En enero de 2009, en una noche lluviosa y fría de
invierno apareció tras una de las ventanas de nuestra cocina, una pequeña y raquítica gatita de color
blanco y manchas grises. Estaba en horas bajas,
desnutrida, débil y algo mojada. Mientras yo preparaba la cena, ella no dejaba de observarme a través
del cristal. En un primer instante no le hicimos mucho caso, es frecuente el tránsito de gatos por esta
montaña y no podemos dar de comer a todos los
que deambulan por aquí.
Antes de ir a dormir me acerque de nuevo a la cocina y la gatita seguía allí; fija, inmóvil y con una mirada
muy profunda; de esas que no necesitan palabras. A
la mañana siguiente al entrar en la cocina para preparar el desayuno, vi que la pequeña felina seguía
observándome a través del cristal, exactamente en
la misma posición en la que estaba la noche anterior. Sus ojos, abiertos como platos trasmitían esperanza y no se atrevían a parpadear para no perder
una posible oportunidad de alimentarse. Durante
muchos días se repitió la historia. Un buen día decidí salir y darle de comer. Al principio se asusto. El
miedo vencía a las ganas de comer. Se acercaba
y salía corriendo en una escena al más puro estilo
“bailando con lobos”.
Decidimos adoptarla en nuestra parcela y bautizarla con el nombre de “Crisis”. Su estado lamentable
y el tema del momento nos pusieron de acuerdo
enseguida…
Desde aquel día “Crisis” se ha convertido en un
ejemplo de constancia, tenacidad y espíritu de sacrificio: llueva, nieve o caigan rayos “Crisis” siempre nos
mira desde la ventana indiscreta. Su estado físico
ha mejorado mucho, aunque sigue siendo flaquita
y pequeñita, pero es una gata con mucho estilo y
todos los gatos de Monte Picayo están loquitos por
ella, incluido el nuestro.

In January 2009, on a cold and rainy winter’s night,
there appeared in one of the windows in our kitchen
a small, skinny white cat white with grey spots; she
was suffering, malnourished, weak and somewhat
wet. While I was making dinner she kept watching
me through the glass; at first we didn’t pay her much
attention as there is a frequent traffic of cats in the
mountains and we can’t possibly feed all those who
wander by.
Before going to bed, I went back again to the kitchen
and the kitten was still there, still, staring with a very
deep look in her eyes, one of those which do not
need words. The next morning, as I approached the
kitchen to prepare breakfast, I saw the little cat was
watching through the glass, and in exactly the same
position as she was the previous night, her eyes wide
open like plates were transmitting hope and not daring to blink so as to keep going a possible opportunity to eat. She repeated this same scenario for
many days. One day I decided to go and feed her.
She was scared at first, fear overcoming the urge to
eat, she approached and ran away in a scene worthy
of “Dancing with Wolves.”
We decided to adopt her into our home and christened her with the name of “Crisis,” her pitiful state
and the principal topic of the moment meant that we
agreed on it immediately.
From that day on, “Crisis” has become an example
of perseverance, tenacity and the spirit of sacrifice:
in rain, snow or lightning strikes “Crisis” always views
us from the rear window. Her physical condition has
improved but, although still skinny and tiny, is a very
stylish cat. In fact, all the cats in Monte Picayo are
crazy about her including ours.
Hoy he llegado a casa cansado, abatido. No ha sido
un buen día. Me pongo a hacer nuestra cena, las luces
exteriores están apagadas pero vislumbro una sombra.
Es ella. La luchadora, la constante, la inagotable: mi gatita. La miro a ella y todos los aspectos negativos del día
se me olvidan. Es el símbolo de la lucha y del “querer es
poder”, madre coraje donde las haya.
Today I come home tired, exhausted – it hasn’t been
a good day - I go to make our dinner: the outside
lights are off but I glimpse a shadow. It’s her: the
fighter, the constant, the inexhaustable, my little kitten. I look at her and all the negative aspects of the
day are forgotten; she’s the symbol of the struggle,
and the saying “If you want it enough, you can get it”.
Algunas veces me pregunto ¿Cómo? Y ¿Por qué?
llego hasta aquí. ¿Realmente cuidamos nosotros de
ella, o es ella la que vela por nosotros y la que con su
actitud nos ayuda? ¿Cómo es posible que una cosa
tan pequeñita nos infunda tanto respeto y admiración?
Sometimes I ask myself: How? And why? I come
here. Do we really care for her? ...or is she the one
who watches over us, who helps us with her attitude?
How can something so tiny inspire in us so much
respect and admiration?
Así es que mi querida gatita a partir de hoy dejarás
de llamarte “Crisis” y pasaras a llamarte “Class”. Mañana tengo un día muy importante, nos vemos en el
desayuno, te necesito.
So my dear kitten, from now we will stop calling you
“Crisis” and we’re going to call you “Class”. Tomorrow
I have a very important day, we’ll see you at breakfast.

Arquitectura, ecologismo y tecnología se funden con el objetivo de
crear un nuevo concepto de edificios. Son edificios modernos, pero
prácticos, donde la luz adquiere un verdadero protagonismo y que
no pasan desapercibidos para nadie. Ello lo ha conseguido tecArquitecture, un despacho de arquitectos integrado por Sebastian Knorr,
Otsmann Heiko y Knorr Moritz y con sede en Los Ángeles y Suiza, que
ha sabido plasmar su idea de arquitectura moderna y hacerla llegar
al público.
Architecture, the environment and technology all merge in order to
create a new concept of buildings. They are modern – yet practical - buildings where the light takes on a leading role and they don’t
pass unnoticed by anyone. TecArquitecture, an architectural firm
composed of Sebastian Knorr, Otsmann Heiko and Knorr Moritz, with
headquarters in both Los Angeles and Switzerland, have managed
to achieve this and to capture their idea of modern architecture and
make it available to the public.
Sin tapujos, sin reparos y sobre todo sin ningún tipo de limitación desarrollan sus proyectos basándose en las necesidades de sus clientes, pero también en el entorno donde van a ubicarse.
Openly, unashamedly and, especially, without any type of limitation
they develop their projects based, not only on their clients’ needs, but
also the environment where they are going to be situated.
En España tenemos una pequeña muestra en Mallorca. Allí tecARQUITECTURE creó una casa que es la verdadera prueba de la modernidad. Ubicada en la urbanización de lujo, Son Vida, esta vivienda rompe
todos los esquemas establecidos hasta el momento en la zona. Una
construcción que mezcla las nuevas tendencias y que, a su vez, hace
un guiño a la esencia mediterránea. Con una estructura cúrvica, esta
casa ya da a entender desde el exterior que nada tiene que ver con
una vivienda convencional y que la magia también sigue en su interior.

In Spain we have a small example in Mallorca. There, tecARCHITECTURE created a house that is the true test of modernity. Located in the
luxury development Son Vida, this home breaks all established preconceptions to date in the area. It is a construction that combines new
trends and, in turn, gives a nod to the essence of the Mediterranean.
With a curved structure, this house reveals itself from its exterior which
has no comparisons with a conventional home and where its magic
also continues inside. An interior decorated by Dutch designer Marcel
Wanders who tries to fill the existing space with a mixture of ancient
and modern styles; where gold and black are present, trying to give the

mucha presencia del blanco y con una irrupción del arte que envuelve
a esta nueva arquitectura ecológica. Así presentan en tecARQUITECTURE sus creaciones. Unas construcciones, calificadas por muchos
como futuristas, pero que les has valido el respeto y la admiración de
muchos expertos en arquitectura y medios de comunicación.
Son muchos los premios y galardones conseguidos por tecARQUITECTURE, que han llevado a muchos a calificarlos como iconos de
la modernidad.
1. ¿Cuándo y por qué surge TecArquitecture?
Empezamos tecArquitecture debido a nuestro amor por la arquitectura
moderna. Pensamos que la mezcla del diseño de alta tecnología y la
ecología son los elementos perfectos de la arquitectura.
2. La arquitectura ha ido cambiando en los últimos años. ¿Qué es
para vosotros la arquitectura? ¿Cuál es vuestra filosofía?
Queremos que nuestra arquitectura toque y mueva a la gente realmente.
La buena arquitectura debe envolver la mente de una persona y el cuerpo como un fabuloso vestido o un traje de corte perfecto.
3. ¿En qué basáis vuestros proyectos? ¿Qué es lo más importante?
Tendemos a insertar una personalidad única en los proyectos que creamos. Esta personalidad se basa siempre en una serie de factores, tales
como el lugar, el cliente, etc...
4. ¿Qué estilos plasmáis en vuestros proyectos?
Nuestros proyectos son piezas individuales y personalizadas para nuestros
clientes, por lo que en realidad no se adhieren a un tipo de estilo específico.
5. Muchos han calificado vuestros proyectos como “iconos de la
modernidad”. ¿Estáis de acuerdo con ello?

have led many to label them as icons of modernity
1. When and for what reason did TecArquitecture start?
We started TecArchitecture because of our love of modern architecture.
We believe that the mix of high-tech and environmentally-friendly design
– are the perfect elements for architecture.
2. Architecture has been changing in recent years. What does architecture mean for you? What is your philosophy?
We want our architecture to touch and really move people. Good architecture should envelope a person’s mind and body like a fabulous dress
or a perfectly tailored suit.
3. On what do you base your projects? What is the most important thing?
We tend to insert a unique personality into the projects we create. This
personality is always based on a number of factors, such as the place,
the client etc…
4. What styles do you reflect in your projects?
Our projects are individualised and customised to our clients’ needs, so
we don’t really adhere to one specific style.
5. Many people have termed your projects as “icons of modernity”
Would you agree with that?
I think that is a very beautiful compliment.

