El técnico de BakeMark, José Pérez, recomienda colocar la masa en forma de anillo (que se prepara utilizando Trigal Dorado Bizcocho Mix) en una charola de hoja plana y la aplicación de lavado de huevo para añadir brillo al producto final. Antes de hornear, Pérez sugiere el reposo de la masa durante un breve tiempo y luego la aplicación de la pasta alrededor del anillo. Se pueden añadir los acitrones en la parte superior, ya sea antes o después de hornear. “Se puede hornear con la fruta en la parte superior, pero va a ser un poco más seco,” dice Pérez. “Por lo general, yo aplico la fruta después de hornear.” Una vez que se haya desarrollado durante 30 minutos y luego horneado a 330° F por 30 minutos, el paso final es aplicar el glaseado. La panadería venderá de 1,000 a 2,000 bolillos por día, dependiendo de la época del año. Sus panaderos supervisan el inventario en todo momento durante el día. Cada vez que se vende una media rejilla de bolillos, hacen otro lote. Lo que es interesante en la actualidad es que el tráfico durante la hora punta de la tarde, especialmente durante las temporadas de fiesta, es tan grande como durante la hora punta de la mañana en Pan Dulce. “A las 8:30 p.m. veremos una línea de gente hasta afuera de las puertas que sigue comprando un montón de pan,” dice Arza. “Les gusta llegar de noche para comprar sus panes para la mañana. A las 8 p.m. hacemos nuestro último ciclo de producción de bolillo.” Pan Dulce está abierto los siete días de la semana, de 6:30 a.m. a 10 p.m. Los bolillos son un artículo distintivo en esta panadería de Lincoln, y cada vez más los clientes están comprando los bolillos rellenos, que están rellenos de queso crema y jalapeños o de chorizo. Los bolillos rellenos representan del 5 al 10% de sus ventas de bolillos totales. Disponemos de un puesto allí con sólo nuestros productos de panadería. Asimismo, durante el año, si hay diferentes eventos durante la mañana, siempre nos piden que donemos panadería fresca para esos eventos.” Los pasteles para las bodas y quinceañeras también representan una parte creciente de los negocios de El Rey, como explica Villarreal, dado a su factor de conveniencia. “La gente quiere ordenar de una panadería con una buena reputación y de un negocio con el que están familiarizados,” dice. “Nosotros podemos hacer pasteles simples de un solo nivel hasta pasteles con un máximo de cinco niveles y con todo tipo de atracciones como cisnes, fuentes de agua, etc. La gente puede escoger su batido, su relleno y su glaseado, así como la decoración, por supuesto.” La mayoría de los clientes que compran en El Rey son de origen hispano, especialmente en su ubicación en Cesar E. Chávez. “Nuestras tiendas y productos son lo que les importa a todos nuestros clientes,” dice. “Todavía tenemos que mantener nuestra herencia hispana en nuestros productos. Pero también siempre estamos agregando productos que podrían atraer a una muestra representativa de clientes.” Los productos excepcionales y un excelente servicio al cliente son lo que hace que los clientes regresan de un día para otro. Este es el caso de Ramón Jacobo, el propietario de Jacobo’s Grocery, que creció como un ciudadano estadounidense que vivió la mayor parte de su infancia en Michoacán, México. Carlos Jacobo calcula que su base de clientes es ahora un 50 por ciento no-hispanos. “Lo que saben de la comida mexicana es lo que comen en un restaurante mexicano”, dice. “Ellos visitan nuestra tienda debido al departamento de salchichonería y este departamento actúa para atraerlos a la panadería. Andy Arza of Pan Dulce Bakery in Lincoln, NE, says they decided to focus on producing the best bolillos in town when their bakery opened in 2009 because they knew this staple bread would be a huge drawing card. “Our best sellers are our bolillos,” he says. “We sell six to 10 racks of bolillos a day. Our customers are from all different cultures, and every single ethnic group we serve buys the bolillo.” Arza credits BakeMark for helping them improve the quality of their bolillos. BakeMark supplies Pan Dulce with its bakery ingredients, and Pan Dulce recently started using a dough conditioner to strengthen the bolillo dough and improve shelf life. “We’re getting great results.” 