This great “Bazaar” lives up to its name. It has over 4000 stores, 20 internal markets, 60 streets, 20 gates, and many restaurants, coffee-shops and tea parlors; all inside this huge bazaar. Boasting a colorfull arch roof, this market, also known as Kapali Çarsisi, is characterized by its absolute chaos and noise. You can see people coming out from the stores offering products aloud such as jewelry, glassware, porcelain; inviting you to try on the latest fashion in silk and leather; and persuading you to stay as long as you want, granted you’ll shop. One tip: besides buying, take the opportunity to enjoy the chaos. Some feet away from the crowd, you can sit and have a cup of coffee facing the madness: an unforgettable experience. 38 Eighty kilometers away from the capital of Thailand, in the Ratchaburi Province, this floating market has been recognized by world tourism as one of the most attractive in the area. Known among Thai people as the “Klong Lat Phli”, this market opens every day from dawn till noon and offers a wide variety of products, from Buddha statues and eastern spices, to all kinds of fresh fruit and vegetables. You can tour the market walking along its shores or traveling on typical boats available for tourists. Leaving Bangkok very early in the morning can prove to be a bad decision, because of the heavy traffic you’ll encounter in that city. Thus, we recommend you stay at hotels close to the market, so that you may go early in the morning when it is still quiet and you can stroll and shop at ease. “Cocina para el alma” (Cooking for the soul) is the title of Heidi Dettwiler´s book, and also what she does at her home in the north of Chile, where the hibiscus flower as it was the Polynesia, and morning brings yoga or meditation, Indian tea, bread, juice, jams and granola, everything homemade, except for the tea. People come to Miravalle enchanted by tales of its massages, yoga, workshops of dreams, Ayurvedic medicine, Buddhism and the unique, unbelievably tasty, gastronomy of that who avoiding meat, dominates the veggie. 61 Siendo un alga impopular, el cochayuyo a em s e sa roso, es na ente ri a en fi ra, bueno contra el cansancio y el hipotiroidismo Though unpopular, the cochayuyo is tasty and healthy. Rich in fiber, this seaweed is good for energy and helps prevent the hypothyroidism. 62 With green and blue eyes, half Swiss half Chilean, words of wisdom, voice in peace, and decades as therapist, Heidi is Buddhist and grows the ingredients necessary to teach her guests about cooking outside the chain of pain that, as she explains, comes with every piece of meat. The recipes are plenty - over eighty shown in her book -, using ingredients from around the globe her workshops are much about food as they are about philosophy, medicine and cultures of the world. Each ingredient has a story. Soy is undoubtedly queen, firmly on the throne along with the quinoa, the latter equipped with all the essential amino acids. Many of the ingredients used are grown in Miravalle. The two veggies, each one in its own way, are protagonist in recipes like Indian-style tofu - spicy and intense, good for internal heat recovery -, Thai-style tofu – with coconut milk and peanut sauce -, quinoa risotto - delicious and full of protein - and quinoa and spinach pie. Four recipes among many that, in addition to their great taste and goodness, share in common the fact of not requiring animals, and do requiring ghee. Clarified butter, toxin-free, ghee is a cooking oil that doesn´t burn, and may be used without worries numerous times. It is the base over which the tofu is fried, as well as fenugreek seeds, cumin, Kummel, mustard, paprika, onion and bay leaves, as many other ingredients in addition to the “cochayuyo” seaweed, the most unpopular. 63 Miravalle cuenta con 13 cómodas cabañas. Miravalle has 13 comfortable cabins. Once lunch is set, a bell is used to call the guests resting about. For a Saturday lunch, the kitchen is hectic with all hands involved in the “cochayuyo” pie recipe. “I remember how I was forced to eat this as a girl,” says one of the students, a teacher that came to Miravalle by recommendation and now occupies herself squeezing an ingredient of a childhood trauma. Avoided by Chileans in general, this seaweed is a great food source, low in fat and high in fiber, good against exhaustion and cholesterol. It is delicious combined with juniper, turmeric, bay leaves, raisins, olives and pumpkin, the way Heidi makes it, a proven success always to disappear as guests take their second rounds. Once cooking is done, a bell calls from the kitchen onto the whole of Miravalle, vibrating over the pool, the meditation pagoda, the massage room, the therapeutic tubs, the jacuzzi and the 13 comfortable cabins, calling those who didn´t come to learn how to cook, but still wish to eat, rest and heal. For a weekend away with the couple or alone, drawn by a spiritual quest or longing for a break off an exhausting way of life, Miravalle serves great recipes to feed and live, beyond the kitchen, a path of happiness and conscience. This article follows his successes up to the city where hipsters “keep it weird,” a destination in which his