6. ¿Qué materiales soléis emplear?

use? Anything in particular? Why?
Utilizamos materiales que nos permiten construir adecuadamente según el
tema y el estilo del proyecto. Nuestros
proyectos varían de un lugar a otro, así
que no estamos vinculados a ningún
material, sino más bien permitir que el
proyecto llegue a influir en aquello que
utilizamos.
We use materials that allow us to construct appropriately to the theme and
style of the project. Our projects vary
from location to location, so we are not
bound to any one material, but rather
allow the project to influence what we
use.
7. Algunos de esos proyectos los podemos ver en España, como la casa
que construisteis en Son vida. ¿En
qué os basasteis a la hora de desarrollarlo? ¿Es importante la opinión
del cliente?
Hablando en términos de diseño, pensamos que la zona de Son Vida en
Mallorca podría utilizar algo de la nueva
vida. Nos sentimos inspirados por las
formas onduladas del campo de golf
adyacente, con un entorno que permitió influir e inspirar realmente este proyecto. También hemos trabajado muy
cerca con el cliente. La opinión de los
clientes es lo más importante aquí.
8. ¿Qué fue lo más complicado en Son Vida?
La geometría. El edificio sería simplemente imposible construir sin el
diseño a través de ordenador.

seen by us in Spain, such as ‘Casa
Son vida’. What were your references
at the time of developing that project? How important is the client’s
opinion?
Speaking in terms of design, we
thought that the area of Son Vida in
Mallorca could benefit from a bit of
new life. We were inspired by the undulating shapes of the adjacent golf
course, with an environment that was
allowed to really influence and inspire
this project. We also worked very closely with the client. The clients’ opinion
is the most important one here.
8. What was the most complicated thing about Son Vida?
The geometry. The building would be simply impossible to build without designing it on the computer.

9. It seems that Son Vida has been a success because you have
continued developing projects in the area. What projects are now
occupying your time? Are any of them in Spain?
Actualmente estamos diseñando tres villas más en Son Vida, además de
un hotel en Portals.
We are currently designing three more villas in Son Vida as well as a
hotel in Portals.
Otros proyectos, tales como hoteles, villas, residencias y edificios de oficinas están ubicados en todo el mundo en países como Suiza, Alemania, Tailandia, Laos.

9. Al parecer, esta vivienda en Son Vida ha sido un éxito porque
habéis seguido desarrollando proyectos en la zona. ¿Qué proyectos
ocupan ahora vuestro tiempo? ¿Algunos de ellos en España?

NATURAL SWIMMING POOLS OR BATHING PONDS
En cada vez más campos y procesos se incorporan elementos naturales, biológicos y ecológicos a aspectos cotidianos de nuestra vida diaria, las técnicas y los proyectos se definen con un alto componente de
sostenibilidad. En la alimentación pedimos recuperar la pureza de los
productos biológicos u orgánicos y en cada acción que emprendemos
buscamos el equilibrio entre desarrollo, salud y la propia vida del planeta.
Natural, biological and ecological elements are being incorporated into
our daily lives more and more often now in different fields and processes,
as techniques and projects are being defined with a high component of
sustainability. In food we are demanding to recover the purity of biological and organic products and in every action we undertake we seek a
balance between development, health and life on the planet.

incorporarse como un proceso de generación de autentica riqueza y
desarrollo.
The environment has grown from being a curious or anecdotal element
to becoming a genuine process of generating wealth and development.
Una piscina natural es un espacio Único, Personal y Natural adaptado
para el baño, en el que se integran Naturaleza, Tecnología y Arte.
NATURALEZA
Es un autentico ecosistema acuático en nuestra casa. Se trata de sistemas vivos que reproducen a pequeña escala los procesos de regeneración del agua obteniendo un espacio único y natural.
TECNOLOGIA:
Se trata de procesos de depuración biológica basados en la fitodepuración desarrollados desde los años 50 con sistemas de desinfección
natural usados desde el siglo XVII. La combinación de ambos de forma
adecuada con sistemas tecnológicos de control en función de la radiación y la temperatura, permiten la optimización energética y de uso.
¿Qué ventajas tiene una piscina natural?
A natural pool is a unique, personal and natural space adapted for bathing, in which Nature, Technology and Art are all integrated.
NATURE
It is a true aquatic ecosystem in your house. They are living systems that
reproduce on a small-scale all the processes of water regeneration thus
obtaining a unique and natural space.
TECHNOLOGY:
What we are dealing with are biological treatment processes based on
cleaning the water with plants or algae developed since the 1950’s with
natural disinfection systems used since the seventeenth century. The
combination of both, used in an appropriate way with technological systems to control the function of radiation and temperature, allow optimization of energy use.

La creación de espacios únicos y totalmente personalizados son también parte esencial de estas piscinas naturales, de esta forma un diseño
acorde con el estilo, uso y necesidades constituye un elemento más
diferenciador de nuestros proyectos. Cascadas, cauces, fuentes, saltos
de agua, el movimiento, el sonido… solo pueden ser comparados con
los más increíbles palacios, entroncando de esta forma con el elemento
propio de la jardinería mediterránea, y siendo el agua, el hilo conductor
por el que se desliza toda nuestra historia.

The creation of unique and highly customized spaces are also an essential part of these natural pools, so a design in keeping with style, use
and needs is a distinctive element of our projects. Waterfalls, streams,
fountains, waterfalls, movement, sound ... can only be compared with the
most incredible palaces, rooted in this way with the typical element of
Mediterranean gardening, and being water, the thread which connects
all our history.
FUNCIONAMIENTO
La piscina natural se basa en la depuración mediante plantas acuáticas,
las cuales aceleran el crecimiento de microorganismos beneficiosos y
absorben los nutrientes del agua. Estos son el principal alimento de
las algas. Para esto se crea una superficie dividida en dos zonas. Una
de baño y otra de depuración separadas mediante un muro o en un
estanque a aparte.
OPERATION
A natural pool is based on purification by aquatic plants which accelerate the growth of beneficial microorganisms and absorb nutrients from
the water. These are the main food of algae. For this a surface divided
into two zones is created: one for bathing and the other for purification
separated by a wall or in a separate pond.
MAINTENANCE
MANTENIMIENTO
Al tratarse de un agua natural, sin productos químicos no podemos evitar la existencia de algas, de ahí que se requiera un análisis químico de
calidad del agua previo al llenado con las características organolépticas,
físico-químicas y microbiológicas. El biofiltro empezará a realizar su función extrayendo los nutrientes y eliminando paulatinamente a las algas
ya que estas no podrán reproducirse por falta de nutrientes.
El mantenimiento es casi nulo en invierno, menos intenso en primavera y
otoño y más frecuente en verano, una vez por semana como promedio.
Se debe usar el limpiafondos y limitar la entrada de materia orgánica
para un funcionamiento eficaz del biofiltro.

Being natural water without chemicals one cannot avoid the existence
of algae, hence the need for a chemical analysis of water quality prior to
filling it up with the organoleptic, physical-chemical and microbiological
features. The biofilter will begin to do its job by removing the nutrients
and gradually removing the algae as these cannot reproduce themselves due to lack of nutrients.
The maintenance is almost zero in winter, less intense in spring and
autumn, and more frequent in summer, once a week on average. You
must use the cleaner and limit the input of organic matter for an effective
functioning of the biofilter.

Acabaríamos antes preguntándonos qué no ha hecho Marcel Wanders en el mundo del interiorismo.
Hay quien le define como visionario
de tendencias, puede ser la razón
de que sus obras se expongan en
los museos más importantes del
mundo. Son parte de selectísimas
colecciones de diseño contemporáneo. Hablamos de templos del arte
como el MoMA de Nueva York, el
Museum of Modern Art de San Francisco, el V&A Museum de Londres o
el Stedelijk Museum de Amsterdam.

We would end up asking ourselves
what Marcel Wanders hasn’t done
in the world of interior design. Some
define him as a visionary of trends;
this may be the reason that his works are exhibited in the world’s most
famous museums. They form a part
of extremely select collections of
contemporary design. We’re talking
about temples of art such as New
York’s MoMA, the Museum of Modern Art in San Francisco, the V &
A Museum in London and the Stedelijk Museum in Amsterdam. His
creations also appear frequently in
the pages of prestigious publications: the Washington Post, the Financial Times, the New York Times
and Business Week.

Su trabajo en ‘Droog Desing’, empresa donde comenzó su andadura,
no pasó desapercibido. La compañía holandesa fue la pista de despegue de un hombre al que le sobraban las ideas. Muy pronto se hizo
un nombre en el mundo del diseño
con su famosa ‘Silla Tejida’. Más tarde se atrevió con lámparas, vajillas,
grifería, azulejos, sillones, juguetes
para niños...Ha trabajado para muchísimas marcas, B&B Italia, Bisazza, Poliform, Moroso, Flos, Boffi, Cappellini. Ahora también para la suya
propia, Moooi Desing, de la que es
director artístico y co-propietario.

He soon made a name for himself

Cappellini. Now also for his own
brand, ‘Moooi Design’, of which he
is artistic director and co-owner.

El mobiliario de la vivienda combina también lo moderno con lo tradicional y en su cocina podemos ver un claro ejemplo con una sencilla isla
funcional con zona de cocción y de aguas y un mueble aparador y una
cajonera de líneas curvas y un estilo clásico.
Ya en el exterior de la vivienda algunos elementos gráficos dan la bienvenida al visitante: un oso al más puro estilo Wanders y algunos seres
marinos que se apropian de los techos de una parte de la casa.
El proyecto de interiorismo de la casa de “Son Vida” posee un sinfín de
matices que lo convierte en algo atrevido y transgresor fruto de la genialidad de un artista en estado puro, y que sin duda, se ha convertido en
un icono para jóvenes interioristas de todo el mundo.
The furniture in the house also combines the modern with the traditional
and in the kitchen we can see a clear example of a simple functional
island with cooking and washing-up areas and with a sideboard and a
classically styled chest with curved lines.
Now in the exterior of the house some graphic elements welcome the
visitor: a bear in pure Wanders-style and some sea creatures that take
advantage of the roofs of part of the house.
The interior design project for the “Son Vida” house has a myriad of
nuances that make it something daring and a transgressor; a fruit of the
genius of an artist in its purest form, and that, without doubt, has become
an icon for young interior designers around the world.

