Nuestra publicación condensa y celebra la evolución de esta hortaliza en sus aspectos productivos y de exportación. ¿Para qué? Es necesario poner en vitrina el esfuerzo de un puñado de emprendedores que apostaron por un perfecto desconocido para el Perú. Fueron ellos quienes llevaron al espárrago a niveles industrializados y le dieron el nivel de representatividad que actualmente ostenta en los mercados internacionales. Pero, sin duda, hay otros protagonistas en esta novela con final feliz. La condición del producto bandera logrado por el espárrago es el resultado del esfuerzo denodado de todos los involucrados con esta tarea, desde los operarios de campo, hasta los niveles gerenciales, pasando por los técnicos y profesionales de la ingeniería del agro. Todos hemos contribuido para que así sea, por ello, esta publicación también es un homenaje y testimonio de este esfuerzo, además de ser un compromiso de seguir siendo los mejores. Un efecto colateral del éxito comercial de nuestra hortaliza es el impacto social que ha generado en comunidades como Ica, La Libertad, Áncash y Lima. Estas regiones concentran las mayores producciones y, por ende, han generado una cadena de empleo muy ancha que eleva paulatinamente la calidad de vida de los trabajadores, al tiempo que dinamiza la economía regional. Our publication condenses and celebrates the evolution of the production and export of this vegetable. Why? It is necessary to showcase the efforts of a handful of entrepreneurs who put their money down on something that was completely unknown in Peru. It was they who took the asparagus to industrialized levels and gave it the image it currently enjoys in international markets. And, undoubtedly, there are players in this story who have a happy ending. The emblematic product status achieved by asparagus is the result of the tireless work of all those involved in this task, from the field workers to those in executive management, and the technicians and agricultural engineering specialists in between. All of them contributed to this success, which is why this book is also a tribute and testimony to that task as well as being a commitment to continue to be the best. A collateral effect of the commercial success of asparagus has been the social impact it has created in communities such as Ica, La Libertad, Ancash and Lima. These regions concentrate the largest producers and, therefore, have created a broad chain of employment that gradually raised the workers standard of living and at the same time gave dynamism to the regional economy. In these pages we cover its beginnings in Peru, the climate conditions and its biological make-up, and an analysis of the local and international market, to finally talk about its impact on the culinary arts and its effects as a natural health source. Historia history Historia El espárrago en la historia / Asparagus in history 10 LEGADO MEDITERRÁNEO THE MEDITERRANEAN LEGACY La historia del espárrago se remonta a los griegos y a los romanos. Según fehacientes estudios fue Hipócrates, y posteriormente Sófocles, quien lo mencionó en sus tratados de medicina, cinco siglos AC. Poetas, filósofos y dramaturgos se rindieron ante su sabor y le dedicaron versos, sonetos y dramas en la Roma antigua. Sin embargo, otras investigaciones revelan que los primeros vestigios de espárragos aparecen en pinturas en monumentos egipcios (3.000 AC): atados en manojos ofrecidos a los dioses. The history of the asparagus can be traced back to the Greeks and the Romans. According to reliable studies it was Hippocrates, and later Sophocles, who mentioned asparagus in their treatises on medicine, five centuries before Christ. Poets, philosophers and playwrights succumbed to its flavor and wrote verses, sonnets and dramas in ancient Rome. However, other investigations have revealed that the first signs of asparagus appeared in paintings on Egyptian monuments (3000 B.C.E) –tied in bundles as offerings to the gods. Las primeras recetas con espárragos están registradas en los famosos libros de cocina de Apicio, cocinero romano que preparó mesas para reyes y reinas. En cuanto a la parte productiva, las primeras técnicas de cultivo pertenecen al cónsul romano Marco Porcio Catón (195 AC). The first recipes using asparagus are recorded in a famous cookbook by Apicius, a Roman who prepared meals for kings and queens. And the first cultivation techniques are attributed to the Roman Consul Marcus Portius Cato (195 B.C.E). History VEGETAL DE LOS REYES A VEGETABLE OF KINGS Siglos después Luis XIV empleaba la hortaliza como base para banquetes. La fama del espárrago corrió por toda Europa ganándose el título de “aristócrata de los vegetales”; París, fue la primera ciudad europea en promover su