraques o botigues eran las antiguas casas de los pescadores, más pequeñas y sencillas que las masías y repartidas a lo largo de la costa. La primera referencia a estas barraques aparece -según se explica en el libro Les masies, de Josep Campmany, Albert López, Josep Puigdemont y Montserrat Sanz- en un mapa de la baronía del Eramprunyà, que probablemente data de la primera mitad del siglo XVIII. “Son seis casas situadas cerca del mar, en la actual zona de Can Bou y del barrio de Les Botigues”, indica la publicación. 10 · lo m+s Baix Llobregat Nº 52 N o trace at all remains of traditional fishing in Castelldefels, an activity that for centuries was the livelihood of many families in the town. The old houses of the fishermen, much smaller and simpler than masias, or farmhouses, were known as barraques or botigues and were distributed all along the coast. The first reference to these barraques appears –as explained in the book Les Masies, by Josep Campmany, Albert López, Josep Puigdemont and Montserrat Sanz– on a map of the barony of Eramprunyà, which probably dates back to the first half of the 18th century. “There are six houses situated close to the sea, in the current area of Can Bou and the Les Botigues neighbourhood,” indicates the Nuevo Audi A3. Jordi y Sebastià Julve son los actuales propietarios del Restaurante Casa Rita, especializado en cocina marinera. Fue fundado en 1948, y es el más antiguo de Castelldefels. Los dos hermanos, que forman parte de una de las últimas familias de pescadores de Castelldefels, explican su historia a lo m+s. “Nuestra bisabuela era originaria de Vinaròs, en Castellón. A finales del siglo XIX, durante la temporada de verano, su familia y ella venían a Castelldefels a practicar el tremall, una técnica de pesca con redes que medían varios centenares de metros de longitud. The two brothers, who are part of one of the last families of fishermen in Castelldefels, explain their history to lo m+s. “Our great-grandmother was originally from Vinaròs, Castellón. En aquellos tiempos, los pescadores capturaban lubinas, doradas, lenguados, herreras, langostinos y sepias. La abuela, Manuela Julve, más conocida como Rita, se crió en Castelldefels, en una de las barraques de madera que levantaron los pescadores en la playa. La jornada laboral de aquellos pescadores no arrancaba por la mañana sino en la víspera, cuando iban a calar les xarxes. En la playa no había un puerto natural, por lo que las barcas descansaban junto a la orilla. The grandmother, Manuela Julve, better known as Rita, was raised in Castelldefels, in one of the wooden barraques that the fishermen built on the beach. The working day for these fishermen didn’t start in the morning but rather the night before, when they set the nets. There wasn’t a natural port on the beach, so that the boats rested along the shore. A primera hora del alba se levantaban para ir a pescar. El resto del día se dedicaban a limpiar y reparar las redes y, sobre todo, a vender el pescado. “Lo cargaban en un carro tirado por una mula y lo vendían en Castelldefels, Gavà o Viladecans. A veces simplemente intercambiaban los productos con los campesinos, pescado por fruta o verdura”, cuentan. “Una de las labores más duras consistía en sacar la barca a la arena, hasta 15 personas podían ayudar a realizar esta tarea”, añaden. They spent the rest of the day cleaning and repairing the nets and, above all, selling the fish. “They loaded up a cart pulled by a mule and sold the fish in Castelldefels, Gavà or Viladecans. Sometimes they simply exchanged products with the farmers, fish for fruit or vegetables”, they relate. “One of the hardest jobs was to bring the boat up onto the sand, up to 15 people could help perform this task,” they add. Influyó también la contaminación del agua y la irrupción de la pesca de arrastre, que capturaba el pescado muy cerca de la costa. Se pescaba mucha chirla y rossellona, a veces incluso cargaban uno o dos vagones del tren”, explican los hermanos Julve. Actualmente faenan algunos barcos que se dedican a la pesca de las tallarinas, pero ninguno de Castelldefels. “Los antiguos pescadores de Castelldefels eran unos auténticos lobos de mar, pero sobre todo eran muy solidarios entre ellos. Si hacía mal tiempo utilizaban la barca más grande para recoger las redes de todos los pescadores”, recuerdan los hermanos Julve. Con imágenes en tiempo real se pueden seguir desde Internet la evolución de estas aves, a través de la instalación de dos pequeñas cámaras conectadas mediante equipos Wifi. Jordi reconoce la experiencia y habilidad de su hermano mayor, pero recuerda que “con el simulador que tenemos en