Expertise and capability characterise the trajectory of Botín Restaurant, which throughout its history has understood how to adapt to the habits of its clients, growing with them, changing without losing its essence or identity. Along the way theViña Salceda winery has been a trusty companion, and Salceda Crianza, the house wine, feels the pride of its past and of its promising future. This Rioja winery has also undergone a few changes. If it has been a while since you last tasted the Salceda Crianza, do not hesitate: you will be pleasantly surprised. The wine reflects all the goodness of Elciego, a prestigious wineproducing area that thanks to its unique vines, climate and soil is capable of offering us a heartening, friendly wine that is winning over the most demanding palates. Tempranillo grapes, mature vineyards, a moderate climate, clay and chalk soil… Salceda is also the result of man’s work, both on the land and in the wine cellar. The vineyards are painstakingly cultivated in the traditional manner: the soil is tilled instead of using any herbicide and the tasks, from pruning to harvest, are performed by hand, in a reasonable and sustainable way. The traditional and artisan production is based on preserving and revealing the qualities of the grape as carefully as possible. The goal: to make each one of the bottles of Salceda Crianza unique to contain the essence of Elciego. The best pairing for the heartwarming cuisine we prepare at Botín. Our dear friend, the writer Soledad Galán, is the protagonist of our new window display, together with her book “El Diablo en el Cuerpo” (The Devil in the Flesh). With this book the writer Soledad Galán is making her debut as a novelist. Hers is a novel approach to the life of Isabel II, a fictionalised autobiography filled with humour, eroticism and historical events. A combination that makes the tale hugely attractive for any reader who decides to delve into its pages. The book narrates in the first person the life of a woman as well as a queen of Spain, who made of love her purpose when hindered from exercising another one, that of governing. It is set in the historical context of the end of a Spanish era. It is perfectly described in the quote appearing in the book’s back cover: “With all the body’s urges that are not allowed a female, and even less a sovereign, I turned into a serpent woman. I could then have killed myself with a decoction of phosphor; however, I was not given to suicide. I, Isabel II of Spain, gave myself to everything and everyone. As a result of this, the Police Prefecture of Paris even kept a binder with the precise detail of the number and names of my lovers. To my great regret, there was an excess of fish. And a few were missing, not just two or three: some very vicious sharks. Men. They have made me go through hell from having loved them so much.” Soledad Galán has kindly made several references to Botín in the pages of her book. Not surprisingly our house, owing to its antiquity, has been the silent witness of numerous historical events since it was founded in 1725: “…I told Francisco that we would go and down a few mouthfuls of red wine and some wood-fired mutton at Casa Botín…” “…They say that Botín’s roast mutton can trip hendecasyllables off your tongue…” Thank you very much, Soledad, for having remembered us. Nunca mejor dicho… When temperatures gradually warm up, softening the winter cold, seasonal citrus fruits start to disappear, although vitamin C remains present in our diet, among other reasons thanks to the garden strawberries that fill the greengrocers’ displays with colour, decking them out in their intense red. The first plums are arriving, though they will reach their peak at a later date (red, purple, yellow and greengages). They are an important source of fibre for the body. This is also the time for medlars, which are rich in potassium and provitamin A. Towards the end of May we can acquire the first apricots, delicious and also providing us with a great deal of potassium and vitamin A. And around this time we start seeing cherries, delicious and with great antioxidant powers. A good handful of Jerte cherries is a delight for the palate. And lastly the blueberries, less popular but beneficial for the body owing to their fibre, potassium and vitamin C content. These days, in the midst of commemorations of the death of the acclaimed writer Miguel de Cervantes, we have again heard mention of his famous entremeses… and we are not talking about the very good starters served up by the writer from Alcalá… no. The term “entremés”, or the plural, “entremeses”, can have two meanings in Spanish, a literary one – interlude—and a gastronomic one, starter or hors d’oeuvre. From a literary standpoint, an interlude is a short, single-act play in a humorous tone (similar to a comic sketch or a farce), which was originally staged in the intervals of a comedy or drama. It was usually played by characters from the popular classes. Its origins go back to the 16th century and they were frequently staged until their prohibition in 1870, although they reappeared in the late 19th century. Renowned authors have worked this genre: Quevedo, Cervantes himself, Calderón de la Barca, Luis Quiñones de Benavente and the Álvarez Quintero brothers, among others. In gastronomic terms, a starter is a generally cold dish (though some are hot) served before the first course combined with others of the same or different type (cold meats, cheeses, shellfish, etc.). Some restaurants also serve them between the first and second course. What is not very clear is which term gave rise to the other one in the Spanish language… a matter of which came first, the chicken or the egg.
