GRAN RESERVA Ficha técnica Vendimia: Manual, con selección de racimos. Variedad: Tinta del País 100%. Paso por barrica: 24 meses (barricas de roble francés). Grado: 15 % Vol. Vendimia y Elaboración Este vino se elabora exclusivamente en las añadas más escogidas, 2004 y 2005 de la pasada década. La vendimia se realiza de forma manual, seleccionando los mejores racimos en el momento óptimo de maduración polifenólica, punto en el que la uva tiene la mayor concentración de color y de taninos. La uva proviene de viñedos de secano de más de 50 años, con formación en vaso, por lo que la uva madura de forma lenta, concentrando taninos dulces, aromas y color, debido a su baja producción. Una vez vendimiada la uva, los vinos maceraron durante 40 días, con el fin de extraer con intensidad toda la concentración de las uvas, e ir redondeándose y refinando el tanino. Una vez acabadas las fermentaciones y la maceración, el vino pasó a barricas nuevas de Roble Francés de alto nivel. Este vino ha permanecido 24 meses en barrica, todas ellas de tostado ligero, con el fin de preservar las características de la uva. Durante la crianza, las barricas se rellenaron frecuentemente, y se trasegaron en primavera y otoño. Finalmente se clarificó y se embotelló. Degrees: 15 % Vol. Harvest and production This wine is exclusively elaborated in the 2004 and 2005 vintages of the last decade. The grapes are manually harvested, selecting the best clusters at their optimal point of polyphenolic maturation. At that moment the grapes have the highest concentration of colour and tannins. The grapes are harvested from unirrigated vineyards which are more than fifty years old and goblet-shaped so the grapes ripen little by little concentrating sweet tannins, aroma and colour, due to their low production. Once the grapes were harvested, the wine was macerated for a total of 40 days, with the aim to intensely obtain all the concentration of the grapes, and to round out and refine the tannin. After completing the fermentation and the maceration the wine was stored in new barrels of high quality French oak. This wine was aged for 24 months in slightly toasted barrels so as to preserve the grape characteristics. During the wine aging process, the barrels were frequently filled and the wine was racked in spring and autumn. Finally the wine was fined and bottled. Ficha de Cata Fase visual: Rojo picota muy cubierto, con tonos granates en capa fina, limpio, brillante y glicérico. Fase olfativa: Aroma complejo de intensidad alta, fruta madura en compota, canela, cacao, café recién tostado y torrefactos. Con el paso del tiempo se aprecia aroma floral, de violetas. Fase gustativa: Potente, carnoso, amplio, tanino dulce, glicérico, amable. Tasting note Appearance: Vivid cherry red core, exhibiting a thin layer of maroon shades. Clean, translucent and satiny. Nose: Complex aroma of high intensity, ripe fruit compote, cinnamon, cocoa, just-roasted coffee beans and high roast coffee. With time, floral aromas of violets can be detected. Palate: Powerful, fleshy, round, sweet tannin, satiny and friendly in the mouth. Recomendaciones de consumo Se recomienda abrir con antelación a su degustación, y dejar reposar en la copa para conseguir que el vino se abra y adquiera todo su potencial y complejidad. Beber a unos 18ºC. Tasting recommendations Open the bottle before tasting and allow the wine to breathe in the wine glass so it will open up and reach its full potential and complexity.
