Life is Beautiful
29 de diciembre de 2010. Es un día de trabajo tranquilo y relajado pero hay algo que hace días que
me inquieta. Tengo una hermana embarazadísima
en Madrid que está a punto de dar a luz. Hace más
de 16 años que no aumenta nuestra familia y la
emoción es grande.
December 29th, 2010. It’s a quiet and relaxed working day but there’s something that’s been bothering me for days. I have a very pregnant sister in
Madrid that’s about to give birth. It’s over 16 years
since the size of our family increased and there’s
great excitement all round.
Regreso a la oficina y, de repente, suena el teléfono
rojo de mi despacho. No es Barack Obama, es mi
madre y el mensaje es contundente: “Pau nos vamos a Madrid, tu hermana está de parto”.
I return to my office and, suddenly, the hotline rings
in my office. No, it’s not Barack Obama,it’s my mother and the message is blunt and clear: “We’re
going to Madrid, Pau. Your sister’s in labour.”
En menos de 30 minutos, ya estaba conduciendo
hacia Madrid con el coche cargado de maletas,
regalos e ilusión, sobre todo mucha ilusión. Viajan
conmigo mis padres, mi novia y una jovencita incombustible de 87 años, soltera y sin compromiso:
mi tía Rosita. Durante el camino, el móvil de mis
padres no para de sonar… Mis hermanos, mis cuñadas, mis tíos pero sobre todo Joaquín, el padre
de la criatura que llama cada rato para narrarnos la
actualidad informativa y tranquilizarnos.
In less than 30 minutes, I was driving towards Madrid with the car loaded with suitcases, gifts and
hope; especially lots of hope. Travelling with me
were my parents, my girlfriend and a young incombustible 87 year old, unmarried and without ties:
my Aunt Rosita. Along the way, my parents’ mobile
kept ringing non-stop ... My brothers, my sisters,
my uncles and aunts but, especially, Joaquín, the
father of the child, who was calling all the time to
pass on to us the latest news and reassure us.
Nos detenemos en el camino en un parador para
tomar algo y descansar. Mis padres siguen hablando por teléfono, Silvia y yo aprovechamos para hacer unas llamadas de trabajo. Al salir del restaurante y poner el coche en marcha, noto algo raro. Me
falta algo, miro a través de los grandes ventanales
del local y vislumbro a una atractiva octogenaria,
sentada, mojando una magdalena en el café: ¡Dios
mío que nos dejamos a la tía!
We stopped en route at an inn for a drink and to
relax. My parents were still talking on the phone
and Silvia and I took the opportunity to catch up
on some work calls. Upon leaving the restaurant
and starting the car, I noticed something strange.
I was missing something so … looking through the
large windows of the building I glimpse an attractive octogenarian sitting there, dipping a madeleine
in her coffee: Oh my God, we’ve left Aunty behind!
Retomamos el camino con la jovencita ya a bordo y
a los 5 minutos de carretera suena por enésima vez
el móvil de mi madre. Es el padre y nos da la noticia
más importante de su carrera y de su vida: la niña
ya está en el mundo. Después de hacer un recorrido turístico gratuito por la Comunidad de Madrid,
pasando por la Seseña de “El Pocero”, encontramos por fin el hospital Montepríncipe de Boadilla.
Es la habitación 246, la madre está radiante, el padre emocionado y en una pequeña cuna está ella,
la culpable de todo este trasiego. Se llama Claudia
y es la luz.
We resume the journey with the young woman now
on board and after 5 minutes drive my mother’s
mobile rings for the umpteenth time. It’s the father and he gives us the biggest news both of his
career and his life: the little girl has arrived in the
world. After taking a free tour of the Community of
Madrid, passing through Seseña of “El Pocero” we
finally found the hospital Montepríncipe de Boadilla. It’s room 246, the mother is radiant, the father
excited and the little one – the one to blame for
all this commotion - is in a small crib. Her name is
Claudia and she’s the light of this world.
Estoy extenuado y embobado mirando a mi sobrina. Son muchas las sensaciones que se entremezclan: cansancio, estrés, alegría…Pero hay algo que
por encima de todo esta pequeñaja de tan solo
unas horas me hace sentir, y es que a pesar de la
crisis y de los malos momentos, la vida sigue y es
muy bella.
I’m now exhausted and enthralled watching my niece. There’s many mixed feelings: tiredness, stress,
happiness ... But there’s one thing that I feel above
even this little bundle of only a small hours existence, and that’s, despite the crisis and the bad moments, life goes on and is really very beautiful.

Es Jueves, son las doce de la mañana y me encuentro en la calle Bonaire de Valencia. Tengo que ir al número 6, he quedado con Sergio
Adelantado de Ladaa Arquitectos para hacerle una entrevista. Subo
a la 5ª planta de la galería Adelantado, entro en su despacho de Arquitectura y tengo una charla inicial con él, en la que descubro que a
Sergio no le preocupa “el que dirán” sino “el como se sentirá él”. Esto
me hace intuir que la conversación va a ser interesante.
It’s Thursday, it’s midnight and I’m in Bonaire Street in Valencia. I
have to go to number 6 as I have an appointment with Sergio Adelantado from Ladaa Architects for an interview. I go up to the 5th floor
of the Adelantado Gallery, enter his Architecture office and have a
preliminary chat with him, in which I find out that Sergio does not
care about “what people are going to say” but about “how he’s going
to feel.” This makes me guess that the conversation is going to be
interesting.
¿Cuál fue su primer contacto con la arquitectura y que determinó
que usted se dedicará a esta profesión?
En mi caso es una cuestión familiar, mi padre, mi hermana y yo, siempre nos hemos dedicado al tema del arte, el diseño y el interiorismo.
Desde pequeño en la escuela ya tenía claro a que me iba a dedicar.

What was your first contact with architecture and what made you
decide to dedicate yourself to this profession?
In my case it’s a family thing; my father, my sister and I have always
devoted ourselves to the subjects of art, design and interior design.
From a young age at school it was clear what I was going to do

When and who founded Ladaa Architects?
Hace 12 años que acabamos la carrera, desde el principio tuvimos claro que
nuestro trabajo iría enfocado al ámbito
residencial, bien obra nueva o rehabilitación
We qualified 12 years ago and from the
beginning we knew that our work would
be focused on the residential side of
things, either new construction or renovation
Echando la vista a atrás hay algo de ingenuidad e inconsciencia que nos ha
permitido llegar hasta aquí, ojalá no perdamos nunca esa pequeña dosis de lo
emocional frente a la razón.
Looking back, there’s a little ingenuity
and unconsciousness which has allowed
us to get here. I hope we never lose that
small dose of the emotional in the face
of reason.
¿Qué es lo que nunca falta en un proyecto de Ladaa?
What is never lacking in a project of Ladaa?
Todo lo inmaterial: La magia, el tiempo,
el amor pero sobre todo la provocación,
si no conseguimos sorprenderte, si no
conseguimos que te vayas con la ilusión
de volver, nuestro trabajo no tiene sentido. Las viviendas durante el proceso
constructivo son como “nuestras” cuando finalizas el proyecto y las entregas, el
cliente tiene que percibir además de los
materiales, la distribución… un montón
de cosas que tú has sembrado allí y que
ellos no van a intuir hasta que no vivan
en la casa. Todas estas cosas son muy
importantes para nosotros.