cultivo mientras que a España llegó a final de la Edad Media tras culminada la invasión bárbara, más tarde su calidad fue mejorada con variedades seleccionadas en Holanda en el siglo XVIII. Centuries later, Louis XIV used the vegetable as a basis for banquets.The fame of the asparagus had spread across Europe, earning the title of “The aristocrat of vegetables.” Paris was the first European city to encourage its cultivation, while in Spain it became popular towards the end of the Middle Ages after the barbarian invasion. Later, the vegetable’s quality was improved with varieties from Holland in the 18th century. Sin embargo, en Europa, por razones climáticas las delicias de platos a base de espárrago no fueron constantes, ello llevó a buscar formulas para preservar el producto, entonces apareció el francés Nicolás Appert que inventó el método de preservación en pequeños frascos que hizo disfrutar su calidad todo el año. En los tiempos modernos, el centro de la producción europea de espárragos solía estar en países consumidores, Francia, Alemania y los Estados Unidos, después se extendió a España y México. However, because of the climate, delectable dishes with asparagus could not be constantly available in Europe. This led to the search for formulas to preserve the produce, which is when Frenchman Nicolas Appert invented the method of preserving them in small bottles to ensure they were available all year round. In modern times, the center of asparagus production in Europe was in the consumer countries –France, Germany– and later the United States, Spain, and Mexico. 11 Historia 12 History Espárrago en el norte peruano / Asparagus in northern Peru PIONEROS MODERNIZACIÓN El cultivo de espárragos peruanos de exportación se inició a mediados del siglo XX en la costa norte del país. El precursor de este cultivo, sobre todo, en La Libertad fue el empresario trujillano Dr. Guillermo Ganoza Vargas quien convenció a agricultores de a zona para la promoción del cultivo. Importó de California la Variedad Mary Washington y tiempo después empezaron a producir turiones para ser vendidos a la Fabrica Líber. En 1987, la empresa El Rocío de propiedad del Ing. Rafael Quevedo Flores decide importar equipos de irrigación por goteo de Israel y empieza la modernización del cultivo a través de un joint venture con una empresa de ése país. Construyó una planta de tratamiento en Virú y comenzó la producción de espárrago a escala. Esta acción tuvo sus frutos: Los empresarios Víctor Orbegoso Paz, Carlos Gonzáles Carranza y Edmundo Loyer impulsaron este cultivo en el valle de Virú. Hasta fines de los años 1970, CITSA y la Cadena Envasadora San Fernando S.A., eran los únicos productores de espárrago en conserva en la costa norte de Perú (Trujillo). En 1978, existían 66 productores de espárragos en el valle de Virú. De éstos el 30% tenía menos de cinco hectáreas, el 38% de cinco a 10 hectáreas y el 32% más de 10 hectáreas. PIONEERS The cultivation of Peruvian asparagus for export began in the mid-1900s on the north coast. The forerunner in growing this crop, specifically in La Libertad, was the Trujillo businessman Guillermo Ganoza Vargas, who convinced farmers in the area to begin cultivating it. He imported the Mary Washington variety from California and sometime afterwards they began to harvest white spears to sell to the Liber Processing Plant. As a result – businessmen Victor Orbegozo Paz, Carlos Gonzales Carranza and Edmundo Loyer developed the crop in the Viru Valley. Until the end of the 1970s, CITSA and Cadena Envasadora San Fernando S.A. were the only producers of canned asparagus on Peru’s north coast (Trujillo). In 1978, there were 66 asparagus farmers in the Viru Valley. Of these, 30 percent owned less than five hectares, 38 percent had between five and 10 hectares, and 32 pecent had more than 10 hectares. El ingreso de empresas en la industria del espárrago después de los años 1990, principalmente para espárrago verde, permitió extender el área de producción. Esta etapa corresponde a la tercera para nuestra hortaliza. La primera, de introducción, se inició en los años 50 hasta los 70 y la segunda equivale a la producción de espárrago blanco (de inicio de los 80 a mediados de los 90). MODERNIZATION In 1987, the El Rocío company owned by the engineer Rafael Quevedo Flores decided to import drip irrigation equipment from Israel and began modernizing the crop through a joint venture with an Israeli company. They built a treatment plan in Viru and began large scale asparagus production. The entry of companies into the asparagus industry after 1990, principally of green asparagus, led to greater expansion. This was the third stage in our industry – the first, introduction stage began in the 1950s