Los variados paisajes de Loja configuran a su vez
variopintas rutas. Así tenemos paisaje lunar (paisaje de
roca caliza en la Sierra de Loja), paisaje de bosque mediterráneo (entorno del Hotel La Bobadilla), paisaje de ribera (entorno del río Genil), paisaje de travertinos (entorno
de Los Infiernos Altos), paisaje de dehesa (dehesa de los
Montes), chopos, sauces e higueras (nacimiento de
Riofrío) y un sinfín de lugares por descubrir caminando.
Existen rutas señaladas en la Sierra de Loja y varias
guías sobre senderismo en el municipio.
Loja’s varied landscapes make up a series of picturesque routes. They range from lunar-like areas
(limestone formations in the Sierra de Loja), to
Mediterranean woodland (in the surroundings of the
La Bobadilla Hotel), riverside landscapes (river Genil),
travertine terraces (around Los Infiernos Altos), meadowland (Los Montes), areas covered by poplars,
willows and fig trees (source of the Riofrío), and
numerous other places which can be explored on
foot. There are signposted routes in the Sierra de
Loja and several guides offering information on walking routes in the municipality.

of a formal meal or in smaller tapas. These are especially popular because in Loja they come free with

Los platos más representativos del universo gastronómico lojeño son la porra, el choto al ajillo, cordero
lojeño y las habas con jamón, mientras que en repostería destacan sus famosos roscos, los huesos de
santo, hechos con harina frita y recubiertos con miel;
los pestiños, mantecados, bollos de aceite, tortas con
o sin pasas y los tradicionales hornazos, característicos de San Marcos, además de los tejeringos, una
variante de churros de origen árabe.
The local specialities include dishes like porra, choto al
ajillo, cordero lojeño (lamb) and broad beans with ham,
as well as the typical cakes and pastries. These include
the widely renowned roscos or huesos de santo, which
are made from fried flour and covered with honey as well
as pestiños, mantecados, oil doughnuts, tortas (with or
without raisins), traditional hornazos, which are prepared
for the feast day of San Marcos, and tejeringos, a variety
of churros or fried doughnuts of Arabic origin.

Además, se puede disfrutar de auténticos caprichos culinarios como son sus truchas y, cada vez más, el esturión, desde que la piscifactoría instalada en Riofrío produce caviar con denominación de origen y certificado
de calidad. Tan extraordinaria es su calidad que fue elegido el mejor caviar del mundo en 2005 y recientemente ha sido seleccionado en París como uno de los
20 mejores productos delicatessen.
Loja offers a range of high quality products including
lamb from the Sierra de Loja (with its own denomination of origin), cured pork products, hams, green asparagus, olive oil and the delicious water which flows
from its numerous fountains and springs.

ellas destacan el cordero Sierra de Loja (con denominación propia), chacinas, espárragos verdes, jamón,
aceite de oliva y su deliciosa agua que mana de las
numerosas fuentes y nacimientos lojeños.

The town also offers a variety of gourmet treats such as
trout and, increasingly, sturgeon, which is processed in
the fish farm of Riofrío to produce a quality-certified
caviar with its own denomination of origin. Its exceptional quality was recognised with the Award for the
World’s Best Caviar in 2005, and it was recently officially recognised in Paris as one of the 20 best gourmet
products.
ROSCOS DE LOJA
Se prepara un batido a base de azúcar, almidón de maíz,
harina de trigo, agua y huevos. Una vez montado el batido, con una manga pastelera, se hacen las rosquillas de
este bizcocho. Se cuecen en el horno a 375º y, una vez
frías, se separan para su posterior relleno.
El relleno de estos roscos se hace con agua, azúcar,
harina de trigo y yemas de huevo. Una vez rellenos, se
prepara un merengue muy azucarado para su posterior
lustrado. Se secan en el horno a temperatura suave y ya
estarían listos para comer.
INGREDIENTES / INGREDIENTS
Azúcar, almidón de maíz, harina de trigo, huevos y agua.
Sugar, corn starch, wheat flour, eggs and water.
Prepare a mixture with sugar, corn starch, wheat flour,
water and eggs. Once the mixture is ready, use a
pastry bag to make the ring shaped pastry. Bake in the
oven at 375º, leave to cool, separate and add the
filling.
To prepare the filling, mix water, sugar, wheat flour and
egg yolk. Once the roscos have been filled, prepare a
very sugary meringue to decorate. Dry in the oven at a
low temperature and serve.
TRUCHA A LA BRASA
Se limpian las truchas, quitándoles la espina y se corta
el jamón en virutas. Freir las almendras hasta que estén
doradas y picarlas en un mortero. En una sartén amplia
o plancha con un fondo de aceite ponemos las truchas
abiertas con la piel hacia abajo, esparciéndoles por
encima el ajo y el perejil picados finamente. Se les da la
vuelta a las truchas, añadiéndoles una pizca de tomillo,
el jamón y las almendras fritas. Un momento antes de
retirar, dar un toque de vinagre al pescado, sirviéndolo
muy caliente.
INGREDIENTES / INGREDIENTS
Truchas, jamón serrano, almendras, aceite de oliva virgen,
vinagre de Jerez o Montilla, ajos, tomillo, sal y perejil.
Clean the trout, remove the bones and cut the ham
into curls. Fry the almonds until golden and crush in
a mortar. Place the filleted trout pieces with the skin
facing down on a wide frying pan or grill with a little
oil. Turn the trout over and sprinkle finely chopped
garlic and parsley on top, then add a pinch of thyme,
the ham and the fried almonds. Just before removing
from the pan, add a touch of vinegar to the fish and
serve very hot.

Montilla vinegar, cloves of garlic, thyme, salt and
parsley.

RUTA DE LA TAPA
TAPA SAMPLING ROUTE
Durante un fin de semana de abril o mayo, los bares de
tapas compiten por ver quién elabora las tapas más
exquisitas y novedosas. Por su parte, los participantes
en esta ruta tienen un único objetivo: conseguir sellar
antes que nadie el pasaporte de esta ruta que certifica
que ha pasado por todos los bares.
One weekend in April or May, various tapas bars compete against each other to offer the most exquisite and
original tapas. The people following the route have only
one objective in mind: being the first to obtain all the
stamps in the route “passport” which certifies that they
have been to all the featured bars.
MUESTRA GASTRONÓMICA DE CINEMATOGRAFÍA
GASTRONOMY AND CINEMA
Aprovechando el Festival de Cortometrajes anual, que
tiene lugar en noviembre, se celebran unas jornadas
en las que los restaurantes, bares y pubs de Loja preparan platos y cócteles relacionados con el mundo del
celuloide.
Coinciding with the Annual Short Film Festival, which
is held in November, the town hosts a gastronomic
event during which the local restaurants, bars and
pubs prepare dishes and cocktails related to the world

Además la “Visita a nuestro pasado” llevará un suplemento previo
pago de 3 € por persona si se

• El Patronato Municipal de
Turismo de Loja no se hace responsable de la no apertura de los
monumentos que directamente no
gestione. En caso de que algún
