En estos últimos días hemos dado la bienvenida
a esta fantástica primavera de 2012. Atrás queda
un duro y largo mes de febrero, ha llegado el momento de desempolvar las terrazas y disfrutar de
la alegría que produce la estación de los primeros
brotes. La primavera es luz, color, pero sobretodo
es vida. No es casualidad que en esta edición hayamos querido entrevistar a Sandra Ibarra.
In recent days we have been welcoming in this
fantastic spring of 2012. Left behind is a long hard
month of February and now it’s time to sweep the
dust away from your balconies and enjoy the joy
that this season of new shoots brings. Spring is
light, colour but, above all, it’s life. It’s no coincidence that we wanted to interview Sandra Ibarra in this
particular edition.
Empezamos un año nuevo para nuestra publicación y no quiero perder la oportunidad de pedirles
que continúen llamándonos y escribiéndonos para
trasmitirnos sus sugerencias, la perspectiva es infinita, todas las ideas son estudiadas y nos ayudan
mucho en elaboración de esta revista.

Para este nuevo año hemos incluido una nueva
sección que propondrá en cada edición una de
las muchas rutas de senderismo que existen en
la comunidad Valenciana, contada con todo lujo
de detalles. También hemos incluido una nueva
selección gastronómica a cargo de Jose Manuel
Manglano y algunas novedades más que podrán ir
descubriendo en el interior de estas páginas.
For this new year we have included a new section
that will, in each edition, propose one of the many
hiking trails that there are in the Valencia region, all
told with great detail. We have also included a new
gastronomic selection by Jose Manuel Manglano
and some more novelties that you will be able to
discover within these pages.

Casa tiburón
Bioarquitectura, con ese concepto se refiere el arquitecto Javier Senosiain a la obra que diseña. Este mexicano quiere plasmar en las
casas que crea, espacios adaptados al hombre, semejantes al seno
materno o a las mismas guaridas de los animales, proporcionando
así una armonía entre hombre, naturaleza y necesidades físicas y
psicológicas.
¿Qué es exactamente la arquitectura orgánica, de la que dicen usted es el precursor?
Hay varias interpretaciones, quizá la que a mi más me convence es
la definición del arquitecto Juan O’Gorman: Arquitectura Orgánica es
la que toma en cuenta dos aspectos: El Geográfico que es la orientación, vistas, topografía, el entorno y por otro lado el aspecto Histórico,
o sea la identidad y la cultura.
¿Tiene algo que ver con la arquitectura bioclimática o la construcción sostenible de las que tanto se habla últimamente?
Las casas semienterradas si tienen que ver con las construcciones
sostenibles, ya que la tierra es un magnifico aislante, térmico y acústico. Gran parte de la filosofía de estas viviendas es el vivir en espacios curvos más naturales, similar a los espacios construidos por los
animales.

Bioarchitecture: this is the concept that the architect Javier Senosiain refers to when talking about his design work. This Mexican
wants to capture in the houses that he creates spaces that are adapted to man, similar to the maternal womb, or to animals’ dens, thus
providing a harmony between man, nature and physical and psychological needs
.
What exactly is organic architecture, of which it is said that you are
the forerunner?
There are various interpretations, perhaps the most convincing one is
that of the architect Juan O’Gorman: Organic Architecture is that which
takes into account two aspects: the Geographic which is the orientation, views, topography, the environment and, on the other hand, the
Historical aspect, or in other words, the identity and the culture.
Does it have any relation to bioclimatic architecture or sustainable
building of which there’s been so much talk about recently??
Half-buried houses are related to sustainable buildings, as the earth
is a wonderful insulator, both thermally and acoustically. Much of the
philosophy of these homes is about living in more natural curved spaces, similar to the spaces built by animals.

¿Qué beneficios tiene vivir en una casa orgánica?
What are the benefits of living in an organic house?
Con tierra y pasto arriba, prácticamente el 100 % de la superficie del
terreno puede ser verde y ésta al transpirar produce oxígeno, entonces, de alguna manera rechaza la contaminación y crea un microclima en el exterior de la casa que filtra el polvo.
With soil and grass above, virtually 100% of the land surface can be
green and, through breathing, it produces oxygen which, somehow,
rejects pollution and creates a microclimate on the outside of the
house that filters dust.
¿A qué hacen referencia las formas de las construcciones? ¿Qué
tipo de espacios se construyen?
What do the shapes of the building make reference to? What types
of spaces are constructed?
Este tipo de construcciones nos dan como resultado formas que nos
recuerdan algunas de la naturaleza ya sea algún animal o vegetal son
formas más aerodinámicas y estas mismas formas logran continuidad
y por lo tanto son formas rígidas estructuralmente.
These types of constructions result in forms that remind us of nature
like some animal or plant forms. These are more aerodynamic, achieve continuity and are thus structurally rigid forms.