and, above all, provocation. If we don’t
surprise you, if we don’t manage to ensure that you leave without the desire to
return, our work doesn’t make sense. The
homes during the construction process
are like “ours” when the project ends and
you hand them over, the customer must
also perceive besides materials, distribution ... a lot of things that you have planted there and that they will not guess until they live in the house. All these things
are very important to us.
¿Qué tienen más en cuenta a la hora de
realizar un proyecto?
Lo más importante es lo intangible, todo
lo que queremos que una vivienda nos
devuelva cuando este terminada. Desde
el principio en un proyecto hay que poner trabajo, pasión, ilusión, amor y todo
esto tiene que acabar convirtiéndose en
magia para que esta finalmente se instale en la casa.

What do you have most in mind when
implementing a project?
The most important thing is the intangible which is all that we want a house to
offer us when it’s finished. From the beginning in a project you have to put work,
passion, excitement, love and all this has
to end up as magic so this is finally installed in the home.
For Ladaa, what are the most important
needs to meet in a family project?
Para Ladaa ¿Cuáles son las necesidades más importantes a satisfacer en un
proyecto familiar?

que se sientan identificados con su hogar, que día a día les haga más
felices, cuando la gente descubre que esto es posible acaba convirtiéndose en una necesidad para el resto de sus vidas.

What has been most influential in the formation and work of Ladaa?
¿Que es lo que más ha influido en la formación y la obra de Ladaa?
Siempre nos ha interesado mucho la arquitectura anónima, callada,
silenciosa. Quizás como respuesta a tanto ruido mediático, hemos
buscado el silencio de grandes trabajos que nos rodean y nos dan
lecciones de responsabilidad y amor hacia un oficio que tiende a desaparecer.
We have always been very interested in anonymous architecture; quiet
and silent. Perhaps in response to so much media noise, we have
sought the silence of great works that surround us and give us lessons
of responsibility and love for a profession that tends to disappear.
What is the style that defines you?
I don’t know, others have to say that, we don’t like to spend time on that.
¿Cuál es el estilo que les define?
No lo se, eso lo tienen que decir otros, no nos gusta invertir tiempo en eso.
¿En que proyectos están trabajando actualmente?
Actualmente estamos haciendo viviendas unifamiliares en Monasterios, El Bosque, Santa Barbara, Campolivar. En el centro de Valencia
tenemos en marcha algunas actuaciones importantes en el ámbito de
la rehabilitación.
¿Cómo se logra el prestigio en Arquitectura?
Como en cualquier otra profesión, con buenos resultados, constancia,
trabajo, honradez y sobretodo con mucha pasión.
What projects are you currently working on?
We are currently constructing houses in Monasteries, El Bosque, Santa Barbara, Campolivar. In the centre of Valencia we have launched
some important actions in the field of renovation.
How is prestige achieved in Architecture?
Like any other profession: with good results, consistency, work, honesty and, above all, with passion.

En estos últimos años parece que la innovación no tenga límite ¿Qué
es lo más novedoso en arquitectura residencial?
In recent years it seems that innovation has no limits. What is the
latest in residential architecture?
Volver a las raíces verdaderas del movimiento moderno, replantearse
todo lo avanzado y valorarlo, tanto en la técnica como en la teoría. Sobre esto hay una reflexión muy fácil de entender, las viviendas deben
servirnos a nosotros, no podemos convertirnos en esclavos de nuestra
casa. Lo innovador en estos momentos es reflexionar y ver lo que sirve
y lo que no.
To return back to the real roots of the modern movement; to reconsider all the progress and values, both in technique and theory. There’s
a reflection which is very easy to understand about all this which is
that homes must serve us. We cannot become the slaves of our own
home. What is innovative at present is to reflect and see what works
and what doesn’t.

¿Cuál es el futuro de la arquitectura?
What is the future of architecture?
Recuperar cada vez más el espíritu de servicio a la sociedad para que
esta nos demande lo que realmente le tenemos que devolver, que no
es otra cosa que buena arquitectura.
Lost growing spirit of service to society that demands us what you
really have to return, which is nothing more than good architecture.
Todas las personas debemos preocuparnos más por aprender que
por saber, hay que reflexionar, sentir… Venimos de una década en la
que lo que importaba era: el tamaño, la apariencia, el resultado, lo
inmediato… y estas no son precisamente las claves de una buena
arquitectura.
Everyone must learn to be more concerned to know, need to think,
feel... We come from a decade in which what mattered was the size,
appearance, the result, the immediate ... and these are precisely the
key good architecture.

Existen circunstancias en las que la
casa se nos queda pequeña, necesitamos más luz natural o queremos
sacarle partido a un balcón que no
utilizamos. Ampliar el espacio de alguna estancia o bien hacerla más
habitable son los motivos que nos
empujan a instalar un cerramiento
en nuestra vivienda. Sus propiedades
básicas son aislar y proteger tanto
dentro como fuera de la vivienda y
preservar la atmósfera del hogar haciendo de la zona revestida una continuación de la estancia. Puedes ampliar el comedor cerrando el balcón,
disfrutar de una piscina cubierta, de
un solarium si dispones de ático… y
es una buena manera de aprovechar
por más tiempo la luz natural.

our house has become too small, we
need more natural light or we want to
take advantage of a balcony that we
don’t use. Expanding the space in a
room or making it more habitable are
the reasons that lead us to install a
conservatory in our home. Its basic
properties are to isolate and protect
both the inside and outside of the
house and to preserve the atmosphere of the home by making the
covered area a continuation of the
main room. You can expand the dining room by closing off the balcony,
benefit from an indoor pool or make
a solarium if you have a loft ... and it’s
a good way to take advantage of the
daylight for a longer period.

primer artista en descender por la escalera mecánica de este nuevo punto de
encuentro en plena Gran Vía madrileña. La discoteca del ‘Umbracle’ de Valencia
también tiene su sello. Hoteles, spas, restaurantes... Ocio de vanguardia creado
por Tomás Alía.

Sí, el ‘Larios café’, el ‘Hotel Óscar’ y el ‘Reina Bruja’. El ‘40 Café’ es el último
y uno de mis favoritos también.