Constantemente se habla de plantas medicinales, de aromaterapia, o
de plantas que curan, pero pocas veces se habla de plantas silvestres
de uso culinario, o mejor dicho que se pueden comer. Bien, pues en
este artículo, quiero hablar de las plantas silvestres que tradicionalmente se han empleado para preparar todo tipo de recetas, pero que por
causa del abandono de los pueblos, estas tradiciones se van perdiendo.
Medicinal plants are being constantly talked about, either for their use
in aromatherapy or as healing plants but wild plants are rarely spoken
about for their culinary uses. Well, in this article, I want to talk about the
wild plants that have traditionally been used for preparing all kinds of
recipes but that, because of the abandonment of country villages, these
traditions are now being lost.
Voy a comenzar por una de las más típicas empleadas popularmente,
me refiero a la “colleja” de nombre científico Silene latifolia, esta planta
pertenece a la familia de las Cariofiláceas, presenta hojas en roseta
basal tapizadas de pelos blancos que le dan aspecto aterciopelado al
tacto, de la que parten los tallos con hojas opuestas y que terminan en
un grupo de 3 a 5 flores, formadas por cinco pétalos escotados de color
blanco. Crece en las orillas de los caminos y en terrenos baldíos.
I will start with one of the most commonly used and typical - the “colleja”,
with the scientific name Silene latifolia - belongs to the family of Caryophyllaceae and has basal rosette leaves lined with white hairs that give
it a velvety touch, from which the stems part with opposing leaves and
terminate in a group of 3 to 5 flowers, made up of five white notched
petals. It grows on roadsides and on wasteland.
Popularmente se cocinan en tortilla, para ello se lavan bien las hojas
para quitar la tierra, a continuación se ponen a escurrir, luego se pone la
sartén a fuego lento con poco aceite y al mismo tiempo se cortan con
unas tijeras para que se queden más menudas. Han de quedar poco
fritas, más bien jugosas, después se bate el huevo, se mezcla con las
collejas ya fritas y se hace igual que una tortilla francesa.

Traditionally cooked in an omelette, to make one the leaves are well washed to remove any dirt then drained. Next, put a frying pan on a low heat
with a little oil and, at the same time, cut up the leaves finely with scissors.
Do not overcook them as they need to be juicy then beat the egg, mix it
with the fried collejas, the same as you would do with an omelette.
Another widely used plant is the “chicory” (Cichorium intybus), belonging
to the family of Compounds which present striking light blue flowers. It
grows on roadsides and in rubbish tips.

Otra planta muy usada es la “achicoria” (Cichorium intybus), perteneciente a la familia de las Compuestas, presenta unas llamativas flores de
color azul claro. Se cría en orillas de los caminos y en escombreras. Tradicionalmente ha sido utilizada su raíz tostada como sustitutivo del café
en épocas de escasez, pero en la actualidad el uso más frecuente es la
utilización de sus hojas, de agradable sabor amargo, en ensaladas, a las
que se puede añadir diente de león, ajo y limón. Esta ensalada presenta
la propiedad de abrir el apetito.
Típica de los pueblos del interior son las borrajas, ¿quién no ha oído
hablar del agua de borrajas?. La borraja (Borago officinalis) pertenece a
la familia de las Boragináceas, presenta tallos y hojas cubiertos por pelos
ásperos, las flores son solitarias y péndulas de color azul normalmente,
pero también las hay de color blanco. Al igual que las anteriores, crece en
bordes de caminos y en terrenos baldíos. Con las borrajas se preparan
también deliciosas ensaladas, pero para prepararlas primero hay que
hervirlas para reblandecerlas y para que se destruyan los pelos ásperos.
Una ensalada fácil de elaborar es la siguiente: Cocer la borraja. Una vez escurridos los tallos montar en plato con aceitunas y una cebolla dulce finamente cortada, se adereza con aceite de oliva virgen, vinagre y sal al gusto.
Por último les hablaré del girasol, (Helianthus annuus.). Pertenece a la
familia de las HYPERLINK “http://es.wikipedia.org/wiki/Aster%C3%A1cea”
\o “Asterácea” Asteráceas, y se cultiva como oleaginosa y ornamental
en todo el mundo. Sus frutos, las pipas, por sí mismas se incluyen en
comestibles elaborados con cereales, como granola y productos naturistas, o se consumen solas, luego de tostarlas. Las semillas son ricas
en vitamina E, alfatocoferol, colina, betaina, lignano y ácidos fenólicos,
sustancias conocidas por sus cualidades antioxidantes, es decir, que
ayudan a prevenir el envejecimiento celular, por lo que, sin abusar de su
uso, el aceite de girasol es un ingrediente ideal para aderezar ensaladas
frescas de todo tipo.
En el próximo artículo les hablaré de otras plantas culinarias también
muy interesantes.
Traditionally, the root, once roasted, has been used as a substitute for
coffee in times of scarcity, but nowadays the most frequent use is of its
leaves - with an agreeably bitter taste - in salads, to which can be added
dandelion, garlic and lemon. This salad has the characteristic of whetting
the appetite.
Typical of the inland villages is borage; who in Spain hasn’t heard the
expression, “agua de borrajas” (“nothing came of it”)? Borage (Borago
officinalis) belongs to the family of Boragináceas, has stems and leaves
covered by coarse hair, solitary flowers and with pendulums that are normally blue but can also be white. Like the others, it grows on roadsides
and wasteland. You can make delicious borage salads but you must first
boil the leaves to soften them and get rid of its course hairs.
This salad is easy to make: boil the borage and then, once drained, put
the stalks on a plate with olives and a finely chopped sweet onion, seasoned with olive oil, vinegar and salt to taste.
Finally, I want to speak about the sunflower (Helianthus annuus) which
belongs to the Asteraceae family and is cultivated worldwide as oilseed
and as an ornamental flower. Its seeds themselves are included in cereal-based foods such as granola and natural products, or are eaten on
their own, after being roasted.
The seeds are rich in vitamin E, tocopherol, choline, betaine, phenolic
acids and lignans, substances known for their antioxidant qualities which
help to prevent cell aging so, without overdoing it, sunflower oil is an ideal
ingredient for dressing all types of fresh salads.

culinary plants.

Hay crecimiento pero siguen los desequilibrios según las zonas
Entorno
Las perspectivas económicas continúan siendo positivas, tal y como lo
reflejan las previsiones del FMI, con una estimación de crecimiento global en 2011 del 4,4%. Un crecimiento liderado por los emergentes, con
perspectivas para EEUU del 2,8% y en la Zona Euro un 1,6%, siendo el de
España, un 0,8%. Los resultados empresariales continúan arrojando buenas cifras en general, gracias al soporte de los altos dividendos y las operaciones corporativas. Un escenario propicio para los activos de riesgo,
teniendo en cuenta que los tipos de interés reales siguen siendo bajos.
Sin embargo, este entorno de crecimiento saludable no está exento de
incertidumbres, que deberían ir resolviéndose a corto y a medio plazo.
La primera de ellas, la necesidad en el corto plazo de una mayor visibilidad en el riesgo soberano de la Zona Euro. Porque la situación continúa
siendo muy heterogénea en los diferentes países del Área. Mientras Alemania y Francia siguen creciendo a un ritmo sostenido, los ‘periféricos’
se encuentran todavía en recesión o, en el mejor de los casos, en estancamiento. Este entorno plantea la cuestión de si las medidas de ajuste
fiscal aplicadas son realmente efectivas para “rescatar” a los países más
débiles, puesto que son un freno para su crecimiento. Grecia, que en el
corto plazo podría recibir un segundo paquete de ayudas de la Unión
Europea, podría verse abocada a reestructurar su deuda.
En todo caso, planes de consolidación fiscal creíbles son necesarios a
escala global. La Zona Euro recibió el primer toque de atención hace
un año, pero ahora le ha tocado el turno a EEUU, con S&P poniendo en
perspectiva negativa su deuda pública Por otra parte, el frente geoestratégico en África y Oriente Medio continúa encareciendo el petróleo.
Si se produce una mayor visibilidad en este asunto, la tendencia alcista
del mercado tendrá mayor consistencia.
Desde una perspectiva más global, tanto el empleo como la inflación
continúan presentando debilidades. Por el momento, el crecimiento
en las economías avanzadas ha sido insuficiente para crear empleo
neto, y las tasas de paro se mantienen elevadas. Aunque la situación
en muchas economías -EEUU entre ellas- ha mejorado sensiblemente
en los últimos meses. En cuanto a la inflación, ha repuntado sensiblemente desde principios de 2011, pero debería ceder en el segundo
semestre. Las políticas monetarias están dirigiéndose a un escenario
menos acomodaticio, sin que ello suponga (a priori) un escollo para el
crecimiento económico, a pesar de que sigue habiendo diferencias. No
se espera que EEUU comience a subir los tipos hasta 2012, pero sí se
prevé una subida adicional de 25 puntos básicos del BCE antes de que
acabe 2011. Por la parte de las economías emergentes –especialmente
las asiáticas, dado su elevado crecimiento-, deberían seguir el ritmo de
tensionamiento mantenido hasta ahora.
There is growth but still imbalances according to the different zones
Environment
The economic outlook remains positive, as reflected by the IMF forecasts, with a global growth estimate of 4.4% in 2011; growth led by emerging markets, with prospects for the U.S. of 2.8% and in the Euro Zone
1.6%, with that of Spain set at 0.8%. Business results continue churning
out good figures in general, thanks to the support of high dividends and
corporate operations. This is a beneficial scenario for risk assets, bearing
in mind that current interest rates remain low. However, this environment
of healthy growth is not without its uncertainties which should be resolved in the short and medium term.
The first of these is the short-term need for greater visibility in the sovereign risk of the eurozone. This is because the situation remains highly
fragmented in the different countries of the zone. While Germany and
France are growing at a steady pace, the ‘peripherals’ are still in recession or at best in stagnation. This environment raises the question as to
whether the fiscal adjustment measures implemented are really effective
for “rescuing” the weaker countries, since they are a brake on growth.
Greece, which in the short term could receive a second package of EU
aid could be required to restructure its debt.
In any case, credible fiscal consolidation plans are needed globally. The
Euro Zone received its first wake-up call a year ago, but now it is the turn
of the U.S., with S & P putting out a negative outlook of its public debt.
On the other hand, the geostrategic front in Africa and the Middle East
continues to make oil more expensive. If a greater visibility is produced in
this case then the bull market will take greater precedence.
From a global perspective, both employment and inflation continue to
have weaknesses. For now, growth in advanced economies has been
insufficient to create net employment and unemployment rates remain
high, although the situation in many economies, including the U.S., has
improved considerably in recent months. As far as inflation is concerned,
it has picked up significantly since early 2011, but it should start to recede
in the second half. Monetary policies are becoming less accommodating, without involving (a priori) an obstacle to economic growth, although
differences remain. The U.S. is not expected to start raising rates until
2012, but it does forecast an additional rise of 25 base points of the ECB
before the end of 2011. With regard to the emerging economies - especially the Asian countries - given their high-growth, they should keep
pace with the rhythm of tightening up followed up to now.