¿Cómo conlleva la relación entre fantasía, imaginación y realidad?
La fantasía es muy bonita, la pura palabra suena y motiva a imaginar,
a fantasear y, sin embargo, pienso que cuando uno proyecta no es
tanto con imaginación o pensando en la fantasía, mucho es producto
de una investigación, de un interés de ir a la esencia, al origen de las
cosas y algunas veces el resultado se vislumbra hacia lo fantástico
y lo imaginativo, pero no es tanto eso. El proceso es un poco pesado, angustioso, de mucho trabajo, pero es durante el mismo proceso,
cuando sale la idea, que da una gran satisfacción, eso se va puliendo
y da un resultado final, quizá en el resultado empiece uno a fantasear.
En su opinión, ¿cómo será la arquitectura que veamos en unos
años? ¿Tendrá algo que ver con el modelo que usted defiende y
con el respeto por el medio ambiente y la reducción del consumo
energético?
Se vislumbraba una tendencia hacia una arquitectura más natural y
humana ya que en los últimos 50 años se ha destruido más la naturaleza que en los 5.000 años anteriores y actualmente ya estamos
notando el efecto del calentamiento global.

A tool? a hand and the talent!
Where would you build a house? On the Moon.
Where wouldn’t you build it? On Earth.
What is important in a home? Your space.
The most important room? All of them.
What makes a home safe? its shape.
How do you balance the relationship between fantasy, imagination
and reality?
Fantasy is beautiful, the mere word rings of it and motivates one to
imagine and to fantasize. However, when you are doing a project it’s
not so much about imagination as a product of an investigation. It’s
about interest in going to the essence, to the origin of things and sometimes the result is inclined toward the fantastic and imaginative, but
it isn’t so much that. The process is a little heavy, stressful, with lots of
hard work, but it’s during the same process, as the ideas flow, that the
greatest satisfaction is found. This can be polished and it gives a final
result, maybe in the outcome one can start to fantasize.
In your opinion, what’s the architecture we’re going to see in a few
years going to be like? Will it have anything to do with the model that
you defend and with a respect for the environment and reduction of
energy consumption??
One can envision a trend toward more natural and human architecture as in the past 50 years more nature has been destroyed than in
the previous 5,000 years and now we’re already feeling the effects of
global warming.