until the 1970s, and the second stage saw the production of white asparagus from the early 1980s to the mid-1990s. 13 Historia 14 CHAVIMOCHIC CHAVIMOCHIC En 1990 aparece con influencia en el cultivo el Proyecto Especial CHAVIMOCHIC, llamado así por los valles que recorre: Chao, Virú, Moche y Chicama. Con CHAVIMOCHIC se hizo posible la producción del espárrago a gran escala para exportación; conduciendo las aguas del río Santa conectando los cuatro valles. The Special CHAVIMOCHIC Project –named after the valleys of Chao, Viru, Moche and Chicama that it irrigates– began to influence asparagus farming in 1990. CHAVIMOCHIC made possible to grow asparagus on a large scale for export, driving the waters of the Santa River through the four valleys. En 1997 se transfirieron en venta 7,000 hectáreas de este Proyecto para la siembra de espárrago, divididas en parcelas que iban de 50 a 800 hectáreas. Al 2008, se vendieron más de 45,000 hectáreas. In 1997, some 7,000 hectares of this project were sold for planting asparagus, divided into lots in sizes of 50 to 800 hectares. By 2008, more than 45,000 hectares were sold. Historia Espárrago en el sur del Perú / Asparagus in southern Peru 16 PIONEROS PIONEERS Es a mediados de la década de los 80 que la Asociación de Agricultores de Ica (AAIca) decide buscar algún cultivo rentable para la zona como alternativa a los tradicionales. A través del Ing. Fausto Robles, la AAIca solicita apoyo a la Agencia Internacional de Desarrollo – AID de los Estados Unidos (U.S. Agency for International Development). In the mid-1980s, the Ica Farmers Association (AAIca) decided to seek a profitable crop for the area as an alternative to the traditional crops. Through Fausto Robles, AAIca sought the support of the United States Agency for International Development (US AID). Es así que la institución americana gestiona el auspicio de un viaje técnico para los Ing. Fausto Robles y Percy Palomino hacia los Estados Unidos. Tras visitar por más de más de 30 días campos de producción y plantas de proceso de diferentes cultivos, y por recomendación de la AID, concluyen que el espárrago es una buena alternativa agraria. The American institution organized a technical visit to the United States for Fausto Robles and Percy Palomino. After visiting production fields and processing plants of different crops over a period of 30 days, and at the recommendation of AID, they concluded that asparagus would be a good farming alternative. Los resultados obtenidos en productividad fueron extraordinarios. Se tomaron en cuenta características como: calibre, pigmentación, número de brotes por corona, tamaño de la corona, unidades térmicas acumuladas, compactación apical, etc. Estos resultados marcaron el camino hacia el énfasis en el espárrago. The results in productivity were extraordinary. The characteristics taken into account included size, pigmentation, number of spears per crown, size of the crown, heat units accumulated, tip closure, etc. These results laid the groundwork for developing asparagus. History CONOCIENDO EL MERCADO En 1985 la AID auspicia el viaje a Perú del Ing. Brian Benson, especialista en producción de espárrago de California. Junto a los Ing. Robles, Palomino y productores interesados recorren las zonas de producción de espárrago en el norte del país. Simultáneamente la AAIca elabora el Estudio del Mercado de Espárragos Verdes Frescos destinado a los Estados Unidos. Este arrojó que el mercado americano era una oportunidad comercial rentable para el espárrago verde fresco en el periodo comprendido entre Agosto y Diciembre. La primera cosecha experimental de espárrago verde de la variedad UC157 logró 2000 Kg, cuando solo se esperaba 700 Kg. La AID contacta a la empresa Couture Farms para la comercialización del espárrago y apoye en la supervisión de requerimientos de calidad, diseño de planta de proceso, etc. En 1985, se realiza el segundo viaje a los Estados Unidos. El objetivo fue aprender el diseño y la operación de plantas de proceso de espárrago fresco. Ese mismo año AAIca construye la primera planta de procesamiento de espárrago verde fresco diseñada por Paul Couture, Don Milano y Fausto Robles. UNDERSTANDING THE MARKET In 1985, AID sponsored the visit to Peru by Brian Benson, an specialist in asparagus cultivation in California. Together with agronomists Robles and Palomino and interested farmers, Benson visited the asparagus production areas in the north of the country. Simultaneously, the AAIca developed the Market Study for Fresh Green Asparagus to be exported to the United States. The study showed that the American market was a profitable commercial opportunity for fresh green asparagus between August and December. The first experimental harvest of UC157 variety of green asparagus yielded 2000 kilograms when only 700 Kg were expected. AID contact Couture Farms to commercialize the asparagus and provide support in the supervision of quality standards, processing plant design, etc. In 1985, a second trip to the United States took place. The objective was to learn about the design and operation of processing plants for fresh asparagus. That same year, AAIca built the first processing plant for fresh green asparagus, designed by Paul Couture, Don Milano and Fausto Robles. 