P ORK JOWL WITH PEDRO XIMENEZ OSMOSIS PEAR This recipe brings flavors from a world known Spanish region: Andalusia. Iberian pigs are the base for this enjoyment of aromas and textures with an Andalusian duende (touch). The Spanish marinate, the freshness of the fruit and the wine are all perfectly combined to evoke the art and joy of the South of Spain. INGREDIENTS 4 2x1 inches pieces of pork jowl 1 conference pear 1 teaspoon of sweet pimentón (Spanish paprika) PREPARATION Fresh rosemary Fresh thyme 4 tablespoons of extra virgin olive oil Salt Black pepper 1 small glass of brandy Sweet wine, preferably a Gewurztraminer D.O. Somontano mixed with a sweet wine of Jerez 1 Mix in a bowl mix the rosemary, thyme, paprika, salt, black pepper, the small cup of brandy and the olive oil. El cerdo ibérico sirve de base para disfrutar de los aromas y texturas con el “duende” andaluz. El marinado “a la española”, el frescor de la fruta y el vino se combinan perfectamente para evocar el arte y la alegría del sur de España. INGREDIENTES 4 Tacos de papada de 6 cm de largo por 3 cm de ancho 1 pera conferencia PREPARACIÓN 1 cucharadita de pimentón dulce Romero fresco Tomillo fresco 4 cucharadas de aceite de oliva virgen extra Sal Pimienta negra 1 copita de brandy Vino dulce; preferiblemente un Gewürztraminer D.O. Somontano mezclado con un vino dulce de Jerez 1 Mezclamos en un bol el romero, el tomillo, el pimentón, sal, pimienta negra, la copita de brandy y el aceite de oliva. Incorporamos los trozos de papada y dejamos marinando durante una hora y media. 2 Sacamos unas esferas de pera con un sacabolas y las ponemos a macerar con el vino de Jerez y el Gewürztraminer durante media hora. Pasado este tiempo, las colocamos en una bandeja de horno con el vino de la maceración en el fondo y horneamos durante diez minutos a 180ºC. Retiramos las bolas de pera y dejamos reducir el vino en el horno durante cinco minutos más. 3 Pasamos por una sartén a fuego vivo los trozos de papada hasta que se doren.
