Cuisine from China’s Yunnan province has always featured its fair share of bug-based delights, and huge Yunnan restaurant Dajia Cun presents presents four crawly favourites on one platter for 268 yuan. The deep fried scorpions taste like crispy bar snacks, the battered ants have a pleasant taste reminiscent of mildly burned cookies, the bamboo worm larvae are pleasantly crispy, but the highlight is the bee larvae. Their exteriors are as crispy as the rivals they share the platter with but the subtle creaminess on crunching renders them a class above, plus they’re a rich source of protein. Last year the UN recommended that more people eat bugs due to their high nutritional values – after eating this we’d lend our support to the notion. Eating starfish has only been popular in Shanghai for around three years, having been brought there from the coastal Shandong province where it’s been a staple for far longer. Served in street food-style café Hao Ji Long Xia for 25 yuan per half-kilo on seafood-heavy Shouning Lu, it’s cooked in a liquid mix of oil, spice and pepper. Served whole, it’s up to the eater to don plastic gloves and splay open the crustacean to access the soft dark meat inside, which goes down like a coarser, brown version of crab meat. It’s far easier to eat than shelled crab and almost as tasty; little surprise that the venue sells around 50 starfish each weekday and double that on weekend days. Resembling a small, standard cheap café and found next to popular intimate dive bar DADA, the Linlin restaurant hardly looks like the kind of place you can nosh on snakes in. But they do indeed specialise in snake dishes, including the rat snake and bullfrog mix (198 yuan). The red snake meat tastes chicken-like and is a bit of a mission to chomp through, with the plentiful thin snake bones getting in the way, but the supposed rewards are rich. Chat to the staff here (in Mandarin) and they’ll explain that eating it is supposed to help rid the body of toxins and quell heatrelated problems such as inflammation. Being pickled in booze then eaten is a heck of a way to go, and the sacrifices the shrimp at tiny Cantonese restaurant Yisheng Yue Wei make go towards making a deliciously unique dish. The shrimp in the 60 yuan serving are pickled in baijiu (China’s most popular spirit, translated literally as ‘white alcohol’), which causes them to suck in the vinegar and garlic-based sauce as they become dehydrated. Many of them give a desperate tail flick as the chopsticks descend, but many are too intoxicated to bother. It’s the epitome of freshness and for the unsqueamish makes a great palate-cleanser to share. Another specialty on offer is their decadent selection of sea cucumbers. 18th Century scholar Yuan Mei of the Qing Dynasty once described uncooked sea cucumbers as “unsavoury and flavourless, sandy… worthless in the eye of gourmands”, but Beijing chef Wang Yijun has created a braising technique that fills them with flavour. Many literal-thinking locals believe that eating them improves sexual prowess, and the meat (78 yuan per half-kilo for testicle and 80 for penis) goes down easier than most would think. Sourced from Inner Mongolia, like much of China’s mutton supply, the penis tastes like a particularly chewy cut of standard mutton meat while the testicle has a milder taste and is far easier to chew. As well as offering bug platters, Yunnan-style restaurant Dajia Cun claims to be the only place in Shanghai that serves peacock. A hugely exotic dish even by Shanghai’s standards, it is usually only served in the city during special banquets but is on the menu there for 88 yuan. Cheekily served with a peacock head and neck shape carved from a carrot, the meat is super-lean (with only around one percent fat) and taste-wise falls around half-way between chicken and duck. As an experience it’s worth enduring the cheesy dance stage shows the restaurant puts on. The clawed critters are sold alive for around 35 yuan per half-kilo at the Tongchuan Lu live seafood market, which is a must-see even if you’re not hungry, packed with everything from water-slapping eels to hairy claw-waving crabs. Once you’ve picked a turtle up you can head to any of the restaurants on Lanxi Lu and hand it to the chef who can cook it sautéed with garlic, peppers and mushrooms and present it to share. The turtle meat is lean and delicious, with the sections beneath the shell a particular highlight.