Puebla de San Miguel es un pequeño pueblo del Rincón de Ademúz,
situado en las estribaciones de la Sierra de Javalambre, se encuentra situado a una altura de 1.100 metros, y posee múltiples atractivos
turísticos principalmente en su entorno natural.
Puebla de San Miguel is a small town in the Rincon de Ademuz, located in the foothills of the Sierra de Javalambre at an altitude of 1,100
meters, and has many tourist attractions, the majority in their natural
environment.
A Puebla de San Miguel se puede llegar por dos direcciones distintas, una es desde el propio pueblo de Ademúz, y la otra es desde
Losilla de Aras. Les recomiendo realizar la ruta desde Losilla porque
el paisaje es verdaderamente espectacular.
You can get there from two different directions, one from the town
itself Ademuz, and the other from Losilla de Aras. I recommend you
take the route from Losilla because the scenery is truly spectacular.
Para llegar a Losilla de Aras se ha de tomar la carretera CV-35 o
antigua carretera de Liria. Cuando se llega al pueblo de Aras de los
Olmos, se toma la carretera que nos queda a la derecha de la salida del pueblo, esta carretera es la CV-355, al llegar a la entrada de
Losilla nos encontraremos con una desviación a la izquierda, es la
CV-363 que lleva a Puebla de San Miguel.
En esta desviación hay un cartel que pone a Puebla de San Miguel
18 km. No se dejen engañar por esta distancia, porque parece que
18 km son pocos, pero en realidad son 18 km de curvas inacabables,
pero con un paisaje verdaderamente espectacular, que los dejará
atónitos nada más llegar al puente que pasa por encima del río Arcos, allí hay un antiguo molino abandonado y el río Arcos serpentea
por él con sus aguas cristalinas que riegan una pequeña fértil vega.
Yo les recomiendo que realicen aquí una primera parada, el paisaje
es fantástico con choperas, fresnedas y mimbreras a lo largo del río
donde se escucha cantar a los ruiseñores. A veces con un poco de
suerte se puede ver en este lugar sobrevolar a una colonia de buitres
leonados. El tiempo que se tarda en recorrer estos 18 km de curvas
es de una media hora aproximadamente.
Enebral primavera P. S. Miguel
To reach Losilla de Aras one has to take the CV-35 or the old Liria road.
When you reach the town of Aras de los Olmos, take the CV-355 road
that is on the right leading out of town. Upon reaching the entrance
to Losilla you’ll find a deviation to the left - the CV-363 - leading to
Puebla de San Miguel.
In this deviation there’s a sign that says “Puebla de San Miguel 18 km”.
Don’t be fooled by this distance – 18 kilometres may not seem much
- but although they’re 18 kilometres of endless curves, they come with
a truly spectacular landscape that will leave you absolutely stunned.
As you reach the bridge that passes over the river Arcos, there’s an
old abandoned mill through which the river Arcos - with its crystalline
waters that irrigate a small fertile plain - meanders through. I recommend you make a first stop here as the scenery is fantastic with poplar, ash and willows along the river where you can hear the nightingales sing. Sometimes with a little luck you can see round here a
colony of flying vultures. The time that it’ll take to travel these 18 miles
of curves is half an hour.
Sabinar rastrero- Pinar negral
A un kilómetro antes de llegar al pueblo, deberemos tomar una pista
a la derecha con un cartel de senderismo que indica a Las Blancas.
Ascenderemos por esta pista entre sabinares albares, y plantas aromáticas que impregnan el aire con olor a salvia, tomillo y espliego.
Subiremos hasta llegar a los 1400 metros donde nos encontraremos
con Las Blancas, éstas son las sabinas albares más longevas de la
Comunidad Valenciana, se les calcula una edad de más de 1000
años, y el nombre que reciben se debe a que la corteza de esta sabina es muy blanca. En esta zona, yo recomiendo repostar agua de la
fuente del abrevadero, porque en el ascenso no encontraremos otra.
Continuaremos el camino volviendo a la pista inicial, y comenzaremos a ver cómo el paisaje va cambiando mientras subimos en altura,
poco a poco las sabinas albares van dejando paso a los pinares
negrales con sabinar rastrero. El pino negro es uno de nuestros pinos de alta montaña más bello, aquí nos encontramos en la altura de
1600 metros. En nuestro avance veremos como los pinares negrales
desaparecen, quedando únicamente las sabinas rastreras, éstas forman un espectacular paisaje con formaciones llamadas en “piel de
leopardo” porque el paisaje parece talmente la piel de un leopardo.
En nuestro avance nos encontraremos con el refugio del Collado
Buey, que se encuentra en la base del Cerro Calderón o Alto de
las Barracas, que corresponde al punto más alto de la Comunidad
Valenciana, con una altura de 1836 metros. Continuando el camino,
llegaremos al Pino de Vicente o Pino de las Tres Garras, es un pino
albar monumental con más de 500 años de edad.
A partir de aquí comenzaremos el descenso por la pista del Pico
Gavilán, al final de la pista, nos encontraremos con la Fuente de la
Canaleja, donde podremos tomar un respiro, para continuar nuestro
descenso hasta el pueblo donde podremos tomar una pequeña comida en el único bar existente.
One kilometer before reaching the village, take a track to the right
with a hiking sign indicating “Las Blancas”. Go uphill along this track
between Juniper and aromatic plants fill the air with the smell of sage,
thyme and lavender. Climb up to 1400 metres where you’ll find “Las
Blancas”, the oldest Spanish junipers in Valencia, with an estimated
age of more than 1000 years. The name comes from the extreme whiteness of the juniper’s bark. In this area, I would recommend topping
up with water from the fountain of the water trough as you won’t find
another in your ascent.
Going back to the original track, you’ll begin to see how the landscape changes as you climb in altitude, Spanish junipers gradually give
way to black-pine forests with creeping juniper. The black pine is one
of our most beautiful high mountain pine trees which here we find at
a height of 1600 metres. On our way, we’ll see how the black pines disappear, leaving only the creeping junipers. These form a spectacular
landscape in formations called “leopard skin” as the landscape looks
just like the skin of a leopard. After, you’ll come across the shelter of
the Hill Ox, located at the base of Cerro Calderón or Alto de las Barracas, which corresponds to the highest point of the Valencian Community, with a height of 1836 meters. Continuing our journey, we arrive at
Pino de Vicente or the Pine of the Three Claws, which is a monumental
white Spanish pine that is over 500 years old.
From here you’ll begin the descent down the track at the Pico Gavilán.
At the end of the track, you’ll find the Fuente de la Canaleja, where you
can take a break, before continuing your descent to the village where
you can eat in the only existing bar.

