Montañas nevadas, espejos de agua, viñedos y coloridos cerros con
cardones y vicuñas conforman el paisaje de esta carretera que flanquea a
la cordillera de los Andes a lo largo de 5.000 km.
Un paisaje interminable de aguas azules, viento frío y abundante
fauna marina que a lo largo de la Ruta 3 une la Ciudad de Buenos
Aires con las playas y acantilados patagónicos.
Bodegas y viñedos alternan con sitios arqueológicos,
arquitectura ecléctica y excelente gastronomía en
oasis paralelos a la cordillera de los Andes.
Varias de las capitales más antiguas del país unidas por el Camino
Real del Perú, una ruta que en tiempos coloniales conectaba Lima
con el puerto de Buenos Aires.
Snowy mountains, lakes, vineyards and colorful hills with giant cacti
and vicunas make up the scenery of this highway that follows the Andes
range for 5000 km.
An endless landscape of blue waters, cold wind and a wealth of marine
fauna can be viewed along National Highway 3, which links the city of
Buenos Aires with the beaches and cliffs of Patagonia.
Wineries and vineyards are dotted among archeological
sites and eclectic architecture where you can enjoy exquisite
cuisine in oases that lie along the Andes mountain range.
Several of the oldest capitals of the country are united by the old Royal
Road to Alto Peru, a road that linked Lima with the port of Buenos
Aires in colonial times.

Un distrito de origen portuario que creció con la numerosa
afluencia de inmigrantes italianos, particularmente genoveses.
Ellos construyeron sencillas viviendas en madera y chapa
pintadas de colores brillantes que hicieron de La Boca
uno de los paseos más característicos de la Ciudad.
A escasa distancia de la city porteña, el más nuevo de los barrios
de Buenos Aires fue creado en donde había funcionado el puerto
y hoy agrupa a los rascacielos más altos de la Ciudad. Depósitos
reciclados como oficinas, locales gastronómicos y hermosos
espacios verdes se amalgaman con agradables vistas al río de la Plata.
Originally the port district, it grew into the home
of a large inflow of Italian immigrants, and in particular
Genovese. They built their simple homes out of wood
and corrugated iron painted in brilliant colors, making
La Boca one of the characteristic places to visit in the city.
Just a short step from the city’s business center, the newest neighborhood
in Buenos Aires was developed where the port had once been, and
today includes the city’s tallest skyscrapers. Warehouses have been
recycled and turned into offices and restaurants, and carefully-tended
green spaces blend with pleasant views of the Río de la Plata.

El teatro en Buenos Aires es una actividad muy convocante
con una cartelera extensa y variada. En el Centro se presentan
las producciones de mayor envergadura y las de las salas

Water courses in Córdoba are well oxygenated and very cold, ideal for fly
fishing. Rivers and streams flow between the fold of the hills at an altitude

This arid, rocky landscape was chosen by the condors as their nesting
ground furthest from the Andes. The majestic flight of these birds can
be observed from two natural balconies in the rocks. Below, set in
picturesque broken terrain, among the quebracho and pepper trees, the
area is populated by pumas, red foxes, peregrine falcons and tree frogs,
while trout-filled rivers flow downhill.

ALFAJORES CON SECRETO CORDOBÉS
Un conjunto de pequeños platos fríos compuesto por quesos,
fiambres, encurtidos, papas fritas, maníes y todo tipo de appetizers,
ideal para los atardeceres del verano serrano. Se lo acompaña
generalmente con alguna bebida alcohólica, siendo el fernet con cola
la preferida de los cordobeses.
El alfajor es un producto regional consistente en dos tapas de masa
dulce unidas por una pasta. Esta confitura de origen árabe se rellena en
Córdoba con variedades de dulces de fruta; y las tapas se elaboran con
miel, lo que le otorga su característico sabor dulce y suave.

