Bienvenidos a Cataluña, el país tensioactivo Bienvenidos a Cataluña, el país tensioactivo Autor: Claudi Mans CUATRO RAZONES El lector ya sabe lo que es un tensioactivo. Existen al menos cuatro razones, de distintos tipos, que apoyan la idea de que Cataluña es un país tensioactivo: razones artísticas, folclóricas, gastronómicas y sociales. mada con un MFA (Microscopio de Fuerza Atómica), sino una vista aérea de Barcelona. Obsérvese la Sagrada Familia, bien orientada y elevándose, desde el suelo hacia el cielo, como los tensioactivos adsorbidos en una interfase gas-sólido (figura 2). Algunas esculturas, como la conocida Dona i ocell, de Joan Miró, también refuerzan este concepto (figura 3). El arte románico es uno de los movimientos artísticos que mejor muestran nuestra idiosincrasia. Remontémonos al siglo once. Los templos más importantes, levantados en el corazón de los Pirineos, aspiraban a ser una interfase entre el cielo y la tierra. Admírese la increíble iglesia románica de Sant Climent de Taüll (figura 1). Esta tendencia a elevarse a los cielos continúa hasta nuestros días. Otra relación con los tensioactivos aparece en nuestra danza nacional, la sardana, que tiene una clara estructura micelar, a pesar de su trayectoria bidimensional. Véase el dibujo que hizo Picasso de la sardana (figura 5). 5 Claudi Mans El argumento gastronómico requiere la lectura de una corta fábula: La parábola de las dos salsas “El profeta se sentó entre sus discípulos y relató esta parábola: “En un reino remoto, un príncipe planeaba ofrecer un banquete a varios distinguidos visitantes. Ordenó a su cocinero que sirviera dos salsas, que él había probado durante una visita a las fronteras del Mediterráneo. Los nombres de estas dos salsas eran mayonesa y all-i-oli (ajo y aceite). La mayonesa se prepara con aceite, huevos y sal, mientras que el alli-oli es más picante y se prepara con ajo, aceite y sal. En el momento de servir las dos salsas, la mayonesa estaba muy bien preparada, blanda y suave. Pero el all-i-oli estaba mal mezclado y el aceite y el ajo estaban separados en dos fases diferentes. Era una visión verdaderamente desagradable. A pesar de ello, los comensales comieron de ambas salsas y paladearon su gusto y sabor, tan diferentes. Al día siguiente, el príncipe y las personalidades se levantaron sintiéndose muy descompuestos. El príncipe mandó encarcelar al cocinero, acusándolo de preparar el all-i-oli con una receta incorrecta. El príncipe basaba su argumento en el principio de similitud: si el all-i-oli estaba descompuesto, entonces los cuerpos de los que comieron all-ioli se descompondrían también. Entonces, un viejo sabio revisó y comprobó ambas salsas y dijo al príncipe: 6 Figura 6. Tensioactivos presentes en el huevo y en el ajo. “Mi príncipe, el cocinero está en prisión, pero no es culpable. El all-i-oli parecía descompuesto, pero está en buen estado y se puede comer. La descomposición viene de la mayonesa, porque ésta contiene un principio de descomposición tan sutil, que no es posible, para el ojo humano, distinguirlo. En el futuro, deberéis preparar la mayonesa con un poquito de vinagre o zumo de limón; ambos evitan la descomposición invisible. Además, podéis reparar fácilmente la mezcla de all-i-oli con un poquito de yema de huevo, ya que contiene un principio que mejora la mezcla de sus componentes. El príncipe quedó muy satisfecho con estas palabras y recompensó al viejo sabio. El profeta terminó su discurso con estas palabras: -Queridos discípulos, vosotros debéis actuar entre la gente co- mo el vinagre o el zumo de limón, para evitar la descomposición del cuerpo social. O bien, actuad como la yema de huevo. Haréis una buena obra si tratáis de mezclar a los que son enemigos, reduciendo sus diferencias y logrando una mezcla social, donde cada uno pueda coexistir en un estado de equilibrio tolerante y pacífico. Los discípulos estaban muy satisfechos con este importante papel. El discípulo más adulador preguntó al profeta: -Querido profeta ¿ por qué la yema de huevo tiene esas notables propiedades para mezclar sustancias opuestas? Y el profeta, dibujando extraños signos en la arena, dijo: -Las salsas son sistemas dispersos, emulsiones de aceite en agua. Por otra parte, el ajo del alli-oli contiene dialil-di- y tri-sulfuro, así como otros aceites esenciales tales como alicina y aliina, con algunos enlaces polares, que les confieren propiedades activas como tensioactivos. Los discípulos no entendieron nada, pero se convencieron de que era un gran profeta, que hablaba lenguas extrañas, como Daniel en el banquete de Nabucodonosor. Y lo siguieron con gran