La crisis termina en el momento en el que el individuo acepta la realidad. Probablemente este es el verdadero problema de España... Que
los gobiernos, bancos y particulares no quieren reconocer la verdad
y aplicarla a sus balances. De este modo evitamos el batacazo inicial pero prolongamos la crisis de forma innecesaria. Este problema
de aceptación de la realidad es trasladable al mercado inmobiliario.
The crisis ends in the moment that the individual accepts the reality
of the situation. This is probably the real problem in Spain ... that governments, banks and individuals fail to recognize the truth and apply
it to their balance sheets. In such a way we avoid the initial bump
but needlessly prolong the crisis. This problem of accepting reality is
transferable to the property market.
Existen claramente dos mercados inmobiliarios: El primero está formado por todos aquellos vendedores que mantienen precios anteriores a la crisis y que piensan que el mercado no se mueve debido
al deterioro de la economía y a la falta de crédito, estos vendedores
tienen la creencia de que tarde o temprano el mercado se moverá
y podrán vender o alquilar su inmueble en estos parámetros. Esto
es un claro ejemplo de negación de la realidad. Obviamente este
mercado está totalmente parado.
There clearly exist two housing markets: the first consists of all those
vendors who maintain their pre-crisis prices and think that the market
doesn’t move due to the deteriorating economy and lack of credit.
These vendors believe that sooner or later the market will start moving
and they’ll be able to sell or rent their property within these parameters. This is a clear example of denying reality. Obviously this market
is at a complete halt.
Existe otro mercado formado por vendedores que sí aceptan la realidad, y que ofertan sus inmuebles a precios de 2011. En las urbanizaciones de Puzol el año 2011 ha sido un año magnífico para este
mercado, algo más de 15 compraventas y cerca de 20 alquileres han
dinamizado brutalmente este nuevo mercado.
El segmento de precios más vivo es el que engloba todos los inmuebles que oscilan entre 500.000 € y 700.000 €, y el mercado de
alquiler demanda viviendas entorno a 2.000 € de renta mensual.
El stock de viviendas en 2.011 ha disminuido ligeramente y esto es
una gran noticia para el mercado, hemos pasado de unos 120 inmuebles a la venta a algo menos de 110. En estos momentos el número
de transacciones anual es más elevado que el número de nuevas
viviendas que se ponen a la venta en el mercado.

No es cierto que el mercado esté parado, todo lo contrario, lo que si
es cierto es que del mismo modo que no se pueden vender acciones
hoy en bolsa al precio al que se pagaban ayer, tampoco se pueden
vender casas en 2011 al precio al que se pagaban en 2.006. El mercado real de vivienda está funcionando con bastante normalidad, y
es que a pesar de la crisis griega, la prima de riesgo española, el
paro y todos los factores negativos que afectan a nuestra economía,
cuando los inmuebles están en precio, se venden.
There also exists another market consisting of vendors who do accept
reality and are offering their properties at 2011 prices. In Puzol’s urbanisations 2011 has been a great year for this market as more than 15
sales and about 20 rentals have significantly boosted this new market.
The most lively price segment is the one which covers those properties ranging from €500,000 to €700,000, and the housing rental
market requires houses with a monthly rental figure of around €2,000.
The housing stock in 2011 has decreased slightly and this is great
news for the market, as we’ve gone from about 120 properties for
sale to just under 110. At present the number of annual transactions is
higher than the number of new homes being offered for sale on the
market.
It’s not true that the market is stationary and, on the contrary, what is
certainly true is that just as you cannot sell shares on the market today
at the price that was previously paid for them, neither could properties
be sold in 2011 for the prices that were paid for them in 2006. The real
housing market is working quite normally and that, despite the Greek
crisis, the Spanish risk premium, unemployment and all the negative
factors affecting our economy, when properties are priced right, they
will sell.

“Después del cáncer me salen mejor las cuentas de la felicidad”

Después de superar dos leucemias, Sandra Ibarra dirige una Fundación que lleva su nombre. Un proyecto social y solidario que se
dedica a sumar esfuerzos frente al cáncer, la enfermedad del
siglo XXI.
Mujer optimista, insistes en que tu enfermedad te ha enseñado mucho...
La enfermedad te enseña, pero aprende quien quiere aprender.
El cáncer potencia lo que uno es y saca lo mejor de uno mismo,
si quiere. Hay personas que no quieren, que tienen miedo,
frustraciones, complejos...Algo totalmente comprensible, pero
gracias a dios yo tuve la capacidad y el optimismo y ahora
cada día que me levanto aprecio lo bueno. Pienso que estoy
fuerte, que tengo masa muscular, que me puedo ir a pasear,
que tengo saliva y lágrimas… ¡No tenía cuando superé
la leucemia por segunda vez! Cualquier cosa es
mejor que tener cáncer. Ahora me salen mejor las
cuentas de la felicidad.
Después de superar dos veces la enfermedad
decides dedicarte a la solidaridad.
Me dedico a lo que me llena, que es ayudar
a los demás. Aplico mis conocimientos en
publicidad y marketing, mi experiencia como
paciente y mi imagen pública, para ser el altavoz
de muchas personas. La Fundación es mi Leyenda
Personal.