17 Historia PRIMERA EXPORTACIÓN Las primeras cajas de exportación de espárrago verde fresco fueron de madera con la marca Ica Premium (turiones a granel). La primera exportación se envió vía aérea a la empresa Couture Farms en Estados Unidos a fines del año 1987. Con este logro el agricultor llegó al mercado y dio el gran salto hacia la agro exportación de perecibles. El paso de los años posicionó al Perú como proveedor de calidad, volumen y confianza en la exportación de perecibles. Cabe añadir que el espárrago verde fresco fue el pionero de la agro exportación de perecibles en el Perú. A la fecha, el Perú es el exportador más importante de espárrago en el mundo; el volumen de exportación de espárrago fresco es calificado como el primero a escala mundial y el segundo en volumen de espárrago conservado. EXPORTING FOR THE FIRST TIME The first exportation of fresh green asparagus were done in wooden boxes stamped with the Ica Premium brand (bull spears). The first shipment was sent by air to Couture Farms in the United States towards the end of 1987. With this achievement growers reached the market taking the big leap towards the agro-export of perishables. Over the years, Peru gained the position as a supplier of quality, volume and trust in exporting perishables. It is worth adding that fresh green asparagus was the pioneer in Peru’s agricultural exports of perishables. Today, Peru is the leading asparagus exporter in the world; the volume of fresh asparagus exports ranks first worldwide and the volume of canned or bottled asparagus ranks second. 18 Historia En cuanto a la historia del espárrago congelado, el primer túnel de congelación se implementó en la empresa Industrial Virú S.A., que procesaba espárrago blanco, ubicado en La Libertad, a mediados de los años 80. En ese mismo tiempo, la Asociación de Productores y Exportadores de Ica - APEISA, que agrupaba a los agricultores sureños que trabajaban con espárrago fresco. 20 The history of frozen asparagus starts with Industrial Viru S.A. at La Libertad, where the first freezing tunnel was installed in the mid-1980s to process white asparagus. At that same time, the Ica Growers and Exporters Association, APEISA, was grouping the southern farmers who were growing fresh asparagus. Este gremio firma un acuerdo por tres años con IQF del Perú para que el remanente que no podía ofertar como fresco a Estados Unidos, por falta de mercados o por una cuestión de precios, sea vendido exclusivamente a IQF del Perú para el proceso de congelado. No olvidemos que dicha empresa introdujo el espárrago congelado trozado. This association signed a three-year agreement with IQF del Peru for the remnant of what it could not be exported fresh to the United States, either because of a lack of markets or a matter of prices. The remnants would be sold exclusively to IQF del Peru for processing into a frozen product. It is worth noting that the company introduced frozen asparagus chunks to the market. Indudablemente, su aporte al desarrollo de la industria del espárrago congelado peruano ha sido muy valioso. Cabe recalcar que una empresa de procesamiento de congelado apoya al sector en situaciones comerciales problemáticas de menores precios en el exterior. Undoubtedly, IQF del Peru’s contribution to developing Peru’s frozen asparagus industry has been very valuable. A freeze processing plant provides significant support to the industry when there is trouble in commercial situations, such as when international prices drop. El crecimiento de la industria esparraguera nacional y la demanda de los clientes hizo que la modernización de los campos y de las plantas de congelado se realice en paralelo al punto que se amplió una cosecha en el año en Ica a la que ya existía, a diferencia de otros países como Chile que solo tiene una cosecha al año. Además se incrementó en una pulgada la longitud del espárrago nacional. The growth of the Peruvian asparagus industry and customer demand led to the upgrading of the fields and the freezing plants at the same time, to such a degree that the result was an additional harvest per year in Ica, added to the already existing harvest. Other countries such as Chile only have one harvest per year. The