Do you wonder how many vegetables and fruits you should eat at a meal? Look at your plate. Vegetables and fruits should fill up half of it. To add more vegetables and fruits to your plate, begin by taking small steps, making one change at a time. Try to: • Buy more vegetables and fruits when you shop. • Snack on apples, pears and peaches; the peel has lots of nutrients too. • Try a vegetable or fruit you haven’t eaten before. • Snack on snap peas and celery. • Season vegetables with lemon juice, herbs or spices. • Add fruit such as berries and bananas to your breakfast. • Brighten your plate with vegetables that are red, orange and dark green. AzNN 9/14 Chicken Vegetable Soup with Kale Ingredients ½ cup peeled and chopped onion ¾ cup chopped carrot 2 teaspoons vegetable oil 1 teaspoon ground thyme 2 cloves peeled and finely diced garlic 3 cups canned low-sodium chicken broth ¾ cup tomatoes, diced 1 cup cubed, cooked, skinless chicken 1 cup cooked brown rice 2 cups chopped kale Directions 1 2. 3. 4. 5. 6. 7. 8.