reverencia” Sí, una de las preparaciones culinarias más apreciadas en nuestro país es un sistema disperso, la salsa llamada all-i-oli; simplemente ajo, aceite de oliva y sal, estabilizada por tensioactivos naturales (figura 6). ¡Cuán difícil es prepararla bien, pero cuán estable es cuando está bien preparada! EMULSIONES SOCIALES El argumento social es el siguiente. Nuestras sociedades, como los sistemas dispersos, son mezclas extraordinariamente complejas y notablemente heterogéneas. Tenemos muchos grupos sociales que demuestran 25th IFSCC Congreso 2008 ser difícilmente miscibles entre sí, con barreras entre ellos, con individuos y colectivos de diferente arraigo, diferentes orígenes, diferentes religiones, diferentes etnias, diferentes costumbres, diferentes estatus, diferentes lenguas. ¿Cómo gestionar todo eso? ¿Cómo mantener toda esta estructura en una forma mínimamente estable? Las situaciones son muy diferentes de un país a otro y son diferentes las soluciones que se aplican, porque diferentes son también las visiones de lo que es, en cada caso, una “sociedad estable”. Para unos, las sociedades estables son aquellas en las que hay una mezcla total; para otros, las que tienen una estructura de total separación. Si se trata de una situación en la que hay unos pocos miembros individualizados, de cierta comunidad, dispersos en una mayoría diferente, evidentemente, los primeros se adaptan, se dispersan y adquieren, al menos en apariencia, las características del grupo mayoritario. Desde afuera, no se ven, sobre todo si en el interior de la familia o del grupo se mantienen las costumbres o tradiciones del Pero cuando la cantidad de la fase minoritaria comienza a ser significativa, los comportamientos sociales cambian. El hecho es que una situación de mezcla manifiesta la misma evolución espontánea que una emulsión, como se muestra en la figura 7. Una sociedad multiétnica, totalmente mezclada –geográfica y socialmente– no suele existir sino que, debido a mecanismos casi espontáneos, se suele dar una segregación –el equivalente de la sedimentación– y una maduración, basada muchas veces en el fomento del orgullo étnico. Estos mecanismos, fomentados por los líderes políticos, sociales o religiosos, hacen que los colectivos de etnias minoritarias suelan agruparse geográfica y socialmente. Se forman así sociedades duales, más o menos separadas físicamente, y seguro que separadas socialmente, que mantienen vivos sus rasgos más diferenciadores, como la religión, las costumbres sociales y los hábitos en el vestir. Las circunstancias sociales y la ideología del grupo dominante pueden intensificar la segregación. Así se puede llegar a situaciones de pre-gueto, gueto y finalmente, y con ideologías con un intenso componente racista explícito o implícito, a situaciones de apartheid. Yo creo que el proceso de segregación entre comunidades es un proceso espontáneo, favorecido por la inercia social, cómodo y visto como natural por la mayoría de los componentes de ambos grupos. So- 7 Claudi Mans ciedades basadas en la inmigración masiva, como podría ser la de los Estados Unidos de América del Norte del siglo XIX y principios del XX, así lo manifiestan. Recordemos la ciudad de Nueva York, dividida en barrios étnicos, como los asiáticos de Chinatown, subdivididos a su vez, los italianos de Little Italy, los alemanes de Yorkville, los negros afroamericanos de Harlem, los judíos del East Side, los polacos de Brooklyn, los latinos de El Barrio (East Harlem) o del West Side, los griegos de Queens, los armenios del Bronx.... La aspiración de estabilizar la situación de segregación también va ligada al grupo social propio, cuyos líderes pretenden mantenerla absolutamente cerrada y controlada. El proceso de segregación y su mantenimiento, que tiene claras ventajas, por la protección social y la seguridad psicológica que otorga al que acaba de llegar, tiene claros inconvenientes a la larga, porque cristaliza las diferencias culturales y sociales, y especializa excesivamente a sus miembros, dificultando la progresión social. Evidentemente, esta es una descripción muy simplificada pero, a grandes rasgos, correcta. ¿Hay alternativa al proceso de segregación espontánea? Evidentemente hay alternativa, siempre que sepamos lo que deseamos obtener al final. Y aquí aparecen planteamientos de todo tipo, con componentes sociales, políticos, religiosos e ideológicos contradictorios. ¿Qué queremos fabricar? ¿Una emulsión aceite en agua, una emulsión agua en aceite, una 8 microemulsión, un cristal líquido, un sistema bifásico, un liposoma? La respuesta a esta pregunta no es fácil, en