upgrading also led to an increase of up to an inch in the length of the local asparagus spears. II. Asociatividad Associativity Asociatividad Juntos sí podemos UNIDOS POR UN MISMO OBJETIVO La competitividad va de la mano con la estrategia. Si se carece de un plan articulado para enfrentar los retos globales, cualquier esfuerzo será en vano. Y esa lección la tienen bien aprendida nuestros emprendedores. Por eso han puesto énfasis en el compromiso con la calidad, la responsabilidad social, la innovación y, sobre todo, la asociatividad. Esta última herramienta se ha desarrollado con eficiencia en el ámbito esparraguero. Específicamente, la asociatividad empresarial es una estrategia para enfrentar los mercados globalizados y la creciente y fuerte competencia del extranjero. La asociatividad surge entonces en el sector de las hortalizas, a través del espárrago, como mecanismo de defensa y cooperación entre las pequeñas y medianas empresas que enfrentan la globalización. Los dos grandes ejemplos de asociatividad que respaldan la gestión conjunta de los agricultores del sector, son el Instituto Peruano del Espárrago y Hortalizas y la Asociación Civil Frío Aéreo. Ambos casos han sido reconocidos como emblemáticos al analizar los eslabones del comercio exterior. Una muestra más de que juntos sí podemos. 22 Associativity Together we can UNITED BY ONE OBJECTIVE Competitiveness goes hand in hand with strategy. If there is no articulated plan to face the global challenges, all effort will be worthless. And that is one lesson that our entrepreneurs have learned well. They have placed a strong emphasis on the commitment to quality, to social responsibility, to innovation and, above all, to associativity. The latter has been developed as an efficient tool within the asparagus growers’ environment. Specifically, business associativity is a strategy used to face the global markets and the growing and strong competition abroad. And so associativity has arisen within the vegetable industry, through asparagus, as a defense and cooperation mechanism among small and medium businesses to meet globalization. The two great examples of associativity that provide support to the joint efforts of farmers in the industry are the Peruvian Asparagus and Vegetables Institute and the Cold Air Association. Both groups are recognized as emblematic in the analysis of the foreign commerce chain. One more example of together we can. 23 Asociatividad UN GREMIO SÓLIDO Y CON PERSPECTIVA A SOLID ASSOCIATION WITH A FUTURE El Instituto Peruano del Espárrago y Hortalizas (IPEH) es una asociación civil y gremio empresarial sin fines de lucro que aglutina y representa a 44 agroexportadores y productores de espárrago, alcachofa, pimiento piquillo, páprika y otras hortalizas; es decir, representa el 84% de las exportaciones del sector. La actividad que involucra a los asociados del IPEH genera más de 69 mil puestos de trabajo directos y 90 mil indirectos debido a la compra y contratación de servicios. The Peruvian Asparagus and Vegetable Institute (IPEH) is a none-profit civil association and business guild which brings together and represents 44 agro-exporters and growers of asparagus, artichoke, bell and paprika peppers, and other vegetables; i.e. 84 percent of the exports in the agroexport industry. The activity that the IPEH members are involved in generates more than 69,000 direct jobs and 90,000 indirect jobs through the acquisition and hiring of services. La historia del gremio se inició con la idea de organizar, a nivel de campo a todos los productores en un contexto en que los espárragos nacionales eran fumigados en Estados Unidos y las condiciones fitosanitarias se pusieron más exigentes. La necesidad de agruparse y estar representados bajo una misma institución para coordinar el tema sanitario ante las autoridades estadounidenses es muy importante. Por primera vez se reunió a industriales y agricultores, así como a pequeñas, medianas y grandes empresas. 24 Founded in May 1998, IPEH is an example of associativity among private entrepreneurs. The guild began with the idea of organizing the producers in the field within the context that locally produced asparagus were being fumigated in the United States, and phytosanitary standards became more demanding. The need to come together and be represented under one institution to coordinate the agro sanitary issues with U.S. authorities is particularly important. Asociatividad RESULTADOS SATISFACTORIOS La mentalidad de los protagonistas de esta historia fue cambiando y dejó de verse como competencia al dueño del campo vecino: el rival comercial era el resto del mundo. La sociedad de estos empresarios se fundó con el nombre de Instituto Peruano del Espárrago (IPE). Desde