A Regional Office of Education Publication Page 2 Page 3 Page 4 Page 5 Page 6 Page 7 Parents As Teachers First Years Newsletter - Volume XXV, Issue X Recipes for Busy Families Pineapple Fried Rice Ingredients: 3 Tablespoons soy sauce 1 Tablespoon sesame oil 1/2 teaspoon ginger powder 1/4 teaspoon pepper 2 Tablespoons olive oil 2 cloves garlic, minced 1 onion, diced 2 carrots, peeled and finely diced 1/2 cup frozen corn 1/2 cup frozen peas 3 cups cooked rice 2 cups diced pineapple, canned or fresh 1/2 cup diced ham 2 green onions, sliced Maple, Pineapple, and Ham Kabobs Ingredients: 1/2 cup real maple syrup 1 can pineapple chunks - little pieces are perfect for this! 2 cups of ham chunks Skewers 2 cups precooked rice Directions: In a small bowl, whisk together soy sauce, sesame oil, ginger powder, and pepper; set aside. Heat olive oil in a large skillet or wok over medium high heat. Add garlic and onion to the skillet, and cook, stirring often, until onions have become translucent, about 3 -4 minutes. Stir in carrots, corn, and peas and cook, stirring constantly until vegetables are tender, about 3-4 minutes. Stir in rice, pineapple, ham, green onions and soy sauce mixture. Cook, stirring constantly, until heated through, about 2 minutes. Serve immediately. Directions: Skillet Method: Place ham, pineapple and maple syrup in a Ziploc bag and allow to marinate in the fridge for 1-4 hours. Cut Kabob Skewers in half. Full length ones are generally too wide for most skillets. Remove ham and pineapple and alternate onto Kabob skewers. SAVE THE LIQUID!! NOTE: Skewers are not required. You can just cook the ham and pineapple together in the liquid without the skewers. Place 1/2 of the liquid into a wide skillet. Heat the liquid on medium-high heat until liquid is hot. Place kabobs into the pan when the liquid is hot. Allow kabobs to cook 20-5 minutes per side, allowing pineapple and ham to caramelize. You may need to do this in batches. Remove and serve immediately with rice.