How does the ‘Sandra Ibarra Foundation for Solidarity against
Cancer’ work?
He intentado profesionalizar la ONG. Lo que hacemos es crear proyectos a medida. La finalidad es que la empresa que los financie
tenga un beneficio y nosotros consigamos hacer una campaña de
prevención, hacer una casa de acogida, entregar fondos a la investigación... Son proyectos que parten de los ciudadanos y que vuelven
a los ciudadanos. Hoy por hoy pueden, por ejemplo, colaborar comprando productos solidarios como la plancha Pink para el cabello
de la firma ghd, un pañuelo que Custo ha diseñado para la Fundación o el nuevo bolso de Betty Boop.
I have tried to professionalize the NGO. What we do is create tailormade projects. The aim is that the company that finances them has
a benefit and we manage to make a prevention campaign, make a
shelter, fund research ... These are citizen-based projects. Nowadays,
for example, they can join our efforts by purchasing a hair straightener
from the company ghd or a headscarf that Custo has designed for us.
Gran parte de tu energía se destina a la ‘Casa de la Fundación’, un
proyecto que muy pronto será realidad.
Sí, es una casa de acogida para niños en tratamiento que tienen que
ser atendidos en Madrid y provienen de otras comunidades autónomas. Queremos que durante el tratamiento puedan pasar los fines de
semana cómodamente. Es una casa en los Ángeles de San Rafael,
en plena naturaleza. Un espacio de ocio solidario. Llevamos 150.000
euros recaudados gracias a la colaboración de Custo. Doce de los
veintidós euros que cuesta su pañuelo en las tiendas se destinan a la
Fundación. El reconocido arquitecto Joaquin Torres está diseñando
el proyecto de la casa.
The disease teaches you, but one learns what one wants to
learn. The cancer strengthens you and brings the best out of
yourself, if you want it to. Some people don’t want it, they may
be frightened, frustrated, have complexes... Something totally
understandable, but thank god I had that capacity for
optimism and now everyday I wake up I appreciate all the
good things I’ve got. I think I’m strong, I have muscle mass,
can go for a walk, I have saliva and tears ... I didn’t have
that when I overcame leukemia for the second time!
Anything’s better than having cancer. Now I’ve gained a
greater degree of happiness.
After overcoming the disease twice you’ve now

the fight.
I do what makes me feel good, which is helping
others. I apply my knowledge in advertising and
marketing, my experience as a patient and my public
image, towards being the spokesperson for many
people. The foun dation is my personal legend.

Much of your energy goes to the ‘House of the Foundation ‘, a project
that will soon be reality.
Yes, it’s a shelter for children undergoing treatment that have to be attended to in Madrid and come from other autonomous Communities.
What we want is that during treatment they can spend the weekend
in comfort. It is a house in Los Angeles de San Rafael, right in the
countryside; a place for leisure with solidarity. We’ve raised € 150,000
thanks to the help of Custo. Twelve of the twenty-two euros that his
headscarf costs are for the foundation. Joaquin Torres, the renowned
architect, has designed the house.

There’s a strong emphasis on
early diagnosis, but you were
detected with the disease at a
much more advanced stage.
Hay dos enfermedades la física
y la emocional. A mi no me lo cogieron a tiempo. Tenía el 98 por
cien de la médula dañada y aquí
estoy. Cada caso es diferente.
Pero está claro y quiero hacer
hincapié en que hay determinados tipos de cáncer, como el
de mama, que si se detectan a
tiempo son mucho más fáciles
de tratar.
There are two illnesses, the physical and emotional. I wasn’t caught
in time. I had 98 per cent of my
spinal cord injured and here I
am. Each case is different but it’s
clear - and I want to emphasize
this - that there are certain types
of cancer, such as breast cancer,
which if detected early are much
easier to treat.
Donáis fondos a la investigación. ¿Es cierto que el estilo de
vida influye a la hora de desarrollar un cáncer?
Una de las herramientas fundamentales en la erradicación del
cáncer es la investigación. Cuando conozcamos el origen y las
causas del cáncer lo podremos
curar. Tal vez cuando lo conozcamos dejemos de especular.
Sabemos que es multifactorial
y que por ejemplo, la obesidad
está relacionada con determinados tipos de cáncer, también el
tabaquismo, algunos componentes químicos como el amianto...
Poco a poco se van identificando factores, falta saber por qué unas
personas desarrollan un cáncer y otras no...Por eso es tan importante
la investigación.
¿Qué le dirías a quien en estos momentos tiene esta enfermedad?
A los pacientes les decimos que sean protagonistas de su vida aunque tengan cáncer. El cáncer no es un paréntesis, ¡sino toda mi vida
hubiera sido un paréntesis!. Para todo es fundamental el optimismo.
En la enfermedad ocurre lo mismo, necesitas pensar que todo va a
salir bien. Yo no podría vivir pensado que voy a volver a recaer, que
cualquier dolor de cabeza es un tumor... Cuando tienes cáncer es
cuando mas ganas de vivir te entran. ¡De repente tienes una lucidez…!, Se te organiza la lista de prioridades...¡se te olvida hasta la
crisis....!
You contribute to research funding. Is it true that lifestyle has
an influence when developing a
cancer?
One of the key tools in the eradication of cancer is research.
When we know its origin and its
causes we can then cure it. Maybe when we know about its origin
we can stop speculating about
it. We know it is multi-factorial
and that, for example, obesity is
associated with certain types of
cancer, as well as smoking and
some chemicals such as asbestos ... Little by little contributing
factors are being identified. What
isn’t known is why some people
develop cancer and some don’t ... that is why research is so important
What would you say right now to whoever has the disease?
To the patients we tell them to be protagonists of their own lives. Cancer is not a break – in that case my whole life would have been a
break!. Optimism is fundamental for everything in life. The same thing
applies with illness; you need to think that everything will be okay. I
couldn’t live thinking I’m going to get it back again, that any headache
is a tumour ... it’s when you have cancer that you’ve got the most will to
live. Suddenly you see clearly! You sort out that list of priorities that’s
been forgotten about until the crisis...