casa para entrenarnos, yo soy mejor que él”, ríe. “Pero así como nos picamos con el simulador, nos ayudamos para encontrar los límites de las pistas donde competimos, y llegamos con ventajas al circuito”, agrega el hermano menor. Paralelamente a las carreras, Pepe pudo terminar el bachillerato -reconoce que aprobar la selectividad fue difícil- y actualmente sigue la carrera de derecho, ayudado por un tutor para poder compatibilizar estudios y carreras. Por lo pronto, piensa seguir en la categoría de turismos, aunque uno de sus sueños -dice- es llegar a Estados Unidos y probar suerte en la categoría Nascar. Hace pocas semanas, Pepe y su equipo confirmaron que seguirán corriendo en el Mundial de Turismos a bordo de su SEAT León 1.6T WTCC. El punto de partida será el circuito de Monza, los días 23 y 24 de marzo, a dos vueltas por cada carrera; y el calendario se compone de doce fechas por diferentes circuitos del mundo. “Será un año difícil, pero tras la experiencia de 2012, donde logré ser subcampeón en Independientes y finalicé en el Top Ten de la general, estoy dispuesto a mejorar mis resultados. Aunque soy el más joven de la parrilla, me he ganado a pulso el respeto del resto de pilotos. Soy un rival a tener en cuenta en el asfalto”, añade Pepe Oriola. El desafío está en marcha. A few weeks ago, Pepe and his team confirmed that they will continue to race in the World Touring Car Championship with the SEAT Leon 1.6T WTCC. As you would expect, the crowds of tourists mean that a visit to this pyramid requires an extra dose of patience. The stairs can cause vertigo to more than one unwary visitor, and to cap it all, at the top there always seems to be at least one meditating mystic, blocking circulation around the site. To one side the Pyramid of the Moon can be seen. Aesthetically this second pyramid has the most elegant form, and is a couple of centuries earlier than its solar sister. Y recuerda cuando su madre, Montse Fontané, le había mandado a confeccionar una chaqueta de cocinero a los 9 años. “Todos mis recuerdos están asociados a la cocina, pero sobre todo a los aromas, y con la sensación olfativa que queda en la memoria de las tardes que llegaba de la escuela, y echaba una mano en los fogones. Son los aromas a la crema catalana, o de la escudella”, rememora. Joan, Josep y Jordi Roca, los tres hermanos creadores del Celler de Can Roca, crecieron aprendiendo y jugando en el restaurante Can Roca, el local de comidas que sus padres edificaron en un barrio obrero de las afueras de Girona. Y sigue funcionando, y sirve como centro de reunión de los tres hermanos y sus empleados cada mediodía, en una mezcla de comida de empresa y brainstorming creativo. Las raíces siguen ligadas al Celler de Can Roca. These are the aromas of crema catalana, or of escudella,” he recalls. Joan, Josep and Jordi Roca, the three brothers and creators of El Celler de Can Roca, grew up learning and playing in the Can Roca restaurant, the eating place that his parents built up in a working class neighbourhood on the outskirts of Girona. It continues to operate, and serves as the meeting point for the three brothers and their employees every day at noon, in a mixture of a business lunch and creative brainstorming. The roots are still linked to El Celler de Can Roca. And its architectural design is full of metaphors: the new restaurant, extended lo m+s Baix Llobregat Nº 52 · 79 antigua masía. En cambio, si se trata de describirse a sí mismo, Joan es más bien huidizo: “sólo soy un cocinero que ha tenido la suerte de trabajar con dos grandes profesionales, que son mis hermanos. Para un cocinero, trabajar con uno de los mejores sommeliers del mundo y uno de los mejores pasteleros del mundo es un lujo. Y que además sean tus hermanos, hacen que El Celler de Can Roca sea un restaurante especial”. And the fact that they are also your brothers, makes El Celler de Can Roca a very special restaurant indeed”. Se trata de las trufas negras, esos hongos asequibles a pocos bolsillos que reinan en las cocinas más selectas. De la mano de este experto, que pertenece a la tercera generación de una familia de recolectores, y del chef Sergio Cócera, lo m+s se ha adentrado en el mundo de este producto de temporada. Como todo bien preciado, estos hongos no son fáciles de encontrar. Crecen, según Alberto, “a unos 10 o 15 centímetros bajo tierra”, por lo que sólo el olfato de perros adiestrados -a los que se recompensa con comidaes capaz de detectarlos. El perro no tardó ni dos minutos en detectar una. Ladró y ahí estaba ya Alberto con su machete. ¡Tachín! Nuestra primera y hermosa trufa. Es tremendo sacar algo de la tierra