En un contexto de crecimiento y con tipos al alza, no se recomiendan
posiciones de duración larga. Hay valor en los Tesoros atractivos por el
binomio rentabilidad/riesgo; el caso de España, puesto que el mercado
discrimina entre ‘periféricos’. En cuanto al High Yield, las valoraciones,
flujos y momentum (tasas de quiebra y revisiones de rating) soportan
el activo, en el corto plazo y hasta que no termine el impacto de los
eventos geopolíticos, habrá volatilidad. La renta fija emergente es un
complemento idóneo, por su ritmo adelantando en subidas de tipos,
aminorando el riesgo de la duración a largo plazo.

El activo prioritario, en un contexto de recuperación para las empresas
–ya sea por dividendos, por operaciones corporativas o por la prima de
riesgo aún atractiva-. También lo es por valoración. Con sobreponderación para EEUU y los emergentes, aunque a medida que disminuya el
riesgo soberano, la renta variable europea irá ganando atractivo.
Gestión alternativa
Sigue jugando un papel de descorrelación respecto de los mercados
financieros. Especialmente en las commodities, que ejercen un papel de
escudo antiinflacionista. Sigue habiendo oportunidades.
Equities
The primary asset, in a context of recovery for businesses - whether
through dividends, corporate transactions or the still attractive risk premium. It is also because of its valuation. With overweighting for the U.S.
and emerging markets, although as sovereign risk decreases, European
equities will gain appeal.
Alternative management
Still plays a role of decorrelation in the financial markets - especially in

BUT NOT EVERYWHERE.
En este último mes las estadísticas están anunciando un nuevo descalabro en la
compraventa de viviendas en España, curiosamente nosotros estamos percibiendo un incremento en la demanda y un aumento en el número de compraventas
realizadas. ¿Por qué? La culpa del parón en las transacciones se la echan al fin de
la desgravación y al aumento del IVA, pero esto no es cierto. El ser humano está
diseñado para resolver los problemas que tienen solución y asumir los que no la
tienen, así es que estos dos parámetros no van a ser un problema para que el
mercado se anime, el fin del incentivo fiscal se encajará. El verdadero problema
es que los bancos no están prestando dinero, las nuevas exigencias de capital,
así como la extensa cartera de inmuebles en su poder, hacen que el crédito a
vivienda esté congelado y esto afecta a la gran mayoría del stock de inmuebles
en venta. Sin embargo los inmuebles de gama alta que han corregido su precio,
si que tienen tirón y están claramente empezando a moverse.
In the last month the statistics are telling us about a new setback in the sale and
purchase of properties in Spain whist, interestingly, we are noticing an increase
in demand and an increase in the number of sales and purchases made. Why is
that? The blame for the slowdown in transactions can be directed at the ending
of relief and increased VAT, but this is not true. Humans are designed to solve the
problems that are solvable and assume those are not, so these two parameters will
not be a problem for the market to jump back to life; the ending of the tax incentive
can be dealt with. The real problem is that banks are not lending money and new
capital requirements and the extensive portfolio of properties in their possession
mean that housing credit is frozen and this affects the vast majority of the stock of
properties for sale. However, high-value properties have corrected their price, now
have more muscle and are clearly starting to move.

Tras más de quince años dedicada a los medios
de comunicación, confiesa que el proyecto que
más le ilusiona en esta etapa de su vida es la literatura. Y no es de extrañar después de la publicación
de su tercer libro. Esta vez ha querido compartir
autoría con su manager y marido, Juan del Val. El
resultado, ‘Para Ana (de tu muerto)’, una novela definitivamente alejada de su imagen de niña buena.
No sabemos con qué nos sorprenderá la próxima
vez, es tan polifacética que a lo mejor hasta se sorprende a sí misma.
After more than fifteen years dedicated to the world
of media, she confesses that the project that most
excites her at this stage of her life is literature. And
no wonder, after the publication of his third book.
This time around she wanted to share authorship
with her manager and husband, Juan del Val. The
result: ‘For Ana (about your death)’, a novel that is
definitely far away from her good girl image. We do
not know what she will surprise us with next time as
she’s so multifaceted that maybe she is capable of
surprising even herself..
Si la convivencia a veces no es fácil, supongo que
escribir un libro a cuatro manos, con tu marido,
Juan de Val, ha debido de ser complicado...
La verdad es que ha sido tremendamente complicado. Tanto Juan como yo pensábamos que iba a resultar mucho más sencillo y que nos iba a llevar menos
tiempo. Pero se ha demorado demasiado. No obstan-
If coexistence is sometimes not easy, I guess writing a book with four hands - with your husband,
Juan de Val - must have been difficult...
The truth is that it was extremely complicated. Both
Juan and I thought it would be much easier and we
would take less time. But it has taken too long. However, we’ve been very hard on ourselves in order to get
a good result in a task that has been very laborious.
te, hemos sido muy escrupulosos con nosotros mismos con el objetivo
de conseguir un buen resultado en una tarea que ha sido muy laboriosa.
¿Por qué un libro juntos?
Pues la verdad es que no estaba pensado así. En principio sólo le pedí
consejo. Necesitaba un personaje masculino y le pedí ayuda a Juan. A
partir de ahí le comenté la idea de escribirlo juntos. La verdad es que no
le dejé responder (risas)
¿Os planteáis repetir la experiencia?
Si quieres que te diga la verdad, cuando acabamos el libro no teníamos
ganas de repetir. Pero ahora que ha pasado un tiempo no me importaría. ¡Por mí, empezaría mañana mismo!

Why a book together?
The truth is that it was not conceived like that. At first I only asked his
advice. I needed a male character and asked for Juan’s help. From there,
I mentioned the idea of writing it together. The truth is that I didn’t let him

“Right now the project that excites me most is
literature”
’Para Ana (de tu muerto)’, es la historia de un matrimonio, digamos
‘poco al uso’. Drogas, orgías... ¿De dónde sale tanta perversión?
Es la historia de una pareja, Ana y Carlos, que convive durante 20 años.
Ana ha estado toda la vida con él, Carlos es un hombre de excesos, que
vive al límite… Es una novela que ha salido de la calle. De historias de la
gente de hoy en día. Historias que podemos encontrarnos en cualquier
momento y lugar.
‘For Ana (about your death)’ is the story of a marriage which, it could
be said, is ‘rather uncommon’. Drugs, orgies... where does such perversión come from?
It’s the story of a couple, Ana and Carlos, who have lived together for 20
years. Ana has been with him all her life; Carlos is a man of excesses
who is used to living on the edge ... it’s a novel that has come from the
street - stories about people that you find nowadays, stories that can be
found anytime, anywhere.
Actualmente vuestro libro está entre los libros más vendidos de los
últimos meses. ¿Qué cualidades crees que posee para tener tanto
tirón?
Por lo que me han ido contando, parece ser que es una novela muy
adictiva. Comienzas a leer y no puedes parar. Tal vez porque tiene mucho ritmo, una obsesión que teníamos Juan y yo. Hemos querido que
sea una historia muy terrenal.
¿A qué autores admiras?
Son muchos. Juan José Millás, Maruja Torres, Mario Vargas Llosa… A cualquiera que se ponga delante de un folio en blanco para escribir algo.
Aterrizaste en el medio televisivo por casualidad, pero has demostrado que una persona se puede dedicar a varias cosas muy distintas y
además hacerlas bien...
La verdad es que he intentado superarme día tras día con mucho trabajo y tesón. De la experiencia también se aprende.
Si tuvieras que definirte profesionalmente, ¿cómo lo harías?
Me definiría como alguien que tiene ganas de contar cosas.
Presentas ‘Perdidos en la Ciudad’, eres imagen de ‘Divinity’. ¿Entre tus
proyectos actuales, cuál te ilusiona más?
El que ahora mismo me ilusiona más es la literatura. Al que más esfuerzo
le pongo y el que ocupa en estos momentos todos mis pensamientos.
At this moment in time your book is among the best sellers of the
last few months. What qualities do you think it has to have so much
weight?
From what I’ve been told, it appears that it’s a very addictive novel. You
start reading it and you can’t stop. Maybe because it’s fast-paced - an
obsession that John and me had. We wanted to make a very earthy story.
Which authors do you admire?
There’s many. Juan Jose Millas, Maruja Torres, Mario Vargas Llosa ...
basically anyone who puts themself in front of a blank page to write
something.
You arrived in television by accident but you’ve shown that a person
can do several different things and still do them well...
The truth is that I’ve always tried to improve myself every day with lots of
hard work and perseverance. Also one learns from experience.
If you had to define yourself professionally, how would you do it?
I would define myself as someone who wants to tell stories.
You present ‘Lost in the City’, you’re the public image of ‘Divinity’. Out
of all your current projects, which excites you the most?
The one that excites me most right now is literature. It’s where I put most
effort and which now occupies all my thoughts.

