Winter squash is loaded with vitamin A and is also a great source of fiber, potassium, and magnesium! We are in LOVE with squash!!! The most common varieties of winter squash grown in the United States include: Acorn, Butternut, Turban, Hubbard, and Spaghetti. MAKING SQUASH PUREE Stick the whole butternut squash (uncut) with a fork and put it on a cookie sheet in the oven at 350 for about 45 minutes (or when it has dark brown "welts" on it). I let it cool, slice it in half lengthwise. The skin just falls off and the seedy pulp can be discarded. Carefully spoon out the squash and place in your food processor. Process it until smooth. SQUASH PUDDING Besides the fruit, other edible parts of squash plants include the seeds (eaten whole, toasted, ground into paste or pressed for oil); shoots, leaves and tendrils (eaten as greens); and blossoms (used for cooking and decoration). Types of Winter Squashes Acorn Butternut Ingredients: 1-2 cups of squash puree 1/2 tsp of cinnamon 1/2 tsp of pumpkin pie spice 2 egg yolks 1 tbs of honey 1 tsp vanilla extract 1 tbs of butter Turban Directions Blend 1-2 cups of squash puree with, 1 tbs of butter, 1 tsp of vanilla extract, 1/2 tsp of cinnamon, 1/2 tsp of pumpkin pie spice, and 2 egg yolks. Add the honey. Bake it in a pie pan for 30 minutes at 350. A great breakfast or dessert! Spaguetti Hubbard ACTIVITY CORNER What You Will Need: Three to five different winter squash varieties, whole and sliced Activity: Compare and contrast varieties Examine squash noting color (skin and flesh), texture, sound, and smell. Chart observations on board. Cuidadosamente saque la pulpa de la calabaza con una cuchara y póngala en el procesador de alimentos. Procésela hasta que quede suave.