34 NOVEMBER 13 | PANADERIA Given there are 180 bolillos on one rack, Pan Dulce sells more than 1,000 bolillos on a typical day, and sometimes as many as 2,000. A growing percentage of their bolillo sales are stuffed bolillos filled with chorizo or jalapeños with cheese. Pan Dulce has taken several steps to improve the efficiency and speed of its bolillo production, including the recent purchase of a bolillo moulder. Arza recognizes that not everyone has the skill of their head baker Raul, who once rolled out more bolillos by hand than another of their bakers did using the machine. “He beat the machine. It was amazing,” Arza says. Still, he points out that improving production efficiency is a key goal at their family-owned bakery. “One of the plans I have for the future is to bring in more equipment,” he says. “We are making bolillos all day long, along with many other products, and we need to make sure we are efficient.” Pan Dulce produces other breads, especially during the winter months when customer demand peaks. Their head baker produces everything from sourdough breads to challah, a traditional braided bread for Jewish holidays. “In January, we do rosca de reyes, which is very popular with our customers.” ROSCA DE REYES Similar to a king cake, the elegant rosca de reyes is the traditional holiday bread prepared for Día de Los Reyes Magos (Jan. 6), a popular holiday in the Hispanic culture. This sweet bread commemorates the arrival of the three kings to the birthplace of baby Jesus and is a popular part of Hispanic family celebrations for this holiday. BREADS AND BAKING BakeMark technician Jose Perez recommends placing the ring-shaped dough (which is prepared using Trigal Dorado Bizcocho Mix) on a flat sheet pan and applying egg wash to add shine to the finished product. Prior to baking, Perez suggests allowing the dough to rest for a brief time and then applying thin strips of cookie dough (also called pasta) around the ring. You can add the candy citrons to the top either before or after baking. “You can bake it with the fruit on top, but it is going to get a little drier,” Perez says. “I usually apply the fruit candy after baking.” Once you proof for 30 minutes and then bake at 330° F for 30 minutes, the final step is applying the glaze. Perez says some prefer smaller sizes of rosca de reyes, while other customers enjoy the larger sizes made in full sheet pans. “You can make small ones. You can make full sheet pans,” he says. “It depends on what your customers prefer.” CORN TORTILLAS At Jacobo’s Grocery in Omaha, NE, corn tortillas are a big drawing card for their bakery because here they make their own every day from scratch. At one time many years ago, Jacobo’s bought corn tortillas from a large production facility in Chicago and had them shipped into Omaha. But then they decided making their own corn tortillas would be a key point of differentiation to their local customers. Jacobo’s Grocery doesn’t use any preservatives, conditioners or gums in the production of its fresh corn tortillas either. “This is one of the fresh baked products that our customers expect.” In the backroom of their store, a large vat cooks raw local corn they bring in from irrigated Nebraska farms. The corn softens overnight before being fed through a stone grinder. The dough is simply corn and water. The operator then puts the dough into the dough feeder after which point it is cut and baked in a three-tier oven. “We run the machine from 6 a.m. to 5 p.m. every day,” Jacobo says. “It takes 22 seconds to go through the process of making each tortilla.” The tortillas are cooled to 75° F before they are packed in 36-count packages. “We’ve been making corn tortillas for 30 years the same way,” he says. “It’s something our customers demand. Hispanics eat more tortillas than conchas.” NOVEMBER 13 | PANADERIA 35 CAKES AND DECORATING Add Color and Sparkle The first step toward creating magical and eye-catching displays for your cake case is by adding some extra sparkle. BakeMark technician Carrie Skromme explains that customers buy with their eyes, and so it is important to decorate with lots of color. A variety of successful strategies and tactics are employed by panaderías in America’s Heartland. In Milwaukee, WI, four-store operator El Rey Food Markets promotes holiday specials throughout the year on Facebook and through its website, elreyfoods.com. Cakes are a major drawing card during the summer and fall, and demand for breads and sweet goods drives traffic particularly well during the winter months. “Our cakes are very popular to go along with piñatas that customers take along to the parks,” El Rey Food Markets owner Ernesto Villarreal says. 38 NOVEMBER 13 | PANADERIA “Once fall and winter start up, so does the bakery sales. We promote coffee and Mexican hot chocolate, which goes wonderfully with our Mexican bakery.” Carlos Jacobo of Jacobo’s Grocery in Omaha, NE, says fall football season presents a terrific opportunity to promote corn tortilla chips and salsa. Jacobo’s produces their fresh corn tortillas and tortilla chips, as well as salsa, at their Omaha grocery store. “We were the first in the city to have our own tortillería and bakery in the