Con la primavera entramos en la época cálida del año y nuestro cuerpo empieza a abrirse y activarse. Nuestro tono vital mejora, recuperando el humor y la alegría.
With the coming of springtime we enter into the warmest season of
the year and our body begins to open up and become active. Our
vitality increases and we recover our humour and sense of joy.
Sin embargo, hoy en día cada vez son más frecuentes los casos de
fatiga, cansancio y falta de vitalidad que se presentan justo al entrar
esta estación. Esto sucede cuando en invierno no le hemos dado a
nuestro organismo los nutrientes y minerales necesarios o cuando se
ha abusado de grasas saturadas, estimulantes como café o tabaco,
azúcar, medicamentos, alcohol... todas ellas sustancias que afectan
directamente al hígado, que es el encargado de depurar los tóxicos.
However, nowadays there are more and more cases of fatigue, tiredness and lack of vitality that come about just when entering into this
season. This happens when, during winter we have not given our bodies the necessary nutrients and minerals needed or when we have
overdone saturated fats, stimulants like coffee or tobacco, sugar, medicines, alcohol ... all those substances that directly affect the liver,
which is in charge of purging toxins.
En la primavera el hígado se activa, precisamente para ayudar al
cuerpo a depurarse y prepararse para el calor. Si hemos introducido
demasiados tóxicos en nuestro organismo, el hígado incrementa su
actividad en un intento de eliminarlos. En el proceso de eliminación,
las sustancias tóxicas pasan al torrente sanguíneo, pudiendo ocasionar cansancio, falta de vitalidad, náuseas, mareos o falta de apetito.
Un hígado sano nos da vitalidad. Un hígado sobrecargado o intoxicado nos da cansancio, mal descanso nocturno, alergias y trastornos en
la piel y en las vías respiratorias.
Un hígado inflamado o muy contraído crea irritabilidad, frustración y
rabia.
Para tener el hígado en condiciones debemos evitar comer en exceso,
aunque sean alimentos de buena calidad. Las harinas, grasas, fritos,
azúcares, lácteos, el exceso de proteína animal, la ingestión excesiva
de fármacos o complementos, causan un agotamiento hepático.
La vida sedentaria, el estrés, la tensión, los conflictos familiares o laborales también afectan la función hepática
Para mejorar el funcionamiento de nuestro hígado te proponemos
una dieta ligera y equilibrada, una cena temprana y ejercicio físico.
En primavera deberíamos evitar:
1. El excesivo consumo de medicamentos y otras sustancias químicas
como, pesticidas, conservantes y colorantes que se encuentran en
alimentos procesados y frutas, verduras, cereales y legumbres que
no son de cultivo biológico.

y nutren el hígado.
2. Una taza de caldo de verduras al día con una cucharadita de MISO.
Nos ayudará a mantener en equilibrio nuestro intestino.
3. Verduras depurativas: Alcachofa, achicoria, acedera, espárragos
trigueros, pepino, cebolleta, rabanitos, pimiento verde, apio, setas,
champiñones... Estimulan la función hepático-biliar, ayudando a limpiar y eliminar tóxicos y grasas saturadas.
4. Germinados: Aportan una gran energía vital de crecimiento y expansión, además de abundantes minerales y vitaminas B y C.
5. Frutas y verduras frescas y sus zumos.
6. Toques ácidos en aliños, a base de mostaza, vinagre de arroz o de
manzana, zumo o ralladura de limón o naranja, vinagre o pasta de
umeboshi, concentrado de manzana...
In springtime it’s time to take:
1. Green leafy vegetables: cabbage, broccoli, Chinese cabbage, lettuce, radishes and leaves of turnips, dandelion, arugula, parsley, the
green part of leeks and spring onions, watercress, lettuce ... all clean,
scrub and nourish the liver.
2. A cup of vegetable broth with a teaspoon a day of MISO will help us
to maintain our intestines in equilibrium.

máscara marrón, que favorece mucho a las rubias.

and reds for lips, peach and rose for cheeks and in the background

How can we apply our make-up quickly and easily?
The essential steps are, firstly, hydration, then applying a coloured
powder with the help of a thick brush all over your face. Afterwards,
continue to apply concealer or highlighter in the area of the rings under your eyes to lighten your look. Complete the makeup with eyelash
mascara – personally, I prefer black. Finally, a touch of colour on your

field. What have you learned from them?
The most important thing is to always have your feet on the ground,
whoever you are working with. Giving the best of yourself and knowing