Un desierto de 76 mil hectáreas ocupadas hace millones de años
por un enorme lago y que actualmente resguarda numerosas
especies animales. El Parque contribuye en la preservación de
su diáfano cielo bajo el cual se instalaron dos observatorios
astronómicos que pueden ser visitados.
Por sus condiciones climáticas y su estepa arbustiva este parque
sirve como refugio a la mayor concentración de camélidos
en estado silvestre de Argentina. Entre ellos se destaca la vicuña,
que ha logrado prolongar su especie en el lugar.
Millions of years ago this 76,000 hectare desert was an enormous
lake. Today it shelters a wide variety of fauna. El Leoncito Park
helps maintain the purity of the sky benefitting the two astronomical
observatories established there, which are open to the public.

uyo es el mayor atractivo de la Ruta del Vino en Argentina
y el origen de la gran reputación internacional de sus
productos. Allí, bajo un cielo diáfano y escoltadas por
la cordillera de los Andes, se emplazan cientos de bodegas —
industriales centenarias y nuevas de tipo boutique. Del árido paisaje
sanjuanino destaca su expresivo Syrah; de los valles riojanos, su seco
torrontés; y de los oasis mendocinos, su multipremiado malbec.

Cuyo is the most popular wine route in Argentina and the origin
of the worldwide renown of its wines. Under a clear blue sky and
flanked by the Andes are hundreds of wineries, some large scale ones
are over a hundred years old while others are newer, boutique-type
wineries. The expressive Syrah wine comes from the arid landscape
of San Juan, the dry Torrontés from the valleys of La Rioja and
from the oases of Mendoza comes the prize-winning Malbec.

Las delicias cuyanas no sólo se degustan en una copa… Entre sus
platos más populares se destaca el tomaticán, un guiso a base de
tomate, cebolla y huevo que se prepara friendo cebollas en aceite a las
que luego se agregan carne, tomates y maíz. Se condimenta con sal y
orégano y se lo sirve acompañado con papas cocidas o arroz.
Estas carnosas aceitunas riojanas se caracterizan por su gran tamaño y
sabor peculiar. Se las cosecha verdes o maduras para llevarlas a la mesa
o bien para transformarlas en conserva, salmuera o aceite de oliva.
The delights of Cuyo are not only enjoyed in a wine glass... Among its
most popular dishes is the tomaticán, a stew made of tomato, onion and
egg, prepared by sautéing onions in oil and adding cubed meat and
tomatoes and grains of sweet corn. It is seasoned with salt and oregano
and served with boiled potatoes or rice.

These fleshy olives from La Rioja are recognized worldwide for their
large size and distinctive flavor, and are harvested either green or ripe,
as table olives or for preserves, bottling them in brine as well as using
them to make olive oil.

Un postre regional en base a una planta cultivada desde tiempos
prehispánicos. Cubos de zapallo hervidos y luego enfriados se cuecen
con azúcar a fuego lento hasta quedar tiernos. Y se los come solos o
acompañados con crema o quesillo de cabra.
This is a regional delicacy made from a vegetable that has been cultivated
since pre-Hispanic times. Cubes of pumpkin are boiled
and then cooled before cooking them gently with sugar till tender.
They can be eaten alone or with cream or fresh mild goat’s cheese (quesillo
de cabra).

Un parque de muy fácil acceso, caracterizado por los numerosos
ejemplares de palmeras yatay y las serenas playas sobre el río
Uruguay. El área tiene un relieve ondulado, con barrancas
de 15 metros de altura y encantadores puntos panorámicos.
Esta área protegida resguarda bosques únicos de palo santo y ha
permitido la supervivencia del oso hormiguero grande y del tatú
carreta, su animal insignia. Además, sus lagunas y selva en galería
sirven de refugio a una amplia diversidad de aves y plantas acuáticas
muy poco frecuentes en regiones áridas.

al calor de las brasas. Pero también en vasijas de hierro
apenas condimentados, en guisos, en chupines o como rellenos
de empanadas. Surubíes, dorados y bogas son protagonistas además
de nuevos platos acompañados de salsas y toques gourmet.