store,” Jacobo says. “If it’s not one thing, it’s the other that draws customers to our store.” As the December holidays arrive, Jacobo’s Grocery promotes traditional Hispanic sweet goods in addition to other products that families demand for the holidays. “For Christmas and the holidays, we sell fresh dough for customers to make their own fresh tamales at home,” Jacobo says. “December 24 is the busiest day of the year for us. We feel good about our role in helping our customers share important traditions with their families.” In early January, panaderías plan for the celebration of Epiphany by preparing for a surge in customer demand for rosca de reyes. This Hispanic tradition takes place 12 days after Christmas on the sixth day of January, Epiphany Day, or the appearance of the three wise men. Panaderías will sell hundreds of rosca de reyes during this time. To take full advantage of the unique sales opportunity leading up to this celebration, panaderías can create colorful display tables to promote different flavors of rosca de reyes, in addition to decorating this table with figurines of the three wise men and colorful strands for beads. The candy decorations in the rosca de reyes are meant to symbolize jewels in red, white and green colors (the colors of the Mexican flag). Placing a small Mexican flag on your display table will remind customers of the significance of this celebration. Andy Arza of Pan Dulce Bakery in Lincoln, NE, points out the wintertime is their biggest sales period of the year, so it is essential that they plan ahead for the holiday rush. The bakery will sell from 1,000 to 2,000 bolillos per day, depending on the time of year. Their bakers monitor inventory at all times throughout the day. Whenever a half rack of bolillos is sold, they make another batch. What’s interesting nowadays is that the evening rush, especially during the holidays, is as big as the morning rush at Pan Dulce. “At 8:30 p.m., we’ll see a line outside the doors of people still buying lots of breads,” Arza says. “They like to come in late at night to buy their breads for the morning. At 8 p.m., we do our last bolillo production run.” Pan Dulce is open seven days a week, from 6:30 a.m. to 10 p.m. Bolillos are a signature item at this Lincoln bakery, and increasingly customers are buying filled bolillos, which are stuffed with cream cheese and either jalapeños or chorizo. Filled bolillos account for 5-10% of their total bolillo sales. Their business is mostly retail, but wholesale sales to corporate cafeterias and local restaurants represent a healthy percentage of business. Arza estimates that their bakery produces about 3,000 pieces of sweet bread per week, in addition to teleras for numerous local restaurants that use them as sandwich breads.” Well-established Hispanic grocery stores like El Rey Food Markets, which opened its first store in 1978, are bolstering their customer appeal with the use of eye-catching promotions and innovative product lines. “We run weekly specials through our local newspaper where flyers are distributed to individual households in the neighborhoods where our stores are located,” says Villarreal of El Rey Food Markets. “Our main festival of the year is Fiesta Mexican at the Summerfest grounds. We have a booth there of only our bakery products. Also, during the year, if there are different events in the morning, we are always asked to donate fresh bakery for the events.” Wedding and quinceañera cakes also represent a growing part of El Rey’s business because, as Villarreal explains, of the convenience factor. “The people want to order from a reputable bakery and business that they are familiar with,” he says. “We can make simple one-tier cakes to cakes with up to five tiers and all kinds of other attractions on such as swans, water fountains and so on. The people are able to pick their batter, their filling and their frosting, as well as the decoration, of course.” The majority of customers who shop El Rey are of Hispanic origin, especially at their location on Cesar E. Chavez. “Our stores and products are what matters to all of our customers,” he says. “We still have to maintain our Hispanic heritage in our products, which is our calling card. But we are also always adding products that might appeal to a cross-section of customers.” E x cep t io n al p r o d u ct s an d customer service are what bring customers coming back from one day to the next. Villarreal says that customer familiarity with the staple bakery items that people know and recognize and their bakery’s ability to offer cakes for all occasions remain as important to their success as ever. “Consistency and quality in all products that we produce at all times is important