Vamos a continuar con la aplicación culinaria de algunas de las plantas que crecen en nuestro territorio. Para empezar, vamos a dedicarle
el primer lugar a nuestra famosa pebrella (Thymus piperella), que es
un tomillo endémico de la Comunidad Valenciana y provincias limítrofes. Pertenece a la familia de las labiadas y es una especie muy
aromática, por ello ha sido muy empleada tradicionalmente en la cocina valenciana, para aromatizar sopas, verduras, ensaladas y carnes
(sobre todo caza). Hoy en día se usa frecuentemente para aromatizar
pizzas, en lugar del empleo del clásico orégano; la pebrella le da un
sabor verdaderamente especial.
We’re going to continue with the culinary application of some of the
plants that grow in our territory. To begin, we will dedicate the first
place to our famous pebrella (Thymus piperella), which is an endemic thyme of the Valencia Community and neighbouring provinces.
It belongs to the Labiatae family and is a highly aromatic species, for
which it has been traditionally used in Valencian cuisine, to flavour
soups, vegetables, salads and meats (especially game). Today it’s often used to flavour pizzas, instead of the traditional use of oregano,
the pebrella gives a truly special flavour.
Una receta clásica es el Gazpacho de Castalla (Alicante), ésta se
elabora usando la típica torta para gazpacho, pollo, conejo, cebolla,
tomate y pebrella. Para ello sofreímos trozos de pollo y conejo, que
dejamos apartados. A continuación se sofríe la cebolla a trocitos y el
tomate, seguidamente echamos la pebrella, la torta a pedazos y sofreímos un poco más. Por último se añade caldo de la carne y se deja
cocer. Se sirve con la coca base echando el gazpacho por encima, y
se aconseja acompañar con all i oli.
La pebrella también es muy empleada para aromatizar embutidos,
sobre todo en la zona de La Valldigna, donde presentan un sabor
delicado, y muy delicioso con aroma a pebrella.
Otra planta aromática muy empleada es el hisopo (Hyssopus officinalis), que podemos encontrar en la época otoñal en plena floración,
en nuestras montañas de mediana elevación (por encima de los 800

A classic recipe is the Gazpacho from Castalla (Alicante) which is
made using the typical ‘torta’ for gazpacho, chicken, rabbit, onion, tomato and pebrella. To make it we fry pieces of chicken and rabbit,
which we then leave to one side. We then fry the chopped onion and
tomato, then we add the pebrella, the ‘torta’ in pieces and fry it a little
longer. Finally, add beef broth and let it simmer. Serve with the coca as
a base and the gazpacho above it; it is recommended to be accompanied with garlic mayonnaise.
The pebrella is also used a lot to flavour cold meats, especially in the
area of La Valldigna, where they have a delicate flavour, and delicious
pebrella scented aroma.
Another widely used aromatic plant is hyssop (Hyssopus officinalis),
which can be found in the autumn season in full bloom, in our mountains of 800 metres and above. The hyssop was used a lot in the middle
ages to flavour vegetable soups and to make pickled vegetables.

Una especie que ha sido muy utilizada desde la antigüedad es la rosa
silvestre o escaramujo (Rosa canina). En la Edad Media era conocida
como “flor de flores”, y hasta nuestros días se ha conservado la receta
de uno de los platos favoritos de aquella época; me refiero al capón
aromatizado con pétalos de rosa, y que se sazonaba con almendras,
azúcar, y azafrán.
Los frutos de la rosa, los escaramujos, son muy utilizados por ser ricos
en taninos, que le confieren la propiedad de ser astringentes, además
son ricos en vitamina C. Por este contenido en taninos, se utiliza para
adobar aceitunas, ya que permiten que se conserven mejor durante
mucho más tiempo. Asimismo, la mermelada obtenida con los escaramujos ha sido muy empleada para aromatizar asados de caza.
Un clásico muy utilizado ha sido el laurel (Laurus nobilis). El laurel es
un árbol mediterráneo, perennifolio. Sus hojas son sencillas, coriáceas
y muy aromáticas.
Los festines medievales, comenzaban a menudo con un plato de
manzanas cocidas e higos, asados al horno junto con hojas de laurel.
En nuestros días se utiliza para dar sabor a los adobos y a muchos
guisos de carne.
Para terminar, quiero hablar de un arbusto muy abundante en nuestras montañas, se trata del madroño (Arbutus unedo) es un arbusto de
hojas coriáceas parecidas al laurel, de flores blancas y con frutos carnosos de color rojo. Este arbusto es apreciado por sus frutos, sobre
todo en la madurez por su contenido en alcohol. Pero tiene un inconveniente, y es que si se ingieren en exceso provocan fuertes dolores
de cabeza, debido a un principio activo llamado arbutósido. Por esta
razón lleva el nombre de “unedo” en referencia a que no se puede
comer más de uno si no quieres acabar con una terrible migraña.
Rosa Canina
A species that has been widely used since antiquity is the wild rose
or rose hips (Rosa canina). In the Middle Ages it was known as the
“flower of flowers”, and to this day the recipe has been kept for one
of the favourite dishes of that era; I’m referring to capon flavored with
rose petals and spiced with almonds, sugar, and saffron.
The fruits of the rose, rose hips, are widely used because they are rich
in tannins, which confer the property of being astringent, besides being also rich in vitamin C. For this tannin content, it is used to marinate
olives, allowing them to be preserved for much longer. Also, the jam
obtained with rose hips has been widely used to flavour roast game.
A widely used classic is bay leaf (Laurus nobilis). The bay leaf is a
Mediterranean tree and an evergreen. Its leaves are simple, leathery
and very aromatic.
Medieval feasts often started with a dish of cooked apples and figs,
oven-roasted with bay leaves. Nowadays it is used to flavor marinades
and many meat stews.
Finally, I would like to speak about a very abundant shrub in our mountains, it is the strawberry tree (Arbutus unedo) which is a shrub with
leathery leaves similar to the bay leaf, white flowers and fleshy red
fruit. This shrub is prized for its fruit, especially when ripe for its alcohol content. But it has a drawback which is that, if taken in excess, it
causes severe headaches due to an active substance called arbutósido. For this reason it bears the name ‘unedo’ in reference to the
fact that you can’t eat more than one if you don’t want to end up with
a terrible migraine.

se transforma en fundamental para agregar valor a las propiedades.
Estamos hablando ya de un aumento de 10% a 30% en el valor de
la propiedad, en el mercado de la vivienda de hoy. Estos son datos
comprobados por varias investigaciones en América y Europa.

important), becomes more fundamental each passing day to add value to your properties. We’re already talking about an increase of 10

the issue, someone who does it for a living.

