Growing up
around expert
and traditional cooks in Tijuana,
Mexico, Chef Marcela was raised to be
passionate about food. Marcela
jumped straight into a culinary life with
her first job working at her aunt’s
cooking school in Baja, Mexico. She
realized she too wanted to pursue her
growing love for food full time and
enrolled in the Los Angeles Culinary
Institute. She continued her education
at the Ritz Escoffier Cooking School in
Paris where she became trained as a
classic French pastry chef.
In August 2009, Marcela was
given the chance to showcase her
family recipes when she released her
first cookbook titled FRESH MEXICO:
100 Simple Recipes for True Mexican
Flavor (Clarkson Potter). With the
book, Marcela became the advocate for
great Mexican food that delivers in
freshness and flavor without forcing
home cooks to track down hard-to-find
ingredients or spend hours at the stove.
Soon after her book release,
she landed a dream job as the host of
her own Food Network show, “Mexican
Made Easy.” The show made its debut
early in 2010 and films in San Diego,
where Marcela currently resides.

Barbara Medina is an Emmy Award-winning reporter for Univision San Diego and Telemundo
33. She currently produces and presents a weekly segment about technology and internet
news on both newscasts, Tuesdays at 6pm and 11pm on Telemundo 33 and Fridays at 6pm
and 11pm on Univision San Diego. She is also the Interactive Producer and Reporter for both
networks’ websites. Barbara received a dual Bachelor’s Degree in Journalism and French
from San Diego State University. She was born and raised in San Diego, which is why she
likes to give back to her community by being a mentor in the Hermanitas program for MANA.

Legislative Advocate
Western Center on Law and
Poverty
Mayra Alvarez has primary
oversight responsibility for
coordinated and timely
implementation of the public health, prevention,
and healthcare workforce policy provisions in the
Affordable Care Act. Previously, Ms. Alvarez
served as a Legislative Assistant for Senator
Dick Durbin (D-IL), the Majority Whip of the U.S.
Senate, where she advised the Senator and
helped develop his legislative agenda on health
issues. Prior to working in the office of Senator
Durbin, she served as a Legislative Assistant for
then-Congresswoman Hilda L. Solis, the chair of
the Health Task Force for the Congressional
Hispanic Caucus. Ms. Alvarez began her work in
Washington D.C. as a David A. Winston Health
Policy Fellow in the office of then-Senator Barack
Obama. She completed her graduate education
at the School of Public Health at the University of
North Carolina at Chapel Hill and her undergraduate education at the University of California
at Berkeley.
Vanessa Cajina has defeated
budget cuts that would have
seriously hurt the health of over
7 million low-income Californians enrolled in the
Medi-Cal program by working with members of the
Legislature and California’s congressional delegation. Her career has been dedicated to improving
health care for vulnerable people, including implementing the Affordable Care Act, connecting
Californians to high-quality assistance in accessing
health care, and expanding access to language
services in pharmacies. She has previously advocated for the Latino Coalition for a Healthy California and the California Immigrant Policy Center and
was a certified application assistant for Medi-Cal
and Healthy Families, where she secured health
insurance coverage for over 700 children in Yolo
County. Ms. Cajina is a proud graduate of the University of California at Davis, an avid baseball fan,
and sits on the board of the California Latino Capitol Association.
