Una vez más, es una alegría darle la bienvenida al legendario Hotel Ritz Madrid desde las páginas de esta publicación, fiel embajadora de nuestro establecimiento.
Once again, it gives me great pleasure to welcome you to
the legendary Hotel Ritz by Belmond in Madrid from the
pages of this publication, a faithful ambassador of our
establishment.
La historia de un hotel es siempre la historia de las
personas que trabajan en él; del equipo que, en cierto
modo, acaba siendo también una familia. Desde esta
publicación, queremos dar a conocer el trabajo de todos aquellos que con su esfuerzo diario hacen del Ritz
un hotel de cinco estrellas gran lujo.
En este número podrá recorrer las habitaciones del Ritz
de la mano de la Gobernanta General, Irene Pazos, cabeza del equipo que se ocupa de que, a la llegada de
nuestros clientes, la habitación se haya convertido en
“su casa” y esté impecablemente preparada para que
puedan disfrutar de los más dulces sueños.
The story of a hotel is always the story of the people
who work there; of the team of people who also become
a happy family, as it were. In this issue, we would like to
shed a little light on the work they do and the effort they
devote every day to making Hotel Ritz by Belmond a fivestar luxury hotel.
In this issue, you will be escorted round the rooms at
Hotel Ritz by the Head Housekeeper, Irene Pazos, the
person in charge of the team that ensures that when our
guests arrive, their room has become “their home” and is
impeccably prepared so that they can enjoy the sweetest
of dreams.

We have made the Hall into an afternoon tea room
where you will be tempted by our “Pecar en el Ritz” teas.
Traditional afternoon tea is given a new lease of life by
teas designer Beatriz Parreño; or you could opt for a
hot chocolate, more tempting than ever on these cold
afternoons; or even for a glass of exclusive Clos du Mesnil
champagne in the first Maison Krug Bar to open in Spain,
which you will find in our famous Velázquez Bar.

Alberto Palacios Anaut leads the Madrid-based
rhythm and blues sextet that is named after him. He
grew up alongside a record player that continually
played this type of music, together with country and
soul. Today, his voice and guitar strive to bring these
primitive sounds out of his memory and back onto
today’s musical map. The group is playing at the
Círculo de Bellas Artes to demonstrate why everyone
says they are “the best kept secret in the city”.
In association with the Centro Internacional del
Títere de Tolosa (Topic), the Centro Dramático
Nacional presents a carefully chosen programme
featuring hand puppets and marionettes at the
Teatro Valle-Inclán. It consists of a selection of topquality shows performed by Spanish and foreign
companies that have enjoyed great acclaim from
critics and audiences alike.

Con la playa como telón de fondo, esta exposición ofrece, por primera vez, una aproximación a
la faceta gráfica del artista destacando su significación en el conjunto de su producción. La muestra está organizada en cinco ámbitos temáticos
en los que se analizan los motivos predilectos
del pintor en la playa: El trabajo en el mar; Barcas,
bueyes y velas; Mujeres del mar; Alegría el agua y
Elegantes en la playa. En ellos pueden rastrearse
las inquietudes y aspiraciones esenciales del universo estético de Joaquín Sorolla.
OUTLINES IN THE SAND
With the beach as its backdrop, this exhibition is the
first ever to concentrate on the graphic nature of
Sorolla’s art, highlighting its significance in his output
as a whole. Organised into five thematic areas, the
exhibition analyses the artist’s favourite motifs at the
beach: Work at Sea; Boats, Oxen and Sails; Women
of the Sea; Gaiety in the Water and Elegance on
the Beach. All of them contain traces of the basic
concerns and aspirations of the aesthetic universe
inhabited by Joaquín Sorolla.

THE RETURN OF THE SNAKE
“The Return of the Snake. Mathias Goeritz and the
Invention of Emotional Architecture” is the first great
retrospective of the work of the renowned Mexican
artist Mathias Goeritz ever to be held in Spain. The
exhibition relates to “emotional architecture”, a
principle proposed by the artist himself in 1954
and on which all the theory and aesthetics of his
work are based. Goeritz used this concept to raise
awareness of the need to devise spaces, works and
objects that would evoke the greatest possible
emotion in the face of functionalism, aestheticism
and individual authorship.

Goya’s cartoons and the works of other artists past

En los últimos años la figura de Raoul Dufy
(1897-1994) ha sido objeto de una creciente
revalorización. Su presencia en España ha sido
muy escasa. En 2015, el Museo propone una relectura de su obra centrada no sólo en su vertiente hedonista, como pintor de los placeres de
la vida moderna, sino, y sobre todo, en su faceta
más introspectiva, reflexiva y personal.
In recent years the life and work of Raoul Dufy
(1897-1994) has been the subject of increasing
reassessment. His presence in Spain has until now
been very limited. In 2015 the museum will be offering a reassessment of his work focusing not only
on Dufy’s more hedonistic side, as the painter of the
pleasures of modern life, but also and primarily on
his more introspective, reflective and personal side.
Para destacar este aspecto, Juan Ángel LópezManzanares, comisario de la muestra conservador del Museo Thyssen, ahondará en cuestiones
poco estudiadas de su producción, como el progresivo alejamiento del punto de vista en sus
obras, la síntesis de lo cotidiano con lo pastoral,
el distanciamiento sentimental de sus paisajes
y la importancia, cada vez mayor en sus obras
finales, de ámbitos privados del artista. Asimismo, la exposición mostrará por vez primera los
grabados que Dufy realizó para el Bestiario de
Apollinaire, junto a varios de sus dibujos preparatorios.
In order to emphasise this aspect, Juan Ángel
López-Manzanares, the exhibition’s curator and a
curator at the Thyssen Museum, will analyse relatively unexplored issues within Dufy’s output such
as his synthesis of the everyday and the pastoral,
the emotional reserve of his landscapes and the importance, particularly in his late works, of depictions
of his domestic life. In addition and for the first time,
the exhibition will include the prints that Dufy created for Apollinaire’s Bestiary, alongside a number
of related preparatory drawings.

“toda su carrera”. Tras una primera etapa marcada por el expresionismo flamenco, Delvaux descubrió el surrealismo y experimentó la influencia de Magritte y Giorgio de Chirico.
The Thyssen-Bornemisza Museum presents an exhibition dedicated to the Belgian painter Paul Delvaux (1897-1994) featuring an overview of his “entire career”. After an initial stage marked by Flemish
Expressionism, Delvaux discovered Surrealism and
experienced the influence of Magritte and Giorgio
de Chirico.
El mundo de Delvaux tiene un inconfundible
carácter onírico. Sus figuras femeninas vagan
como sonámbulas por escenarios nocturnos
ofreciendo, a la mirada del espectador, su desnudez a la vez fría y sensual. Realizada en colaboración con el Musée d’Ixelles, esta exposición
reúne más de medio centenar de obras del
pintor, procedentes de colecciones públicas y
privadas de Bélgica, y especialmente de la colección Ghêne. En ella se recorren cinco grandes
temas de la iconografía de Delvaux entre Eros y
Tánatos: la Venus yacente; la obsesión por el Doble; las arquitecturas clásicas y las estaciones de
ferrocarril; y finalmente la Danza de la muerte.
Delvaux’s world has an unmistakeable dreamlike
quality. His female figures wander like sleepwalkers through nocturnal scenarios, displaying to the
viewer their nudity, cold and sensual at the same
time. Conducted in conjunction with the Musée
d’Ixelles, this exhibition brings together more than
50 works by the painter, from public and private collections in Belgium, especially the Ghêne collection.
The exhibition covers five great themes in Delvaux’s
iconography: Eros and Thanatos; the reclining Venus; the obsession with the Double; classical architecture and train stations; and finally, the Dance of
Death.

