Peppercorn Cabernet Sauvignon Sauce
MONTES ALPHA CABERNET SAUVIGNON
• Beef Loin
• Green Peppercorns
• Cabernet Sauvignon Wine
• Beef Demi-Glace
• Fine Salt
• Ground White Pepper
Season the steaks with salt and pepper and brown in a skillet with the
butter. Remove the steaks from the skillet and set aside.
Add the green peppercorns to the skillet and flambé with the cognac.
Deglaze the skillet with the Cabernet Sauvignon and reduce by half.
Add the demi-glace, bring to a boil, and season with salt and pepper.
To serve, sauce the plate, slice the steak thinly and arrange over the sauce.
Accompany with french fries, sautéed onions, and fried eggs.
