No fue difícil: esa mañana, un grupo de ciclistas -miles, de hecho- recorrían la transpeninsular en la carrera, edición 34, que sale de Rosarito. Además, mi estómago estaba impaciente y pedía -ya, ya, ya- que un bocado, de preferencia una almeja pismo, se le pusiera en frente. Escogimos Laja (Carretera Ensenada- TijuanaKm 83, +01 646 155-2556) como puerta de entrada al Valle de Guadalupe, con el pretexto de hablar sobre maridajes con Andrés Blanco, enólogo, socio y anfitrión del restaurante. Nadie mejor que él, para darle un sentón a nuestros paladares, con los sabores y vinos locales -del huerto, del mar y de los ranchos cercanos. "No soy muy entusiasta de los vinos blancos con madera pero éste fue una buena sorpresa", nos dijo refiriéndose a Capricornius 2012,de El Cielo -una vinícola nueva en el Valle de Guadalupe, el cual acompañaría el primer plato: una sopa de espárragos con jamón serrano, un plato pequeño pero suntuoso, que requiere un vino más estructurado. Mientras, la otra mitad de la mesa experimentaba las sensaciones opuestas: lo fresco y crispy de un sauvignon blanc con una ensalada de lechugas con queso añejo, piñones y vinagreta de miel de abeja. Prueba de que los blancos son versátiles, nada aburridos y, a veces, mejores compañeros que los tintos para una comida larga. Sin embargo, hay que admi tirlo, Andrés conoce bien la cocina de su restaurante y Úlloa (el vino que produce en Tecate) es EL vino para acompañar ciertos platos de la cocina de Rafael Magaña (el chef), como los ravioles en salsa de carne y vegetales del jardín. "Lo frutal del vino le viene bien a los sabores dulzones de la salsa de carne", nos dijo Andrés, mientras servía la copa y sintetizaba, en muy pocas palabras, una relación de 13 años entre la cocina de Laja y su comedor. ''l'm not very keen on woody white wines, but this was a nice surprise," he told us, referring to Capricornius 2012,from ElCielo, a new winery in the Guadalupe Valley, which paired our first course: asparagus soup with Serrano ham, a small but surnptuous platter that requires a more structured wine. 1n the meantime, the other half of the party was experienci ng the opposite sensations: the freshness and crispiness of a Sauvignon Blanc with a lettuce salad with aged cheese, pine nuts and honey vinaigrette. Proofthat whites are versa tile, not at all boring and, sometimes better companions for a long meal than the reds. However, we have to admit thatAndrés knows the kitchen of his restaurant very well and Úlloa (the wine produced in Tecate) is THE wine to pair certain dishes cooked by Rafael Magana, such as ravioli in meat sauce and garden vegetables. "The frui tincss of the wine goes well with the sweet flavors of the meat sauce:' he said as he filled the glass and in few words summarized a thirteenyear relationship between the Laja kitchen and the dining room. After a verbena panna cotta with the Monte Xanic Moscato Di Canelli, we left Laja to continue on to Finca Altozano (Carretera Ensenada-Tecate highway Km 83, +01 646156-8045), a rustic grill surrounded by vineyards and recognizable by the srnokc and the smell, obviously, of roasted meat. AIRE JULIO 2013 r I P.61 3 Chef Diego Corazón Después de una panacotta de verbena con el Moscato Di Canelli de Monte Xanic, dejamos Laja para continuar con Finca ALtozano (Carretera Ensenada- Teca te Km 83, +01 646156-8045), un asador campestre, rodeado por viñedo s, reconocible por el humo y el olor, valga la redundancia, a carne asada. Altozano es un lugar más rústico, para reuniones familiares con extensas sobremesas, sin mucho protocolo, así como su comida. Tiene un par de miradores y, al fondo, debajo de un encino, un lo unge para eventos privados. Una especialidad del lugar es el chivo, o el borrego en caja china: una suerte de ataúd en el que se introduce el animal completo y se asa con leña durante varias horas, en sus propios jugos, con nada más que sal y algunas hierbas. La técnica es inmaculada: la piel queda crujiente y la carne tan suave que se puede cortar con los dedos. Además de los platos que involucran unas buenas tortillas, como los tacos de lengua o de cachete de res, el menú echa mano de productos del mar. El pulpo, por ejemplo, se sirve a la brasas con un toque asiático de soya, cítricos,jengibre, cilantro y