Surge en los hogares, donde durante muchos años se encontraba la esencia de la pastelería asturiana, donde se preparaba la masa de les casadielles o se removía con lentitud y templanza la cacerola de arroz con leche. Durante mucho tiempo, los dulces se vendían en la calle, mediante un carromato de indudable peso y difícil transporte, que recorría las principales arterias de la ciudad en busca de los clientes. Así llegamos hasta principios del siglo XX, cuando se comienzan a fundar las primeras confiterías. La más antigua de cuantas permanecen en activo es La Playa, que se fundó en el año 1921 a los pies del mar, en la calle Jovellanos, y que hoy se encuentra en la calle Corrida. El consumo de chocolate llegó a ser tan elevado en la zona, que el puerto de El Musel se situó como el lugar del país donde mas cacao desembarcaba, en la mayoría de los casos proveniente de América. En los años 40 llegó a la ciudad Friedrich Bacinger, un confitero austriaco que adaptó al gusto local una tarta típica de su país y la convirtió en la tarta charlota que todos hoy conocemos. Fundó la confitería La Vienesa en la calle Covadonga, y pronto alcanzó gran popularidad. La charlota se compone de una base de bizcocho, una crema cuajada elaborada con leche, huevos, nata líquida y azúcar, que lleva en su interior un praliné de turrón, y corona una fina capa de chocolate y unas guindas confitadas. Durante la segunda mitad del siglo XX, La Bombonera fue la mejor escuela que tuvo la ciudad. De esta prestigiosa confitería de la calle Corrida, ya desaparecida, surgieron nuevos valores que hoy representan la solidez y la tradición. Tuvimos grandes artífices de bombones como Pío Brun, que llegó a ser proveedor de casi la mitad de las confiterías de la ciudad, y autores de tartas emblemáticas como la Tarta Gijonesa, que se sirvió por primera vez en una boda de la familia Agüera en 1971, creada para tal fin por Luis Neira, y que popularizó con una versión con galletas el restaurante La Pondala, primero, y con una versión personal la confitería La Fé de Hermanos Álvarez Baños, después. La tarta gijonesa se compone de un praliné de almendra (elaborado con azúcar glass, almendras y yema de huevo), mantequilla, nata montada, dos capas de bizcocho muy finas y azúcar para tostar la parte superior. Luego llegaron impresionantes esculturas y bustos de chocolate, los bombones de Cabrales, los helados de fabada y muchas otras creaciones que han ido permitiendo que la parte dulce de la ciudad siga viva y entusiasta. El último joven valor de la repostería local es Julio Blanco, que ofrece una propuesta minimalista y creativa, de líneas rectas y depuradas. Los 16 hombres y mujeres que en este catálogo están representados tienen algo que decir y les gusta hablar a través de sus creaciones. Si quieres escuchares, ya sabes lo que tienes que hacer. Comienza a caminar y déjate seducir por el Gijón más goloso. 5 A b r ie f h i s t o r y o f c o n f ec t i o n a r y in G i j ó n History is rich in nuances. These arise at home, where the essence of Asturian confectionary was to be found for many years, where de dough for “casadielles” was prepared or the saucepan of creamy rice pudding was slowly and gently stirred. For a long time, confectionaries were sold from a heavily laden barrow that was wheeled with difficulty through along the main streets of the city in search of customers. Then, at the beginning of the 20th century, the first pastry shops began to open. The longest established of those still open is La Playa, which was founded in 1921 almost on the seashore, in Jovellanos Street, though it is now to be found in Corrida Street. So much chocolate used to be consumed that El Musel was crowned as the port where the most cocoa was unloaded, coming mainly from America. The 40s saw the arrival in Gijón of Friedrich Bacinger, an Austrian pastry chef who adapted a typical tart from his country to local tastes and turned it into the Charlota tart that we all know today. He founded the pastry shop La Vienesa in Covadonga Street, which was soon to become very popular. The Charlota tart is composed of a sponge-cake base, set cream, made with milk, eggs, whipping cream and sugar, and a fine turrón praline filling, all crowned with a thin layer of chocolate and glace cherries. During the second half of the 20th century, La Bombonera constituted the best school the city ever had. From this prestigious pastry shop on Corrida Street –no longer in existence- emerged new beacons that nowadays represent soundness and tradition. We had great chocolatiers such as Pío Brun, who at one time supplied almost half the pastry shops in the city, and creators of emblematic tarts such as the Tarta Gijonesa, which was served for the first time at an Agüera family wedding in 