La incertidumbre por la crisis soberana y la volatilidad, siguen dominando el escenario en mercados. El temor al “double dip” o vuelta a
la recesión y los rumores sobre el impago de Grecia ha incrementado
el temor de los inversores. Sin embargo, desde Banif no creemos que
estos temores se materialicen. Porque, pese a subir del 20% al 30%,
las probabilidades de una recesión siguen siendo minoritarias frente
a la probabilidad de un escenario en “U” o de recuperación. Razones
que nos mueven a extremar la prudencia, moderando la exposición a
riesgo y aumentando las posiciones en renta fija y liquidez.
Uncertainty over the sovereign crisis and volatility continue to dominate the market scenario. Fear of “double dip” or a return to recession
and rumours about the default of Greece has raised investors fears.
However, Banif’s own view is that we do not believe these fears will
be realized. Because, although up from 20% to 30%, the odds of a
recession are still in the minority compared to the probability of a
scenario in “U” or recovery. Reasons that lead us to extreme caution,
moderating exposure to risk and increasing positions in fixed income
and liquidity.

economías desarrolladas, lo que se detecta en los PIB de 2T11 y los
indicadores adelantados. Datos que, además, anticipan una dinámica
de crecimiento de la actividad muy magro en los próximos meses,
sobre todo en buena parte de las economías de la zona Euro. Entre
los motivos, los altos precios de las materias primas son, el impacto
del terremoto de Japón, las medidas de consolidación fiscal a nivel
global y la falta de determinación política en EEUU y en Europa. A lo
que se añade el endurecimiento de las condiciones financieras y la
moderación en el crecimiento de las economías emergentes. En este
contexto, las perspectivas de crecimiento para 2011 y 2012 han sido
rebajadas. En 2011 se espera que el PIB de EEUU crezca un 1,7% y el de
la Unión Europea un 1,6%; el mundo crecería un 3,8%. España, un 0,7%.
Clearly there has been a loss of traction in the major developed economies, as detected in GDP 2T11 and leading indicators. Data that
also anticipates growth dynamics of very lean activity in the coming
months, especially in much of the Euro zone economies. Amongst
the reasons are the high prices of raw materials, the impact of the
earthquake in Japan, fiscal consolidation worldwide and the lack of
political will in the U.S. and Europe. To which can be added the tightening of financial conditions and moderation in the growth of emerging
economies. In this context, the growth prospects for 2011 and 2012
have been lowered. In 2011 the U.S. GDP is expected to grow by 1.7%
and that of the European Union by1.6%; the world GDP will grow by
3.8% and Spain 0.7%.
La buena noticia es que la posibilidad de una recesión sigue siendo
escasa. Por un lado, los tipos reales están en niveles históricamente
bajos y es posible que se adopten nuevas medidas monetarias cuantitativas. Por el otro, se han acometido numerosos ajustes para solucionar los desequilibrios que podrían provocar la “gran recesión” (apalancamiento, burbuja inmobiliaria). Los componentes más cíclicos de la
demanda se encuentran en las economías más frágiles por debajo de
su peso tendencial en el PIB, lo que hace poco probable una moderación mayor. Por último, aunque el escenario macroeconómico se ha
debilitado, la situación financiera a escala empresarial es más sólida.
Tampoco hay que olvidar que los fundamentos estructurales de las
economías emergentes son más robustos que hace unos años. Eso sí,
es necesario que las autoridades políticas y monetarias avancen en las
soluciones económicas para extender la tranquilidad en el mercado.
También en la Zona Euro es clave que las autoridades retomen las
negociaciones de julio para resolver la crisis griega, y que encuentren soluciones para atajar los riesgos a corto y a medio plazo en el
problema de la deuda soberana. A más largo plazo, los países ya
han empezado a aplicar algunas soluciones fiscales que propusieron
Francia y Alemania en agosto (como la fijación de un techo de déficit
aquí en España). En la medida en que continúen estos avances, la
calma podrá recuperar terreno.
The good news is that the possibility of a recession remains low. On
the one hand, real rates are at historically low levels and it is possible that further quantitative monetary measures will be adopted.
On the other hand, numerous adjustments have been undertaken to
address imbalances that could cause the “great recession” (leverage,
housing bubble). The cyclical components of demand are found in
the most fragile economies below their tendential weight in GDP, making a greater moderation unlikely. Finally, although the macroeconomic situation has weakened the financial situation at enterprise level
is stronger. Nor should we forget that the structural foundations of
the emerging economies are more robust than some years ago. Of
course, it is necessary for political and monetary authorities to move
forward in economic solutions to extend the tranquillity in the market.
Also in the Eurozone it is vital that authorities resume July’s negotiations to resolve the crisis in Greece, and find solutions to address the
short and medium term risks of the problem of sovereign debt. In the
longer term, countries have begun to implement some of the proposed fiscal solutions proposed by France and Germany in August (such
as capping deficit here in Spain). To the extent that these advances
continue, a state of calm will continue to make ground.

Es sin duda una de las letradas con mayor experiencia en derecho
concursal en España. Martinsa Fadesa, Llanera, Urazca o Marsans
son algunos de los concursos más mediáticos en los que ha participado Antonia Magdaleno. Ahora la abogada funda su propio despacho con sede en Valencia y Madrid, Antonia Magdaleno Abogados.
She is without doubt one of the lawyers with the most experience in
bankruptcy law in Spain. Martinsa Fadesa, Llanera, Urazca or Marsans
are some of the most media-bases bankruptcies in which Antonia
Magdaleno has participated. Now the lawyer has founded her own
firm, Antonia Magdaleno Lawyers, with bases in Valencia and Madrid.
¿Es el proceso concursal una especie de UCI para las empresas con
problemas de solvencia?
Is the bankruptcy process a kind of Intensive Care Unit for companies with solvency problems?
Aunque muchas personas piensan que sí, en muchas ocasiones no es
así. El proceso concursal es un medio alternativo a la refinanciación o a
la liquidación sin más, para intentar salir de la crisis. Muchas empresas
tienen clientes pero no tienen financiación porque los bancos han cerrado las líneas de créditos y no pueden trabajar. El proceso concursal
les sirve como un colchón de ayuda para evitar eso, el hecho de no
poder hacer frente a sus pagos y que se produzca el colapso.
Although many people think so, on many occasions it’s not the case.
The bankruptcy process is an alternative to refinancing or liquidation
without more, to try to find a way out of its crisis. Many companies
have customers but no funding because the banks have closed credit lines and they are unable to work. The bankruptcy process serves
them as a cushion to help avoid this, the fact of not being able to meet
their payments and the ensuing collapse.
¿Cual es la clave para que una empresa pueda salir del concurso y volver a la normalidad?
What is the key to a company finding a way
out of bankruptcy and back to normal?
La clave es afrontarlo como un recurso, como
un medio y, por lo tanto, prever un poco antes de que se encuentren en situación terminal que esto puede acontecer, de forma que si
presentan el concurso a tiempo pueden volver
a una situación de normalidad. De hecho, por
mi experiencia, todas las empresas que he visto salir del proceso concursal tienen un nexo
en común, y es que han presentado el concurso a tiempo y no han esperado a que la situación sea irreversible.
The key is to face it as a resource, as a means
and, therefore, use a bit of foresight before they
are in a possibly terminal situation, so if they enter the proceedings in time they can return to a
situation of normality. In fact, in my experience,
every company I’ve seen exiting the bankruptcy
process has a common link, which is that the
proceedings have been entered into on time
and they not have waited until the situation has
become irreversible.

