Cosecha manual, molienda y enfriado de la vendimia. Maceración con los hollejos por 12 días y
escurrido. Fermentación con levaduras seleccionadas. Centrifugado durante el proceso de fermentación dejando alrededor de 100gr/lt de azúcar natural de la uva por litro y un chispeante