Impulsa el diálogo entre profesionales del arte
La ciudad de Madrid vuelve a centrar los focos del arte contemporáneo con
la celebración de la 34ª edición de ARCOmadrid, Feria Internacional de Arte
Contemporáneo. Alrededor de 200 galerías de más de 30 países se dan cita
en IFEMA con el objetivo de dar la máxima visibilidad a la obra de los artistas y potenciar el intercambio entre galerías, coleccionistas y demás profesionales de este sector. A las 160 galerías del Programa General se
suman aquellas que participan en los programas comisariados:
#Opening, que acoge a jóvenes galerías con una trayectoria
inferior a siete años, #SoloProjects, dedicado a la obra de artistas latinoamericanos, y #ArcoColombia, país invitado de
esta edición y que presenta diez galerías seleccionadas por
el comisario Juan A. Gaitán.
La presencia de Colombia como país invitado de honor refuerza el papel de ARCOmadrid como puente de intercambio
entre Europa y América Latina, a lo que se suman el programa #SoloProjects y el IV Encuentro de Museos de Europa e Iberoamérica. Además,
para ampliar la propuesta expositiva, se desarrolla un completo programa
de Foros y Encuentros Profesionales -#ARCOmeetings- con la idea de fomentar las posibilidades de reflexión y debate en torno al arte contemporáneo.
Como no podía ser de otra manera, los museos y centros de arte de Madrid
muestran sus mejores exposiciones en el mes de febrero, en coincidencia

ARCOmadrid 2015 encourages a dialogue between art professionals
The staging of the 34th International Contemporary Art Fair, ARCOmadrid, puts
the city of Madrid back in the contemporary art spotlight. Some 200 galleries
from over 30 countries are gathering at IFEMA, the city’s trade fair grounds, to
give maximum visibility to artists and their work and to promote exchanges
between galleries, collectors and other professionals in this sector. The
160 galleries in the main programme will be joined by others taking
part in the curated programmes: #Opening, which is the venue
for novice galleries that have been in the ring for less than seven
years; #SoloProjects, dedicated to the work of Latin American
artists; and #ArcoColombia, featuring this year’s guest country,
which is presenting 10 galleries selected by curator Juan A. Gaitán.
The presence of Colombia as the guest of honour country reinforces the role of ARCOmadrid as a bridge for exchange between Europe
and Latin America, of which the #SoloProjects programme and the 4th
Gathering of Art Galleries of Europe and Latin America both form part. Added
to that, to extend the exhibition proposal, a complete programme of forums and
professional gatherings –#ARCOmeetings – will unfold, promoting the possibility
of reflection and debate around the issue of contemporary art.
Madrid’s art galleries will, of course, be staging their top exhibitions in February,
to coincide with the Fair. These include, for instance, the Goya exhibition at the
Prado Museum; Raoul Dufy at the Thyssen; and the Reina Sofía Museum, which is
opening its doors exclusively for ARCOmadrid on Thursday, 26 February.

Con el crecimiento de las ciudades surge la
necesidad de abastecer los nuevos barrios con
productos alimenticios y de primera necesidad.
En sus inicios, los mercados se encontraban al
aire libre y se esparcían por las plazas y calles.
Por razones de higiene y por las necesidades
urbanas, como el cada día más intenso tráfico
rodado, los mercados se fueron poco a poco
ubicando en recintos cerrados.
Los nuevos estilos de vida de la sociedad moderna han provocado un lento pero irreversible
declive de la importancia de los mercados en
la vida cotidiana del barrio. La aparición de las
grandes superficies con horarios muy flexibles
y precios muy competitivos y la incorporación
de la mujer al mercado de trabajo relegando las
compras al fin de semana, han sido alguna de
las causas.
Los mercados tradicionales se ven obligados a
mutar para sobrevivir; algunos, con transformaciones estructurales y otros, sin perder su esencia, se abren a nuevos mundos.
Mercado de San Miguel
El Mercado de San Miguel, fundado en 1916, fue
construido por el arquitecto Alfonso Dubé, inspirado en el parisino Mercado de Les Halles. Su
bella estructura de metal y cristal, de estilo art
decó, alberga el icono de este nuevo concepto
de Mercado, en el que entran nuevos usos junto
a la venta tradicional de productos. Es sin duda
un referente y se ha convertido en un clásico del
tapeo madrileño.

Markets were originally set up to supply growing
cities with food and other essential products. In the
early days, they were set up outdoors and spread
through squares and along streets. For reasons
of hygiene and other urban conditions, such as
increasingly heavy traffic, markets gradually came
to be located in enclosed spaces.
Changes in the lifestyles of modern society have
caused a slow but irreversible decline in the
importance of markets in the everyday life of a
neighbourhood. The appearance of supermarkets
with very flexible opening hours and highly
competitive prices, and the fact that women have
joined the job market, thereby no longer shopping
on a daily basis, have all played their part in this
decline.
Traditional markets are now being forced to change
if they are to survive. Here is our round-up of how
they are doing this.

Founded in 1916, San Miguel Market was designed

Situado en el Barrio de Chueca, fue completamente remodelado cuando, al igual que el de
San Miguel, estaba sufriendo para mantenerse
abierto. Tiene una primera planta dedicada a la
compra de productos gourmet, las dos plantas
superiores en cambio están exclusivamente

Acabáis de cumplir 125 años de brillante actividad profesional ¿Cómo fueron los comienzos de
Durán?
You’ve just celebrated 125 years of brilliant
professional activity. How did Durán start out in life?
La historia empezó con el pequeño taller artesano
de mi bisabuelo en la calle Santa Isabel, de Madrid.
Se dedicaba a la platería y era un hombre muy volcado en la clientela, lo que le permitió tener trato
con las grandes familias de la época y, especialmente, con la Casa Real, de la que somos proveedores
desde 1899. De la platería pasamos a los metales
preciosos, la joyería con oro, diamantes, platino…
Hoy en día somos el grupo familiar, en España, más
diversificado del mundo del arte; con empresas
punteras como Pedro Durán en plata, Durán Arte
y Subastas en subastas de objetos de arte y decoración, y Durán Joyeros, hoy la joyería con los más
notables acuerdos de distribución en relojería de
lujo internacional.
Es de suponer que a lo largo de tan dilatada trayectoria se habrán mantenido algunos aspectos
característicos y otros habrán evolucionado…
No hemos cambiado tanto. Perdura la cuidada atención al cliente a la hora de ofrecerle un producto de
lujo atractivo y exquisito tal y como se hacía en los
comienzos. Es diferente, sin embargo, la escala y la
diversificación del negocio.
The story began with my great-grandfather’s small
craftsman’s workshop in Calle Santa Isabel in
Madrid. He was a silversmith who was completely
dedicated to his clientèle, and this activity allowed
him to work with the most important families of
the period, in particular the Royal Family, who
have been clients since 1899. We moved on from
silverware to precious metals, jewellery made from
gold, diamonds, platinum, and so on. Nowadays we
are the most diversified family group in Spain in the
world of art, with leading companies such as Pedro
Durán specialising in silver, Durán Arte y Subastas
specialising in auctions of works of art and
decorative items, and Durán Joyeros, the jeweller
which today holds the most important distribution
agreements in international luxury watches and
clocks.
We would imagine that while some characteristic aspects have been retained, others have
evolved over such a long period of time...
We haven’t changed that much. What does endure
is meticulous customer service when offering an attractive, exquisite luxury product, just as in the early
days. The scale and diversification of the business is,
however, different.