La verdad es que no lo sé. Pero creo que

I guess when you travel to Valencia you go there to see the family.
Besides that, what else do you like to do? What are your favourite
places?
When I travel to Valencia, I usually go to Náquera, my mother’s home, to
L’Eliana ... the truth is that between seeing the family and some of my
friends I have almost no time to walk or sit quietly drinking a beer. Among
my favourite places are the Central Market, where I always go shopping
at Christmas, and the sea. I miss the sea so much. So much so, that
when I go to Náquera, I always make a detour via the beach road.
Cuando viajo a Valencia, suelo ir a Náquera, a casa de mi madre, a L’Eliana…
La verdad es que entre visitar a la familia y ver a algunos amigos casi que no
tengo tiempo para pasear o sentarme tranquilamente a tomarme una cervecita. Entre mis lugares favoritos está el Mercado Central, al que no puedo
dejar de ir a comprar en Navidades, y el mar. El mar lo añoro mucho. Tanto
que cuando voy a Náquera, me desvío por la carretera de la playa.
Conocemos mucho de tu vida profesional, pero en tu vida personal
¿Con qué cosas disfrutas?
Yo disfruto en casa, con mi gente. Cuando trabajas en una profesión en la
que te mueves mucho, y llegas a casa te apetece desconectar, parar y estar
con los tuyos. Es la mejor manera de disfrutar.
Entre las presentadoras de éxito, tú eres una de las mejor consideradas, por tu simpatía y frescura. Eres una persona sencilla, en el trato,
en tu imagen.... ¿Es ese el secreto de Nuria Roca?
Pues la verdad es que no lo sé. Por lo que dice la gente, parece que caigo
bastante bien. Lo que es cierto es que es todo un privilegio que el público
te quiera.
We know a lot about your professional life but what things do you
enjoy doing in your personal life?
I enjoy being at home, with my loved ones. When you work in a profession where you move around a lot, when you get home you just want
to unwind, stop, and be with your friends and family. It’s the best way to
enjoy life.
Amongst all the successful presenters, you’re one of the most highly
regarded - for your friendliness and calmness. You’re a simple person: in your way of doing things, in your image.... is that the real
secret of Nuria Roca?
Well... the truth is I don’t know. From what people say, it seems that people
like me. What is certain is that it’s a real privilege that the public loves you.

La chica del tocado. Es difícil olvidarse de ella, sobretodo después
de ver sus últimas colecciones en la ‘Cibeles Madrid Fashion Week’.
Elisa Palomino se marchó de Valencia para estudiar diseño siendo
una adolescente. Después de trabajar con modistos de la talla de
John Galliano regresa a casa desbordando talento y esa modestia
que solo tienen los que de verdad hacen las cosas mejor que bien.
The girl of the headdress; it’s difficult to forget her, especially after
seeing her latest collections in the ‘Cibeles Madrid Fashion Week”.
Elisa Palomino left Valencia to study design as a teenager. After
working with top fashion designers such as John Galliano she is
returning home overflowing with talent and that type of modesty that
is only seen in those who do things really well.
¿De dónde viene tu pasión por la
moda?
Where does your passion for fashion
come from?
Es casi imposible pensar cuándo
empezó todo, pero mis recuerdos de
infancia me llevan a recordar a mi bisabuela con abrigos de Balenciaga o a
mi abuela con excéntricos tocados. A
mí me dejaban jugar con todo aquello
con plena libertad.
It is almost impossible to think when
it all started, but my childhood memories take me back to my greatgrandmother with Balenciaga coats
or my grandmother with eccentric
headdresses. They let me play with all
of that quite freely.

En la escuela compartiste pupitre con el fallecido Alexander Mc
Queen, ¿tienes algún recuerdo especial de él durante aquellos años?

have any special memories of him
during those years?
Alexander era un chico muy tímido y
de carácter difícil. Yo estuve muy cerca de él, hasta que salió del caparazón y echó a volar. Era un ser tremendamente sensible y con un corazón
enorme.
Alexander was a very shy boy and had
a difficult character. I was very close to
him until he came out of his shell and
flew away. He was a tremendously sensitive human being with a big heart.

Me encantaría hacer el vestuario de alguna ópera. Soy una fanática
de la ópera barroca y sería un sueño poner en escena una de mis
piezas preferidas.
I would love to do costumes for an opera. I’m a big fan of baroque opera
and it’d be a dream to stage one of my favorite pieces.

Las bodas reflejan las religiones, cultura y tradiciones de cada pueblo.
Hay diferentes tipos de boda e incluso diferentes tipos de colores para el
vestido de novia. Por ejemplo las bodas orientales son austeras y el color
que lucen los novios es el rojo; quien sabe quizá deberíamos tomar nota,
una boda sin muchos dispendios económicos junto con el rojo, color de
la pasión y el amor, no sería mala idea como ejemplo de durabilidad en
estos días en que se celebran tantos matrimonios como divorcios.
Weddings reflect the religions, culture and traditions of every race. There
are different types of wedding and even different colours for the wedding
dress. For example, oriental weddings are austere and the colour worn by
the bride and groom is red. Who knows? Maybe we should take note, a
wedding without a lot of economic extravagance and with the colour red
– the colour of passion and love – is not a bad idea as an example of durability in these days in which as many marriages as divorces are celebrated.

El tocado es apropiado tanto para el día como la noche, lo único que
cambiaría sería el material, ligero para la mañana y de menor tamaño y
más sofisticado en una ceremonia de noche. La comodidad será imprescindible ya que no deben quitarse ni durante ni después de la ceremonia, lo contrario de los guantes que se quitarán al entrar al restaurante.
La etiqueta de un vestido en una ceremonia religiosa varía al vestido
que puede lucirse en el festejo que seguirá al banquete, por ello muchas novias optan por cambiar de vestido para el baile nupcial. Los
señores si lo desean pueden optar por el smoking, reservado exclusivamente para la noche y el momento festivo.
Para mí uno de los mejores estilismos que he visto nunca fue el protagonizado por la actriz Amanda Seyfrien que da vida a Sophi en la película
“Mamma Mía”. Su vestido era ideal para una romántica boda de atardecer, el tocado de inspiración griega y el cortejo nupcial por el sendero
alumbrado por miles de luces y el apropiado transporte (un burro) para
lo intrincado del camino, hacen de esta boda uno de los estilismos más
aplaudidos. Obra de Ann Roth, premiada con un Óscar al Mejor Vestuario de otra gran película “El Paciente Inglés”.

restaurant.
The etiquette of a garment in a religious ceremony varies according to
the dress that can be worn at the celebration following the banquet, so
for this reason many brides choose to change their dress for the bridal
dance. The men, if they so wish, can opt for smoking jackets, exclusively
reserved for the night and party time.
For me, one of the best outfits I’ve ever seen was that worn by the Hollywood actress Amanda Seyfried in her portrayal of Sophie in “Mamma Mia”.
Her dress was perfect for a romantic sunset wedding: its touch of Greek
inspiration, the wedding party winding down the path lit by thousands of
lights and the appropriate transport (a donkey) for the intricacies of the
pathway, make this wedding – and the film, work of Ann Roth, awarded an
Oscar for Best Costume Design of another great film “The English Patient”
– one of the most applauded for its costume design.

Llega el verano y disfrutamos de más luz y más horas de sol. El calor se
convierte en nuestro compañero de viaje y necesitamos salir y disfrutar
del aire libre, la montaña y el mar. El verano es la época del año en la que
la energía es más expansiva que en el resto de la estaciones. Es una
energía que va de adentro hacia afuera, que nos anima a mantenernos
activos alegres y vitales. Necesitamos enfriar, abrir y relajar nuestro cuerpo para atenuar el calor y nuestra alimentación deberá ser más fresca y
ligera, tomando alimentos que nos ayuden a sofocar el calor.
Summer arrives and we begin to enjoy more light and more hours of
sunshine. The summer heat becomes our travel companion and we
need to go out and enjoy the open air, the mountains and the sea.
En esta época casi instintivamente aumentamos el consumo de ensaladas, cremas frías, verduras y frutas, pero también puede ocurrir que
abusemos de bebidas frías, helados y licuados de frutas junto con el
consiguiente azúcar que les acompaña y enfríen y aflojen en exceso
nuestro organismo y nuestro sistema de defensas, debilitándolo de tal
manera que quedaremos expuestos a gripes y resfriados con los primeros cambios de temperatura que se producen al final del verano.
Los órganos que se activan con la energía del verano son el corazón
y el intestino delgado y por eso pondremos un especial cuidado con
estos dos órganos que cumplen una misión vital en esta época del
año. En verano, el calor hace que el corazón aumente su ritmo cardiaco
para producir una mayor circulación sanguínea hacia la parte exterior
del cuerpo y así regular la temperatura corporal mejorando nuestras
funciones metabólicas, incluyendo la digestión y la absorción de los
nutrientes, siendo el intestino delgado el que se encarga de absorber
la mayor parte de estos nutrientes tan necesarios para mantenernos
sanos. Si no estamos en armonía con la energía del verano, pondremos
en peligro nuestra salud ya que esta se verá perjudicada por las alteraciones producidas en las funciones del corazón e intestino delgado,
provocándonos diferentes trastornos como sofocos, taquicardias, cansancio, debilidad y falta de apetito.
Si nuestro corazón está sano nos sentimos tranquilos, en paz y satisfechos, sin embargo un corazón en desequilibrio puede ser la causa de
trastornos nerviosos como histeria, extremos emocionales, dispersión
mental, hiperactividad etc. Por su parte, con un intestino delgado sano
nos sentimos nutridos a todos los niveles y capaces de absorber y
asimilar todo lo que necesitamos para crecer y desarrollarnos, pero si el
intestino delgado no está sano, nos sentimos inquietos y nerviosos; nos
faltaran nutrientes provocando una sensación de carencia e inseguridad que nos impedirá experimentar la vida con total plenitud.
Summer is the time of year when energy is more expansive than in the
rest of the season. It’s an energy that goes from the inside outwards
which encourages us to stay active and happy.
We need to cool, open and relax our bodies to reduce the effects of the heat
and our diet should be fresh and light, eating foods that help us to cool off.
At this time of year, almost instinctively we increase the consumption of
salads, cold soups, vegetables and fruits, but it may also be the case
that we abuse the use of cold drinks, ice cream and fruit smoothies,
along with the corresponding sugar that accompanies them and which
excessively cool and weaken our bodies and our immune systems,
weakening it so that we are left exposed to colds and flus with the first
temperature changes that occur in late summer.
The organs that are best activated by the energy of summer are the
heart and small intestine and therefore we need to take special care with
these two organs that play such a vital role at this time of year.
In summer, the heat causes the heart to increase its heart rate to produce
a greater blood flow to the outside of the body and regulate body temperature and improve our metabolic functions, including digestion and
absorption of nutrients, it being the small intestine which is responsible
for absorbing most of these much needed nutrients to keep us healthy.
If we are not in harmony with the energy of summer, we will endanger our
health as it will be adversely affected by the changes that occur in the
functions of the heart and small intestine thus causing different disorders
such as hot flushes, heart palpitations, fatigue, tiredness and lack of appetite.
If our heart is healthy we feel calm, peaceful and happy but, in contrast, a
heart imbalance can be the cause of nervous disorders such as hysteria, emotional extremes, mental dispersion, hyperactivity, etc.
For its part, with a healthy small intestine we feel totally nourished and
able to absorb and assimilate all that we need to grow and develop.
However, if the small bowel is not healthy, we feel restless and nervous;
we start to lack nutrients causing a sense of deficiency and insecurity
that prevent us from enjoying life to the full.