creativity has found special acceptance. Some of these stories were used in his first feature film Fail and he hasn’t stopped since. After two successful productions, F*ck My Life and its sequel F*ck My Wedding, he is now working on Aftershock, a thriller produced and co-written by Eli Roth, the director of the spine-chilling saga Hostel, producer of The Last Exorcism and actor in Tarantino’s Inglorious Bastards. Aftershock – inspired by the earthquake that shook Chile in February, 2010 – which will be financed by Cross Creek Pictures (Black Swan) and Vertebra Films, will be Nicolás’ first time directing an Englishspeaking film with a mostly North American cast. 2 1. TT Hipster City: Keepin’ it Weird One of Nicolás’ favorite cities is Austin Texas, in the United States, a city that in 2012 will be hosting one of the 20 races for the Formula 1 Championship. “Austin is a paradise within Texas, the world capital for hipsterism – the category for young people who stay away from the mainstream – and whose slogan is Keep Austin Weird. People are amiable and there are always new bands playing their music around the corner,” says Nicolás, adding that he has not missed out on the city’s film festivals Fantastic Fest and SXSW – its last version was in March – and that the city is also a celebration of music and technology. Austin is a destination that brings him closer to his art. “Plus, this is the location for Robert Rodriguez’ (Sin City and El Mariachi) headquarters and Troublemakers Studios, where I had the pleasure of working when I made Santos (Chilean-Spanish film).” In his opinion, an unbeatable option for staying, or just hanging out, is The Driskill Hotel-Bar, which has one of the best brunch menus in the city as well as a convenient centric location, surrounded by nearby bookshops and cinemas. There is one destination recommended by the still up-and-coming talent that should not be put off: “The Alamo Drafthouse has the best film selection in the world. It is the place to go see commercial movies, art films, bizarre foreign films, etcetera, all while eating and drinking beer. This is without doubt one of the happiest places in the world.” TT 79 Pizzería Libretto AISLINN LAFFAN Enoteca Sociale AISLINN LAFFAN Luma 80 ALISON OO REN E SIFU Celestin TORONTO TOURIS Origin En la ciudad canadiense confluyen sabores de todo el mundo. DHABA Dhaba 81 AISLINN LAFFAN AISLINN LAFFAN AISLINN LAFFAN Chef Rocco Agostino 82 Enoteca Sociale (1288 Dundas St. W) Chef Rocco Agostino is today one of the best exponents of Italian cuisine in Toronto, greatly due to his two renowned restaurants: Enoteca Sociale and Pizzería Libretto, both located in the trendy district of Ossington. Enoteca’s menu offers cheeses, salads, fish and sea food to share, along with home-made pasta and wine suggestions that complement their dishes (most of them being centered around Italian cuisine). Pappardelles with lamb ragout from Ontario or croissants coated in a maple buttercream and lemon sauce are some of Agostino’s creations. He defines his cuisine as “simple, unpretentious, but always full of passion”. Meanwhile, in Libretto, the specialty dish is the pizza napolitana, prepared with fresh Italian ingredients and baked at high temperatures in a firewood oven. The result? A thin crust dough with a tall slightly toasted rim that feels crispy and soft in your mouth. Just like the ones in Italy. Several reviews have named this one of the best restaurants in Toronto. Inside Chef Claudio Aprile’s kitchen, ingredients and spices from the five corners of the world fuse and converge to create small dishes (similar to tapas) which are ideal to share and savour. This chic restaurant located right in the middle of the historic quarter -steps away from the famous St. Lawrence Market- sprang from Aprile’s desire to create a fun and spontaneous restaurant where dishes would boast the season’s best ingredients. Among some of these extravagant dishes are Peking duck, cucumber and lemon cream filled tortillas, Japanese tuna salad with Asian pear, avocado and spices, or Spanish potato chips with chorizo and manchego cheese. This restaurant is also known for its Bar Mozzarella and its wide variety of cocktails. TT A Hindu gem hidden in Toronto that most of its client get to know by word of mouth. Dhaba strikes both by its minimalist and postmodernist setting - very different to what you would expect the decoration to be in an Indian restaurant - and by its cuisine which boasts colour, innovation and creativity. Dishes are unique but always adapted to the regime and tastes of the clients. If what you want to eat is not on the menu, they will cook it for you. Chef P.K. specialty is Ahluwalia, chicken cooked in butter, but the Thai prawns filled with grated coconut and spices is a good contender. You will find it impossible to resist the freshly handmade naans, which get to your table steaming out of the Tandoor oven with scents of garlic and spices. A different option is the tilapia with Indian aubergine, sealed in a clay oven and topped with a sauce made of onions, tomatoes and a hint of dehydrated fenugreek, which the chef suggests as an alternative to red meats (not on the menu).