sin darle nada a cambio”, dice. Estos hongos, con forma de pelota irregular y color negruzco, acostumbran a pesar entre 20 y 250 gramos. Se encuentran en bosques de encinas, avellanos y robles y necesitan mucha agua. “Esta temporada ha sido mala porque ha llovido poco”, señala Alberto. Hay trufas de China y otros países que no tienen nada que ver en calidad con las de España”, alerta Sergio, y añade que las mejores son las de Teruel, Cuenca, Navarra, Huesca e Italia, y las que se recogen entre noviembre y marzo. Las cultivadas tienen un aspecto más regular pero, en su opinión, su calidad es inferior. Según Alberto, nuestro país es el mayor productor de trufa negra -una de las más de 100 variedades que existen y una de las más preciadas-. El Ministerio de Agricultura, Alimentación y Medio Ambiente señala que anualmente se recogen unos 6.000 kilos, que aportan un valor de 2,4 millones de euros. Para trufar unos huevos, se introduce media docena y un par de estos hongos en un recipiente cerrado cinco días. “Antes de comerlos, rallaremos un poco de trufa sobre ellos para potenciar su sabor”, dice. También es posible trufar el arroz con la misma técnica. Para lograr aceite de oliva trufado se ahogan unos 50 gramos de este hongo en 250 centilitros y la mezcla se conserva en una zona fresca y con poca luz. Bon appétit. lo m+s Baix Llobregat Nº 52 · 97 RECETA / RECIPE, por Sergio Cócera Crema de espárrago blanco, trufa negra y chip de alcachofa Ingredientes y elaboración para cuatro personas Para la crema: • • • • • • ½ cebolla mediana ½ manojo de espárrago blanco de Gavà 1 lata de espárrago en conserva Ralladura de jengibre fresco o en polvo 15 gr aceite de oliva virgen Sal y pimienta 1. Pelar la cebolla, cortarla en juliana y pocharla. Pelar la parte inferior de los espárragos, cortarlos y añadirlos. Reservar las puntas para el emplatado. 2. Incorporar el agua de los espárragos en conserva, rallar el jengibre y aceite de oliva, triturar el conjunto, rectificar de sal y pimienta. 3. Una vez enfriada la crema, añadir los espárragos en conserva y volver a triturar. Reservar. Para el cremoso: • • • • • • 200 gr mascarpone o cremoso Ralladura de trufa 5 cl aceite de oliva o de trufa 2 cl de vinagre de Jerez Pimienta blanca Sal 1. Colocar en un recipiente cuenco el mascarpone, rallar la trufa encima. 2. Añadir el resto de ingredientes y mezclar con la ayuda de una espátula. 3. Cubrir el cremoso con papel film y reservar en el frigorífico. 4. Dejar macerar hasta el momento del uso. Para las chips: • • • • 1 alcachofa del Prat 1 remolacha Aceite de oliva Láminas de sal 98 · lo m+s Baix Llobregat Nº 52 1. Extraer las primeras hojas de la alcachofa, lavarla y cortar en láminas muy finas y regulares (cuchillo, máquina de fiambres o mandolina). 2. Hacer la misma operación con la remolacha. 3. Freír en el aceite y una vez empiezen a dorar, retirarlas y reservar encima de papel absorbente. Cream of white asparagus, black truffle and artichoke chips Ingredients and preparation for four persons For the asparagus cream: • • • • • • ½ medium onion ½ bunch of white Gavà asparagus 1 can of asparagus Grated fresh or powdered ginger 15 g virgin olive oil Salt and pepper 1. Peel the onion, cut into julienne strips and poach. Peel the bottom part of the asparagus, chop and add to the onion. Keep the tips for garnishing. 2. Add the water from the canned asparagus. Grate the ginger and add the olive oil. Blend everything together and add salt and pepper to season. 3. Once the asparagus cream has cooled, add the canned asparagus and blend again. Set aside. For the “cream” mixture: • • • • • • 200 g mascarpone Truffle for grating 5 ml olive or truffle oil 2 ml sherry vinegar White pepper Salt 1. Place the mascarpone in a bowl and grate the truffle on top. 2. Add the rest of the ingredients and mix with a spatula. 3. Cover with cling film and set aside in the refrigerator. 4. Leave to macerate until needed. For the chips: • • • • 1 Prat artichoke 1 beet Olive oil Salt flakes 1. Remove the outer leaves of the artichoke, wash and cut into very fine and regular strips (using a knife, meat slicer or mandolin). 2. Carry out the same operation with the beet. 3. Incorporar la trufa en un recipiente de cristal y añadir el aceite de oliva, reservar bien tapado. Otros: • • • • 1 Trufa Yemas de espárrago blanco y verde Flor de pensamiento Germinado de remolacha o similar 1. Escaldar las yemas en agua hirviendo durante tres minutos y refrescar en agua con hielo. Reservar. 2. Laminar una trufa, encima de papel de horno para cubrir el molde de mascarpone. ACABADO Y PRESENTACIÓN 1. Disponer en el centro del plato un molde, rellenar con el cremoso, forrar con la trufa. 