primer lugar, por la componente ideológica, después por el aspecto económico y finalmente, porque no está sólo en nuestras manos escoger, dentro de ciertos límites, los tensioactivos y coadyuvantes de la fabricación, el tipo de agitador, y demás variables del proceso de preparación. Al menos nominalmente, la mayor parte de los partidos y líderes sociales europeos parecen abogar por un diseño social semejante a una emulsión estabilizada. Modestia aparte, se habla también del modelo catalán, una combinación de cohesión social, identidad nacional, apertura, cosmopolitismo, convivencia y practicidad. Es decir, un modelo dinámico, basado en el mantenimiento y, sobre todo, en la preeminencia de los valores de la sociedad receptora, con comunidades diferentes yuxtapuestas o mezcladas, con estabilidad social, que permite mantener las costumbres y características propias de cada comunidad –la diversidad– mientras se favorece, al mismo tiempo, el progreso social individual. El sistema social y educativo común debería estar basado en la sociedad receptora o mayoritaria, y la sociedad iría aceptando paulatinamente la inevitable influencia de costumbres y usos sociales entre colectivos. El sistema habría de permitir la permeabilidad entre comunidades y el flujo de individuos entre ellas. Es lo que se ha denominado multiculturalidad, con componentes simultáneos de interculturalidad y mestizaje. LOS TENSIOACTIVOS SOCIALES Fabricar una emulsión social estabilizada es un problema complejo. Las estrategias para conseguir implantar un modelo como el indicado, son muchas y variadas y dependen enormemente de las características completas de cada entorno social. Requieren mucho esfuerzo y un conocimiento detallado de las características del sistema. Veamos una analogía químicosocial más detallada, que visualiza una de las estrategias posibles, entre muchas otras válidas. La polimerización en emulsión es un delicado proceso que permite la obtención industrial de polímeros con las propiedades deseadas. Se preparan gotitas o micelas del monómero, dispersas y estabilizadas en el seno de la fase continua acuosa, mediante los tensioactivos adecuados, procedentes de las micelas de tensioactivo (figura 8-1). Algunas moléculas individuales del interior de las micelas de monómero, las abandonan por difusión (figura 8-2), como hemos visto antes, por un mecanismo semejante a la maduración de Ostwald. Estas moléculas, en el seno de la fase continua, se encuentran con otras moléculas de monómero, se unen, y el conjunto es recubierto por el tensioactivo. Así se forma una nueva micela (figura 8-3). Con los promotores de la polimerización y los catalizadores de la masa en disolución, se produce la polimerización (figura 8-4). Por lo tanto, se pasa de micelas de monómero a micelas de polímero. Figura 8. Polimerización en emulsión. tinua y elementos de la fase dispersa, se puede conseguir un cambio cualitativo en la composición y las propiedades, y se puede hacer de manera controlada. En las sociedades, se debe poder hacer lo mismo. Un tensioactivo social es la persona, o la asociación, capaz de vivir en las interfaces sociales. Estos tensioactivos sociales son, por ejemplo, voluntarios o profesionales que, por razones religiosas, de compasión, ideológicas, o políticas, trabajan para curar, alimentar, educar, integrar a grupos marginales, o a marginados, de cualquiera de los sistemas sociales que tenemos dispersos en nuestro territorio. Y también son tensioactivos sociales los mediadores culturales que, procedentes del grupo minoritario, pero educados en el sistema social mayoritario, son capaces de ver las dos caras de la interfase y pueden “traducir” la información que les llega de un lado, a conceptos comprensibles para el otro lado, y viceversa. Y tensioactivos sociales son los miembros de la fase continua que están en con- 25th IFSCC Congreso 2008 tacto, por razones profesionales, con los miembros de las fases dispersas. Pienso en maestros y profesionales sanitarios que, con su esfuerzo cotidiano, intentan crear o cambiar hábitos higiénicos, sanitarios, alimentarios y culturales, para permitir que los miembros de los grupos minoritarios puedan integrarse o, al menos, cohabitar. ¿Cuáles son los objetivos últimos de estos tensioactivos sociales, objetivos que deberían ser también los de la sociedad en general? Yo creo que son los siguientes: favorecer la estabilidad social en todo momento, procurar que la fase continua pueda mantener una buena parte de sus propiedades sin hacerla inviable y propiciar cambios culturales a largo término, en todos los grupos implicados. La estabilización