The fish caught in the rivers in the Littoral are traditionally
barbecued over embers, but it they can also be cooked in iron
pots, lightly seasoned, in casseroles, in stews or as a filling for
empanadas. Surubi, dorado and boga also feature in new

El mate es una bebida caliente y amarga que generalmente se
comparte en grupo y que se prepara en base a las hojas de la yerba
mate, planta originaria de la región. En el Litoral es también
muy popular el tereré, versión fría del mate en la que el agua es
reemplazada por jugo de frutas cítricas y abundante hielo.
Mate is a hot, bitter beverage, usually shared in a group from
a single gourd. It is prepared from the leaves of the yerba mate plant,
native to the region. In the Littoral tereré is also very popular, a cold
version of mate in which the water is replaced with citrus juice and
plenty of ice.

CHIPÁ, UN BOLLITO

CHIPÁ: A TRADITIONAL ROLL
Heredado de la cultura guaraní, el chipá o la chipa es un pequeño
pan con sabor a queso muy popular en todo el Litoral y también
en Paraguay y sudoeste de Brasil. Se elabora en base a almidón de
mandioca y resulta delicioso como acompañamiento tibio del mate.
Another item from our Guaraní legacy, the chipá is a small cheeseflavored bun which is very popular in the Littoral as well as in
Paraguay and the southwest of Brazil. Chipás are made with manioc
flour, and are particularly delicious served warm, with mate.

La ciudad de Santa Fe se destaca por su circuito turístico cervecero
que incluye visitas a plantas industriales, museos y degustaciones en
bares y cervecerías. Los santafecinos comparten orgullosos su modo
de beber: en vasos de liso, es decir, chops de 255 cm³ con cerveza
tirada directamente del barril.
Un bizcocho salado y esponjoso a base de harina de maíz. Se prepara
batiendo grasa, huevo y queso desmenuzado. Y se le agrega cebolla
hervida cortada fina, harina de maíz y leche revolviendo lentamente.

Sopa paraguaya is a kind of savory maize flour sponge cake.
Lard is beaten with eggs and shredded soft cheese to make
a paste. Then finely chopped boiled onion is added,
together with maize flour and milk, and stirred gently.
The mix is then baked in a hot oven for an hour.
The city of Santa Fe is famous for its beer tour which includes visits to
breweries, museums and beer tastings in bars and beer halls. The locals
proudly share the way they like to drink it – in 255cc glasses, draught
beer pulled straight from the barrel.

del pimiento, de gran producción en los valles de Lerma y Calchaquíes en Salta, y de Santa María en Catamarca. De característico color
rojo intenso, el pimiento es cosechado y luego secado al sol de forma
artesanal en solares naturales utilizando terrenos de altura.
Sweet paprika is a typical northern condiment grown in the valleys of
Lerma and Calchaquí in Salta, and Santa María in Catamarca. These
bright red peppers are harvested and then laid out to dry in the sun in
the traditional way in sun traps on the high ground.

De origen prehispánico, el locro es un sencillo guiso a base de zapallo

Este parque se caracteriza por su clima acogedor que favorece
el crecimiento de especies propias de la selva valdiviana
como el avellano y la liana yoqui blanco. Además, protege
extensos bosques con cipreses de la cordillera, coihues y
arrayanes, entre otras especies andino-patagónicas.
Lago Puelo National Park is noted for its mild climate that
favors the growth of species common in the Valdivian temperate
rain forest, such as the Chilean hazel and the white yoqui
liana. In addition it hosts extensive forests of cypress, coihue
and myrtle as well as other Patagonian Andes species.

Esta área protegida debe su nombre a una especie arbórea cuyos
bosques son resguardados entre montañas con nieves eternas y lagos
de aguas cristalinas. En su interior, el lago Futalaufquen y el río
Arrayanes ofrecen un maravilloso espectáculo natural con sus orillas
cubiertas de árboles y frondosos arbustos.
Lagunas y bellos bosques de lenga caracterizan a esta área protegida,
de difícil acceso y clima riguroso. Además de hermosos paisajes plenos
de vida silvestre nativa, el Parque resguarda pinturas rupestres de los
pueblos originarios en los aleros y cavernas del cerro Casa de Piedra.