entonces mucha agua pasó bajo el puente y los resultados obtenidos por el IPEH han sido más que gratificantes. Sus socios saben que el lugar ganado por esta asociación es relevante y, ante todo, tiene representatividad y voz propia. El IPEH ha sido promotor de la aplicación de la norma y mantenimiento de la cadena de frío. No olvidemos que las negociaciones comerciales han servido para que el espárrago peruano llegue a más destinos sin aranceles o con aranceles menores. Las buenas prácticas agrícolas es otro trabajo que también aparece como referente de los procedimientos en campo; cuyos pilares son el manejo integrado de plagas, la salud y bienestar del trabajador y el cuidado del ambiente. El objetivo al que apuntaron los asociados del IPEH fue que el espárrago peruano sea reconocido como el mejor del planeta. Sin temor a dudas, ahora podemos decir que este sueño se transformó en realidad. SATISFACTORY RESULTS The mindset of the players in this story began to change and the farmer in the neighboring field was no longer seen as competition – the commercial rival was the rest of the world. The guild was first founded as the Peruvian Asparagus Institute (IPE), but a lot of water has passed under the bridge since then and the results as IPEH have been more than gratifying. Its members appreciate that the place earned by this association is significant and, above all, has its own brand and voice. IPEH has been a promoter in implementing the regulations and maintenance standards of the cold chain. We should not forget that commercial negotiations have served to place Peruvian asparagus to more destinations that are under a total or partial free trade agreement. Good agricultural practices is another leading factor in the procedures in the field, based on the corner stone of the integrated pest management, the health and welfare of the worker, and care of the environment. The objective set by the IPEH members was that Peruvian asparagus be recognized as the best on the planet. There is no doubt that we can now say that this dream came true. 26 Associativity 27 III. Es un proceso que debe ser supervisado en cada una de sus fases sin descuidar los detalles. The logistics chain route that any perishable product requires to reach the supermarket shelf in the United States, Asia or Europe is not simple. It is a process that requires supervision in every one of the stages, without overlooking any details. Uno de los puntos básicos es la cadena de frío. Para que la calidad del espárrago refleje óptimas condiciones es necesario que la temperatura y la humedad del cultivo guarden una relación armoniosa y se mantenga a lo largo de todo el proceso. One of the key points is the cold chain. For the asparagus to be in optimal condition, the temperature and humidity of the crop must be balanced and maintained throughout the process. Ello implica desde que el producto sale de la planta de empaque hasta que llega al terminal de exportación (en este caso un lugar de almacenaje en frío). Sin embargo, este proceso no termina aquí, debe mantenerse hasta que el consumidor elija el espárrago en el punto de venta final. This process begins from the moment the product leaves the packing plant to the time it arrives at the export terminal (in this case, the cold storage center). En el primer caso es necesario salvaguardar los intereses del exportador y no poner en riesgo los envíos. Todos los exportadores están al tanto de los peligros que existen en materia fitosanitaria, o de amenazas de cualquier tipo, incluso ajenas al sector. Respecto a la trazabilidad, es conveniente saber de donde procede cada espárrago y el camino que ha seguido hasta el momento de su adquisición. Solo así se detectarán posibles fallas en alguno de sus procesos de producción o comercialización. Absolute security But the logistics chain does not depend only on the cold treatment given. Pero no debemos dormirnos en nuestros laureles, debemos seguir optimizando todos los procesos y buscar alternativas para superar las prohibiciones fitosanitarias post cosecha. Para ello debemos trabajar intensamente con el del Estado. Higher standards, greater care The fact that Peruvian asparagus is conquering more and more demanding markets, such as the European and Asian (and increasingly the United States), is proof that the logistics conditions are good. Success should not stop us, optimization has to continue in every process and seek alternatives to overcome the post-harvest phytosanitary barriers. To achieve this we need to work closely with the Government. 