La cebada, el maíz, el cuscús, el bulgur y pastas de trigo.

El sabor por excelencia en esta época del año es el sabor amargo, que
estimula el corazón, contribuyendo así a mejorar la circulación. También
mejora la digestión, tonificando las paredes del estómago y los intestinos.

Por el contrario, sería conveniente reducir el consumo de proteína
de origen animal, las harinas, sobre todo horneados, productos lácteos, picantes y especias, estimulantes como el café, tabaco, azúcar
o alcohol, que fuerzan el ritmo cardíaco, acelerándolo artificialmente
y obligando al corazón a un esfuerzo excesivo. También son muy
perjudiciales para el intestino delgado pues provocan acidez y una
pérdida importante de minerales.
También es conveniente evitar el abuso de frutas y zumos, especialmente si son de origen tropical, pues pueden dar lugar a una expansión de los intestinos.
Estar en armonía con el verano nos permitirá afrontar los cambios
estacionales futuros con garantía y plenitud de salud.
The most appropriate taste for this time of year is the bitter taste,
which stimulates the heart, helping to improve circulation. It also improves digestion, toning the walls of the stomach and intestines.
On the contrary, it would be desirable to reduce the consumption of
animal protein, flour, especially baked goods, dairy products, spicy
foods and spices, stimulants such as coffee, tobacco, sugar and alcohol, which force the heart rate, speeding it up artificially and putting
undue strain on the heart. They are also very harmful to the small
intestine as they can cause acidity and a significant loss of minerals.
It is also advisable to avoid ingesting too manyfruits and juices, especially if they are of tropical origin as it can lead to swelling of the
intestines.
Being in harmony with the summer will allow us to cope with all the

Se acerca el verano y con él, las noches de fiestas, el sol……. Por ello os
propongo unos consejos de maquillaje que tan sólo necesitan unos minutos de dedicación, pero que os aportarán unos resultados fantásticos
para lucir radiantes todo el día.
Summer is approaching and, with it, nights of partying, sunshine... .... and
therefore I propose some makeup tips that only take a few minutes of
dedication, but will bring fantastic results so you look radiant all day.
Para mi existen seis productos “Gurú” imprescindibles que nunca deben
faltar en nuestro tocador.
Comenzamos nuestra sesión de maquillaje aplicando una crema hidratante en todo el rostro, y más aún después de los largos baños de sol en
ésta época del año.
Continuaremos aplicando iluminador alrededor de los ojos, tanto en la
parte superior como en la inferior, y difuminamos con la yema del dedo,
dando pequeños “toquecitos” hasta conseguir el efecto deseado. Nunca
debe quedar un efecto “antifaz” pero sí luminoso.
El siguiente paso es aplicar un toque muy ligero de polvos de sol en todo
el rostro, con la ayuda de una brocha grande, así evitaremos tener demasiados brillos y unificar el tono de la piel.
Ahora le toca el turno a mi gran aliada, la máscara de pestañas, os recomiendo la de color negro y para conseguir volumen podéis aplicar varias
capas, dejando secar una antes de aplicar la siguiente.
Nos estamos acercando al final de nuestra sesión de maquillaje, y no
podíamos olvidar darle color a nuestras mejillas con tonos rosas que resultan muy favorecedores. Cómo toque final nos quedan los labios, aquí
aplicaremos un gloss muy brillante para aportar frescura.
Espero que vuestro “Look” para este verano sea todo un éxito.
For me, there are six “Guru” products that must never be missing from
our dressing table.
We start our makeover by applying a moisturizer all over our face, and especially after the
long sunbathing sessions of this time of year.
We carry on applying highlighter around our
eyes, both top and bottom, and blend in with
our fingertips, giving little “touches” until achieving the desired effect. There should never be
a “mask” effect but it should certainly be bright.
The next step is to apply a very light touch of
sunshine dust all over his face, with the help of
a large brush, thus avoiding having too many
highlights and unifying the skin tone.
Now comes the turn of my great ally, the mascara. I recommend the
black one and to get volume you can apply several coats, letting it dry
before applying the next.
We are getting near to the end of our makeover, and we shouldn’t forget
to give a little colour to our cheeks with pink shades which are very flattering. As a final touch, apply a brilliant gloss to your lips provide freshness.

Entre naranjos, rodeado de verde se encuentra La Jara. Un restaurante singular que, desde octubre de 2009, intenta seducir a sus clientes a través
de sus creaciones. Su ubicación, en la carretera de Bétera a Náquera, está
pensada para quienes además de la buena gastronomía, les gusta disfrutar
de la tranquilidad y las emociones que nos brinda el campo.
La Jara es un restaurante familiar, donde todos desempeñan alguna
que otra función con el objetivo de que el cliente se lleve una muy
buena impresión. Aunque la función principal se desarrolla en la cocina.
Allí, Totón, la cocinera y madre, combina nuevas ideas culinarias con las
tradiciones de siempre. “Hacemos cocina casera sencilla, hecha con
buenas materias primas y mucho mimo. Sin duda los arroces son nuestro plato estrella, precisamente porque se trata de arroces diferentes. No
hacemos la típica paella”, explica Totón.
Así que el amante del buen arroz cae rendido ante la extensa variedad
de platos que son cocinados con este ingrediente: arroz meloso de
atún fresco, paella de cerdo con verduras, arroz meloso de boletus,…,
dentro de una destacada variedad de menús a precios muy asequibles.
Dando a entender que la buena gastronomía no tiene por qué estar
reñida con el precio.

Between orange trees and surrounded by green we find a renovated
old farmhouse known as La Jara - a unique restaurant - which, since
October 2009, has been attempting to seduce its customers through its
culinary creations. Its location, on the road from Náquera to Bétera, is intended for those who, in addition to good food, like to enjoy the tranquility
and emotions that the countryside gives us.
La Jara is a family restaurant where – even though its main function is
developed in the kitchen - everybody plays their part with the objective
that the customer is left with a very good impression. There Totón, the
cook and mother of the family, combines new culinary ideas with the
traditions of the past. “We make simple home cooking, made with good
raw materials and lots of loving care. Without any doubt, the rices are our
signature dish, precisely because we’re talking about rice dishes with a
difference. We don’t do the typical paella”, explains Totón.
And therefore the lover of good rice will be overjoyed at the extensive
variety of dishes cooked with this ingredient: risotto-style rice with fresh
tuna, paella with pork and vegetables, risotto-style rice with wild mushrooms ... all within a remarkable variety of menus at very affordable prices;
all implying that good food need not be at odds with the price.
La Jara está pensada para la tranquilidad, por ello su capacidad se reduce a 40 comensales, ubicados en el salón y, en época de buen tiempo, en su amplia terraza. “Nuestra filosofía de no atender a mucha gente
busca precisamente eso. Toda la comida está elaborada en nuestra
cocina y en el momento. Cambiamos la carta en cada estación y, lo
más importante, procuramos que el cliente se sienta como en casa”,
comenta la cocinera.
La Jara is designed for tranquility, which is why its capacity is reduced
to 40 diners, seated in the dining room, and, when the weather is good,
also in its wide terrace. “Our philosophy of not having a lot of people at
one time is looking for just that. All food is prepared in our kitchen and in
the moment. We change the menu every season and, most importantly,
we make sure that the guests feel as if they are in their own home”, says
the cook.

Ingredientes para 6 personas
1 kg de conejo troceado = ½ k de pollo troceado = 3 cebollas = 1 vaso de aceite de oliva
virgen (sin que rebose) = 3 paquetes de torta
de gazpacho = 3 litros de agua = 1 cabeza de
ajos = 2 pastillas de buen caldo de carne =
pimentón dulce = colorante = sal = pebrella

