FIAB (The Spanish Federation of Food & Beverage Industries) is an umbrella organization of most of
the food & beverage associations and more than 8000 manufacturing companies in Spain. Its basic
function consists of informing its members about events and developments which are relevant to the
sector. As a result, FIAB represents the interests of its members in discussions with administrative
and decision-making bodies on national, European and international level. Accordingly, its activities
are focused on the following areas: economy, fiscal policy, research & development, labor affairs, food
legislation, promotion of foreign trade, training, environment and communication.
In particular, the promotion of foreign trade is effected through supporting Spanish companies and

“EXTREMADURA, A TASTE OF THE UNSPOILT”
Extremadura, one of the last-remaining unspoilt regions in Spain, is located in South-western Spain
and one of its main characteristics is the diversity and quality of its settings, landscapes and natural
resources.
The diversity of the region makes possible a large range of raw materials and the variety of artisan
products offered to all those who would like to discover something different and rarely found.
The gastronomy is undoubtedly one of the characteristics which distinguish an area or a region and,
in Extremadura, we can show our visitors what has been made in the kitchens of our restaurants, inns,
convents, taverns, etc. through the ages.
Nowadays, we simply do the same as our ancestors did hundreds of years ago. Our gastronomy has
changed very little and we still conserve the know-how and the tradition of previous generations.
Anyone who has the chance to try our flavours will experience the pleasant learning process which
tasting our finest products entails.
The experience of many generations has managed to perfect artisan methods of production, cropgrowing and the transformation and conservation of many products from Extremadura. Knowing how
to slaughter an animal, obtaining its milk and conserving everything of value for long periods or
growing or obtaining a fruit and then preparing it are techniques which have joined together and been
perfected until they have become traditional.
Extremadura provides visitors with a wide selection of products, showing that the most ancient
traditions can be enjoyed today by everyone, 12 Protected Designations of Origin and Protected
Geographical Indications, as well as a wide range of artisan products are guarantee of the finest
quality.

We are the fourth generation of the Alvarez Valera family committed to
the development of our family business, whose origin was in agriculture,
complemented later with "Manchego" ovine cattle rising. In the early
198O's, we started the process of transforming the milk from these sheep
into artisan "Manchego" cheese with D.O. (Denomination of Origin, a label
in Spain that officially certifies the product's origin). Since then, we have

The Iberico pig has been part of the landscape of Extremadura since ancient
times. The Romans knew about the exceptional qualities of the hams of
Hispania. This tradition has been maintained since then, preserving and
even enhancing a breed which is a true genetic treasure.
Extremadura is the best location to raise these pigs. With nearly a million
hectares of “dehesa”, Extremadura offers one of the best preserved
ecosystems in Europe.
The “dehesa” is an agro-forest system that permits a balanced and nonabusive farming of natural resources; an extensive natural environment
combining pastureland for animal food and woodland, mainly Holm oak
and Cork oak trees, where livestock such as the Iberico pigs, Merino sheep
and Retinto cattle live together with other wild species.
This exceptional environment makes possible that most Iberico sows bred
in Spain are reared in Extremadura.

The Regulatory Council of the Protected Designation of Origin (D.O.P.)
PIMENTÓN DE LA VERA is responsible for the monitoring and control of
both the crops and the production process of the paprika from this region,
supplying numbered counter labels to the packaging companies once the
batches of ground paprika are classified.

Pimentón de la Vera is a P.D.O. artisan product distinguished by its
characteristic aroma and flavour and its colour stability. This traditional
aroma and flavour are obtained thanks to the traditional system of drying
over a wood hearth. The colour stability is the result of the high degree of
carotene which accumulates in the pepper when it is grown in the
microclimate of La Vera and in the drying process.
The paprika pepper of “Pimentón de la Vera” arrived from America, and
its crop was extended throughout the area of la Vera by the Hieronymite
monks from the Monastery of Yuste in the 16th century, until it began to
be produced by the families with great farming tradition in the Extremadura
region, a fertile land with a large quantity of organic material, crystalline
waters and a gentle climate.

Productos J. Jiménez S.L. (DOÑA JIMENA) is a family-owned company
that was founded in 1961 in Alcaudete, a small village of Jaén (Andalusia).
During the first 30 years of its history, the company produced traditional
Spanish Christmas sweets like almond puff pastries, marzipan, puff pastries
and soft almond delights. However, observing the potential growth in the
area of chocolate, in 1990 the staff management designed and began to
perform an expansion and diversification business plan with the aim of

FINCA VALDEZARZA
FINCA VALDEZARZA is located in the town of San Martín de Montalban,
around 44 Km. southwest of the Spanish city of Toledo, and within the agricultural
region known as Montes de Toledo (659 m. above sea-level). Lands & Building,
S.L. is a family company that owns the Finca Valdezarza estate.
Finca Valdezarza has an extention of approximately 3,500 hectares, 1,000
of which are used for intense olive tree cultivation. The most representative

The Cooperative, VIRGEN DE LA ESTRELLA, was founded in 1963 as an olive
oil company, and it was in the seventies when our wine production started.
Nowadays, the 800 farmers are part of it provide the raw material (olives

The company was created in 1992, and today 76 stockbreeders are part
of it, all owners of their own piece of “dehesa” - a natural oak forest and
hilly pastureland where pigs are free-range, fed on a diet rich on acorns.
All of them belong to the Spanish Association of Pure Ibérico Stockbreeders
(AECERIBER).
From its very first beginnings, Señorío de Montanera marketed exclusively
selected and controlled pure Iberico hams, shoulders, loins and sausages,
which are under the most exclusive Protected Denomination of Origin:

The Via Augusta - whose name refers to its promoter, the emperor Caesar
Augustus - was the Roman road that from the 1st century BC united the
main cities of the Spanish Mediterranean arch, running between olive