cacahuate. Aunque el vino no falta, este estilo de comida es la oportunidad para experimentar los maridajes con una cerveza brown ale. El Valle de Guadalupe es el lugar al que se va a tomar vino y, con el tiempo correcto, a recuperar la capacidad de asombro. Sólo en este contexto, puede existir un restaurante como Corazón de Tierra, "en medio de la nada", al que se accede por un camino de terracería y cuya comodidad -rústica y acogedora- es inaudita (Carretera Ensenada- Teca te Km 88, +01 646156-8030). Con este marco y con vecinos como el hotel boutique la Villa del Valle y la vinícola de Phil Gregory (Vena Cava), el chefDiego Hernández desarrolló una propuesta que se centra en los productos de su huerto y otros que puede conseguir en las cercanías -como el queso, el aceite de oliva y las codornices. En Corazón, el menú cambia todos los días y se recomienda maridar con los vinos de Vena Cava (a precio de vinícola) que parecen estar hechos para la cocina del lugar. Una buena ensalada, por ejemplo, va bien con el vino espumoso de Phil, del que hay una producción todavía pequeña y, por lo tanto, sólo es posible tomarlo si se hace el viaje hasta aquí. Altozano is a rural setting, for lengthyfamily gatherings without much protocol,just like its food. It has a couple of lookout points and lower down, under an oak tree, there's a lounge for private events. One of the place's specialties is goat or lamb in a Chinese roasting box: a kind ofcoffin in which the whole animal is placed and roasted in its own juices over firewood for several hours with nothing more than salt and a few herbs. The technique is immaculate: the skin is crispy and the meat is so soft you can pull it apart with your fingers. In addition to the dishes that come with so me good tortillas, li ke tongue or beef cheek tacos, the menu also has plenty of seafood. The octopus, for example, is served grilled with an Asian touch of soy, citrus fruit, ginger, cilantro, and peanuts. Although there is plenty of wine, this type of food is a chance to experience pairings with a brown ale. The Guadalupe Valley is the place to go and drink wine, and with the right weather, to recover one's sense of wonder. Only in this context could a restaurant like Corazón de Tierra exist "i n the middle of nowhere," which is reached by a dirt road and whose comfort -rustic, welcoming- is unprecedented (Carretera Ensenada- Tecate Km 88, +01 646156-8030). Against this background and with neighbors like the boutique hotel Villa del Valle and Phil Gregory's winery (Vena Cava), chef Diego Hernández has developed a proposal that focuses on produce from his garden and other goods from the area (such as cheese, olive oil, or quail). The menu changes every day at Corazón and the recommendation is to pair the food with wines from Vena Cava (at winery prices), which seem to be made for the restaurant's kitchen. A good salad, for example, goes well with Phil's sparkling wine, which is still produced in small quantities, and consequently is only available ifyou travel here. D~ LAS CONCHAS °almezcal 11 o MANZANILLA ES UN RESTAURANTE DE LA Tiene ese aspecto, un poco kitsch, de comedor de crucero, con el toque personal de sus dueños: Benito Molina y Solange Muris. Hay que acercarse un poquito a los cuadros para ver que algunos están firmados por éL Nunca visité Manzanilla (Elvd. Teniente Azueta 139, +01646 175-7073) de día, algo que recomiendo para comer con calma y disfrutar de los siete tiempos, con vino blanco y el colado, una copita de mezcal para acompañar el helado de queso para el postre. Aunque hay muchas formas de calificar un maridaje como "correcto", también las apreciaciones subjetivas y personales funcionan. La del Manzanilla fue una comida redonda, un maridaje que nos produjo euforia. Los culpables: un plato de conchas "frías y tibias", que empezaba con un ostión kumamoto mignonette, otro con pata de cerdo, otro gratinado con queso Ramonetti y acelga, otro con. mantequilla y estragón y, finalmente, una almeja a las brasas con queso gorgonzola. En nuestras copas: vino espumoso para maridar y nos rendimos. Un favorito de la tarde fue el abulón frito con perejil, soya y jengibre, y el tiradito de jurel con percebes y ensalada de algas y salicornia. Ambos platos con marcados sabores del mar, el