If you prefer to make your own masa for tamales, here’s a recipe. 1. Remoja las hojas de maíz en un recipiente grande con agua tibia por aproximadamente dos horas. Con cuidado debes separarlas cuando estén suaves. Trata de no romperlas o dañarlas. Es más fácil hacer los tamales en hojas de una sola pieza. 2. Chef LaLa’s Tips ASSEMBLY For healthier tamales use canola oil instead of saturated fat. 1. Spoon prepared masa on the center of a corn husk. With the back of a spoon, spread masa 1⁄8- to ¼-inch thick on the husks. A thin cloth can be used under the lid to make a tighter fit. Occasionally check the water level. Serves 4 2. Twist the ends of the tamale and secure by tying with a small strip of corn husk. Wax paper can be used as an additional wrap. Place potatoes in pot, add water to cover and cook until tender. Drain water and return potatoes to pot. Mash until potatoes are smooth but still have a few small chunks. 2. Reduce heat to low. Add butter, half-and-half, tomato sauce, garlic, chipotle sauce and salt. Fold ingredients together to combine. Cook until completely heated through. Preheat oven to 300ºF. Place 6 (8-ounce) molds in a 9x13-inch pan; set aside. Pour 2 cups of the sugar into a deep saucepan. Carefully pour ½ cup water around sugar. Do not stir. Place over medium-high heat, and bring to boiling. Reduce heat to fast simmer and cook without stirring until amber-colored, 10 to 20 minutes. Immediately remove from heat. When mixture is a deep caramel color, quickly pour about 1⁄4 cup caramel into each mold and swirl to coat sides. Set aside to cool. 2. In saucepan, bring milk and vanilla bean to boiling over medium heat. Remove from heat and set aside. Meanwhile, in large bowl whisk together eggs, egg yolks and remaining 1 cup sugar. Whisk about half the hot milk into egg mixture until well incorporated. Whisk remaining hot milk into egg mixture. Whisk in mango purée until smooth. Strain mixture into a pitcher to smooth it and to remove vanilla bean and mango fibers. 3. Pour mixture into the caramel-lined molds. Place in pan on middle rack of oven; add 21⁄2 quarts hot water to pan to reach halfway up molds. Bake until flan is dry and set in center, 30 to 35 minutes. 4. Remove molds from pan and transfer to cooling rack; cool completely. Cover and refrigerate at least 4 hours before serving. 5. To serve, run sharp knife around edges of each flan to loosen. Invert onto individual serving dishes. Serve with mango slices, if desired.