to customers,” he says. Carlos Jacobo of Jacobo’s Grocery agrees that shoppers will come back to your store when they understand your passion for excellence. That is one of the most important lessons he’s learned in 37 years at Jacobo’s. “Being able to build a strong customer base takes time,” he says. “But when you have great pride in what you are doing, the customers really appreciate your products. That’s the reason the customers come back for more.” NOVEMBER 13 | PANADERIA 39 PROFILES Pan Dulce Bakery There’s a joke in Nebraska that when the local Nebraska Cornhuskers play a home football game on Saturdays in Lincoln, the 70,000-plus fans that fill the stadium represent the state’s third-largest city. The bonus for Lincoln’s Pan Dulce Bakery is that these thousands of these fans walk right past their bakery on the way to tailgate and, increasingly, stop in to buy some delicious tailgate food. “This area is a college student neighborhood. On game days, we get flashes of huge demand,” says Andy Arza, who started Pan Dulce 1BO%VMDF#BLFSZr4UI4USFFUr-JODPMO/& $FTBSBOE"OEZ"S[B0XOFST 40 NOVEMBER 13 | PANADERIA Bakery with his father, Cesar, in 2009. “As people are walking toward the stadium, they see the bakery and come here. They really like our bolillos with cream cheese and jalapeño inside.” This story serves as a prime example of how panaderías can appeal to a wider base of customers by offering products with mainstream appeal, like hand-held stuffed bolillos or filled empanadas, sweet breads and convenient desserts. Less than 60% of Pan Dulce’s customers are Hispanic. The remaining portion is a cross section of the world. “We have customers from all over: Africa, Vietnam, Thailand and Japan. I’ve seen all kinds of cultures,” says Arza, whose family immigrated to the US from Bolivia. “We’ve been so overwhelmed here that we need more space to grow our business.” For this reason, Pan Dulce plans to open a second bakery in Lincoln this fall. The location will be situated on one of the busiest streets in the city. They plan to produce a wider variety of products, including croissant sandwiches, tortas and stuffed bolillos, along with a variety of coffees and cappuccinos. The new bakery will be more like a café, with tables for seating so that customers can stay and enjoy their food and drink inside the bakery. “We’re going to offer a wider variety of products,” Arza says. “We bought a fryer for the new store. We’re going to do more fried pastries, donuts and churros.” Fried pastries like fried empanadas are quite popular in South American cultures, and mainstream America is embracing such cuisines. Arza explains PROFILES that cheesy fried empanadas are a specialty at Pan Dulce, and the bakery also does a cheesecake made with very thin dough and fried. “It’s very big and airy inside, with powdered sugar on top,” he says. “It’s like a funnel cake with cheese filling.” “We have a lot of South American customers,” he continues. “In South America, there are a lot of cheesy and salty pastries, which are not as sweet as Mexican pastries. We use a lot of cheese and tapioca starches. We’re going to do more of those products at our second bakery.” Another unique aspect of the bakery products made at Pan Dulce is the fact that their head baker, Raul, is originally from Mexico, so he understands the flavor nuances of the traditional bolillo, but he is also Jewish, so he creates other breads like challah, which is a braided egg bread. Raul is one of 16 siblings, and is the youngest of six brothers who are all master bakers who learned baking in Mexico. One of his brothers now travels through Europe where he works for bakeries in France and Germany. The two brothers communicate by email and share trends and techniques, including methods of making sourdough breads. Raul experimented with sourdough breads last winter at Pan Dulce. “We had sandwiches on sourdough bread for a month,” Arza says. “His sourdough bread is really good. He also has an amazing recipe for challah. That’s one NOVEMBER 13 | PANADERIA 41 PROFILES of the unique breads we add around November and December.” “One of Raul’s philosophies is he uses quality ingredients from BakeMark, and he bakes all the breads for the same day. He does not save dough overnight. We use puff pastry margarine imported from Mexico for our puff pastries, and we use salted butter for our croissants.” The father and son expect to do well at their second location, based on the rapid success they encountered when they first opened Pan Dulce four years ago. “We were flooded with customers from the first day we opened,” Andy recalls. “Now that we have more experience and are more organized, we should do pretty well.” 42 NOVEMBER 13 | PANADERIA Andy says that he has been researching different types of machinery, including a steam deck oven that will allow them to produce a variety of crusty artisan breads. They recently purchased a Bloemhof bolillo moulder to shape bolillos automatically, in addition to an Erica Record divider/rounder and a walk-in cooler. His goal is to make the bakery more efficient. “I started organizing recipes to make it easier and created recipe charts with photos for our bolillos, conchas and teleras. Now, if we have an urgent need and the dough is ready, even one of our cashiers can do bolillos. We are upgrading our equipment to make things easier and more efficient. That’s how we are going to continue to be successful.” PROFILES Jacobo’s Grocery It takes patience to solidify a successful family business. Consider the story of Jacobo’s Grocery, now in its 37th year of business in Omaha, NE. Their success in the heartland of America is inspiring in that they came to Omaha at a time when Hispanics were just starting to move to places like Nebraska to establish a better life for their families. This is the case of Ramon Jacobo, the owner of Jacobo’s who grew up as an American citizen living most of his childhood in Michoacán, Mexico. Ramon’s son, Carlos, who manages the family grocery/ b a k e r y b u s i n e s s t o d a y, explains. “My grandparents came to the United States in 1929 through an agricultural program, and Dad was born at the time they were here,” he says. “Dad was always a US citizen but he grew up in Mexico. Dad always wanted something more for us to better our lives.” Chicago was the family’s first stop 50 years ago when they moved to the United States, where Ramon Jacobo and his wife operated a small grocery store in the Bridgeport neighborhood on Chicago’s south side for 13 years. “Mom ran the bakery, and Dad worked at our store and then the night shift at a factory in Chicago,” Carlos says. Eventually, all those long hours of work led Ramon to believe that he could build a better life for his family somewhere else. The family had relatives in Omaha. Ramon remembered the city as a nice place. The Jacobo family moved to Omaha in 1976 from Chicago. They were looking to open an Omaha grocery store that specialized in Hispanic foods. Within a short time, their dream was realized. Today, Jacobo’s Grocery in Omaha is in its 37th year in business and 24th year at its current location where they operate an expansive bakery and deli and make their own corn tortillas. The bakery features more than 40 regular items. They specialize in conchas and many flavors of empanadas such as guava and pumpkin. They also make special breads from the traditions of Michoacán. One is shaped like a turtle, another is cone shaped, and a third is shaped like a volcano. For example, BakeMark was instrumental in helping them introduce guava and mango fillings. “It’s good to see a company that knows the market and helps us facilitate the introduction of new products,” Carlos says. “It’s great to have someone looking out for you.” Other innovations have helped the business along the way. Four years after starting their grocery store in Omaha, Jacobo’s decided to no longer bring in shipments of corn tortillas from Chicago but rather start making their own corn tortillas in-house in Omaha. “So we started looking for a small location to make our own corn tortillas here,” Carlos says. They found a site that worked well for their needs and opened a new grocery store, where corn tortillas would be prepared fresh daily. To this day, they bring in fresh local corn that is cooked in the backroom and used to make fresh corn tortillas, a staple for Hispanic households. Eventually, they added a fresh bakery to the store, as demand grew for traditional Hispanic baked goods. Now, local customers could enjoy the convenience of buying everything they needed at one store. Carlos Jacobo remembers when they started in business, “we could count the number of Hispanic families in our neighborhood on our fingers.” That quickly changed. “A lot of people 44 NOVEMBER 13 | PANADERIA PROFILES started moving here and building a community around our business. That’s one of the surprising things. The people followed the business.” When Jacobo’s Grocery started in Omaha, most Hispanic families were immigrants. The appeal of their bakery products was in the authenticity. “We were making the same traditional bakery products that you would see in any small town in Mexico,” he says. “Many customers would say that this is just like their bakery in the hometown they grew up in.” Today, Jacobo’s Grocery is gradually expanding its product line as the neighborhood demographics change, and more non-Hispanics shop