principal protagonista, constantemente homenajeado por Benito y Solange. VIEJA GUARDIA DE ENSENADA. When you get up clase to the paintings, you can see that some of them are signed by him. 1 never visited Manzanilla (Elvd. In our glasses: sparkling wine for pairing and then we capitulated. A favorite of the afternoon was the fried abalone with parsley, soy and ginger, and mackerel tiradito with gooseneck barnacle, and seaweed and saltwort salad. Both dishes with bold flavors of the sea, the main protagonist, consistently venerated by Benito and Solange. RANTS IN ENSENADAS OLD GUARD. TO MEZCAL AIRE JULIO 2013 r P.63 Tapas mexicanas. de Etxebarri. ~L TACO HACE EXACTAMENTE UN AÑO ENTREVIS- iOlap'laza (chef propietario de varios restaurantes en Chicago) acerca de los destinos de México que más ha n influido en su cocina. Sin pensarlo mucho me dijo Oaxaca y 1uego sonrió, y agregó a la lista: Tijuana. "Siempre pensé que el DF tenía los mejores tacos pero hace poco hice un viaje a Tijuana y cambié de opinión". Tiene razón, la cocina de las calles de Tijuana es emocionante, por los tacos, sí, tanto como por las tortas y los mariscos. ¿Qué tienen de especial? Pensándolo muy bien, diría que son las salsas. Las tortas del Wash (Av. Jalisco s/n, el Cacho), por ejemplo, tienen muy buena telera y muy buena carne asada, pero el guacamole y la salsa roja, dejan con la boca abierta a ambas. TÉ A RICK BAYLESS EXACTLY ONE YEAR AGO 1 INTERVIEWED (the chef-owner of several restaurants in Chicago) about the places in Mexico that have had the most influence on his cuisine. The cuisine on the streets of Tijuana is exciting because of the tacos, but also beca use of the sandwiches and seafood. What's so special about thern? I'd say it the sauces are it. Lastortas del Walsh (Av. Jalisco s/n, el Cacho), for example, look really nice and have very good roast meat, but the guacamole and red chili sauce both leave you drooling. Después, en las mesas del Food Garden -un proyecto con varios locales de comida bajo el mismo techo- pude comprobar, en los tacos Kokopelli, que tengo razón. Aquí, además de los tacos "de autor" -como el funky con portobello)-hay un apartado sólo para las salsas: dulzonas, picantes, o picosérrimas como las "lágrimas de Lucifer", espesas o ligeras, de cacahuate, chile de árbol y especias, de pepitas de calabaza, chile serrano y especias, de chile habanero con vinagre de piña ...Si lo que está dentro de la tortilla ya es bueno, con cualquiera de estas salsas cada bocado es una fiesta de sabores en la boca. Además, yo confieso, que en el mismo Food Garden (Blud. Rodolfo Sánchez Taboada 10650, +01 664 634-3527) están los mejores chilaquiles que he probado: un pastel de tortilla con salsa de cilantro, ¡un mollete! y otro poco de queso fresco o Cotija. Como estocada final: el taco gobernador de Mariscos Rubén, es un clásico de camarón, marlín, crema de aguacate y crema de chipotle y otras salsas varias a elegir, "para que te guste a ti, me tiene que gustar a mí", dice la dueña del camión Mirta Rodríguez, quien atiende y cocina estos tacos y otras especialidades (como el aguachile de callo) que cualquiera querría tener en la esquina de su casa en un domingo de resaca. As the final word: the king of tacos from Mariscos Rubén is a classic taco gobernador, made with shrimp, marlin, avocado crea m and cream of chipotle chili, and a range of salsas to choose from. En Tijuana, no hay estilo o concepto con el que el chef Javier Plascencia no haya experimentado para mostrar, a través de la cocina, que es, hasta la médula, un orgulloso tijuanense. De todos los restaurantes, Misión 19 (Misión San Javier 10643 Zona Urbana Río, +01 664 634-2493)es la propuesta más personal y,hasta cierto punto, arriesgada de Plascencia: cocina sofisticada con sabores de familia. Aquí puedes encontrarte con un plato de quesos del Rancho de Cortés y de Ramonetti servidos con el mismo bombo y platillo que un queso francés o unparjaitpero con callo de hacha y merengue de aguacate. Aunq ue las mesas son de manteles largos y cristalería fina, hay cierto sentido del humor en los platos de Javier que hacen la experiencia menos ...snob. The steamed oysters are prepared in surf and turf style with rinds made from beef ribs with citrus notes from soy sauce with grapefruit.