1971, specifically created for the event by Luis Neira. A version including biscuits was first made popular by La Pondala restaurant, followed by a personalised version from the Álvarez Baños Bros. pastry shop, La Fé. The Gijonesa tart comprises an almond praline (made with icing sugar, almonds and egg yolk), butter, whipped cream, two very thin layers of sponge cake and sugar for searing the top. Later, impressive chocolate sculptures and busts, Cabrales blue cheese bonbons, “fabada” bean and pork stew ice- cream and many other creations were to appear that have kept the sweet part of the city alive and vigorous. The latest up-and-coming star among the local pastry chefs is Julio Blanco, who offers minimalist, creative proposals characterised by refined, straight lines. The 16 men and women represented in this catalogue have something to say and they like to talk through their creations. If you wish to listen to them, you already know what you have to do. Sus galletas decoradas, cuyo desarrollo e imaginación no tienen límites, cuentan con toda una legión de seguidores, pero borda también los macarons y las tartas, especialmente la de zanahoria. Sus cursos de repostería merecen mucho la pena. En apenas dos años se ha convertido en toda una referencia en la ciudad. That’s Isabel Pérez, better known as Aliter Dulcia, maintains that homemade touch that made her creations popular. Creations free of any artificial ingredients that preserve the same spirit as when she began to post recipes on her now famous blog. Her decorated cookies, the evolution and imagination of which know no limit, boast a legion of followers; but she also makes superb macaroons and cakes, especially carrot cake. Her pastry courses are really worth signing up for. Antonio Argüelles forma parte de una saga cuyo origen se remonta a principios del siglo XX en la localidad asturiana de Laviana, donde se hicieron famosos los bartolos, que siguen siendo elaborados como entonces. Pero su bagaje va mucho más allá, con los panetonne, bombones y latidos como protagonistas, además de estos caramelos artesanos que nos presenta en esta ocasión, que recuerdan a los auténticos toffees y que serán un original paseo por nuestra más tierna infancia. This establishment represents a new generation of pastry chefs who maintain their classical training and know-how, but have renewed the visual, aesthetic part of their profession, making cakes and traditional creations into a veritable spectacle. Antonio Argüelles forms part of a dynasty whose origins date back to the beginning of the 20th century in the Asturian town of Laviana, where their bartolos became famous. They continue to make these very same ground almond and puff pastry confections as they did then. But Antonio’s repertoire encompasses much more. Sus combinaciones dulces se alternan con propuestas saladas preparadas con ingredientes de calidad, muy conseguidas. Siempre dispuestos a seguir caminando, tras haber creado el desmigado de avellanas y queso de Varé en esta ocasión nos presentan una representación del bosque astur, a través de un bizcocho de queso azul con interior de castaña y avellana crujiente. Otras opciones de su amplia gama de repostería son los merengues, los suflés, los milhojas de fresas o la tarta ópera, toda una garantía de sabor que hará nuestra vida un poco más placentera. This is one of the most well-established local pastry makers, with more than thirty years of experience behind them. Their sweet recipes are accompanied by very well-made savoury proposals prepared with quality ingredients. Always ready to break new ground, after previously creating a crumbled hazelnut and Varé cheese confection, on this occasion they present a representation of the Asturian Wood, through a blue cheese sponge cake filled with chestnut and hazelnut crunch. Sus churros y sus casadielles son toda una institución. Pero Rosa Vílchez, inconformista por naturaleza, ha querido dar un paso más y en 2013 creó las Chaponas de Gijón, en honor a la escultura obra de Fernando Alba “Sombras de la Luz”, realizadas con huevo, harina, azúcar, mantequilla y cacao en polvo, que han ido evolucionando hasta presentarse con cuatro sabores diferentes. A las originales se han ido sumando las de naranja, manzana y más recientemente avellanas, todas ellas ideales para regalar. This bakery, which has recently celebrated its fortieth anniversary, is one of the traditional breakfast strongholds for local people. Their churros (sugared dough fritters) and casadielles (fried walnut- or hazelnut-filled pastries) constitute a veritable institution. But Rosa Vílchez, a nonconformist by nature, wanted to go a step further and in 2013 created the so-called Chaponas de Gijón as a tribute to Fernando Alba sheet-steel sculpture “Shades of Light”. Made with egg, flour, sugar, butter and cocoa powder, they have evolved and are now offered in four different flavours. Orange, apple and, more recently, hazelnuts have been added to the original recipe, all of which are ideal as gifts. 