¿Cómo podemos maquillarnos de forma fácil y rápida?
Los pasos imprescindibles para nuestro día a día son en primer lugar
la hidratación, aplicaremos unos polvos con color con la ayuda de
una brocha gruesa por todo nuestro rostro, continuaremos aplicando
corrector o iluminador en la zona de las ojeras para así iluminar nuestra mirada. Completaremos el maquillaje con máscara de pestañas,
personalmente prefiero la negra. Finalmente un toque de color en las
mejillas para iluminar el rostro y crear volúmenes. En los labios basta
con un gloss en tonos rosas o rojizos.
En más de quince años de profesión has tenido la oportunidad de
trabajar con personas muy relevantes en su ámbito profesional.
¿Qué has aprendido?
Para mí lo más importante es tener siempre los pies sobre la tierra,
trabaje con quién trabaje. Ofrecer lo mejor de mi misma y saber que
hay que renovarse constantemente. Esta profesión me entusiasma y
después de 17 años con pinceles y paletas entre las manos aún siento
ese ‘gusanillo’ en la barriga antes de cada nuevo trabajo. ¡Fantástica
sensación!

Se ha puesto de moda en apenas tres meses convertiéndose en un
‘must go’ para los que disfrutan de las tapas creativas y los platos
más tradicionales. El secreto de ‘Picoteo Devicio’ es ofrecer tapas que
en ningún otro sitio habéis probado, porque no existen, y proponer
platos más típicos, como arroces. Pero donde realmente sorprende,
es en los precios. ‘Devicio’ demuestra que gastronomía no rima con
precios altos.
Bien es cierto que la chef Silvia Gavara y su marido Manolo Peris no
son precisamente novatos, ya que tras 20 años en el mundo de la restauración (Las Meninas o el restaurante Hotel Ferrero) apuestan por
una máxima : ofrecer una gran variedad de tapas creativas a precios
asequibles en un ambiente desenfadado. Más de 60 platos componen la carta, con precios que van desde 1 euro (el wonton de verduras
al curry) hasta un máximo de 7 euros (el steak tartar).
No te puedes perder el famoso Mac-Vicio (¡una mini hamburguesa
horriblemente deliciosa!), las berenjenas crujientes con miel (¡de vicio
total!), el corte de helado de sobrasada (¡sorprendente!) o el cigarrillo
de sobrasada, queso y cebolla confitada...
Un consejo, llamar para reservar.
In just three months It has become the in-place, a “must go” for those
who enjoy creative tapas or traditional dishes. This is the force of Picoteo Devicio: being able to offer tapas that haven’t been tasted anywhere else (because they don’t exist) and more typical dishes such
as its rice dishes. But where it really surprises is with its prices; Devicio
shows that gastronomy doesn’t have to mean high prices.
It must be said that the chef Silvia Gavara and her husband Manolo
Peris are no novices, having been around for 20 years in the catering
trade (Las Meninas and the restaurant at Hotel Ferrero). Her proposal
is simple: being able to eat a variety of creative tapas at affordable

MODO DE HACERLO:
Pondremos al fuego una cacerola mediana con el aceite, la cebolla
picada, un poco de sal y el pimentón dulce. Lo pocharemos bien y
le añadiremos las habas y las alcachofas peladas y cortadas en cuatro porciones. Ayudados con la cuchara de madera le daremos unas
cuantas vueltas hasta que se rehoguen.
Añadiremos el agua y las dos
pastillas de caldo y esperaremos a que hierva durante treinta minutos a fuego lento para
echarle las dos cucharadas de
harina diluidas en una tacita con
un poco de agua.
Removeremos bien para que no
se formen grumos y lo probaremos de sal. Por último cortaremos la cebolla tierna en finas láminas y las colocaremos sobre
la superficie del guiso simulando los rayos de sol.
Dejaremos que hierva cinco minutos más, apagaremos el fuego y mejor que repose un tiempo antes de servirlo.
Sugerencia: Al guiso de cuaresma podemos añadirle unas albóndigas de bacalao para que
el plato quede más completo.

METHOD:
Put a medium-sized saucepan on to heat with the oil, chopped onion,
a little salt and sweet paprika. Sauté well and then add the broad
beans and peeled artichokes, previously cut into four pieces. With the
help of a wooden spoon, stir it all around whilst it gently sautés.
Add the water and the two stock cubes and leave to simmer gently
for thirty minutes over a low heat
before adding the two tablespoons of flour previously diluted in a
cup with a little water.
Stir well so that no lumps appear
and then taste for seasoning. Finally, cut the onion into thin slices and place them on the surface of the stew simulating the
sun’s rays.
Let it simmer for five more minutes, turn off the heat and let it rest
a while before serving.
Tip: To make this dish a meal in
itself, add some cod balls to the
Lenten stew before serving.