34 IV. Calidad quality Calidad 38 Quality CLAVE DEL ÉXITO THE KEY TO SUCCESS La inocuidad resulta ser el elemento más importante y determinante para alcanzar los más altos estándares del espárrago y de cualquier producto alimenticio; sin embargo, nada se logra si no se acompaña de otros elementos de la calidad exigidos por los consumidores y que superan las exigencias de las autoridades sanitarias. Esta es una de las preocupaciones centrales de la política de promoción de exportaciones, por cuanto se reconoce que su éxito dependerá de la calidad de los productos producidos, estableciendo el marco de los programas de apoyo, brindado por Promperú al sector agro exportador. Product safety is the most important and determining factor to achieve the highest standards in asparagus and any food product. However, nothing can be achieved if other quality standards demanded by consumers are not met and that are above the health authority requirements. This is a central concern in the promotion policies of exports, since we recognize that success will depend on the quality of the products, and a framework of support programs is being provided by PromPeru to the agro-export industry. COMITÉ REGULADOR REGULATING COMMITTEE Años más tarde, en el Perú, y por iniciativa del sector productor, nació el Comité Técnico de Normalización de Espárragos apoyado por Prompex. Este Comité fue conformado en noviembre de 1998 en el ámbito del Instituto Nacional de Defensa de la Competencia y de Protección de la Propiedad Intelectual (Indecopi), y contó con la participación del Instituto Peruano del Espárrago y Hortalizas (IPEH), Frío Aéreo, Servicio Nacional de Sanidad Agraria (Senasa), Dirección General de Salud Ambiental (DIGESA), Ministerio de Salud, Ministerio de la Producción, Comité para la Protección de Cultivos de la Cámara de Comercio de Lima (PROTEC) y de los laboratorios de certificación. El sector productor, principal responsable de la inocuidad y de la calidad de los espárragos en todas sus presentaciones, aporta información valiosa sobre la base de su experiencia en la producción y el comercio, contribuye con el asesoramiento técnico y científico, además de compartir sus experiencias y requerimientos de calidad según los mercados a los que llega. COMPETITIVENESS When the Committee was created, it was established that its mission should be focused on establishing quality specifications for asparagus based on international standards applied to production that would facilitate their commercialization both locally and abroad and effectively impact the quality and competitiveness of Peruvian asparagus. The asparagus industry, which is responsible for the safety and quality of asparagus in every product variation, contributes valuable information based on experience in production and trade, contributes with technical and scientific advice, and shares its experiences and the quality standard requirements of the different markets it reaches. 40 Quality BUENAS PRÁCTICAS Estos esfuerzos consisten, principalmente, en políticas internas orientadas a adoptar las normas medioambientales y a mejorar las condiciones de trabajo. Son notables los resultados derivados de la implementación de las buenas prácticas agrícolas como el manejo integrado de plagas, la forestación de las dunas, las prácticas de conservación de la biodiversidad, el manejo seguro de agroquímicos, la disposición apropiada de residuos, la implementación de pozos sépticos y letrinas, entre otras. Todo ha contribuido a reducir los impactos ambientales negativos sobre agua, suelo y aire. GOOD PRACTICES These efforts consist, principally, in internal policies geared to adopt environmental standards and to improve working conditions. The results achieved are significant in the implementation of good agricultural practices such as integrated pest management, forestation of the sand dunes, conservation of biodiversity, safe handling of agrochemicals, the appropriate disposal of residues, installing septic tanks and latrines, etc. This has all contributed to reducing the negative environment impact on water, soil and air. 41 Calidad SANO Y PRESENTABLE Antes de pensar en los mercados internacionales, el exportador de espárragos tiene que mirar para abajo, auscultar minuciosamente su producción para saber si da la talla y sus espárragos tienen las características físicas idóneas. Es decir, buen color, calibre y forma (tiene que ser liso, turgente, de puntas cerradas, libre de acanaladuras y centro hueco). En cuanto al suelo, la experiencia les ha enseñado a nuestros productores que si lo que quieren es un espárrago de primera debe tener una textura ligera, arenosa, un buen drenaje, debe ser profundo y de salinidad moderada. El pH óptimo está comprendido entre 7,5 y 7,8, aunque admite suelos de pH 6,2. SAFE AND IN GOOD SHAPE Before thinking of international markets, the asparagus exporter must look down and carefully look at