Would you agree that the yellow gold of past
decades and the more baroque designs are less
popular nowadays?
Digamos que, actualmente, prima más la sencillez
en los diseños. Del lujo excesivo hemos pasado al
lujo exquisito y sofisticado. Hay, también, una línea
de joyería, sobre todo para primavera/verano, con
piedras de color, como las amatistas o los topacios,
que llaman la atención por sus tonalidades y su vistosa combinación con ropa y complementos.
Let’s just say that simplicity in the designs takes
precedence these days. We have moved from excessive luxury to exquisite, sophisticated luxury. We
also have a line of jewellery, mostly for the spring
and summer season, that uses coloured stones such
as amethyst and topaz that are attractive because
of the different shades they come in and the eyecatching way they complement clothes and accessories.

What is the main aspect that sets you apart?
Nosotros contemplamos todo el proceso, toda la
vida, de una joya. Nos gusta trabajar en origen, tanto en Asia, para conseguir las piedras de color, como
en Amberes para buscar los diamantes mejor pulidos y tallados del mundo. Posteriormente, en nuestros talleres, diseñamos y cuidamos el acabado de
la pieza. Ese trabajo global hace que la joya tenga
un carácter realmente especial. Ofrecemos un lujo
atractivo, contemporáneo y accesible. Nuestra joya
tiene vocación de perdurar y se sigue disfrutando
durante décadas.
We envisage the whole process and entire lifetime
of a piece of jewellery. We like to work at source,
both in Asia where we obtain coloured stones, and
in Antwerp where we seek out the best polished cut
diamonds in the world. After that, our workshops
are responsible for designing and seeing the piece
through to completion. This comprehensive work
endows the jewel with a truly special personality.

¿Cuál es el perfil de sus clientes?
How would you describe your client profile?
Aunque tenemos clientes ocasionales, también nos
sentimos orgullosos de completar el ciclo de vida
de nuestros clientes. Nuestra devoción por el cliente nos permite acompañarle a lo largo de todas sus
celebraciones: petición de mano, boda, aniversarios,
éxitos profesionales, etc. Durán ya ha entrado en la
cuarta generación y tenemos también clientes de
cuarta generación.
Although we have occasional clients, we also feel
proud of being part of our clients’ life cycle. Our devotion to the client allows us to be there throughout
all their celebrations: engagements, weddings, anniversaries, professional successes, etc. Durán has
now entered its fourth generation and we also have
fourth-generation clients.

Durán, haciéndola más significativa y deseada. Estamos trabajando en líneas muy específicas, como
las joyas de compromiso, boda o aniversario, que es
un área que ha vuelto a renacer con mucho interés.
We’re thinking of opening more sales outlets in
Spain and making the designs of the Durán jewel
even more distinctive, meaningful and desirable.
We’re working on very specific lines, such as engagement, wedding and anniversary jewellery, as
this area has recently undergone a revival, arousing
a great deal of interest.
Concluimos esta entrevista con Durán con el convencimiento de que su capacidad para adaptarse a
los nuevos tiempos y cuidar hasta el más pequeño
de los detalles es uno de los secretos del éxito de
esta marca española que ha sabido conjugar su

The bed requires special care and attention, as it

linen, unless the client asks for something different.
The bed sheet weight has been specially selected
for its exquisite feel and with your complete rest in
mind. All linen ware has been specially manufactured and embroidered in silk thread for the hotel,
and specific products are used and washing and
ironing procedures followed for its care in the linen
department which is managed by Jacinta Mansilla.
The top-quality mattress and careful formula followed by the maids when making the bed will enable you to feel comfortable throughout the night
and prolong that exquisite feeling you get when
you climb into bed after a hectic day.
The idea is for everything to be to your liking. In the
bathroom, you will find the best personal hygiene

Elaboración:
Separamos las pechugas de las perdices y las reservamos.
Para estofar los muslos, los salpimentamos y los marcamos en una olla con
aceite de oliva. Sacamos los muslos e incorporamos la verdura y la sofreímos
a excepción del tomate. Una vez bien pochada la verdura, añadimos el tomate
e incorporamos los muslos y las carcasas de perdiz. Mojamos con vino blanco.
Dejamos reducir e incorporamos el caldo de ave. Dejamos estofar a fuego lento
hasta que los muslos estén tiernos. Recuperamos por un lado los muslos y por
otro el caldo de cocción.
Para el alioli de hongos (Boletus Edulis) hacemos un puré rehogando las verduras, añadimos el boletus y lo dejamos pochar hasta que pierda toda el agua.
Mojamos con nata y dejamos cocer. A continuación trituramos por la thermomix. Una vez esté frio lo mezclamos con la salsa alioli.
Para el risotto, se cuecen las verduras picadas en brunoise y el arroz arbóreo en
el caldo de cocción de la perdiz. Terminada la cocción, añadimos un poco de
mantequilla y queso parmesano. Lo extendemos en una placa y lo abatimos
rápidamente. Marcamos este risotto en una sartén vuelta y vuelta para hacer
el “socarrat” (tostado). A la vez marcamos las pechugas en una sartén en aceite
de oliva.
Hacemos un jugo de ave tostado con las carcasas de ave, una bresa de verduras,
vino blanco y cebolla tostada. Ligamos el jugo con maicena express.
Disponemos el “socarrat” en el centro del plato, encima las dos pechugas de
perdiz asadas y, alrededor, unos puntos de alioli de boletus.

Method:
Remove the breasts from the partridges and put them to one side.
To braise the thighs, add salt and pepper and sear them in a pot with olive oil. Remove the thighs and add all the vegetables except the tomato, and sauté them. Once
the vegetables are softened, add the tomato, thighs and partridge carcasses. Sprinkle
with white wine. Let it reduce and add the chicken stock. Let it stew at a low heat until
the thighs are tender. Take out the thighs and pour off and keep the bouillon.
For the porcini (boletus edulis) purée, sauté the vegetables, add the porcini mushrooms and let them poach until all the water in them has been absorbed. Sprinkle
with cream and simmer. Then liquidise the mixture in a Thermomix. Once the purée
has cooled, mix it with the wild mushroom alioli sauce, made by combining the wild
mushrooms, stock and alioli.
To make the risotto, boil the very finely chopped vegetables and the risotto rice in the
partridge stock. Once all the liquid has been absorbed, add a little butter and Parmesan cheese. Spread it on a griddle and let it toast lightly, then remove it quickly. Sear
this risotto In one side of a frying pan and In the other make the “socarrat” crust. At the
same time sear the partridge breasts in olive oil in another frying pan.
To make the partridge gravy, mix the partridge carcasses with the vegetables, white
wine and softened onion. Use “express” cornflour to thicken.
Put the “socarrat” rice in the centre of the serving dish, place the roast partridge
breasts on top and dot with porcini alioli around the edges.
Serve with a separate jug of partridge gravy.