Al no pasteurizar, el sabor y los aromas de los pastos se reconocerán al degustar el queso una vez terminado el proceso de maduración. El resultado, textura firme pero mantecosa, aroma y sabor que nos traen los henos y las hierbas frescas que según la estación
del año serán más o menos intensos, y al final, reducción y maderas nobles.

nuestro veterinario cuando le realizó la revisión y análisis. Se adapta
con facilidad a su entorno. Es algo curioso y movido, pero muy bueno.

longer look after him properly due to a change in their working hours.
He spends many hours on his own and isn’t coping well with it. He’s

hambriento, fue recogido por una chica que le devolvió su salud y su

wandering the streets aimlessly and weak and hungry, he was picked
up by a girl who gave him back his health and happiness. He’s extremely friendly and playful. Very affectionate with everyone, he loves

Desde hace 420 días ¡cuánto tiempo para un perro! me llaman WILLY.
Fue a partir de que a Fernando, mi dueño, le ofrecieran un trabajo, tras
una larga temporada sin encontrar ninguno. Se puso muy contento
y me alegré por él, aunque yo estaba encantado de disfrutar de su
compañía todo el rato: jugando, haciendo footing, viendo la tele... El
trabajo era en Barcelona, pero a mí no me importaba ya que con tal
de estar juntos me hubiera ido al fin del mundo. Desgraciadamente en
la casa donde había realquilado una habitación no contaban conmigo!...No tuvo más remedio que llevarme al piso de un “amigo”, dejándole parte de sus ahorros para mis gastos. Conteniendo las lágrimas,
me prometió que volvería a buscarme, pero el tal “amigo” decidió no
darle esa oportunidad y, diciéndole que escapé detrás de una perra
en celo, se apresuró a desentenderse de mí dejándome en una estrecha calle de una ciudad desconocida.

after a long time without finding any. He was very happy and I was
happy for him, although I was happy to benefit from his company all
that time: playing, jogging, watching TV ... The work was in Barcelona,
but I didn’t care. As long as we were together I would have gone to
the end of the world. Unfortunately, in the house where he had sublet
a room they didn’t want me! ... He had no choice but to take me to a
“friend’s” flat, leaving some of his savings with him to cover my expenses. Choking back the tears, he promised he would return for me, but
this so-called “friend” decided not to give him that opportunity and,
saying that I had run away after a bitch on heat, was quick to ignore
me, leaving me in a narrow street in an unfamiliar city.

estoy preparado para “adoptar” a otro con quién compartir
mis juegos.

“Al cáncer se le gana si tomamos conciencia. Porque siendo
conscientes seremos solidarios sin tener que esperar a que nos
suceda a nosotros para entender que el cáncer es un problema
de todos”.
La Fundación Sandra Ibarra de Solidaridad Frente al Cáncer nace
de la necesidad de impulsar y coordinar esfuerzos ante esta enfermedad.
Sumar voluntades para tejer una red universal partiendo de las organizaciones locales, abrir nuevos caminos para mejorar la calidad
de vida de los pacientes y financiar la investigación, son algunos de
los objetivos que animan esta Fundación que nace del compromiso moral de Sandra Ibarra. Sus más de trece años de trabajo frente
al cáncer, primero como paciente, después como “activista” ante la
enfermedad a través de conferencias, coloquios o encuentros con
pacientes y asociaciones, y su influencia pública y capacidad de diálogo con todos los sectores implicados -incluidas las administraciones-, le otorgan un singular papel de prescriptora que la Fundación
quiere canalizar.
The Sandra Ibarra Foundation for Solidarity against Cancer arose
from the need to promote and coordinate efforts against this disease.
Summing up people’s willpower to build a universal network starting
from local organizations, opening new pathways to improve patients’
quality of life and funding research, are some of the goals that animate this Foundation that was born out of Sandra Ibarra’s moral commitment. She’s been working more than thirteen years against cancer,
first as a patient, then as an “activist” against the disease through
lectures, symposiums and conferences with patients and associations. Her public influence and capacity for dialogue with all relevant
sectors -including public administrations- give it a unique prescriptive
role that the Foundation wants to channel.
La efectividad ante el cáncer exige comprometer a las instituciones
públicas y concienciar a los ciudadanos. Es fundamental, además,
mejorar la calidad de vida de los pacientes y personalizar los tratamientos frente a una enfermedad que debe empezar a abordarse
como lo que es, multidisciplinar. Porque un tratamiento integral del
cáncer necesita de la aportación de diversos especialistas.
Acabar con la discriminación en el acceso a los tratamientos en función del lugar de residencia se plantea también como un objetivo de
la Fundación: todas las personas afectadas deben beneficiarse en
cualquier parte de las posibilidades reales que tienen para su curación o alivio.

The effectiveness against cancer requires both compromise from public institutions and education of the citizens. Furthermore, it is essential to improve patients’ quality of life and tailor treatments against a
disease that should be treated as it is - multidisciplinary. Why? Because a comprehensive cancer treatment requires the input of various

Ending discrimination in the access to treatments according to place
of residence is also raised as an objective of the Foundation: all those
affected should benefit in whatever part of the real possibilities they
have for their recovery or relief.
