THE BIRTH OF TEQUILA Many are the legends around the tequila. According to one of them, tequila was discovered when, during a storm, a thunderbolt hit the heart of an agave plant, cooking the juice with the resulting heat and turning it into nectar that people assumed as an unequivocal divine gift. Many pre-hispanic codices mention the growing and use of this plant in the natives’ daily life, including the production of its fermented juice called Mexcalli. Nevertheless, historical evidence indicates that tequila as we know it now is a drink of radical mixed origin; result of a Mexican plant (Blue Agave Tequilana Weber) and the introduction of the process of distillation to the American continent by the Spaniards, who learned it from the Arabs.