social parece un objetivo prudente, para evitar situaciones turbulentas, que generen cambios bruscos, que provoquen reacciones aún más bruscas. Todos han de ser conscientes de la necesidad de los cambios, pero también de La fabricación de emulsiones estabilizadas, con las propiedades deseadas, requiere saber formular, requiere tensioactivos, y también el suministro inicial de energía. Para mantener la analogía, la consecución de sociedades complejas, razonablemente estables y satisfactorias para todos sus miembros requiere un proyecto viable de sociedad, requiere técnicas sociales especializadas y requiere, obviamente, tiempo y dinero. No solo el dinero de nuestros impuestos, claro, sino un plus destinado a aquella organización que más confianza nos merezca y que actúe en aquel campo en el que estemos más sensibilizados. Y tiempo personal, o tiempo de otros, comprado con nuestro dinero. FIN Como científicos, conocemos los secretos de las emulsiones. Sabemos cómo mezclar substancias opuestas. En años de dificultades, como los que estamos viviendo, intentemos aplicar nuestro conocimiento, nuestra experiencia, a la búsqueda de la estabilidad en las relaciones humanas y en las relaciones entre naciones. Actuemos todos como tensioactivos, dentro de nuestra sociedad. Romanesque is the artistic style, which best captures our idiosyncrasy. Lets go back to the 11th century; the most important temples erected in the hearth of the Pyrenees express the aim of being at the interface between Sky and Earth. Notice the picture that Picasso made of sardana (figura 5). 11 Claudi Mans The gastronomic argument requires the reading of a short tale: The parable of the two sauces “The prophet sat among his disciples and told this parable: “The prince of a remote kingdom was planning a banquet for several distinguished hosts. He ordered his cook to prepare two sauces he had tried in a visit to the Mediterranean borders, called mayonnaise and all-i-oli (garlic-and-oil). Mayonnaise is prepared with oil, eggs and salt; all-i-oli is spicier, prepared with garlic, oil and salt. As the sauces were served, the mayonnaise was a soft and very well prepared. However, all-i-oli was wrongly mixed, with oil and garlic separated in different phases; it was an unpleasant vision indeed. In spite of that, attendants to the banquet tried both sauces, and savoured their peculiar taste and flavour. On the following day, the prince and the hosts woke up feeling really sick. The cook was imprisoned; the prince accused him of preparing all-ioli using a wrong recipe. The prince based his argument on the similarity principle: if the alli-oli was ill-prepared, it would make ill the bodies of those who tried it. An old savant then examined and tried both sauces and said to the prince: “My prince, the cook is in prison but he is not to blame. The illness was caused by the mayonnaise, because it contains a so subtle illness principle that it cannot be detected by the human eye. In the future, you must have a little bit of vinegar or lemon juice added to the mayonnaise, because both prevent this illness. Moreover, you can easily repair the all-i-oli by mixing it with a bit of egg yolk, which contains a principle that enhances the mixibility of the components” The prince was very satisfied with these words and gave the old savant a reward. The prophet ended his speech with these words: -Dear disciples, you must act among people as the vinegar or the lemon juice so as to prevent the social body from getting ill. Alternatively, act as the egg yolk. You will accomplish a very good job by trying to bring ene- mies together, by reducing their differences, and by achieving a social mixture where everyone can cohabitate in a tolerant and pacific state of equilibrium. The disciples were very satisfied with their important role. The most adulator disciple asked the prophet: -Dear prophet, why does the egg yolk have its outstanding properties of mixing opposite components? And the prophet, drawing strange signs in the sand, said: -Sauces are disperse systems, oil-in-water emulsions. In mayonnaise, the lecithyn from the egg yolk, a phosphatidylcholine, is the emulsifier. And they followed him with great reverence." Yes, one of our most prized culinary delights is a disperse system, the sauce called all-ioli; simply garlic, olive oil and salt, stabilized by natural surfactants (figure 6). How difficult it is to prepare, and how stable it remains once it has been well prepared! SOCIAL EMULSIONS The social argument is as follows: our societies, as disperse systems, are extraordinarily complex and notably heterogeneous