Modo de hacerlo:
Pondremos al fuego una cazuela bastante grande con el aceite, el conejo, el
pollo y la cabeza de ajos entera pero con todos los dientes despojados de la
piel para que alcance mayor sabor. Una pizca de sal y un poco de pimentón
(sin pasarnos). Ayudados con una cuchara de madera, le daremos unas cuantas vueltas para que no se queme. Eso sí, a fuego muy lento. Añadiremos la
cebolla previamente pelada y cortada muy fina para que se poche y se cueza
con los demás ingredientes. A continuación añadiremos el agua, el colorante
y las dos pastillas de caldo. Dejaremos que hierva despacio durante veinte
minutos y apagaremos el fuego.
Prenderemos el gas del paellero y colocaremos el caldero bien centrado. Rápidamente verteremos todo el contenido de la cazuela, distribuiremos todo
bien y cuando alcance el hervor, añadiremos la torta del gazpacho que previamente habremos vaciado de los paquetes y tenemos preparada en un bol.
Ayudados con la cuchara de madera procuraremos que quede cubierta por el
caldo y que todo el conjunto esté en perfecta armonía, es decir, bien repartido.
Lo probaremos de sal y dejaremos que hierva durante diez minutos a fuego
lento. En mitad de esta cocción esparciremos por toda la superficie la pebrella
picadita (también sin pasarnos) y dejaremos que cueza los últimos cinco minutos. Eso sí, vigilando para que el caldo no se termine del todo. (1) Cerraremos el
fuego y listo para comer este plato tan sabroso y a la vez tan sencillo.
(1) Porque el gazpacho tiene que estar meloso y no seco.
El gazpacho manchego es una comida propia de los pastores que cocinaban en la sierra aprovechando las piezas de caza (sobre todo liebres). Los
pueblos valencianos colindantes con las tierras manchegas también han hecho acopio de esta receta: Fuente la Higuera, Mogente, Navalón, etc. En cada
sitio se elabora de distinta manera pero nunca puede faltar la torta: elemento
fundamental indispensable, cualquiera que sea el estilo de su elaboración.
La receta que yo les presento es una de las muchas variedades que se
conocen como gazpacho manchego, aunque Manuel (pueblo de la Ribera
Alta) quede ya un poco alejado de las tierras de la Mancha.
La pebrella: nombre que en lengua valenciana se le da a la pipirela (también
llamada tomillo salsero) es para mí el “Alma Máter” de esta receta. Su poder
aromático le da un toque muy especial, tanto es así que sin esta hierba, que
abunda en las montañas de mi tierra, el gazpacho manchego al estilo de esta
valenciana no sería lo mismo. Aunque se puede sustituir por romero o tomillo.
Nota: Es conveniente que trabajemos con las manos los paquetes de la torta
para que los trocitos queden reducidos a tamaño muy pequeño. La cocción
será mucho más rápida y la presentación del plato mucho más fina. Después
los abriremos y los depositaremos en el bol.

1 kg chopped rabbit = ½ kg chopped chicken = 3
onions = 1 cup extra virgin olive oil = 3 packets of
‘torta’ of gazpacho = 3 litres of water = 1 head of
garlic = 2 beef stock tablets = paprika = saffron or
colouring = salt = pebrella

Method:
Put a reasonably big pot on the stove on a low heat together with the
oil, rabbit, chicken and the whole garlic head with all the skin stripped
off to impart maximum flavour. Add a pinch of salt and pepper. Using a
wooden spoon, mix everything together a few times to avoid it burning.
Add the finely chopped onion to the other ingredients then add: water,
saffron/colouring and the two stock cubes. Let it all simmer gently for
twenty minutes and then turn off the heat.
Place the pot right in the centre of the ‘paellero’ (or hob), distribute the
ingredients well and when it reaches the boil, add the ‘torta’ of gazpacho- previously emptied from the packets into a bowl. Using the wooden
spoon, make sure that everything is covered by the stock and that the
entirety is in perfect harmony, i.e. evenly distributed. Taste for seasoning
and simmer for ten minutes over a low heat. Halfway through cooking,
sprinkle over the surface of the dish the finely chopped pebrella and
leave to cook for the last five minutes making sure that the stock doesn’t
run out completely. Turn off the heat and now this tasty yet simple dish
is all ready to eat.
Gazpacho Manchego is a shepherd’s meal that was cooked on the high
mountain plains by taking advantage of leftover pieces from the hunt
(especially hares). Valencian towns and villages bordering the La Mancha region have also adopted this recipe: Fuente la Higuera, Mogente,
Navalón, etc. Each place makes it in a different way but one ingredient
they all have in common is the ‘torta’: a fundamental and indispensable
element, whichever way it is made.
The recipe I have presented to you is one of the many varieties that are
known as gazpacho manchego, even though Manuel (my home village
in the Ribera Alta) is quite a long way away from the fields of La Mancha.
The pebrella: is the name given in the Valencian language to the pipirela
(also called savory) and is for me the “Heart and Soul” of this recipe. Its
aromatic power gives it a special touch, so much so that without this
herb, which can be found in abundance in the mountains around where
I live, the version of gazpacho manchego made by this Valencian would
not be the same. However, if necessary, it can be substituted for either
rosemary or thyme.
Note: Before opening the packets and placing them in a bowl, it’s best to
lightly crush them your hands until you have small pieces; in this way the
cooking time will be much quicker and improve its look.

El Vin Jaune está considerado uno de los vinos más grandes del mundo. Chateau Chalon es su viñedo natal, pero también se produce en las
denominaciones Arbois, Etoile y Cotes du Jura.
Su color es amarillo oro, de ahí su nombre, y debe su fama a sus cualidades organolépticas. Este vino tiene una elaboración específica, una
vez que la fermentación se ha completado, el vino debe permanecer
por lo menos 6 años y 3 meses en barricas de roble sin poder añadir
vino. Durante el envejecimiento, un velo de levadura crece en la superficie y protege al vino de la oxidación por privarlo de contacto con el
aire. Esta es la levadura que permite que el Vin Jaune misteriosamente,
consiga sus sabores tan complejos.
Un vez que el envejecimiento esta completo, se embotella en un envase
especifico llamado “clavelin”. El clavelin contiene sólo 62cl., esto se explica por el hecho de que un litro de mosto se reduce en general a 62 cl.

Cata de un Arbois Vin Jaune 2001 de Tissot
Vestido de un color amarillo oro muy brillante, el vino desarrolla aromas
y sabores muy peculiares como la nuez madura, la manzana asada, los
orejones, las pipas y el azafrán.
La boca es muy equilibrada, domina una gran frescura acompañado de
grandes taninos muy maduros.
Es un vino ideal para acompañar con queso de gran curación o un
rodaballo al horno y azafrán.
Vin Jaune is considered to be one of the world’s great wines. Chateau
Chalon is its native vineyard but it is also produced in the denominations
Arbois, Etoile and Cotes du Jura.
It has a golden yellow colour, hence its name, and owes its fame to its
organoleptic qualities. This wine undergoes a specific winemaking process: once the fermentation has been completed, the wine must spend
at least 6 years and 3 months in oak barrels without adding any more
wine to it. During the ageing process, a veil of yeast grows on the surface
and protects the wine from oxidation by depriving it of contact with the
air. This is the yeast that allows the Vin Jaune to mysteriously develop its
complex flavors.
Once the ageing process has been completed, it is then bottled in a
specific bottle called the “clavelin”. The clavelin contains only 62cl.which
is explained by the fact that a litre of grape juice is generally reduced to
62 cl. of wine at the end of the long ageing process.
Tasting of a 2001 Arbois Vin Jaune from Tissot
Dressed in a bright golden yellow colour, the wine develops aromas and
distinctive flavours such as those of ripe walnut, baked apple, dried apricots, sunflower seed and saffron.
In the mouth it is very balanced with a pervading and dominant freshness accompanied by large and very ripe tannins.
This is an ideal wine to accompany very mature cheeses or an ovenbaked turbot with saffron.

completan esta exposición que se articula en
torno a una obra central “Cupido encendiendo
un cigarrillo”, realizada en 1892 y que, procedente de una colección particular, se muestra
al público por primera vez. Este singular lienzo,
que representa al dios del amor acompañado
de una atractiva muchacha que le enciende
un cigarrillo, formó parte de las obras que presentó Pinazo a la Exposición Nacional de 1895.
La escena transcurre en medio de un paisaje
primaveral que proclama la fertilidad de la tierra a través de las múltiples floraciones y frutos
que se divisan en la amplia panorámica. Una
naturaleza exuberante, llena de colorido y verdor, que denota la familiaridad de Pinazo con
el medio rural valenciano.
Esta exposición pone de manifiesto, a través de una selección de obras
destacadas, el importante cambio de rumbo que tomó el artista a partir
de 1886 año de su traslado a Godella (Valencia).Allí, cada vez más aislado
de los circuitos artísticos oficiales y partiendo de unos códigos creativos derivados del costumbrismo y el realismo, Pinazo inició en solitario
un trayecto de investigación plástica sumamente complejo e innovador,
clave para la evolución del posterior desarrollo de la pintura en el siglo XX.

is organized around a central work, “Cupid
lighting a cigarette”, completed in 1892 and
from a private collection, which is on public
display for the first time. This unique canvas
that represents the God of Love accompanied
by an attractive girl who is lighting up a cigarette for him, forms part of the collected works
that Pinazo presented at the National Exhibition of 1895. The scene is of a spring landscape that proclaims the soil’s fertility through its
multiple blooms and fruits that can be seen
in the broad panorama. It’s full of colour and
greenery, denoting Pinazo’s familiarity with rural Valencia.
This exhibition demonstrates - through a selection of outstanding works
- the major shift that the artist took from 1886, the year of his relocation to
Godella (Valencia). There, increasingly isolated from the official art circuits
and starting from certain creative codes based on customs and realism,
Pinazo began a solitary journey of highly complex and innovative artistic
research which was of key importance in the evolution of subsequent
developments in twentieth century painting.

seguimos teniendo un público fiel’. Olga Adelantado nos recibe en la
Galería ‘Luis Adelantado’, en pleno centro de Valencia, propiedad de
su familia desde hace más de veinte años. En las paredes, la obra de
Darío Villalba. “Figura crucial del arte contemporáneo español, A sus
73 años su obra sigue siendo referente para las nuevas generaciones”,
afirma recién llegada de México, donde poseen otra sede de la Galería.
“It’s a difficult time for everyone, but for now we still have a loyal public.” Olga Adelantado welcomes us in the Gallery ‘Luis Adelantado’,
in the heart of Valencia, owned by his family for more than twenty
years. On the walls we see the work of Dario Villalba: a “crucial figure
in contemporary Spanish art. At 73 years of age, his work remains a
reference for a new generation,” he says, newly arrived from Mexico,
where they own another outlet of the Gallery.