En el siglo I d.C., los romanos construyeron un acueducto de
dieciséis kilómetros de longitud para abastecer a la ciudad
con el agua de la sierra de Guadarrama. Todo su trazado está
señalizado.
In the 1st century AD, the Romans built a 16-kilometre-long
aqueduct to supply the city with water from the Sierra de
Guadarrama. The whole of its route has now been mapped out.
El Acueducto de Segovia es uno de los monumentos españoles más conocidos en todo el
mundo. Cada año recibe casi un millón de visitantes que se pasean entre sus pilares con la
admiración pintada en sus caras. No obstante, lo
que muchos ignoran es que las aguas del Acueducto se captaban del río Acebeda, a dieciséis
kilómetros de la capital, y eran transportadas
por una compleja conducción que atraviesa parajes de la sierra y su piedemonte y que, una vez
dentro de los muros de la ciudad, se conserva
enterrado el canal principal, verdadero eje de la
distribución de las aguas desde época romana
hasta principios del siglo XX. El Ayuntamiento
de Segovia ha señalizado todo el recorrido de
la conducción de las aguas, desde la captación
hasta la entrada en la ciudad, y el itinerario del
Acueducto soterrado.
The Aqueduct of Segovia is one of the most famous
Spanish monuments in the world. Almost a million
people visit it every year, a look of wonder on their
faces as they stroll between its pillars. What many of
them do not realise, however, is that the Aqueduct’s
water was harnessed from the River Acebeda, 16
kilometres away from the capital, and transported
through a complex water supply system crossing
the Sierra de Guadarrama and its foothills. Once
inside the city walls, the main channel, the conduit
for water distribution from Roman times up until the
early 20th century, flows underground. Segovia City
Council has now signposted the whole of the route
followed by this conduit, from the water harnessing
point up to the spot where it enters the city, and also
the route followed by the subterranean Aqueduct.

En el corazón del valle de la Acebeda se encuentra el punto que eligieron los romanos para desviar las aguas del río con el fin de abastecer a
Segovia. Es un lugar especial en cualquier época
del año. Las majestuosas cumbres del Parque
Nacional de la Sierra de Guadarrama se levantan sobre el valle y no es difícil ver sobre nuestras cabezas la imponente silueta en vuelo de
los buitres negros y leonados, o incluso, con un
poco de suerte, la del águila imperial. El sonido
del correr del agua forma parte indisoluble del
paisaje. Aquí da comienzo la senda que discurre
a lo largo del itinerario del Acueducto. Tras ser
captadas, las aguas se remansan en un amplio
decantador, rehecho hace unas décadas, dejando depositados en su fondo arenas y otras impurezas.
The spot the Romans chose for diverting water
from the river to provide Segovia with a supply lies
in the heart of the Acebeda valley. This is a special
place at any time of year. The majestic peaks of the
Sierra de Guadarrama National Park tower over
the valley, and above your head you can often
see the imposing silhouettes of black and griffon
vultures in flight or even, with a bit of luck, that of
an imperial eagle. The sound of running water is
an integral part of the landscape. This is where the
footpath that runs alongside the route taken by the
Aqueduct begins. After being collected, the water
forms a pool in a spacious “decanter” – rebuilt a few
decades ago – leaving sand and other impurities
deposited at the bottom.

de las cumbres legendarias de La Mujer Muerta
– un cordal montañoso cuyo perfil, visto desde
la llanura segoviana, toma la aparente forma de
una mujer tumbada, dormida o muerta, cubierta
por un velo y con los brazos entrecruzados - y
del paso de la Cañada Real Soriana Occidental.
El recorrido afronta más tarde el piedemonte
serrano, abriéndose al inmenso horizonte de la
llanura castellana.
El último tramo del itinerario es urbano, cruzando primero el barrio de Nueva Segovia y avanzando luego por la carretera de La Granja, junto a la que se conserva la caseta de piedra del
primer desarenador, una de las infraestructuras
que servían para limpiar el agua de impurezas.
As the water channel moves away from the valley,
from the footpath you can take in a beautiful view
of the legendary peaks of La Mujer Muerta (The
Dead Woman) – a subdivision of the mountain
range whose profile, when viewed from the plain
of Segovia, resembles the form of a reclining
woman who is covered with a veil and has her arms
crossed – and the path taken by the Western Soria
Royal Livestock Trail. Further on, the route faces the
foothills that open out onto the immense horizon of
the plain of Castile.
The last section of the route is urban, first crossing
the Nueva Segovia district and then continuing
along La Granja road. The stone hut housing the
first sand-removal plant, one of the infrastructures
used to remove impurities from the water, still
stands at the side of the road.

la Calle Coronel Rexach comienza un canal hecho con sillares de granito labrados en forma de
U y que, en el siglo XV, sustituyó al original romano. Justo sobre su arranque se han colocado dos
grandes piedras cilíndricas con el escudo de la
ciudad de Segovia.
La conducción va ganando altura sobre un
muro de mampostería y llega al segundo desarenador, de origen romano pero reconstruido
en el siglo XVIII. Los primeros doce arcos, lógicamente, los más bajos fueron reconstruidos a
partir del siglo XII, tras la repoblación medieval
de la ciudad. En los siguientes encontramos restauraciones realizadas en el siglo XV, durante los
reinados de Juan II, de Enrique IV y los Reyes Católicos y tienen una forma ligeramente apunta-

El Acueducto romano
En el arco 50 empieza la obra puramente romana, conservada con muy pocas restauraciones.
Las huellas de una inscripción conmemorativa,
referida tal vez a una reparación del Acueducto
en época del emperador Trajano, hacen presumir que ya estaría construido en época del emperador Domiciano, hijo de Vespasiano.
Los arcos van ganando altura hasta que llegan al
pilar de San Francisco, que recibe su nombre del
antiguo convento franciscano que en la actualidad alberga la Academia de Artillería. Este pilar
es el único que tiene forma curva y a partir del
cual la arquería es doble. Sobre la superior, cuyos
pilares mantienen una misma altura, discurre el
canal, mientras que la inferior va adaptando la
altura de sus pilares al relieve de la vaguada que
salva. La altura máxima del Acueducto sobre la
plaza del Azoguejo es de 28 metros.