Gracias por lo de prestigio. Yo creo que mi trabajo y el del equipo que me rodea son reconocidos, así como el de los otros administradores

bankruptcy field. How many companies have
you managed to get out of bankruptcy?
Thanks for the reference to reputation. I think
my work and that of my team are recognized, as
well as that of other administrators that are involved in the bankruptcy. We’ve helped several

que están en el concurso. Hemos ayudado a varias empresas a salir
de concurso. Un caso muy conocido en Valencia es el de Llanera,
también Urazca, una gran empresa de Bilbao, Martinsa Fadesa y otros
casos más pequeños como un concurso que llevé en Valencia y que
me gustó mucho, que se dedicaba a la exportación e importación de
productos pesqueros, que también consiguió salir… El porcentaje no
es muy alto, pero muchas consiguen salir.

but many do manage to get out.
How long can proceedings take?
¿Cuánto puede tardar el proceso?
El proceso depende mucho de los juzgados, pues no todos soportan
la misma carga de trabajo, pero aproximadamente un año o quizás
algo más.
¿Qué es lo más difícil en el proceso?
Desde el punto de vista humano, para mí, los expedientes de regulación de empleo que lamentablemente se dan, porque los procesos
concursales son procesos de reestructuración y los tienes que vivir.
Desde el punto de vista de gestión, el día a día con los bancos, proveedores…. Digamos que conseguir que la gestión de la empresa siga
funcionando, que además es otra de las ventajas del concurso. Normalmente hasta que llega el concurso, proveedores, bancos…todas
las personas, incluyendo físicas y jurídicas, que rodean la empresa
tienen miedo porque saben que hay problemas de financiación. Una
vez declarado el concurso confían en que si algo está autorizado por
la administración concursal eso está garantizado, y aporta ese plus de
confianza que necesitan para seguir trabajando con dicha empresa.
¿Cambiaria algo de la ley concursal?
Se acaba de aprobar el pasado día 24 de septiembre una reforma
de la Ley Concursal exigida por la Comisión Europea que, entre otras
cosas, intenta facilitar la refinanciación. Siempre se pueden cambiar
cosas. Algo fundamental y que no se ha tocado sería un proceso específico para personas físicas, ya que la Ley Concursal está pensada
para las empresas, pero las familias también quiebran y se encuentran con una ley que no está adaptada a ellos.
Antes de la actual crisis el concurso de acreedores era un tema “tabú”
entre los empresarios españoles ¿cree que la magnitud de la actual
crisis ha servido para relativizar y normalizar la palabra concurso?
The process depends heavily on the courts, since not all support the
same workload, but about a year or maybe sometimes more.
What is the hardest part of the process?
From the human standpoint, for me, the job layoffs unfortunately because bankruptcy proceedings are processes of restructurisation and
you have to accept them. From a management standpoint, the day
to day with banks, suppliers, etc. .... We have to get the management
of the company continuing to operate, which is also another advantage of the bankruptcy. Usually until the bankruptcy is declared the
suppliers, banks ... all the people, including physical and legal entities around the company, are afraid because they know that there
are financial problems. Once declared, the bankruptcy ensures that,
if something is approved by the bankruptcy administration, then that
is guaranteed, and it provides that extra confidence they need to continue working with the said company.
Would you change anything of the bankruptcy law?
An amendment to the Bankruptcy Act, required by the European Commission, has just been adopted last September 24th. which, among
other things, aims to facilitate the refinancing. You can always change
things. Something fundamental that has not been touched would be
a specific process for individuals, as the Bankruptcy Law is designed
for businesses, but families also go under and find themselves faced
with a law which is not adapted to them.
Before the current crisis, bankruptcy was a “taboo” subject among
Spanish employers. Do you think that the magnitude of the current
crisis has served to relativize and standardize the word ‘bankruptcy’?
Sin duda, cuando comencé en esto en 2004, el concursal era un tema
tabú. Incluso en Valencia los empresarios tienen un sentido muy fuerte
del pundonor y no querían que nadie lo supiera. Hoy en día se empieza
a ver como una solución e incluso se empieza a reconocer a aquellos

Even in Valencia entrepreneurs have a strong sense of self-respect

and Madrid, just a few months ago. What is the spirit of your new
project?
Hace tan solo unos meses que usted ha fundado Antonia Magdaleno
Abogados con sede en Valencia y Madrid. ¿Cuál es el espíritu de su
nuevo proyecto?
The spirit of this new project is to create a highly specialized office with
professionals at the same level as in other large firms, with knowledge,
but close to the customer, close to their problem and experiencing
their problem. Specialization is essential. Our work involves the problems of the company, especially now refinancing and bankruptcies,
but we are also specialists in procedure, and judicial proceedings. All
those surrounding the company, from the liability of directors, problems between partners, industrial property, unfair competition.

the eurozone. Do you think that Spanish companies are now better
prepared to face a replica of the financial earthquake of 2008?

Spanish companies are already accustomed to the crisis, which
should lead to better preparation, so yes, we all know how to move
much better in this new scenario.

Would the recession returning imply a bigger number of bankruptcies?
¿Que volviese la recesión implicaría mayor número de concursos?
Sin duda, en estos últimos años ha habido muchas refinanciaciones a
corto esperando en que en 2 o 3 años se saliese de la crisis. Si esto
no se cumple, probablemente haya muchas empresas que tengan de
nuevo problemas.
Certainly in recent years there have been many short term refinancing
deals hoping that in 2 or 3 years we will get out of the crisis. If this
isn’t true, there will probably be many companies that have problems

Tras una temporada retirado de la competición, a causa de las lesiones, el pasado verano reaparecía Juan Carlos Ferrero. El tenista de
Ontinyent lo hacía a lo grande venciendo en el torneo de Stuttgart
y dándolo todo en el Open de Estados Unidos. Este hombre tímido,
apasionado de la velocidad, el cine y la lectura, se prepara para
conseguir más títulos. La mirada ya está fijada en el Open de la
Comunidad Valenciana y los Juegos de Londres.
After a season away from all competition because of injuries, Juan
Carlos Ferrero reappeared last summer. The tennis player from Ontinyent did it in style: winning the Stuttgart tournament and giving it
his all in the U.S. Open. This shy man, whose passions are fast cars,
movies and reading, is preparing himself to win more titles. His eyes
are already fixed on the Valencian Community’s Open Tournament
and the Olympic Games in London.
Ha sido mucho el tiempo de espera, pero a inicios del verano nos
dabas la noticia y reaparecías en Stuttgart y en Estados Unidos.
¿Cómo valorarías tu vuelta a las pistas?
It’s been a long wait, but in early summer you gave us the news and
then reappeared in Stuttgart and the United States. How would you
rate your return to the courts?
La vuelta a las pistas ha sido bastante positiva. Tras las operaciones
estuve muchos meses de baja y al final, tras estar mucho tiempo
trabajando con mis preparadores físicos, fisioterapeuta, etc…, he conseguido volver. Y empezar ganando el torneo de Stuttgart da una
motivación extra.
The return to the courts has been quite positive. After the operations I had to rest for many months and in the end, after spending
a lot of time working with my trainers, physiotherapists, etc ... I
made it back. And starting off winning the Stuttgart tournament
gives me extra motivation.