2. Añadir las yemas de espárragos. 3. Incorporar encima del cremoso las chips. 4. Agregar un cordón con el aceite de trufa. 5. Incorporar la crema. For the truffle oil: 250 ml 0.4 olive oil 50 g black truffle (Indicum Melanosporum) 1. Add the asparagus cream. lo m+s Baix Llobregat Nº 52 · 101 CATA DE CAVA / CAVA TASTING por Jordi Raventós (*) Argila 2009 E ste Gran Reserva Brut Nature, de cultivo ecológico y procedente de viñas viejas de más de 60 años, se presenta de color dorado pálido, con el carbónico fino y persistente. En nariz es expresivo, aromático, nos da aromas terciarios junto con la fruta, como la manzana, la pera de agua, flor de almendro. También tiene un recuerdo a hierbas aromáticas y aromas propios de la crianza, como son los tostados, la pastelería, toffee y canela; todo muy bien conjuntado y equilibrado, dando como resultado un cava seco y agradable. En boca la burbuja es fina, con buen recorrido y elegante. Recuerda a los mismos registros aromáticos que hemos encontrado en nariz. A medida que el cava se va abriendo, va cambiando, dando también paso a una fruta que recuerda más al melocotón, y en boca se hace más persistente. Es un cava que puede acompañar muchos platos, especialmente marineros, pero vale la pena decir que va bien para todo un ágape, incluso si queremos degustarlo solo. It is also reminiscent of aromatic herbs and the aromas of aging itself, such as baked bread, pastries, toffee and cinnamon; it is all very well coordinated and balanced, resulting in a dry and pleasant cava. In the mouth the bubble is fine, with a good and elegant path. It reminds us of the same aromas that we found in the nose. As the cava opens up, it changes, also making way to a note of fruit that is reminiscent of peach, and in the mouth it becomes more persistent. This is a cava that can accompany many dishes, especially seafood, but it is worth saying that it is excellent for an entire meal, or even for tasting alone. Este vino de familia se presenta de color cereza picota, de capa media alta y con reflejos violáceos. En nariz es un vino muy aromático, agradable, destacan los frutos rojos como la fresa, los frutos del bosque, las cerezas, también la vainilla, el plátano y un toque de mentolados, que le aportan frescura. Proviniendo de cepas que arraigan en la roca madre, Pardas Rupestris es un vino de color amarillo pálido con reflejos metálicos. En nariz nos da fruta blanca, como la manzana, y fruta de hueso como el albaricoque. Encontramos también hierbas aromáticas como el romero, la lavanda y el hinojo. En boca es expresivo, mineral, de cuerpo medio y muy equilibrado. Es persistente y fresco. Nos acompaña muy bien para comer e invita a repetir ya que es fresco y seco. In the mouth it is expressive, mineral, medium-bodied and very balanced. It is persistent and fresh. It is a fine accompaniment to a meal and invites us to repeat as it is fresh and dry. A partir de aquí, la sabia mano del hombre formulará la simbiosis de los vinos base del cava: es el sabio momento cupage. En el caso del cava, tradicionalmente es el vino de tres variedades blancas típicas del Penedés: Macabeo, Xarel·lo y Parellada. Ellos son el vino base tradicional del cava y se mezclarán en sabias proporciones para conseguir su transformación en espumoso. Por tanto, para conseguir un vino espumoso, tenemos primero que conseguir los vinos base. Una temperatura de 16 a 17º es esencial en el proceso de vinificación porque permite una fermentación lenta que preserve los aromas y las cualidades de las uvas vendimiadas en las mejores condiciones. Si se dejara fermentar con calor y sin control, se perderían todas las buenas propiedades de la uva. Preservar al máximo las condiciones de este vino es el objetivo de toda buena bodega. A temperature of 16 to 17º is essential in the vitification process because it allows a slow fermentation that preserves the aromas and qualities of grapes that have been harvested under the best conditions. If they were fermented with heat and without being controlled, all the good properties of the grape would be lost. Maintaining optimum conditions for the wine is the goal of every good wine cellar. Macabeu, Xarel·lo y Parellada: estos tres vinos blancos, de suave color y casi imperceptible grandeza, se transforman en las manos expertas del enólogo. Ningún otro vino requiere tanta experiencia para su formulación: se trata de unir la proporción exacta de cada vino base para que se transformen en el espumoso que deseamos. El enólogo recuerda cada vino base que ha probado en su vida, recuerda su comportamiento, su vida y su camino.