Cuenta una vieja tradición segoviana que
el Acueducto fue levantado por Satanás en
una sola noche, ayudado por una legión de
demonios, a cambio del alma de una hermosa doncella. Fracasó el demonio en su
intento porque el gallo cantó antes de que
colocara la última piedra y la obra quedó
para disfrute de los segovianos y admiración de los visitantes. Esta y otras curiosidades así como las últimas noticias sobre el
Acueducto se pueden consultar en el “microsite” que le dedica Turismo de Segovia

There is an old Segovian legend that the Aqueduct was erected by Satan in a single night,
helped by a legion of demons, in exchange for
the soul of a beautiful maiden. But the devil
was thwarted in his intention because the cock
crowed before he placed the last stone so the
structure remained in place to be enjoyed by
Segovians and admired by visitors. This and
other curiosities such as the latest news about
the Aqueduct can be found on the “microsite”
dedicated to it by the Segovian tourist office
(acueducto.turismodesegovia.com).
A channel made with granite ashlars hollowed
out to form a U-shape, which replaced the original
Roman construction in the 15th century, begins
at the corner of Avenida del Padre Claret and
Calle Coronel Rexach. Two large cylindrical stones
displaying the city of Segovia’s coat of arms have
been placed just above the spot where the channel
begins.
The channel gradually increases in height along the
top of a masonry wall before reaching the second
sand trap which is Roman in origin but was rebuilt
in the 18th century. The first 12 arches, which are
naturally the lowest, were rebuilt from the 12th
century onwards after the medieval repopulation of
the city. The arches that follow contain evidence of
restorations carried out in the 15th century, during
the reigns of John II, Henry IV and the Catholic
Monarchs, and they have a slightly pointed shape
typical of the Gothic style prevailing at that time.
Some researchers even refer to it as a “Gothic
aqueduct”. In the different reconstructions Roman
ashlars were sometimes reused; these are easily
distinguishable because of their larger size and the
severe erosion of their edges.

The Roman Aqueduct
En la Plaza del Seminario comienza la conducción principal, soterrada bajo los sucesivos pavimentos de las calles de la ciudad. Su paso se
reconoce con exactitud gracias a las recientes
investigaciones arqueológicas que han permitido su señalización mediante unas placas de
bronce sobre el pavimento.
The purely Roman work, which has been preserved
with very few reconstructions, begins at arch
50. Traces of a commemorative inscription that
perhaps referred to repair work carried out on
the Aqueduct during the reign of Emperor Trajan,
would suggest that its construction was already
completed by the time of Emperor Domitian, son of
Vespasian.

Recorrer todo el Acueducto de Segovia puede llevarnos uno o dos días, dependiendo del
tiempo disponible y de la época del año en la
que lo vayamos a hacer. En todo caso, el camino nos abrirá el apetito y podremos disfrutar
a placer de la variada gastronomía segoviana.
Si lo que nos apetece es comer el tradicional
cochinillo, hay que tener en cuenta que el itinerario del Acueducto soterrado pasa por la
puerta del conocido restaurante José María,
junto a la Plaza Mayor.
It can take up to two days to cover the whole
of the Aqueduct’s route, depending on your circumstances and the time of year. But however
much or little of the route you cover, the journey
is bound to give you an appetite for sampling
Segovia’s varied cuisine. If you would like to try
the traditional suckling pig, bear in mind that
the route of the subterranean Aqueduct passes
by the door of the famous José María restaurant,
next to the Plaza Mayor.

The arches gradually increase in height until they reach
the San Francisco pillar, which takes its name from the
former Franciscan monastery, now home to the Artillery
Academy. This is the only curved pillar and the arches
that follow it are built in two tiers. The channel runs
along the top of the upper tier whose pillars are all the
same height, while the height of the pillars on the lower
tier varies according to the lie of the land. The maximum
height of the Aqueduct at the point where it crosses the
Plaza del Azoguejo is 28 metres.
These days the arches reach as far as Plaza de Avedaño,
inside the walled precinct. From there, the water used
to be distributed through conduits that supplied the
pipes feeding the public fountains and the roughly
500 wells and tanks that guaranteed supply to the city.

Para disfrutar del recorrido del Acueducto
desde su inicio en el Parque Nacional de la
Sierra de Guadarrama hasta Segovia, lo mejor
es disponer de dos jornadas.
To cover the entire route of the Aqueduct where
it starts in the Guadarrama Mountains National
Park on its way to Segovia, it is advisable to set
aside two days.
Dedicaremos la primera al recorrido por la
Sierra y su piedemonte, por lo que habremos
de equiparnos con ropa y calzado adecuado
para hacer senderismo. La segunda jornada la
emplearemos en hacer el recorrido urbano.
The first can be dedicated to the route through the
mountains and their foothills for which you will
need to equip yourself wih appropriate clothing
and footwear for hiking. The second day can be
devoted to the more urban route.

Siguiendo ésta, callejeamos por el casco histórico y desembocamos en la Plaza Mayor, un armonioso conjunto planeado por Pedro de Brizuela,
en el siglo XVII. De este arquitecto segoviano,
que también lo fue de Felipe II, es precisamente
el edificio del Ayuntamiento. En el otro extremo
de la plaza se levanta la Catedral de Santa María y San Frutos, construida en el siglo XVI. Un
edificio de estilo gótico postmedieval que, por
la belleza de sus proporciones, recibe el sobrenombre de la “dama de las catedrales”
El canal del Acueducto gira en la esquina de la
plaza, junto a la catedral, y atraviesa el barrio de
la Canonjías; una espectacular reliquia urbanística de la Edad Media con sus características portadas románicas. El agua del Acueducto pasaba
junto a la desaparecida catedral vieja, que se encontraba muy próxima al Alcázar, y en esta gran
fortaleza, que custodiaba el Tesoro de los Reyes
de Castilla, finaliza el recorrido.
The main water channel starts in Plaza del
Seminario and runs underground beneath the
successive paved surfaces of the city’s streets. Thanks
to recent archaeological research, its passage has
now been accurately determined and is marked by
the placing of bronze plaques along the pavements.
Following these signposts you can walk through
the historical city centre that takes you straight
into the Plaza Mayor, a harmonious group of
buildings planned by Pedro de Brizuela in the 17th
century. This Segovian, who was also architect to
Philip II, was responsible for designing the Town
Hall. The Cathedral of St Mary and St Frutos, built
in the 16th century, stands at the opposite end
of the square. It is a post-medieval Gothic-style
building that has come to be known as “The Lady
of Cathedrals” because of its beautiful proportions.
The Aqueduct channel changes direction at the
corner of the square next to the Cathedral, and
crosses the Canonjías district, a spectacular urban
relic from the Middle Ages with its characteristic
Romanesque façades and porches. The Aqueduct’s
course continues alongside where the old
cathedral used to be, very close to the Alcázar,
ending its journey in this great fortress where the
Treasure of the Kings of Castile was once kept.

The birth of Mas La Plana was a brave adventure
and one ahead of its time. Four decades ago, Miguel
A. Torres was making plans for a daring and different wine. It was a risky move that represented a step
forward in the conservative oenological tradition
of the time, but was supported, though not without
some misgivings, by his father, Miguel Torres Carbó.
In 1979, Bodegas Torres presented the controversial
wine at the most prestigious competition of the day,
the Wine Olympics in Paris staged by the specialist
magazine Gault & Millau. It was the first Spanish
Cabernet Sauvignon and it surprised the world by
outclassing the best French wines.
Four decades later, Mas La Plana still reflects, vintage after vintage, the originality and determination of its maker.
Mas La Plana can now be found in a great many
restaurants with Michelin stars, including some that
are on the list of the 50 best restaurants in the world

presentan los miembros de La Chaîne des Rôtisseurs, una de las
más importantes asociaciones gastronómicas internacionales,
fundada en 1248 bajo el reinado de Luis IX.
“We are committed to the art of good food and fine wine,” is how
members of the Chaîne des Rôtisseurs introduce themselves. One of
the most important international gastronomic associations, it was
founded in 1248 in the reign of Louis IX of France.
La Chaîne des Rôtisseurs cuenta con más de
30.000 miembros en 83 países, donde se dan cita
profesionales y aficionados a la cocina de todo el
mundo bajo el objetivo de impulsar las grandes
tradiciones culinarias y el buen gusto por la cocina. En España, la representación cae en manos de
Amable Prieto, que lleva más de treinta años en la
Asociación y once presidiéndola.
¿Quiénes forman parte de la Asociación y
cómo se realiza el proceso de admisión?