15 P E L AYO Pelayo C OLLA D A Plaza del Marqués, 10. 985 340 522 Abierto todos los días Open every day of the week Situada en una de las plazas más turísticas y céntricas de Gijón, a los pies de Pelayo se ubica esta confitería que practica una repostería tradicional de hondas raíces asturianas. Entre sus especialidades destacan la Tarta Asturias, elaborada con almendra marcona, los carbayones, las tartaletas de arroz con leche y por supuesto sus afamados Pelayos, un pastel en el que los protagonistas son el mazapán y el dulce de manzana. También merecen atención las rocas de San Lorenzo y sus pasteles de crema pastelera. Located in one of the most tourist-dotted squares in the centre of Gijón, in the shadow of Pelayo’s statue, this establishment practises traditional, innately Asturian pastry making. Its specialties include the Asturias Torte, made with Marcona almonds, almond pastries called carbayones, rice pudding tartlets and, of course, their famous Pelayo cake, in which marzipan and apple preserve play the leading roles. Their San Lorenzo “rocks” and confectioner’s custard cakes also deserve a mention. 17 PA ST E L D E M A R Í A Maria’s Cake C HO K OR E TO Anselmo Solar, 31. 985 369 452 Descanso: domingo tarde Closed: Sunday afternoon Es la aventura personal de Ana Fernández, cuya timidez inicial ha dado paso a una profesional segura de sus posibilidades y que sabe lo que quiere. Cuatro años después de su apertura Chokoreto cuenta con una clientela fiel que no solo se ciñe al barrio residencial de Viesques donde se encuentra ubicada. Entre sus especialidades destacaban el bizcocho de fresa con chocolate y kiwi, y el de zanahoria y canela, además de pastas de té y pastelería clásica de presentaciones actualizadas. El Pastel de María es un pequeño homenaje a su abuela, una auténtica apasionada del chocolate que hubiera disfrutado mucho con este bizcochito de choco y mermelada de albaricoque. This is the personal adventure of Ana Fernández, whose initial shyness has given way to a professional who is sure of her possibilities and who knows exactly what she wants. Four years after opening, Chokoreto now boasts a loyal clientele that is not only limited to the residential neighbourhood of Viesques, where it is located. Their strawberry cake with chocolate and kiwi and their carrot and cinnamon cake stand out among the house specialties, in addition to their fine tea biscuits and classical pastries with an updated form of presentation. Maria’s Cake is a minor tribute to her grandmother, a veritable chocolate lover who would have really enjoyed this small chocolate and apricot jam sponge cake. 19 L AZON ES DE GIJÓN Gijón Bows D A N AS Avda. de Portugal, 26. 985 353 448 Palacio Valdés, 7. 985 340 167 Abierto todos los días / Open every day of the week Esta casa, que tiene dos sedes, se fundó en el año 1991 con otra propiedad, y fue en 2008 cuando Alejandro Díaz, tras forjarse en confiterías históricas como Marqués y Helguera y la propia Danas decidió hacerse con las riendas en compañía de su esposa, Carmen Fuego. Su mayor creación son los Lazones de Gijón, una especie de mazapán relleno de avellana y corazón de manzana que causa furor, pero también merecen la pena sus strudel, minicarbayones, tarta de queso o mousse de chocolate, además de las empanadas de cecina, sus panes de stollen y pan de centeno con pasas y nueces. This establishment, which has two shops, was founded in 1991 at another spot. It was in 2008 when Alexander Diaz decided to take over the business together with his wife, Carmen Fuego, after having worked for historical pastry shops such as Marqués and Helguera and Danas itself. His major creation are his so-called “Gijón Bows”, a variety of marzipan and with a hazelnut filling and a “heart” of apple that is all the rage. However, his strudel, mini almond pastries (carbayones), cheesecake and chocolate mousse are also definitely worth trying, in addition to his cured beef pies, stollen bread and rye bread with raisins and walnuts. 21 TRU FA DE MANZANA Apple truffle G LOR I A Fernández Vallín, 2. 