Without a doubt, with an improved state of mind. Even though
feeling the typical niggles due
to the lack of competition, I feel
good mentally. Nevertheless, I’ve

A los siete años comenzaste con esto del tenis. ¿De dónde venía
esa afición?
Lo he heredado de mi padre. Él era muy aficionado al frontenis y en ese
momento comencé a jugar con todas las raquetas que encontraba contra las paredes de mi propia casa. Aún recuerdo su cara cada vez que
rompía un enchufe de un pelotazo.
Muchos quizá piensen que esto de ponerse en una pista desde jovencito y
empezar a ganar torneos puede resultar fácil. Pero seguro que, hasta escalar a los primeros puestos de la ATP,
el camino estaba lleno de obstáculos.
¿Cómo fue ese trayecto de tu vida?
Es uno de lo momentos más duros
de la carrera deportiva de un tenista. Ya no solo porque supone un
alto sacrificio para uno mismo sino
también para toda la gente que te
apoya y está a tu alrededor.
Eres imagen de la academia de tenis Equelite de Villena. Es importante
que los jóvenes tengan como referencia a deportistas de élite. ¿Qué
ofreces a los chavales y qué te enseñan los chavales a ti?
En mí pueden ver que aún y llegando
al número uno nunca se debe perder
la profesionalidad ni las ganas de dar
lo mejor de uno mismo en el día a día.

Tanto en tu pueblo, Ontinyent, como fuera de él. ¿Qué es lo que más
te ha impresionado de la afición?
De la afición, sobre todo, me quedo con su lealtad, con todos los ánimos que recibimos a diario por parte de muchos de ellos en la Academia, en las redes sociales, en el mismo blog de mi página personal…
Roland Garros, Copa Davis, Montecarlo,… ¿Qué ha sido lo más importante en tu carrera deportiva?
Cada uno de los títulos ha sido importantísimo en el momento en que
ha llegado. Aún así, creo que recuerdo con máxima claridad la primera Copa Davis o el Open de Valencia.

You started playing tennis when you were 7 years old. Where did this
love of tennis come from?
I have inherited it from my father. He was very fond of racquetball and then
I started playing with all the rackets I could find against the walls of my
own house. I still remember his face every time I broke a socket from a hit.
Many may think that being on a tennis court from a young age and starting to win tournaments is easy. But
surely, until climbing to the top of the
ATP, the road was bumpy. How was
this trajectory of your life?
It’s one of the hardest moments of a
tennis career. Not only because it involves a high sacrifice for you yourself
but for everyone who supports you
and are near to you.
You are the public image of the tennis academy Equelite in Villena. It’s
important that young people have
elite athletes as a reference. What do
you offer the kids and what do they
teach you?
They can see in me that even reaching
the position of number one must never
lose ones professionalism or desire to
give your best every day; always doing
so humbly in all aspects of life. And for
their part, they manage to keep awake
in me that motivation you need to have
to keep going in this sport.
They say that your shyness, your way of being, makes people feel
closer to you. The public admire you and always show that admiration whatever; both in your town, Ontinyent, and outside it. What has
impressed you most about your fans?
Regarding the fans, above all, I’ll take their loyalty, with all the encouragement we receive daily from many of them in the academy,
in social networks or in the blog on my personal page...
Roland Garros, the Davis Cup, Monte Carlo... Which has been the
most important in your sporting career?
Each one of those titles has been important at the time. Still, I think
I remember most clearly the first Davis Cup and the Valencia Open.

En breve comienza en Valencia el Open de Tenis Comunitat Valenciana. ¿Te veremos por la capital del Turia? ¿Qué piensas de este
torneo y sobre la posibilidad de que la Generalitat renuncie a su
organización?
Es un torneo especial. Ahora mismo estoy entrenando al máximo para
poder estar a mi nivel más alto y volver a estar jugando delante del
público de mi ciudad. Además, es un torneo que se juega ante un
marco único por lo que todavía tengo la esperanza de que la Generalitat haga todo lo posible para poder seguir manteniendo todo el
apoyo que ha dado este tiempo atrás.
Nos encontramos en una época en la que España es un referente
deportivo. ¿En qué momento está el tenis español?
El tenis español está más que demostrado que se encuentra en el
primer peldaño a nivel mundial y eso lo demuestran todos los resultados y la cantidad de top 100 españoles dentro del ranking ATP.
El próximo año hay cita olímpica en Londres, pero también muchos
torneos. ¿Cuáles son tus próximas aspiraciones?
No me pongo metas, es algo que hay que valorar día a día. Actualmente, lo que más me interesa es no tener problemas físicos y a partir
de ahí, veremos hasta dónde podemos llegar.

The Tennis Open of the Valencian Community is starting soon. Are
we goingto see you in the capital of the Turia? What do you think of
this tournament and about the possibility that the Local Government
may give up on organizing it?
It’s a special tournament. Right now I’m in maximum training to get up
to my highest level and to get back playing in front of the people of
my city. Besides, it’s a tournament with its own unique brand so I have
still the hope that the Government will do everything possible to continue giving it all the support it has given it up to now.
We’re in an era in which Spain is a sporting reference. In what sort of
moment do we find Spanish tennis?
Spanish tennis has more than demonstrated why it finds itself number
one in the world as shown by the results and the number of Spanish
players in the top 100 ATP ranking.
Next year there’s the Olympics in London but also many tournaments. What are your future aspirations?
I don’t set myself goals as it’s something that must be evaluated daily.
What interests me most at the moment is not having physical problems and, from there, we’ll see how far we can get.

firma Ramón Gurillo. Si no ha escuchado hablar de él, tome nota
porque este valenciano afincado en Londres, desde hace más de
una década, se ha convertido en un diseñador de referencia. Sus
creaciones aparecen en las publicaciones de moda más relevantes a nivel internacional. Prendas para hombres y mujeres muy
diferentes...Aunque según Gurillo todos tienen un punto en común:
son muy ‘cool’.
It’s easy to let yourself be seduced by knitwear and even more so if
they’re Ramón Gurillo. If you’ve not heard of him, take note because
this Valencian, based in London for over a decade, has become an
oft-referred to designer. His creations appear in the most influential
fashion publications worldwide. Out of the ordinary clothing for men
and women... although, according to Gurillo, they all have one thing
in common: they are very cool.
Ramón, ¿hay que salir de España
para hacer realidad los sueños?
No necesariamente, aunque en muchos o en demasiados casos parece
la norma.

¿Notaste diferencia de trato y oportunidades en el extranjero?
Digamos que en el extranjero y sobretodo en las grandes capitales
hay más cultura de moda. Es muy
importante para el funcionamiento
correcto de este sector. También
parece que si logras éxito fuera es
mas fácil que se reconozca tu trabajo aquí.
Ramón, does one have to leave

true?
Not necessarily, although in many or
all too often it seems to be the norm.
Did you notice a difference in the
way you were treated and your opportunities abroad?
We can say that overseas - and especially in the big cities - there is a
greater fashion culture. It’s very important for the proper functioning of
this sector. It also seems that if you
succeed overseas it’s easier to get
your work recognized here.