Nuestra selección de artistas no se define por ninguna preferencia hacia una técnica o estilo determinado, sino más bien por la calidad y
originalidad de sus proyectos, siempre contextualizados dentro del arte
contemporáneo. Pueden ser indistintamente artistas con reconocida
trayectoria como Luis Gordillo o Folkert De Jong o jóvenes valores como

favourites of the ‘Gallery Luis Adelantado’?
Our selection of artists is not defined by any preference for one technique or style, but rather by the quality and originality of their projects,
always contextualized within contemporary art. They can equally be renowned artists such as Luis Gordillo and Folkert De Jong and young
talents like Bayrol Jimenez, Morten Slettemeås or Miguel Rael.
¿En pleno siglo XXI cómo han cambiado los gustos de los coleccionistas a la hora de decantarse por una obra u otra?
La incorporación de nuevos medios como el video, la fotografía o la
instalación en el coleccionismo especializado ya es un hecho. El coleccionista se acerca a las propuestas de los artistas contemporáneos
sin prejuicios sobre la técnica. Otra novedad significativa es la forma
de acerarse a la obra, el coleccionista no se limita a comprar lo que ve
físicamente, sino que se aventura a encargar proyectos para espacios
específicos. Entiende la producción de la fotografía y elige la obra a
través de visionados en el ordenador.
¿Cómo son los valencianos a la hora de consumir arte?
En Valencia hay muy buenas colecciones de arte. Muchas de ellas han
crecido en nuestra galería, hay que recordar que llevamos más de 20
años en la ciudad. No hay un único gusto, se puede decir que les interesa al mismo nivel disciplinas muy diversas. En general, la gente que
frecuenta nuestra galería, con el tiempo se convierte en buenos conocedores del arte y muchos de ellos adictos.
¿Es difícil mantenerse en plena crisis? ...
Es una época complicada para todo el mundo, pero de momento seguimos teniendo un público fiel.

How have the tastes of collectors in the XXI century changed when
opting for one work or another?
The incorporation of new media such as video, photography and installation in specialized collecting is now a fact. The collector gets close up to
contemporary artists’ proposals without prejudice about the technique.
Another significant development is the way of getting closer to the work;
the collector is not restricted to buying what they see physically, but that
they venture to commission site-specific projects. It knows how to carry
out the production of the picture and choose the work through viewings
on your computer.
How are the Valencian people at the moment of consuming art?
In Valencia there are some very good art collections, many of which have
grown up in our gallery. In this connection, we must remember that we
have been more than 20 years in the city. There is not any one taste in
particular; one can say there is about the same level of interest for various diverse disciplines. In general, the people who frequent our gallery,
over time become connoisseurs of art and many of them addicts.
Is it difficult to keep going in the middle of the crisis? ...
It’s a difficult time for everyone, but for now we still have a loyal audience.

Have you already closed the exhibition schedule for next season? Do
you think there are exhibitions which are more suitable for a specific
time of year? According to theme, colour ...
In August we organize the schedule for the following year and we
also look to make improvements. We never think about ‘seasonal’ exhibitions to define the programme. What we do have in mind is if the
season is more or less relevant culturally speaking; to schedule the
most important exhibitions in the most important dates.

Tenéis una galería en México... ¿qué os aporta, y qué aportáis vosotros al mercado latinoamericano?
El salto a México se produjo por la necesidad de aproximarnos a los
coleccionistas con los que ya teníamos relación y para seguir más de
cerca a los artistas, tanto mexicanos como latinoamericanos, con los
que trabajábamos. La apertura de una galería allí fue un gran paso que
dimos después de buscar un lugar idóneo durante casi un año. Estamos muy contentos con los resultados, el intercambio y flujo de ideas
que se produce es muy positivo.
Can you let us know in advance what we will see in the ‘Gallery Luis
Adelantado’ from September?
We commence the season in mid-September with the “XIII International Young Artists Session.” After, we will present the first exhibition of
the young Dutch artist, Iris Van Dongen, who recently joined our ranks.
To begin the year we will have the second solo exhibition of one of our
young prospects, the Mexican Marcos Castro.
¿Ya habéis cerrado el calendario de exposiciones para la próxima
temporada? ¿Crees que hay exposiciones más apropiadas para una
determinada estación del año? por la temática, por el colorido...
En agosto organizamos el calendario para el siguiente año y también
reponemos fuerzas, claro. Nunca habíamos pensado en exposiciones ‘estacionales’ para definir la programación. Lo que sí se tiene en cuenta es
si la temporada es más o menos relevante culturalmente, para programar
las exposiciones más importantes en las fechas más destacadas.
¿Nos puedes avanzar que veremos en la ‘Galería Luis Adelantado’ a
partir de septiembre?
Abrimos temporada a mediados de septiembre con la “XIII Convocatoria Internacional de Jóvenes artistas”. Después presentaremos la primera exposición de la joven artista Holandesa Iris Van Dongen, que
se incorporó recientemente a nuestras filas. Para empezar el año tendremos la segunda exposición individual de una de nuestras jóvenes
promesas, el mexicano Marcos Castro.

You have a gallery in Mexico ... What does it offer you, and what do
you offer to the Latin American market?
The move to Mexico was caused by the need to get closer to the
collectors with whom we already had connections with and to follow
more closely the artists, both Mexican and American, with whom we
work. The opening of a gallery there was a big step which we took
after searching for a suitable place for almost a year. We are very
pleased with the results, the exchange and flow of ideas that occured
is very positive.

¢PLAZA DE LA VIRGEN
Frente a la Basílica de la Virgen de los Desamparados y la puerta catedralicia de los
Apóstoles, se extiende la Plaza de la Virgen, a
modo de gran superficie repleta de palomas
que revolotean, ajenas a su condición de eternas testigos del paso del tiempo. Es esta una
plaza sobria, sin demasiado ornamento, y de
la que únicamente destaca una fuente que ni
siquiera está ubicada en su centro. La fuente
es como una Falla en bronce que, haciendo
honor a la creatividad del carácter valenciano,
representa al río Turia en forma humana, rodeado por sus afluentes. Esta alegoría hecha
fuente, es un “monumento al agua”, a la vez
que decorado inevitable para miles de fotos
disparadas por los muchos visitantes que, a lo
largo del año, se pasean por el lugar.
Opposite the Virgin’s Basilica of the Defenceless
and the entrance to the Cathedral of the Apostles, the Virgin’s Square spans, with a large area
full of pigeons that flutter around, oblivious to
their role as eternal witnesses of time passing.
This is a very plain square, without very much
decoration and where the only thing that stands
out is a fountain that isn’t even in the middle of
the square. The fountain is like a bronzed Falla
that, paying tribute to the creativity of the Valencian personality, represents the river Turia in
human form, surrounded by its tributaries. This
allegory made fountain is a “monument to water,”
and at the same time an inevitable decoration
for thousands of pictures taken by many visitors
who pass by throughout the year.

Felcan es una asociación sin ánimo de lucro fundada hace unos años, pero
que un grupo de gente ha empezado a relanzar desde mediados de 2010.
Su fin principal es el respeto a los animales y salvaguardar los derechos de
los mismos, pero en cuanto al rescate trabaja con perros y gatos. Tiene como
principal objetivo la construcción de un centro de animales abandonados.

UN POCO DE MI HISTORIA: En julio hará 5 años, cuando mi hija Paula tenía 8, mi marido me llamó al trabajo para decirme que se iba al Hospital
con la niña porque se le había quedado dormida en el coche y le había
costado mucho despertarla, y además tenía la boca muy seca.
Yo cogí un taxi y nos encontramos en el Hospital. El diagnóstico fue
inmediato, con solo un pinchazo en el dedo nos dijeron que Paula tenía
“Diabetes Mellitus 1”. La llevaron a la UCI y al momento salió el médico y
nos dijo que Paula estaba muy grave, a punto de entrar en coma, y que
hasta que no transcurrieran 24horas no nos podían decir qué podía
pasar. Al día siguiente Paula salió a planta y empezamos a aprender a
vivir con la DIABETES MELLITUS 1
¿Qué es exactamente, por qué se produce y sus consecuencias?
Es la destrucción total de las células productoras de insulina. Por lo tanto tiene que pincharse insulina en cada comida, 5 veces al día y una por
la noche de insulina basal. En nuestro caso está producida por un virus,
ya que no tenemos antecedentes genéticos. De las consecuencias que
tiene la enfermedad, no voy a contaros nada porque sabemos que en
unos años la ciencia la curará, solo deciros que nuestro día a día es:
Dieta sana, vida ordenada y ejercicio diario.

A LITTLE BIT ABOUT ME: In July it will be 5 years - when my daughter
Paula was then 8 years old - since my husband called me at work to tell
me he was going to the hospital with the child because she had fallen
asleep in the car and he had had a hard time waking her, and also she
had a very dry mouth
I took a taxi and we met each other in the hospital. The diagnosis was
immediate: with just a prick of one finger they told us that Paula was “Diabetes Mellitus 1”. She was taken to the ICU and immediately the doctor
came and told us that Paula was very ill - about to enter into a coma and until 24 hours had elapsed they could not tell us what was going to
happen. The next day Paula came back to the ward and we began to
learn to live with TYPE 1 DIABETES MELLITUS
What exactly is it, why does it occur and what are its consequences?
It is the total destruction of insulin-producing cells. As a result, you have
to inject yourself with insulin every meal, 5 times a day, and at night a
dose of basal insulin. In our case it’s caused by a virus as we have no
genetic history of it in the family. I’m not going to say anything about the
consequences of the disease as we know that in a few years science
will be able to cure it; all I’m going to say is that our day-to-day mantra is:
Healthy diet, a well-organised lifestyle and daily exercise.

(Manager) and Dr. Deborah Burks (Director of the Diabetes Research
Laboratory) have welcomed us as if we were VIPs. I have explained to
them what the reason for my visit was: “Getting Donations for Diabetes Research,” and they have received my initiative very enthusiastically. Although financially not of great importance, the doctors have said,
“Every stone goes towards making a wall”.

A esta iniciativa entre los médicos y los papas hemos decidido llamarla “PROYECTO PAULA”. Todos los fondos que se recauden irán
destinados a la Investigación de la Diabetes. Es importante que sepas
que esta Fundación está financiada con fondos públicos y donativos
privados de Empresas o personas físicas. Referente a los fondos públicos, el Gobierno acaba de informar al CIPF, que les han reducido el
presupuesto un 40%.
