Una familia dedicada con toda su alma a la elaboración del cava A family whose essence is dedicated to making cava C A V A Variedades: Macabeu, Xarel-lo, Parellada del Penedés. Viñas viejas de más de 30 años de poco rendimiento y gran concentración de aromas. Vendimia: Manual. Septiembre. Vinificación: Cupage especial de fermentación lenta tradicional en depósitos de inoxidable a temperatura controlada 14ºC. Crianza y botella: Segunda fermentación en la misma botella de 37’5 cl., crianza mínima de 24 meses. Aspecto: Limpio y brillante de color amarillo pajizo pálido con reflejos verdosos. Burbuja fina y abundante con buena formación de lágrima y corona. Aroma: Limpio y franco, donde los aromas de fruta blanca como la manzana se funden con el bouquet fino y complejo de panadería, brioche y frutos secos. Impresión final: Seco y glicérico, el postgusto es perfectamente armonioso con los aromas de pastelería de la crianza. Recomendaciones: Ideal como aperitivo. Para maridar con pescados y mariscos, ostras, caviar y jamón ibérico de bellota. Fecha de degüelle: Compromiso de la bodega y garantía que el cava está siempre en óptimas condiciones en el mercado. ¿Por qué Bayanus? Sacharomyces Bayanus es el nombre que recibe la levadura que lleva a cabo la “toma de espuma”, o segunda fermentación en la botella de cava. El bouquet del cava tiene su origen durante la larga crianza del cava en contacto íntimo con las lías de la autólisis del Sacharomyces Bayanus. En la botella de 375 ml., la superficie de contacto del cava con sus lías es mucho mayor que en otros formatos superiores y, por tanto, mantiene mucho más la frescura de los aromas primarios, al tiempo que adquiere mayor bouquet en menor tiempo de crianza. Varieties: Macabeu, Xarel-lo, Parellada from Penedés. Old vines at least 30 years old that produce small quantities of grapes with intense flavour. Harvest: By hand. September. Production method: Specially blended using traditional slow fermentation in stainless steel tanks at 14ºC. Ageing and bottling: Second fermentation in the same 37,5cl bottle and left to mature for a minimum of 24 months. Appearance: Clean and bright, pale straw colour with green hues. Abundant small bubbles with well-developed bead and crown. Aroma: Clean and natural, white fruit aromas such as apple are deepened with a delicate and complex bouquet of freshly-baked bread, brioche and nuts. Finish: Dry and glyceryl, the finish is in perfect harmony with the patisserie aromas. Recommendations: Ideal as an aperitif. Goes well with fish and seafood, oysters, caviar and top-quality acorn-fed Iberian ham. Disgorgement: The winery is committed to guaranteeing that the cava always arrives on the market in the best possible condition. Why Bayanus? Sacharomyces Bayanus is the name of the yeast that produces the “foaming moment” or second fermentation in the bottle. The cava’s bouquet derives from the prolonged contact during ageing with the lees produced as Sacharomyces Bayanus breaks down. In a 375ml bottle the cava has greater contact with the lees than in larger bottles, with the result that the freshness of the primary aromas is maintained and the cava develops a bigger bouquet in a shorter period of maturation.