En la Asociación contamos con hoteleros, restauradores, sumilleres y chefs. Personas de la talla del
director del Hotel Ritz de Madrid, Christian Tavelli, o el chef del mismo hotel, Jorge González. Es
importante que el establecimiento que regente
la persona que quiere ser admitida tenga la suficiente calidad como para pasar a formar parte de
la Asociación. Pero también forman parte de la
Asociación empresarios, médicos, notarios, embajadores y profesionales de todo tipo. En este caso
se precisa, además de hacer patente su interés por
ingresar en la Asociación, contar con dos padrinos
y pagar la cuota anual.
The Chaîne des Rôtisseurs has more than 30,000
members in 83 countries. Consisting of professional and
amateur gastronomes from all over the world, their aim
is to promote great culinary traditions and good taste in
cuisine. Amable Prieto, who has been a member of the
Association for 30 years and its chairman for 11, is its
representative in Spain.
How do you become a member of the Association?
Members of the Association include hoteliers,
restaurateurs, sommeliers and chefs. For example,
people of the calibre of Christian Tavelli, General
Manager of Hotel Ritz by Belmond in Madrid, and Jorge
González, chef of the same hotel. It’s important for the
establishment run by the person who wants to become
a member of the Association to be of sufficiently high
quality. However, members also include businessmen,
doctors, notaries, ambassadors and all kinds of
professionals. Apart from expressing their interest
in joining the Association, those not involved in the
culinary business must have two sponsors and pay an
annual fee.
¿Qué tipo de eventos realiza La Chaîne des
Rôtisseurs?
Contamos con diferentes eventos nacionales e
internacionales. España no es el país con más
miembros en La Chaîne des Rôtisseurs, pero sí,
probablemente, el que más actividad mensual tiene, con actos de todo tipo, como cenas o salidas
culturales. En cualquier caso, todos los miembros
están invitados a participar en el evento mundial,
que se organiza anualmente en París, y en los diferentes actos programados en cualquiera de los
países miembros de la Asociación.
Cada vez hay más restaurantes españoles con
Estrellas Michelin. ¿Cuál es, en su opinión, el
nivel en el que se encuentra actualmente la
gastronomía española?
¿Qué opina de programas como Master Chef
o Top Chef que están triunfando en la televisión?
Estamos situados en el mejor nivel de Europa, pero
no debemos perder de vista a otros países que lo
están haciendo realmente bien, como Alemania,
que cuenta con un muy buen nivel, Inglaterra, Suiza, Francia, Italia e incluso Dinamarca.
Mi opinión acerca de estos programas es inmejorable. Constituyen un auténtico estímulo a la profesión que se refleja en el hecho de que muchas
escuelas hayan doblado el número de alumnos
inscritos. Contar con una nueva generación de
cocineros que realmente trabajen ilusionados es
muy importante.
An increasing number of Spanish restaurants
have Michelin stars. At what level do you think
Spanish gastronomy stands at the moment?
What do you think of programmes like Master
Chef or Top Chef that are proving very popular
on television?
We are situated at the highest level in Europe, but we
shouldn’t lose sight of other countries that are also
doing really well, such as Germany, which has a very
high standard, England, Switzerland, France, Italy and
even Denmark.
I have a very high opinion of these programmes. They
are a real stimulus for the profession as evidenced by
the fact that the intake of new students has doubled
at many schools. It’s very important to have a new
generation of chefs who genuinely love what they do.
¿Existe algún tipo de apoyo a los jóvenes cocineros y sumilleres?
Efectivamente. La Chaîne des Rôtisseurs organiza un concurso internacional anual de cocineros
y sumilleres, que cada año se celebra en un país
diferente. Desde España procuramos presentar al
joven que más destaca por su trayectoria o porque
haya ganado algún concurso nacional. Obtener
un buen puesto en un concurso de esta categoría puede suponer un importante impulso en su
carrera.

What kind of events are organised by the Chaîne
des Rôtisseurs?
We put on many different national and international
events. Spain does not have the largest number of
members in the Chaîne des Rôtisseurs, but it probably
has the most monthly activities, such as dinners and
cultural outings. In any case, all members are invited
to take part in the international event that takes place
every year in Paris, and in any of the events organised by
any of the other member countries of the Association.
Is there any kind of support for young chefs and
sommeliers?
Yes, there is. The Chaîne des Rôtisseurs organises
an annual international competition for chefs and
sommeliers that is held in a different country each year.
We in Spain do our best to present the young person
who is most outstanding for their professional career
or because they have won a national competition.
Winning one of the top places in a competition of this
category can give their career a significant boost.

tranquillity.
As you would expect of an ecotourism destination,
the landscapes are conserved: limpid waters; dense
woods; clear summits (several are more than 2,000
metres above sea level) – all teeming with life.
From Cazorla to Bruñel
Cazorla, encompassing many of these attractions
in its municipal area, makes a good starting point.
A picturesque town with a lot to interest the tourist,
it stands in the shadow of the Peña de los Halcones
(Falcon’s Crag), with the mountain range behind
it and a vast forest of olive trees in front. The town
is a feast for the eyes with the Castillo de la Yedra
towering over it. Down below there are narrow
streets with traditional dwellings, manor houses
and monuments, such as the Castillo de las Cinco
Esquinas (the five-cornered castle), the town council
building, the Plaza de Santa María, the churches of
San Francisco and San José and La Casa de las Siete
Fuentes (the house of seven fountains).

En los últimos meses, se ha añadido un
nuevo atractivo a toda esta oferta: El Gran
Sendero “Bosques del Sur” (GR-247), un
itinerario de 478 kilómetros a lo largo del
Parque Natural, un nuevo embarcadero con
zona de recepción de visitantes y mirador
en el Pantano del Tranco, son algunas de
las interesantes novedades que se ofrecen
al visitante. Se ha creado una aplicación
para dispositivos móviles que mejora la
experiencia del turista y del deportista en
su recorrido por el sendero.
El paseo por sus alrededores es, absolutamente
recomendable para el turista.
Of particular note among these are the ruins of
the church of Santa María, a piece of Renaissance
architecture by Andrés de Vandelvira. It was built
straddling the River Cerezuelo, which meant that
the river had to be channelled through a great
vault beneath the high altar before making its way
beneath the entire church. Tourists are strongly urged
to go for a stroll around the ruins of the church.

In Bruñel, just three kilometres from Quesada, the
delicate filigree of the mosaics tells the story of life in
this Roman settlement. Visitors have an exceptional
opportunity to come into contact with the Iberian
legacy in the province – one of the most important
in the entire peninsula – in the Burial Chamber
of Toya and the Hypogeum of Hornos and its
interpretation centre in Peal de Becerro. The Centre
for the Princely Tombs of Peal also gives an insight
into Iberian burial sites and their funeral rites.