Es una ciudad muy estimulante. Con
una efervescencia impresionante
cultural y creativamente hablando.
En un principio fue una aventura de
unos meses... Más tarde se convirtió
en mi hogar y base de operaciones.

It’s a very stimulating city with an impressive effervescence, both culturally and creatively speaking. At first it
was an adventure for a few months...
later it became my home and base

feel it’s the ideal platform to present
my work.

Por supuesto. Valencia es mi casa y
me gusta mucho. Aquí esta mi gente.
¿Cómo es tu nueva colección?
Es una colección joven y fresca,de
clara inspiración urbana y cosmopolita. Es artesanal y detallista. Como
siempre el protagonismo lo tiene la
calidad de los materiales. Rojizos,
vainilla,azules y verdes componen los
tonos de mi colección más colorista
hasta la fecha.
¿Quiénes son y en qué ámbitos se
mueven tus clientes habituales?
“El punto hecho a mano es una tradición muy
mediterránea”
Tenemos clientas muy ‘cool’ y modernas de 20 años y otras de 60.
Suelen ser cultas y más que seguir
las tendencias de moda, buscan
calidad y adaptar las prendas a su
estilo. Son artistas, galeristas de
arte,mujeres de negocios... Aunque
también tenemos clientas que viven
en la campiña inglesa...
¿Cuál fue tu trampolín?
Un momento muy importante en mi
carrera fue mi debut internacional
en la ‘London Fashion Week’, en septiembre de 2009. La colección fue
calificada por el ‘New York Times’ y
el ‘International Herald Tribune’, la biblia de la moda, como una de las mas
destacadas de esa 25 edición de la
pasarela londinense. Captó también
la atención de importantes medios
como el ‘Vogue UK’. En un negocio tan
trepidante como éste, el éxito está en
evolucionar temporada tras temporada y seguir estando presente en los
puntos de venta más importantes.
Of course. Valencia is my home and I
really like it. Here are my people.
What’s your new collection like?
It’s a young and fresh collection, clearly
inspired by the urban and cosmopolitan. It’s hand crafted and meticulous.
As always, the protagonist is in the
quality of the materials. Reddish colours, vanilla, blues and greens make up
the tones of my most colourful collection to date.

Who are your regular customers and in
which areas do they move?
We have very ‘cool’ and modern 20
years old customers and others who
are 60. They’re usually educated and
more than following fashion trends,
they’re looking for quality garments in
their favoured style. They’re artists, art
gallery owners, business women ... but
we also have customers who live in the
English countryside...
What was your springboard?
A very important moment in my career
was my international debut in ‘London
Fashion Week’ in September 2009. The
collection was described by the New
York Times ‘and the’ International Herald Tribune, the fashion bible, as one
of the most outstanding of the 25th
edition of the London fashion parade. It
also caught the attention of major media as the ‘Vogue’. In a business as exciting as this, success is all about evol-

Where does your passion for knitwear come from? Is it a way to
differentiate yourself?
Y tú ¿cómo te vistes?
Me visto de manera muy cómoda y natural.Me gustan las prendas
de diseñadores japoneses como ‘Yohji Yamamoto’ y ‘Comme des
Garcons’ que combino con otras mas asequibles y casuales. También me gusta mucho la estética de firmas actuales como ‘Lanvin’
o ‘Haider Akerman’.

Handmade knitwear is a very Mediterranean tradition, very us. I’ve
always seen my mother knitting, it’s her ‘hobby’. My first collection in
London consisted of twelve handmade items of handmade knitwear
that were sold in the best boutiques in London.
And as for you, how do you dress yourself?
I dress very comfortably and naturally. I like Japanese designers such

En la sociedad moderna en la estamos inmersos, la proteína está
intrínsecamente unida al consumo de carne o alimentos de origen
animal. La proteína ocupa un lugar casi venerado y conceptualmente
unido a la fuerza y el poder muscular. Pero el desarrollo de la ciencia
nos ha ido desgranando y revelando otras facetas bien distintas de lo
que son las proteínas y para qué sirven.
In modern society in which we are immersed, protein is intrinsically
linked to the consumption of meat or animal food. Protein plays a
most revered role and is conceptually linked to strength and muscle
power. But the development in science has been revealing other different facets of what proteins are and what they are for.
Indudablemente las proteínas son esenciales para el funcionamiento
del cuerpo humano, intervienen en multitud de funciones como la
formación de los jugos digestivos, hormonas, proteínas plasmáticas,
hemoglobina, vitaminas y enzimas que llevan a cabo las reacciones
químicas que se realizan en el organismo. Intervienen también en la
formación de anticuerpos que actúan contra infecciones o agentes
extraños. Ayudan en la creación del tejido corporal, el crecimiento y
el mantenimiento de las células, la contracción de los músculos, y en
caso de necesidad también pueden aportar energía.
Pero, ¿qué son las proteínas? y sobre todo ¿dónde se encuentran y qué
cantidad necesita nuestro organismo para su correcto funcionamiento?
Cuando ingerimos proteínas nuestro organismo debe descomponer
estas proteínas en moléculas más sencillas, llamadas aminoácidos,
para luego formar sus propias proteínas. Es decir que nuestro organismo lo que realmente necesita son aminoácidos para así formar la
proteína que posteriormente intervendrá en los múltiples procesos de
nuestro organismo.
El cuerpo humano necesita 20 aminoácidos para fabricar sus proteínas y todos estos aminoácidos, excepto 8 de ellos, los puede sintetizar. Estos 8 aminoácidos que el cuerpo humano no puede fabricar,
reciben el nombre de aminoácidos esenciales y se suministran a través de los alimentos.
Cuando hablamos de proteínas completas,
hablamos simplemente de alimentos que
contienen todos los aminoácidos esenciales
para el organismo y es por eso que cuando
nos referimos a la carne o productos derivados (leche, huevos), decimos que sus proteínas son completas.
Pero ¿qué pasa con las proteínas de origen
vegetal?, ¿tienen todos los aminoácidos
esenciales?, y ¿son suficientes para una
correcta alimentación?
Proteins are undoubtedly essential to the functioning of the human
body, involved in many functions such as the formation of digestive
juices, hormones, plasma proteins, hemoglobin, vitamins and enzymes that carry out chemical reactions that take place in the body.
They are also involved in the formation of antibodies that act against
infections or foreign agents. They assist in the creation of body tissue
growth and maintenance of cells, the contraction of muscles, and if
necessary can also provide energy.
But what are proteins? And above all, where they are and what quantity do we need for our body to function properly?
When we eat protein our body must break down these proteins into simpler molecules called amino acids, and then form their own proteins. That
is to say that what our body really needs are amino acids to form the
protein which subsequently is involved in multiple processes of our body.
The human body needs 20 amino acids to build its proteins and these
amino acids, except 8 of them, can synthesize. These 8 amino acids
that the body cannot make, are called essential amino acids and are
supplied through food.
When we talk about complete proteins, we are simply talking about
food containing all essential amino acids for the body and that is why
when we talk about meat products (milk, eggs), we say that proteins
are complete.
But what about plant-based proteins? Do
they have all the essential amino acids?,
and are they sufficient for a correct diet?
Plant proteins have all the essential amino
acids when combined with each other, because the pulses have an amino acid called
lysine that is lacking in cereals, and cereals
have the amino acids cisterna and mitionina
that pulses are lacking . The combination of
both types of foods makes them very complete at the level of amino acids (proteins).