mixes. We have many social groups that have proven to be difficult to mix among themselves, with barriers between them, with individuals and groups of different roots, different origins, different religions, different ethnicities, different customs, different status, and different languages. How do we manage all of this? How do we 25th IFSCC Congress 2008 maintain this entire structure in a minimally stable way? The situations are very different from one country to the next, and the solutions they apply are different because their visions of what constitutes a "stable society" in each case are also different. For some, stable societies are those in which there is a total mix; for others, those that have a structure of total separation. If the situation is such that there are a few individualised members, of a particular community, dispersed in a different majority, obviously it is the former who adapt, disperse and acquire –at least in appearance– the characteristics of the majority group. From the outside, they are not seen, especially if within the family or group they maintain the customs or traditions of the minority group. They are like solutions, microemulsions or nanoemulsions. But when the numbers of the minority phase begin to be significant, social behaviours change. The fact is that spontaneous evolution of a situation of assi- milation shows the same spontaneous evolution as a blend, as shown in figure 7. A multiethnic society, totally mixed –geographically and socially– does not tend to exist, rather, due to nearly spontaneous mechanisms, they tend to lead to segregation –the equivalent of sedimentation– and maturation, based often on the promotion of ethnic pride. Because of these mechanisms, promoted by political, social or religious leaders, minority ethnic groups are used to group themselves geographically and socially. Thus dual societies are formed, more or less physically separated, and certainly socially separated, which keep their most differentiating traits alive, such as religion, social customs and dress. The social circumstances and ideology of the dominant group can intensify the segregation. This may result in situations of pre-ghetto, ghetto and finally, with ideologies with an intense explicit or implicit racism component, to situations of apartheid. I believe that the process of segregation between communities is a spontaneous process favoured by social inertia, comfortable and seen as natural by the majority of the components of both groups. Societies based on mass immigration, such as the United States of America in the 19th and early 20th centuries, demonstrate this. Remember the city of New York, divided into ethnic neighbourhoods, such as Asians in Chinatown, in turn subdivided, Italians in Little Italy, Germans in Yorkville, Afroamericans in Harlem, Jews in the East Side, Poles in Brooklyn, Latinos in El Barrio (East Har- 13 Claudi Mans lem) or the West Side, Greeks in Queens, Armenians in the Bronx...... The aspiration to stabilise the situation of segregation is also connected to the social group itself, whose leaders attempt to keep it absolutely closed and controlled. The process of segregation and its maintenance, which has clear advantages, because of the social protection and the psychological security that it gives to the newly arrived, has clear disadvantages in the long term, because it crystallises cultural and social differences, and excessively specialises its members, complicating social progression. Obviously, this is a very simplified description but, largely correct. Is there an alternative to the process of spontaneous segregation? Obviously there are alternatives, although the possible final outcome must be held in mind. And here appear approaches of all kinds, with contradictory social, political, religious and ideological components. What do we want to make? an O/W emulsion; a W/O emulsion; a microemulsion; a liquid crystal; a biphasic system; a liposome? The answer to this question is not easy, primarily, due to the ideological component, then as regards the economic aspect, and lastly, because it is not in our hands to choose, within certain limits, the manufacturing tensioactive and coadjuvant agents, the type of agitator, and other variables in the preparation process. At least nominally, the majority of the European parties and so- 14 cial leaders seem to advocate a social design similar to a stabilised emulsion. The Catalonian model is frequently mentioned, as a combination of social cohesion, national identity, liberalisation, cosmopolitanism, coexistence and practicality. In