The attractions of this nature reserve do not end
there. For birdwatching aficionados it is a genuine
paradise. The different habitats of each of the three
mountain ranges that it encompasses harbour
different families of birds, although eagles and
bearded vultures soar over all three mountain
ranges keeping constant watch. Because of its
height, its low human density and its orography, the
Segura mountain range attracts a large number of
birds. Among other species, there are plenty of large
mammals, such as the deer that fill the autumn
nights with their bellowing, and the mountain
goats that roam around the rocky terrain of the
summits.

Belmond La Residencia posee 14 hectáreas rústicas con más
de 1.500 olivos centenarios y numerosos frutales. Árboles
generosos, que permanecen imperturbables a la vida del hotel
y le regalan aromas, sabor, bases para exquisitos tratamientos
estéticos y experiencias.
Belmond La Residencia owns 14 hectares of agricultural land
where more than 1,500 centuries-old olive trees and numerous fruit
trees grow. These bountiful trees, unaffected by the life of the hotel,
nevertheless imbue it with the fragrances and flavours on which
many of the hotel’s exquisite beauty treatments are based.
Los olivos están íntimamente unidos a la historia de Belmond La Residencia, hasta el punto
de que algunos de los espacios preferidos por
los huéspedes hoy en día eran, antiguamente,
tafonas (molinos de aceite). Había una en Son
Moragues, en el espacio donde hoy se ubica el
restaurante El Olivo, y otra en la casa de Son Canals, que hoy acoge la galería de arte Sa Tafona.
En esta última, además del aceite propio de la
finca, la gente de los alrededores traía también
sus aceitunas para producir su aceite, lo que demuestra la importancia del negocio en la época.
Olive trees are so closely linked with the history of
Belmond La Residencia that some of the guests
prefer to spend their time in what were formerly
tafonas (olive presses). There was one in Son Moragues, in the space now occupied by the El Olivo
restaurant, and another in the farmhouse at Son
Canals, which is now home to the Sa Tafona art gallery. This latter press not only produced the farm’s
own oil, but also served the neighbouring folk who
used to take their olives there to be turned into oil,
an indication of how important the business was in
those days.

Over time and with the increase in tourism, the tafonas fell into disuse and the olive groves were abandoned. Today Belmond La Residencia has good
reason to be proud of having discovered a way to
restore them for their original purpose and to their
former glory by recovering the value and rationale
of the olive grove.
La recogida de la aceituna se desarrolla con
herramientas que no difieren mucho de las
utilizadas antaño. Posteriormente, en Sóller, se
prensan en frío para producir el aceite de oliva
extra virgen, con denominación de origen Oli de
Mallorca. Un aceite de oliva que encierra todo el
sabor de la Sierra de Tramuntana y que es ampliamente usado en las cocinas del hotel para la
elaboración de los platos de la carta, entre los
que destaca el delicioso helado de aceite de
oliva.
Olive harvesting is carried out using tools that are
not so very different from the ones previously used.
The olives are then taken to Sóller where they are
cold pressed to produce extra-virgin olive oil with
the Oli de Mallorca designation of origin. This olive oil embodies all the flavour of the Tramontana
Mountains and is used extensively in the hotel’s
kitchens for preparing the dishes on the menu,
one of whose highlights is the delicious olive oil ice
cream.

El destino de tal exquisito aceite no termina solo
en la cocina sino que también se utiliza para diversos tratamientos en el Spa de La Residencia.
Uno de ellos es Olive Activator, una forma de
limpiar el cuerpo de dentro a fuera, que comienza con la estimulación del sistema linfático
para eliminar toxinas. Una vez que el cuerpo se
encuentro listo, se procede al rociado de aceite
de oliva templado mientras se recibe un masaje
con una técnica drenante. El resultado es una
piel nutrida y revitalizada. Y para acabar, nada
mejor que un sorbete de limón con un ligero
toque de aceite de oliva, que terminará de despertar todos nuestros sentidos.
Otro tratamiento que también merece la pena
es el Citrus Siesta, donde se mezclan las bondades del aceite de oliva y los cítricos. Comienza
con una exfoliación utilizando una mezcla de
granos de oliva y el aceite de oliva de La Residencia, y prosigue con una ducha que utiliza
el jabón Citrus Siesta. Por último, nada mejor
que un masaje zen que combina una mezcla de
aceite de almendras con aceites esenciales de

Treatments using olive
oil, citrus fruits and
almonds
This exquisite oil is not only destined for use in the
hotel’s kitchens but is also used for a number of
treatments in La Residencia’s Spa.
One of them is Olive Activator, a way of cleansing
your body from the inside out that starts with
stimulating the lymphatic system to eliminate
toxins. When your body is ready, warm olive oil is
sprinkled over it while you are given a massage
using a drainage technique. The result is nourished,
revitalised skin. And to round off the experience by
awakening all your senses, what could be better than
a lemon sorbet with a light touch of olive oil?
Another recommended treatment is the Citrus
Siesta, in which the goodness of olive oil and citrus
fruits are combined. It begins with an exfoliation
using a blend of olive grains and La Residencia’s own
olive oil, and continues with a shower using Citrus
Siesta soap. Then follows a Zen massage combining a
blend of almond oil with orange and lemon essential
oils. It’s a treatment designed to combat stress, relax
your joints, make you sleepy and create an amazing
feeling of well-being culminating in a lemon and
honey infusion and a small bottle of oil as a gift.

El faro de Capdepera está situado en la Punta de
Capdepera, en Cala Ratjada, en el noroeste de
Mallorca. Es el más oriental de la isla y uno de
sus faros más emblemáticos, inmortalizado por
Joan Manuel Serrat en la canción “Cada loco con
su tema”, donde asegura: “…prefiero los caminos
a las fronteras, y una mariposa al Rockefeller
Center, y el farero de Capdepera al vigía de Occidente”.
Proyectado por el ingeniero Emilio Pou, fue
construido en 1861 y está situado en un peñasco a 58 metros sobre el nivel del mar. Fue uno
de los faros que se construyeron en el litoral español por orden de Isabel II y, hoy en día resulta
de vital importancia para la navegación, ya que,
junto con el de Artrutx, sirve para delimitar el
canal de Menorca.
High-altitude vantage
points
The Capdepera lighthouse on Punta de Capdepera
in Cala Ratjada, north-east Mallorca, is the easternmost one on the island and one of its most iconic,
having been immortalised by Joan Manuel Serrat in
the song entitled “Cada loco con su tema” (To Each
his Own), whose lyrics say: “...I prefer paths to frontiers, and a butterfly to the Rockefeller Center, and
the Capdepera lighthouse-keeper to the Watchman
of the West”.
Built on a rock 58 metres above sea level, it was
designed by the engineer Emilio Pou in 1861 and
was one of the lighthouses that Queen Isabella II
ordered to be built on the Spanish coast. These days
it is still vitally important for shipping because it
serves, together with the Artrutx lighthouse, to mark
the boundaries of the Minorca Channel.

sea, Mallorca has many others, which offer views of villages, valleys and mountains.
Un ejemplo es el Mirador de Miranda dels Lledoners, considerado, por algunos, como el mejor de Valldemossa. Situado al final de la calle Jovellanos, por
donde antiguamente se pasaba a la Cartuja, este mirador es perfecto para
admirar la belleza de la localidad, enclaustrada en un precioso valle verde
entre montañas de cuento.
One example is the Miranda dels Lledoners observation point, which some consider to be the best in Valldemossa. Situated at the end of Calle Jovellanos, which
was the old route to the Carthusian monastery, this is the perfect spot for admiring the beauty of the area, a delightful green valley set in the midst of fairytale
mountains.
O bien, el Mirador d’en Banya, en las cercanías de Sóller, al que se accede tras
un ascenso de 500 metros por un delicioso y entretenido camino. Es uno de
los mejores balcones sobre el valle, sembrado de naranjos y limoneros, al

Another viewpoint is at D’en Banya on the outskirts of Sóller, which can be
reached by ascending 500 metres along a very pleasant path. One of the best
spots for views over the valley where orange and lemon trees grow, it was
named “the golden valley” by the Arabs.

