100% Tempranillo. Viñas de entre 20 y 25 años de edad media. Calificada como muy buena. Las precipitaciones y su distribución a lo largo del ciclo fueron suficientes para el período brotación-cuajado. Agosto es más seco, con apenas tormentas, y las temperaturas se suavizan, siendo moderadas de día y bajas de noche, ideal para la maduración. En los primeros días de septiembre, las altas temperaturas paran la evolución madurativa, siendo desde entonces irregular, por lo que se debe hacer vendimia selectiva. El tiempo acompaña una semana más y entra la uva en buenas condiciones sanitarias, gracias al adelanto de unos 10 días respecto a 2005. Para este vino han intervenido 100% uvas de tempranillo procedentes de viñedos situados en la zona media, es decir, entre 500 y 540 metros de altitud. El 100% de la uva es cogida a mano de cepas dispuestas en vaso (80%) y espaldera (20%). La uva se despalilla a su entrada en bodega. Once días de fermentación dentro de los catorce de maceración total. Dicho proceso se realizó bajo estricto control térmico para no sobrepasar los 26ºC. El nuevo vino así obtenido fue sangrado por gravedad para realizar la fermentación maloláctica, también de forma espontánea, a los 45 días de su trasiego. Finalmente el vino fue clarificado con una cantidad mínima de clara de huevo, decantado al cabo de 25 días para permancer una estancia mínima de 6 meses en botella. Tono picota en el núcleo, cubierto de capa, con ribete vivo. Aspecto moderno por su intensidad y viveza. Frutos rojos, cacao, regaliz, algo especiado y licoroso. Su actual evolución en botella tiende a aumentar complejidad y potencia aromática. Pleno, sabroso, potente. Frutos rojos confitados, guindas maceradas y tacto ligeramente graso que aumentará con algo de botella. Final cálido. Impresión global acorde con su aspecto: cuerpo, complejidad en desarrollo, riqueza de matices en boca y buena persistencia. Tempranillo Este vino ha realizado la crianza en barricas de roble americano de 3 años y de roble francés de 2 años en proporciones de 40 y 60% respectivamente. La mezcla de ambas partidas se efectuó con posterioridad a su estancia en barrica. Se ha trabajado con tostados medios y con parte de la barrica (tapas) sin tostar. La crianza total ha sido de 12 meses con trasiego intermedio para limpieza de barricas y aireación del vino. Tras la barrica el vino ha estado durante un mes en depósito, en contacto con parte de las lías obtenidas durante la crianza, las cuales se han mantenido en suspensión. Se pretende con esta técnica promover un mayor volumen en boca. The precipitation and its spread in time over the growth cycle was sufficient for the bud-burst to fruit-setting period. August was drier, with very few cloudbursts, and temperatures became milder – moderate by day and low by night, ideal for ripening. In early September, high temperatures halted the ripening process which, from then on, was stop-and-go. For that reason the grapes were harvested selectively. The weather held for a further week and the grapes were brought into the winery in a good state of health, thanks to this operation being carried out some 10 days earlier than in 2005. For this wine we used 100% Tempranillo grapes from vineyards situated at medium height, that is, between 500 and 540 metres above sea level. 100% of the grapes were harvested by hand, from goblet(80%) and trellis-trained (20%) vine stocks. The grapes were de-stalked on entering the winery. Eleven days' fermentation out of a total of fourteen days' maceration. This process was conducted under strict temperature control so as not to exceed 26ºC. The new wine thus obtained was drained off its skins under gravity in order to undergo malolactic fermentation, also spontaneously, 45 days after racking. Finally the wine was fined with a minimal quantity of egg white and decanted after 25 days, to remain in the bottle for a minimum of 6 months. Bigarreau cherry shade of red at the core, covered with a layer, with a lively edge. A modern-looking wine due to its intensity and liveliness. Red berries, cocoa, liquorice; slight smell of spices and liqueur. The wine's current development in the bottle tends to heighten the complexity and aromatic potency. Full, flavoursome, potent. Red berry confit, macerated Morello cherries and a slightly fatty tactile sensation which will increase if the wine is kept a while longer in the bottle. Warm finish. Overall impression in keeping with its appearance: with body, growing complexity, richness of nuances on the palate and good persistence. Tempranillo Alcohol: 14% Vol Volatile acidity: 0,45 g/l This wine was aged in 3-year-old American oak casks and 2-year-old French oak casks in the proportion of 40 and 60% respectively. Mixing of the two lots was carried out after ageing in the cask. We worked with medium toasting and with part of the casks (the lids) untoasted. The total ageing period was 12 months with an intermediate racking in order to clean out the casks and air the wine. Following ageing in the cask, the wine spent a month in the tank, in contact with part of the lees obtained during ageing, which were kept in suspension. By using this technique we aimed to create greater volume on the palate.