985 172 661 Descanso: domingo Closed: Sunday Es la bombonería de Gijón, y aunque su historia como tienda se remonta a hace tan solo diez años, Pío Brun, creó la empresa en 1967. Fue toda una institución en la ciudad, y durante muchos años suministró bombones y buena parte de las confiterías de la región. Como no puede ser de otra forma aquí el protagonista indiscutible es el chocolate, que están siendo la sensación, especialmente para los más pequeños pero, tras su última renovación, podemos encontrar productos actuales y variados dirigidos a todos los públicos; desde los dulces más típicos hasta los productos importados más exclusivos. This is Gijón’s fine chocolates shop. Although it only opened ten years ago, Pío Brun, started the business back in 1967. It constituted a veritable institution in the city and supplied chocolates and sweets to a fair proportion of the region’s pastry shops for many years. Son los creadores del helado de Cabrales, de fabada o de centollo, que les han permitido convertirse en personajes mediáticos y muy queridos. Son muchos años de experiencia y una voluntad creativa sin límites, que les permite llevar a cabo cualquier idea que se les proponga, por descabellada que parezca. Pero exotismos aparte, los sabores más conseguidos son el de limón, arroz con leche y tarta gijonesa, además de los tradicionales, que continúan teniendo su público. Son helados “Made in Gijón”, de los pocos que quedan. The originality of this establishment is beyond any doubt. They are the creators of Cabrales blue cheese, bean stew and crab ice creams, which have converted them into well-loved media personalities. Many years of experience and a creative drive without limits have enabled them to put into practise any idea put to them, no matter how crazy it might seem. But exotica aside, the most successful flavours are lemon, rice pudding and Gijón Torte, in addition to traditional flavours, which continue to have their followers. Enseguida palparon que este artista de la pastelería tenía buenas dotes para la elaboración y que era exigente con los proveedores con tal de buscar la excelencia en sus productos. Es amante de respetar las formulaciones tradicionales, lo que le ha conferido merecida fama en hojaldres y bizcochos, que sumado a las mousses y bombones son toda una delicia. Su homenaje a su Galicia natal viene de la mano de magníficas empanadas y de la tarta peregrina. José is a master pastry chef whose capabilities led him to leave his native Galicia for the neighbouring region, where pastry shops were more prosperous and where he could forge his career more easily. It soon became clear that this artist of a pastry chef had a talent for the trade and that he was exacting with respect to suppliers in the pursuit of excellence in his products. He believes in respecting traditional formulations, which has earned him a well-deserved reputation as a pastry and cake maker, as well as in the preparation of delightful mousses and chocolates. Estamos hablando de los Álvarez, una de las sagas más importantes que ha dado la repostería asturiana, y que hoy en día se ha ramificado generación tras generación. Este obrador ha sido, más que una tienda, una escuela, ya que han sido varias las decenas de aprendices que han acabado siendo maestros tras pasar por esta casa. Fueron los creadores del postre gijonés en 1980, miman los milhojas, sorprenden los pasteles mini y merece la pena probar sus bombones, 24 variedades que cambian cada temporada, destacando el bombón de mazapán y la trufa de naranja. This establishment dates back to 1938. We are talking about the Álvarez family here; one of the leading dynasties in Asturian pastry making, which has multiplied generation by generation. More than just a pastry shop, this bakery has been a school, with scores of apprentices who eventually became master pastry chefs having trained here. Creator of the torte known as Postre Gijonés in 1980, this establishment pampers its millefeuille, while surprising customers with its mini cakes. Nació precisamente a los pies de San Lorenzo, y desde hace varias décadas aromatiza nuestros paseos por el centro de Gijón. Degustar sus princesitas es tarea obligada, un dulce de mazapán y crema de yema que ha dado la vuelta al mundo y que ha tenido hueco más de una vez en la Casa Real. Su suflé de fresas y la tarta de almendra, junto con el tocinillo, son otras de sus obras maestras. This is a temple of sweetness, an almost century-old pastry shop founded in 1921 by Fabian Castaño and the longest-standing of its kind in the city. It was actually founded near San Lorenzo Beach, though for several decades now it has provided the background aroma for those taking a stroll through the centre of Gijón. Their Princesitas (little princesses) are a must try. These marzipan and cream of egg yolk confectionaries have circumnavigated the globe and have had been delivered more than once to the Royal Household. Their strawberries soufflé and almond torte, along with the syrupy egg yolk custard called tocinillo are other masterpieces to be found here. 31 CU PCAKE DE ARÁN DANOS Blueberry cupcake M A D AL E N AS D E C OLOR E S Libertad, 2. 