El faro está habitado por el farero y su familia.
Para ellos, este mirador es su hogar; para el visitante, es el lugar donde contemplar un entorno
natural espectacular. Se accede al mismo bien a
pie, en una bonita excursión desde Cala Ratjada,
bien en coche, extremando las precauciones, ya
que la carretera es estrecha y en zig-zag.
Y desde el faro de Capdepera, al mirador de Mal
Pas, conocido también como el Mirador d’es
Colomer, uno de los más famosos de la costa
mallorquina. Está situado en la zona norte de la
isla, a unos 10 kilómetros de Port de Pollença y
ofrece unas impresionantes vistas del cabo Formentor.
Situado a 232 metros de altura sobre el nivel del
mar, los calificativos se quedan cortos ante la inmensidad del paisaje que regala, una de las imágenes más representativas de la isla. La carretera
para llegar hasta él, si bien es un poco estrecha,
se encuentra en buen estado.
Es lugar de encuentro de enamorados que dejan en el lugar candados en forma de corazón. Al

The lighthouse-keeper and his family actually live
in the lighthouse. For them, this observation point
is home but for visitors it is the place where they
can admire a spectacular natural setting. It can
be reached either on foot, which makes for a very
pleasant walk from Cala Ratjada, or by car, driving
very carefully as the road is narrow and full of sharp
bends.
Visitors can also go from the Capdepera lighthouse
to the Mal Pas observation point, also known as the
Mirador d’es Colomer, which is one of the most famous on the Mallorcan coast. Situated in the northern part of the island, it is 10 kilometres from the
Port of Pollença, and offers stunning views of Cape
Formentor. Although the road that takes you there
is a little narrow, it is in good condition.
At 232 metres above sea level, this observation
point offers not only breathtaking views but is also
a meeting place for lovers who leave heart-shaped
locks there. The setting sun late in the day gradually
tinges the cliffs with magical shades of golden light,
a sight that seems more dreamlike than real.
Legendary places
A visit to the Torre des Verger, also known as the Ses
Ánimes (The Spirits) observation point is a must.
Situated on the road that links Banyalbufar with Estellencs, the tower was built in 1579 and is steeped
in legend. It is said that the spirits weave invisible
nets on winter nights to trap anyone who ventures
to pass nearby; hence its name.

La Torre des Verger o el mirador de Ses Ánimes
-de las ánimas- es lugar de visita obligada. Situado en la carretera que une Banyalbufar con Estellencs, presenta una torre construida en 1.579
y cargada de leyendas. Algunos lugareños aseguran que, en las noches de invierno, las ánimas
tejen unas invisibles redes para atrapar a quienes se aventuran a pasar por sus alrededores; de
ahí su nombre.
Para acceder a la torre, parcialmente destruida
por un rayo, hay que enfrentarse a una carretera
repleta de curvas. Una vez junto al monumento,
solo hay que subir por unas estrechas escaleras
para poder disfrutar de las vistas del mirador.
Las puestas de sol ofrecen siempre un hermoso
espectáculo.

El Museo de Arte Moderno y Contemporáneo,
Es Baluard, se erige, así mismo, en mirador
privilegiado sobre el barrio de Sant Pere y la
Seu, con unas preciosas vistas sobre la bahía
de Palma. Ocupa el antiguo baluarte defensivo de Sant Pere, un edificio del siglo XVI diseñado por el ingeniero militar Giovan Giacomo
Palearo Fratino, “El Fratín”. Un lugar especial
que ofrece, sin salir de Palma, la tentadora
posibilidad de combinar un hermoso paisaje
con una visita cultural para admirar obras de
artistas como Picasso, Miró, Barceló, Chagall,

Por último, Son Marroig permite, también, disfrutar de unas vistas privilegiadas en un lugar
histórico. Emblemática de la cordillera norte

No en vano se encuentra en las antiguas tierras del Archiduque Luis Salvador de Austria.
La Casa Museo de Son Marroig es una institución privada creada, en 1927, con el fin de
preservar, divulgar y promocionar la emblemática figura del archiduque. Cuenta la leyenda que fue precisamente, de la torre de Son
Marroig, de donde fue antaño raptada por los
piratas la última mujer de la zona. Hoy, el lugar acoge eventos, celebraciones y conciertos
como el Festival Internacional de Música de
Deià, donde se dan cita intérpretes de todo el
mundo. Música y espectaculares vistas; una
combinación trascendente que se recuerda
de por vida.

To reach the tower, which was partially destroyed
by lightning, you have to brave a very winding road
but when you finally get there, all you have to do
is climb a narrow staircase to be rewarded by the
spectacular views from the observation point. Sunsets from there are always a joy to watch.
Landscape and culture
Built on a stunning observation point, the Es
Baluard Museum of Modern and Contemporary Art
overlooks the Sant Pere quarter and the cathedral,
with beautiful views over the Bay of Palma. It
occupies the former Sant Pere defence stronghold,
a 16th-century building designed by the military
engineer Giovan Giacomo Palearo Fratino, also
known as “El Fratín”. This is a special place that offers
the tempting possibility of combining a beautiful
landscape with a cultural visit to admire the works
of artists such as Picasso, Miró, Barceló, Chagall,
Gauguin and Klimt, without leaving Palma.
The estate of Son Marroig also gives visitors the opportunity to enjoy spectacular views in an historical
place. Situated in an emblematic spot in the northern mountains of the island between Valldemosa
and Deià, it is has been designated a Site of Cultural
Interest in the Historical Place category. Not surprisingly, it forms part of the land formerly owned by
Archduke Louis Salvador of Austria.
The Son Marroig house museum is a private institution that was created in 1927 to preserve, publicise
and promote the iconic figure of the Archduke. Legend has it that the last woman left in the area was
kidnapped from Son Marroig tower by pirates. Nowadays, this place is the venue for events, celebrations
and concerts such as the Deià International Music
Festival, which brings together performers from all

merienda a los pies del faro. Después, dependiendo del cansancio, se puede volver por la

Many of the observation points on the island
are more accessible on foot than by car, making
the setting even more enjoyable. An example of
this is the walk from Cala Gat to the Capdepera

The area around Cala Gat retains its natural, rural air and is surrounded by pine trees. It has its
own special charm and the creek is the perfect
place for swimming or kayaking in the summer.
The route that climbs up to the lighthouse is
signposted by means of blue dots on the rocks,
so visitors need not worry about maps or printed
instructions on how to get there. A walk of less
than one hour will reward you with a landscape
of cliffs and a peaceful setting – the foot of the
lighthouse is an ideal spot for picnicking. Then,
depending on how tired you are, the return trip
can be made by road in less than 20 minutes.