This protected area takes its name from the alerce (larch or Patagonian
Cypress), forests of which nestle among mountain ranges with their eternal
snows and transparent lakes. Futalaufquen Lake and the Arrayanes River
offer a marvelous natural spectacle with their wooded shores and thick
bushes, including the arrayán or myrtle, with its singular cinnamon-colored
bark.

Lanín debe su nombre al volcán que domina el paisaje cuya cima desafía
a los más intrépidos. Es un parque extenso que resguarda hermosos lagos
de origen glaciario y bosques únicos de pehuén y de roble. Además, está
habitado por comunidades mapuche que practican la ganadería y que
trasladan sus rebaños durante la veranada.
The Lanín National Park takes its name from the majestic volcano
that dominates the scenery, with a summit that beckons to the
most intrepid visitors. This extensive reserve contains singularly
beautiful glacial lakes and unique forests of monkey puzzle and
roble beech. It is also the home of Mapuche communities that raise
livestock and drive their flocks up into the hills in the summer.

escada desde tiempos precolombinos, la centolla es la
especialidad de la cocina fueguina. Se la sirve en una gran
variedad de platos como ensaladas y preparaciones ligeras para
que su delicado sabor no quede opacado. También se la saborea como
relleno de pastas, paté o al vino blanco, entre otras posibilidades.
TASTE
This delicious crustacean has been fished since Pre-Columbian times all
along the Patagonian coast, and mainly in the Beagle Channel.
It is used in a variety of ways, such as in salads and light dishes
(so that its delicate flavor is not lost), but it is also used to fill pasta and
pies, or can be cooked with white wine, among other preparations.

El cordero patagónico se caracteriza por su deliciosa carne con bajos
niveles de grasa. Estacado en una cruz metálica, se cuece al calor de
brasas durante dos o tres horas. Previamente, la carne es adobada con
hierbas o simplemente, con sal.
Esta tradicional receta llegó de la mano de los inmigrantes centroeuropeos y se transformó en una excelente excusa para disfrutar de
un momento compartido. De queso o de chocolate, la fondue es
uno de los elegidos de la propuesta gastronómica local para las frías
noches de montaña.

Delicious Patagonian lamb is noted for its low fat content.
Staked out on a metal spit, it is gently roasted for two or three hours,
having first been seasoned with herbs, or perhaps just salt.
This traditional recipe, introduced by European settlers, has become
an excellent excuse to get together with friends. Whether chocolate or
cheese, a fondue is a favorite local dish ideal for cold mountain evenings.

FRUTOS DEL BOSQUE
CERVEZAS Y VINOS DE LA PATAGONIA
El cultivo de estas especies frutales de reducido tamaño devino en
el norte de la Patagonia en una industria con sello propio. Entre
los berries y cherries más consumidos figuran grosella, zarzamora y
frutilla, todos ideales para elaborar confituras, decorar postres o dar
sabor a tartas y galletitas.
La zona comprendida entre San Carlos de Bariloche y El Bolsón
conserva una tradición de años: la elaboración de cerveza artesanal.
La producción de vinos, en tanto, es una actividad nueva en la
región que en los valles de los ríos Colorado y Negro ha dado vinos
de alta gama.
This traditional crop grown in the mountainous regions of Patagonia
has become a local industry. Redcurrants, blackberries and strawberries
are all widely used for jams, decorating desserts or flavoring tarts and
cookies.
In the region between San Carlos de Bariloche and
El Bolsón an age-old tradition is preserved: the making
of different kinds of artisanal beers (Stout, Ale, Porter,
Bock, Pilsen). Wine production, on the other hand,
is a new activity, centered in the Colorado and Negro
river valleys, where today top class Merlot and Pinot
Noir wines are being produced.