their production to see if the asparagus has the right height and the ideal physical characteristics. La incorporación de la responsabilidad social en las estrategias de negocio de las empresas esparragueras constituye un elemento importante de agregación de valor social y sirve como blindaje a las barreras emergentes del comercio, contribuyendo al desarrollo de la industria, al aumento de los ingresos y al beneficio general de la sociedad. WOMEN AND SOCIAL RESPONSIBILITY Sixty percent of the workers employed in the asparagus industry are women, an important factor in the search for equal job opportunities. Incorporating social responsibility in the business strategies of asparagus companies is an important element of social added value and serves as a protection against emerging trade barriers, contributing to the development of the industry, to an increase in incomes, and to the general benefit of society. 48 Responsabilidad Social y el personal CAPACITACIÓN CONSTANTE A esto se suma la capacitación de trabajadores sobre la calidad de los espárragos, higiene, salud, seguridad y bienestar laboral. Elementos en el desarrollo de las capacidades locales que facilitan la reducción de pérdidas y minimiza la exposición de los trabajadores a agroquímicos y otros riesgos, lo que redunda en un incremento del grado de eficiencia. La agroindustria esparraguera cuenta con una importante capacidad de adecuación a las diversas normas exigidas en el comercio, toda vez que están sustentadas en el enfoque preventivo del sistema HACCP y de las buenas prácticas agrícolas y de manufactura, bases fundadas en la aplicación de los requerimientos mínimos, dispuestos en las normas técnicas y en las regulaciones vigentes. El grado de especialización en el proceso productivo del espárrago fue motivo de estudio de la Universidad de Stanford en el 2002. Este caso de estudio de “Life Long Learning” demostró un gran esfuerzo privado que apostó por la capacitación permanente a todo nivel, lo que deriva en un personal especializado con mayor productividad. CONSTANT TRAINING Added to this is the training of workers on the quality of asparagus, hygiene, health, safety and labor wellbeing. These elements in the development of local skills facilitate the reduction in losses and minimizes the exposure by workers to agrochemicals and other risks, which will benefit through an increase in efficiency. The asparagus agri-business has an important ability to adjust to the different standards required by trade, which are set according to the preventive perspective of the HACCP system and on good agricultural and manufacturing practices, principles that are based on the application of minimum requirements set out in the technical standards and on the current regulations. The degree of specialization in the asparagus production process was the subject of a study at Stanford University in 2002. This Life Long Learning case study demonstrated the great effort in private industry to ensure permanent training at every level, and the result is specialized personnel and greater productivity. 50 VI. Ante ello, los productores esparragueros han desarrollado una estrategia de control compatible con el medio ambiente basados en el manejo integrado de plagas, la cual busca lograr un nivel de convivencia aplicando medidas de control preventivo, logrando con ello convivir con un nivel de plagas que no afecte la calidad de los turiones del espárrago. La aplicación del manejo integrado de plagas se inicia con las evaluaciones en el campo, a fin de conocer la cantidad de plagas presentes en el cultivo de espárrago, en base a dicha información se procede a determinar el método de control más apropiado como es; el control biológico (Uso de insectos benéficos que comen las plagas que afectan al espárrago), control etológico (uso de trampas que atraen y capturan insectos en estado adulto, con ello evitamos que se reproduzca) la base de estas medidas ha permitido que en el control químico se utilice insumos ligeramente tóxicos, cuyo uso es preventivo y respetando su uso considerando los límites máximo de residuos (LMR) de los países de destino. El desarrollo de esta estrategia como método de control no podría haberse logrado, sin el respaldo de nuestro principal socio estratégico en temas fitosanitarios como es el Servicio Nacional de Sanidad Agraria (SENASA) quien nos acompaña en mantener la competitividad, permitiéndonos el acceso a mercados y respaldando el proceso agroexportador. Queque de espárragos y queso paria Paria cheese and asparagus cake Ingredientes - 1 lata de espárragos blancos. - 200gr. de queso paria. - 3 huevos. - 180gr. de harina. - 1cta polvo de hornear. - 100 ml. de leche. - 100 ml de aceite de oliva. - Sal y pimienta.
