Muslos de pollo de corral confitados con guiso de trigo y setas a la vieja usanza Free-range chicken legs with an old-style stew of wheat and mushrooms Con esta receta, he tratado de rescatar los antiguos guisos tradicionales de trigo que hacían antaño las abuelas. En los últimos años se está recuperando, creo que con acierto, la utilización del grano entero de trigo en la cocina en todo tipo de guisos, sopas y ensaladas. Las propiedades nutricionales de este cereal –hidratos de carbono, principalmente, pero también proteínas y vitaminas B y E– hacen muy recomendable su uso. En este caso, el trigo va guisado con pimientos, setas y el jugo del pollo de corral que le confiere un sabor extraordinario, muy alejado del anodino pollo de granja. La alimentación que estos pollos reciben durante su cría en semilibertad, en la que el maíz, la cebada, el trigo y las hierbas forman parte de su dieta, dan como resultado una carne muy fina con poca grasa y mucho sabor que resulta ideal para esta receta en la que he buscado acentuar sus orígenes mediterráneos plenamente compatibles con la cocina actual. Junto al trigo, he utilizado pimientos rojos y verdes, que aportan sabor y colorido, y unas setas de cardo pequeñas, que no restan protagonismo al resto de ingredientes y cuyo tamizado sabor no interfiere con el del pollo. Dani García* With this recipe, I have tried to bring back the old traditional wheat stews that our grandmothers used to make. Recent years have seen what I feel is the deserved comeback of whole-grain wheat for making all kinds of stews, soups and salads. The nutritional properties of this cereal –mainly carbohydrates, but also proteins and vitamins B and E– recommend it highly. In this case, the wheat is cooked with peppers, mushrooms and the gravy from the free-range chicken, which gives it an extraordinary flavour quite distinct from the anodyne intensively farmed chicken. While reared in semi-freedom, these chickens are fed a diet that includes maize, barley, wheat and herbs, resulting in a very tender and tasty meat with little fat. It is ideal for this recipe, in which I have tried to accentuate its Mediterranean origins, fully compatible as they are with today’s cuisine. Besides wheat, I have used red and green peppers, which contribute flavour and colour, and some small king trumpet mushrooms, which do not compete with the other ingredients, and whose subtle flavour does not interfere with the chicken.
