ENGLISH: RED CANARIAN ‘MOJO’ (garlic sauce) Ingredients: 2 or 3 garlic cloves 1 red pepper (unseeded) 1 teaspoon cumin seeds Oil (10cl) Salt 1 teaspoon Paprika 2/3 tablespoon vinegar Preparation method: You can use a hand blender to mix all the ingredients together. If it’s not spicy enough, you must add more vinegar. On the contrary, if it’s too spicy, you must add more oil. In the Canary Islands, we usually eat this sauce with potatoes and meat or fish. SPANISH: MOJO ROJO CANARIO Ingredientes: 2 o 3 dientes de ajo 1 pimienta roja 1 cucharilla de comino Aceite ( 100 cl.) Sal 1 cucharilla de pimentón 2/3 cucharas de vinagre Preparación Se puede utilizar una batidora de mano para mezclar todos los ingredientes. Si no está lo suficientemente picante, se debe añadir más vinagre. Y si, por el contrario, está muy picante, se debe añadir más aceite. En Canarias, este mojo se suele poner con papas y carne o pescado. ENGLISH: GREEN CANARIAN ‘MOJO’ Ingredients 2 or 3 garlic cloves 1 green pepper (unseeded) A handful of parsley A handful of coriander 20 cl Oil Salt 1 teaspoon cumin 2/3 tablespoon vinegar Preparation method: You can use a hand blender to mix all the ingredients, or you can do it manually, crushing the garlics and the salt first, then the pepper, the corieander, and finally the oil and vinegar. As with the red ‘mojo’, you can add more oil or vinegar depending on how spicy you’d like it. SPANISH: MOJO VERDE CANARIO Ingredientes 2 o 3 dientes de ajo 1 pimienta verde Un poco de perejil Un poco de cilantro 20 cl. de aceite Sal 1 cuchara de comino 2/3 cucharas de vinagre Preparación Se puede utilizar una batidora de mano para mezclar todos los ingredientes o se pueden mezclar de forma manual, machacando los ajos y la sal primero, luego la pimienta, el cilantro y finalmente el aceite y el vinagre. Como con el mojo rojo, se puede añadir más aceite o vinagre dependiendo de lo picante que se desee. ENGLISH: SPANISH OMELETTE Ingredients (for four people) 1 kilo of potatoes 7/8 eggs 1 onion A handful of parsley Salt Preparation method: First, peel the potatoes in slices and fry them (not too much). Meanwhile, chop the onion into thin shreds, beat the eggs and add the parsley. When the potatoes are done, remove them and the oil from the pan and add salt. Add just a teaspoon of oil and fry the onion chopped. Remove it. Add the onion and the potatoes to the bowl with the eggs and the parsey and fry all the mixture in high heat. (Depending on your preferences, if you want it well-done, you must fry it for a couple of minutes on each side at a medium heat. If you prefer it medium-done, you must use high heat and fry it one minute on each side). In Spain, many people add other ingredients: green and red pepper, corned beef, etc. Others prefer the Spanish omelette without onions (especially children). If you want, you can add mayonnaise, garlic sauce, ketchup or any other sauce you like. SPANISH: TORTILLA ESPAÑOLA Ingredientes (para 4 personas) 1 kilo de papas 7/8 huevos 1 cebolla Un poco de perejil Sal Preparación Primero, se pelan las papas, se cortan en rodajas y se fríen, aunque no demasiado. Mientras tanto se corta en trozos la cebolla en tiras finas. Se baten los huevos y se añade el perejil. Se añade una cuchara de aceite y se fríe la cebolla troceada. Se remueve. Se añade la cebolla y las papas a la mezcla de los huevos y el perejil. Se fríe toda la mezcla a fuego alto. Dependiendo de las preferencias, si se quiere la tortilla bien hecha, se debe freír la misma durante un par de minutos por cada lado a fuego medio. Si se prefiere media hecha, se debe usar un fuego alto y freírla durante un minuto por cada lado. En España, mucha gente añade también otros ingredientes: pimiento rojo y verde, picadillo de carne, etc. Otros prefieren la tortilla española sin cebolla (especialmente los niños). También se puede añadir mayonesa, salsa de ajo, ketchup o cualquier otra salsa. ENGLISH: SPANISH PAELLA Ingredients (for 6 people) 500 gr rice 2 tablespoons oil 1 onion (finely chopped) 6 garlic cloves (finely chopped) ½ green pepper, 1/3 red pepper 1 teaspoon Paprika 1 teaspoon cumin 2 tablespoon turmeric / saffron 1 teaspoon thyme or rosemary Peas (optional) Salt 250 gr Chicken breasts/pork (chopped) 100 gr prawns (better peeled) 50 gr mussels 50 gr clams 100 gr squid (chopped) Water Preparation method: You must use a paella dish ( a big circular pan not too deep). Add the oil, heat it at a medium heat, and add the garlic for 30 seconds, then the garlic, the green and red pepper. Fry them slighty. When it’s done, add the paprika, cumin, turmeric, the thyme or rosemary and salt. After 30 seconds, add the chicken and/or meat. When it’s done (change their colour), add the prawns and the squid. After 1 or 2 minutes, you add the rice and stir all the ingredients. Add 1 litre of water (approximately). Heat it at a high heat and when it boils, add salt, and slow down the heat. Place the mussels and the clams all over the pan. Paella needs low heat to be done. When the water has almost gone, turn off the heat and cover it with silver foil and some dish towels to keep it warm. You need to let it stand for at least ½ hour before being served. You can vary the ingrediens. Only seafood, including octopus or crabs, or just meat or chicken, depending on your likes. In some occasions, people prefer the rice more watery (in that case, add more water and turn the heat off when you can see some water at the bottom of the pan). SPANISH: PAELLA ESPAÑOLA Ingredientes (para 6 personas) 500 gr. de arroz 2 cucharas de aceite 1 cebolla troceada 6 dientes de ajo troceados 1/2 pimiento verde, 1/3 pimiento rojo 1 cuchara de pimentón 1 cuchara de comino 2 cucharas de cúrcuma o azafran 1 cuchara de tomillo o romero Guisantes (opcional) Sal 250 gr. de pechuga de pollo o cerdo troceado 100 gr. de gambas peladas 50 gr. de mejillones 50 gr. de almejas 100 gr. de calamares troceados Agua Preparación Para cocinarla se puede usar una paellera o una cacerola no muy honda. Se añade la aceite y se calienta a medio fuego. Se añade el ajo, y los pimientos rojos y verdes, que se fríen ligeramente. Cuando están hechos, se añade el pimentón, el comino, la cúrcuma, el tomillo y la sal. Después de 30 segundos, se añade el pollo o la carne. Cuando la carne está hecha (se nota cuando ha cambiado su color) se añade las gambas y los calamares. Después de 1 o dos minutos, se añade el arroz y se mezclan todos los ingredientes. Se añade aproximadamente un litro de agua . Se calienta el agua y cuando hierva, se añade la sal y se baja un poco el fuego. Se colocan los mejillones y las almejas en la cacerola. La paella necesita hacerse a fuego lento. Cuando se ha consumido casi toda el agua, se apaga el fuego y se cubre con papel de aluminio y alguna toalla de cocina para mantenerla caliente. Es necesario dejarla así al menos media hora antes de servirla. Podemos hacer la paella variando los ingredientes. Se puede hacer una paella sólo de mariscos, con pulpo y cangrejo; o sólo de carne y pollo, dependiendo de los gustos. A veces, la gente prefiere la paella melosa o caldosa. En este caso, se añade más agua y se apaga el fuego cuando aún se ve agua en la parte superior de la cacerola