other words, a dynamic model, based on the maintenance and particularly, on the pre-eminence of the values of the host society, with different communities juxtaposed or mixed, with social stability, that allows the customs and characteristics of each community –diversity– to be maintained, while at the same time favouring individual social progress. The common social and educational system should be based on the host majority society, and the society would slowly accept the inevitable influence of social customs and uses between groups. The system would need to allow for permeability between communities and the flow of individuals between them. This is what is called cultural diversity, with simultaneous intercultural and racial mixing components. Polymerization in emulsion is a delicate process that makes it possible to obtain industrial polymers with the desired properties. Droplets or micelle of the monomer are prepared, dispersed and stabilized in the aqueous continuous phase, by using suitable tensioactive agents (figure 8-1). Some individual monomer molecules leave the micelles through a diffusion process (figure 8-2), as mentioned above, through a mechanism similar to Ostwald maturation. These molecules join other monomer molecules in the continuous phase and the group is coated by tensioactive molecules. A new micelle is so formed (figura 8-3). With the polymerization promoters and the catalysts in the solution, polymerization occurs (figure 8-4). Thus, micelles of the polymer are produced from micelles of the monomer. From the collaboration between elements of the continuous phase and elements of the disperse phase, a qualitative change in the composition and properties can be obtained, and it can be done in a controlled way. In societies, you should be able to do the same. SOCIAL TENSIOACTIVES Creating a stabilised social emulsion is a complex problem. The strategies to implement such a model are many and varied and depend largely on the characteristics of each social environment. They require a lot of effort and detailed knowledge of the characteristics of the system. Let us look at a more detailed chemical-social analogy, that visualises one of the possible strategies, among many other valid ones. A social tensioactive is the person, or association, able to live in the social interfaces. These social tensioactives are, for example, volunteers or professionals who, for reasons of religion, compassion, ideology, or politics, work to cure, feed, educate, integrate marginal groups, or marginal individuals, of any of the social systems that we have spread out in our territory. Emulsion polymerization. ted in the majority social system, they are able to see the two sides of the interface, and can "translate" the information they receive from one side into understandable concepts for the other side, and vice versa. And social tensioactives are the members of the continuous phase that are in contact, for professional reasons, with the members of the disperse phase. I'm thinking of our teachers and health professionals who, with their daily efforts, try to create or change hygienic, health, nutritional and cultural habits, to allow for members of minority groups to integrate or, at least, cohabitate. What are the ultimate objectives of these social tensioactives, objectives that would also be those of the society in general? I believe them to be the following: favour social stability at all times, secure that the continuous phase can maintain a good part of its properties without becoming unviable and favouring long term cultural changes in all the involved groups. 25th IFSCC Congress 2008 Social stabilisation appears to be a prudent objective, to prevent turbulent situations that generate abrupt changes, that provoke even more abrupt reactions. They must all be aware of the need for the changes, but also the necessary speed limits to ensure stability of the same and therefore, the long term irreversibility. The manufacture of stabilised emulsions, with the desired properties, requires knowing how to formulate, requires tensioactives, and also the initial supply of energy. To continue with the analogy, the achievement of complex, reasonably stable societies, satisfactory to all their members requires a viable social project, requires specialised social techniques and obviously, requires time and money. Not only our tax money, of course, but a bonus intended for that organisation that deserves more of our confidence, and which acts in that field in which we are most aware. And personal time, or other people's time, paid for with our money. 15