651 846 042 Abierto todos los días Open every day of the week Es el paraíso de los amantes de los cupcakes. Los tienen de todos los colores y sabores, y con solo pasar por delante del establecimiento percibiremos atractivas y diferentes creaciones cada mañana. Llaman la atención los de Nutella, mango y Oreo. Juan y Ana decidieron abrir su propio negocio tras triunfar con sus creaciones entre amigos y vecinos. Es otra de las novedades importantes de los últimos años en Gijón. Gustan mucho también sus cakepops, brownies, muffins y las tartas personalizadas, cuyo único límite es la imaginación del cliente. This is a paradise for cupcake lovers. They have them in all colours and flavours. Simply passing by the establishment allows you to see attractive creations that are different each morning. Their Nutella, mango and Oreo cupcakes are especially eye catching. Juan and Ana decided to open their own business after their creations triumphed among friends and neighbours. This business is another of the important novel businesses that have arisen in Gijón in recent years. Their cake pops, brownies, muffins and customized cakes are also very popular, the only limit in the latter case being the customer’s imagination. 33 MANTECADO DE MANZANA Apple sponge cake POMME CUITE San Bernardo, 70. 985 355 492 Abierto todos los días Open every day of the week Recuerda a una boulangerie francesa, auténtica inspiración de todo lo que hacen Julio Blanco y Alejandra Rodríguez. Su filosofía continúa la línea de calidad de la casa madre, Pomme Sucre, pero esta nueva versión camina con identidad propia. Aquí tienen más protagonismo los cruasán, los bizcochos y los panes, que les ha permitido desarrollar toda una gama de productos salados que cada vez están cobrando más protagonismo. Pero no podemos olvidar sus macarons, las rocas de almendra o los pasteles de frutas, que nos harán relamernos mientras los degustamos en su terraza. This establishment is reminiscent of a French boulangerie, the authentic inspiration of everything that Julio Blanco and Alejandra Rodríguez do. Its philosophy maintains the mark of quality of the mother establishment, Pomme Sucre, although this new version has an identity of its own. Here the leading figures are croissants, sponge cakes and breads. This has allowed them to develop a range of savoury products that are taking on an increasingly more important role. Not to mention their macaroons, almond “rocks” and fruit cakes, which will get you licking your fingers while you enjoy them on their outdoor terrace. 35 AMAGÜ ESTU Amagüestu POMME SUCRE Libertad, 26. 985 354 193 Abierto todos los días Open every day of the week Parece que fue ayer pero ya han pasado doce años, y durante este tiempo se han consolidado como la mayor apuesta por la repostería moderna de la ciudad, además de adquirir notable renombre a nivel nacional. Sus cuidadas presentaciones y la calidad de las materias primas les han aupado a un merecido podio. During this time, it has become the leading exponent of modern pastry making in the city, besides acquiring a notable reputation at a national level. Their painstaking presentations and the quality of the ingredients they use have allowed them to occupy a well-deserved podium. This is a historical pastry shop originally founded in San Antonio Street in 1975. The business has undergone a period of expansion with the recent opening of a new establishment in Uría Street, in what amounts to a move back closer to the city centre and the beach. Both premises, now run by the founder’s heirs and constituting the second generation of pastry makers, maintain the same specialties. These include cakes like their Opera, cream and walnut, Charlota and Gijonesa tortes, millefeuille, fine tea biscuits and chocolates, as well as a spectacular lemon mousse. Son una especie de empanadillas dulces alargadas rellenas de nuez molida, azúcar y anís. Figos Higos. Frixuelo/frixuelu Postre típico de carnaval. Es un crep dulce elaborado con leche, huevos, harina, azúcar y sal. Llambión Palabra asturiana que significa goloso, aficionado a comer cosas dulces. Marañuelas Galleta dulce tradicional típica de Luanco y de todo el concejo de Gozón en general. It is a sweet crépe made with Frixuelo/frixuelu milk, eggs. Flour, sugar and salt. The Asturias Word for sweet toothed, or a sweet toothed Llambión person. A sweet biscuit typical of Luanco and of all the borough of Marañuelas Gozón in general. Since the 18th century, all the women in the town make them at Easter with egg yolk, flour, butter, sugar and lemon rind. Mayuques Dried chestnuts. Piescu Apricot. Picatoste Sweet eggy-bread. A slice of bread, normally a few days old, soaked in milk, dipped in egg and fried in oil. Queimada A hot Galician spirit-based punch usually containing coffee. Tarta Torte.