at Jacobo’s. Carlos Jacobo estimates their customer base is now 50 percent non-Hispanic. “What they know of Mexican food is what they eat at a Mexican restaurant,” he says. “They visit our store for the deli, and the deli acts as a draw to the bakery. When they see all the fresh bakery products, they are curious and want to try something new. One department complements the other. They stop in to buy our fresh salsa and fresh corn tortilla chips and then they see they bakery and buy something there.” One of their key competitive advantages over other supermarkets in the Omaha marketplace is the freshness and affordability of their fresh bakery products, including conchas, empanadas and other fresh pastries. “Our customers want something that is out of the oven only a few hours at the most,” he says. “You can’t fool anyone. It has to be fresh. We can offer the bakery products that other stores offer, but we can afford to give our customers something fresh every day.” He points out that in 37 years of business they have never really advertised. Their business has grown steadily over the years through word of mouth. For that reason, “you know you’re making a product they really want,” Carlos says. “It takes time to make a business prosper and you need patience. We always tell our employees: Take care of the customer. Our products and services are going to bring them back.” NOVEMBER 13 | PANADERIA 45 PROFILES El Rey Food Markets When El Rey Food Markets first opened in 1978, no local Hispanic store in Milwaukee had its own bakery, mainly because they were small stores. El Rey’s bakery was installed at the same time because the store owners felt that if they were going to bring the entire experience of Mexico that the bakery had to be a major part of it. This commitment is evident at all four of the El Rey bakeries in Milwaukee, where they offer a cultural blend of authentic tres leches cakes in many flavors, Hispanic sweet breads and bolillos, as well as more mainstream products like chocolatecovered donuts and creatively decorated cupcakes, which appeal to all types of bakery shoppers. El Rey takes great pride in being a Mexican bakery and, through the years, continues to add American staples such as donuts, cupcakes and cakes for all occasions. “People now want everything fresh and baked that same day, especially the bolillos. We have them baking hourly,” owner Ernesto Villarreal says. “The cake business has grown because people want convenience. At their original store, the bakery department employs three bakers and a staff of seven decorators. Cake makers and decorators work the first shift, and the Mexican specialty bakers work the second shift. El Rey and its bakery supplier, BakeMark, work hand in hand to bring different items that the bakery might want to try or incorporate into their baking schedules. “If there is a better way of baking or a better product, we are presented with that item. The salespersons are very proactive with our personnel,” Villarreal says. “We depend on BakeMark for quality flours for both our bakery items and the cake flours. We also rely on BakeMark for our fillings for our different bakeries and all else attributed to baking.” From the moment that any customer walks inside El Rey Food Markets, they are greeted by a friendly staff and delicious aromas of fresh baked breads and pastries. “The main merchandising is placing our bakeries PROFILES right in the front of the store to get the thought process of their bakery needs,” Villarreal says “We do have our cakes displayed and our case of bakery always ready for the customer to see what is available.” “Our biggest selling products over the years have become our cakes for all occasions,” Villarreal says, “especially the different tres leches cakes. Our other favorite sellers are conchas, empanadas (pumpkin and sweet potato turnovers), hojarascas, little skulls for the Day of the Dead and, of course, bolillos.” Through different seasons, El Rey features other specialties such as pan de muerto (Day of the Dead) and roscas de reyes (Three Kings Day) in January. Each bakery at each of El Rey’s four stores is owned by the entity that owns the stores. Because of estate planning, only the original store is owned by Ernesto Villarreal and the Family Trust of Heriberto Villarreal. The other three stores and their bakeries are owned by the trusts of all the children of the two original founders. Two years ago, El Rey added its fourth location when it opened their Oklahoma Avenue store in October 2011. That location was necessary to continue El Rey’s tradition of having an in-house bakery for their Mexican bakery specialties. El Rey also has expanded the bakery in the El Rey Plaza store.
