The use of covers of plastic is one of the alternatives that are implemented to control the temperature of the water in reservoirs that are dedicated to put on weight of tilapia. The covers of plastic catch the heat during the hours of the day and retain the heat during the coldest hours of the night, other one of the advantages is that they reduce considerably the depredation of the fish for the birds and insects, increasing this way the percentage of survival. The ideal range of temperature of the water for the culture of the tilapia is between 25 and 30ºC. The species of fish that was studied under this system was the Tilapia Chitralada, since he adapts to heights on 1700 msnm. This type of tilapia has major daily profit of weight, better food conversion, minor death rate and major adjustment, as it was observed in the project of food safety realized by UNISARC in cofinancing of COLCIENCIAS and ANSPE during the year 2013 and 2014 in the verdeas of the south of Santa Rosa. Nowadays this system is implemented in UNISARC's facilities. Key words: production of tilapia, reservoirs, plastic covers, food safety, reproduction