Dado que por término medio las legumbres contienen 3 veces más
proteínas que los cereales, una combinación adecuada seria 1 a 3 de
legumbre con cereal. Por ejemplo: maíz con alubias, trigo con lentejas, arroz con garbanzos, o también legumbres con semillas: Garbanzos con sésamo.
Sería suficiente con la ingesta de alimentos vegetales para cubrir las
necesidades proteínicas de nuestro organismo si sabemos combinar
adecuadamente estos alimentos y las cantidades necesarias.
La OMS recomienda que el 15% de los nutrientes que tomamos sean
proteínas. Es decir que con ese 15 % sería suficiente para que nuestro
organismo realizara todas funciones necesarias a nivel de proteínas.
Cuando ingerimos un exceso de proteínas el cuerpo humano las convierte en energía. Pero esta forma de conseguir energía no es la más
deseable, pues aparte de agotar y estresar nuestro hígado (encargado de dicha transformación), produce multitud de desechos que
contaminan nuestro cuerpo y nuestros riñones. Si tomamos alimentos
de origen animal a diario (carne, huevos, leche, quesos), fácilmente sobrepasaremos la cantidad adecuada de proteínas y estaríamos
sobrecargando nuestro hígado y nuestros riñones, esto unido a un
mayor aporte de grasas saturadas y purinas causantes de múltiples
problemas de salud.
En cambio tomar proteínas de origen vegetal nos reporta muchas
ventajas pues son menos acidificantes, contienen menos purinas y
se eliminan mejor, (por contener potasio y poco sodio), tienen fibra
(necesaria para nuestros intestinos), contienen menos grasas y son
insaturadas, contienen más vitaminas, oligoelementos y antioxidantes
y sobrecargan menos el hígado y los riñones.
Además de las legumbres existen otros muchos alimentos vegetales
que tienen una gran cantidad de aminoácidos (proteínas) que pueden apoyar perfectamente las dietas vegetarianas: Seitán, tofu, tempeh, frutos secos, polen, levadura de cerveza, algas.
Given that on average pulses contain three times more protein than
cereals, an appropriate combination would be 1 to 3 of pulses withcereals. For example: corn and beans, wheat and lentils, rice with
chickpeas, or even vegetables with seeds, chickpeas with sesame.
It would be sufficient with the intake of plant foods to meet the protein needs of our body if we properly combine these foods and the
quantities required.
The WHO recommends that 15% of the nutrients that we take are proteins. This means that with 15% there would be enough for our body to
perform all necessary functions at the necessary protein level.
When we eat too much protein the body converts it into energy. But
this way of obtaining energy is not the most desirable because, apart
from exhaustion and stress, our liver (responsible for this transformation), produces a multitude of waste that pollutes our bodies and our
kidneys. If we take animal-based foods daily (meat, eggs, milk, cheese), we will easily surpass the right amount of protein and we would be
overloading our liver and our kidneys. This, coupled with the greater intake of saturated fats and purines will cause multiple health problems.
Instead taking vegetable proteins will giveus many benefits as they
are less acidifying, contain fewer purines and are best eliminated (because they contains potassium and low sodium), have fibre (necessary for our intestines), contain less fat and are unsaturated, contain
more vitamins, trace elements and antioxidants and overload the liver
and kidneys less.
Besides pulses there also exits other plant foods that have a large
amount of amino acids (proteins) that may fully support vegetarian
diets: Seitan, tofu, tempeh, nuts, pollen, brewer’s yeast and algae.

a stop at a Druze village, a self-proclaimed Muslim religious minority,
which considers the Fatimid caliph Al-Hakim as a manifestation of
God and distinguishes them from other Ishmaelis.

25 gramos de piñones
1 ramita de menta
Para 6 personas
RECETA RECIPE

3 medium onions
3 ripe golden apples
3 ripe bananas
½ cup of olive oil
3 tablespoons of honey
25 grammes of pine nuts
1 sprig of mint
MODO DE HACERLO:
METHOD:
Encenderemos el horno y mientras alcanza los doscientos grados,
en una cazuela mediana de barro colocaremos el arroz y el aceite.
Lo removeremos bien con una cuchara de madera hasta conseguir
que quede totalmente impregnado hasta el último grano de arroz. Le
añadiremos el agua, el diente de ajo rallado y un puñado de sal. Lo
mezclaremos todo muy bien y volveremos a probarlo de sal hasta
que alcance el punto, sin pasarnos. Lo introduciremos en el horno
durante treinta minutos. Después lo apagaremos y dejaremos que
repose un tiempo. A continuación prepararemos una fuente de cristal
y colocaremos el arroz ya cocido por toda la superficie procurando
que quede bien suelto y perfectamente repartido.
Turn on the oven and, whilst it’s heating up to two hundred degrees
celsius, place the rice and oil in a medium-sized clay casserole dish.
Then stir well with a wooden spoon until every last grain of rice is fully
impregnated. Add water, grated garlic and a handful of salt. Mix well
and taste for seasoning. Put the dish in the pre-heated oven for thirty
minutes. When it’s ready, turn off the oven and let it rest for a while.
Then put all the rice in a glass bowl making sure it doesn’t stick together and is evenly distributed.
En una sartén mediana colocaremos la cebolla previamente picada,
las manzanas y los plátanos cortados en trozos pequeños. Lo taparemos y lo dejaremos que cueza lentamente hasta que alcance un color
acaramelado, le añadiremos las dos cucharadas de miel y cerraremos el fuego. Pasados unos minutos verteremos todo el contenido en
la fuente de cristal y con la cuchara equipararemos la mezcla.
Mientras tanto en una sartén pequeña doraremos los piñones y con ellos cubriremos la superficie de este arroz afrutado. Terminaremos
el plato rociando sutilmente la miel de la tercera cuchara que teníamos reservada formando
ligeras pinceladas. Colocaremos en medio la
ramita de menta y listo para servir.
Nota: Se pueden hacer pequeños flanes con el
aro de cocina y el plato quedará más sofisticado como se percibe en la foto.
Add the previously chopped onion to a medium-sized frying pan together with the apples and bananas which have been cut into small pieces.
Cover and let it slowly cook until it’s a caramel colour, adding two tablespoons of honey and taking it off the heat. After a few minutes, pour the
entire contents into the glass bowl and level it out with a spoon.
Meanwhile, toast the pine nuts until a golden colour and sprinkle over
the fruity rice. Finish the dish by subtly sprinkling the remaining spoon
of honey over the top using light brushstrokes. Place the sprig of mint
in the middle and serve.
Note: You can make small flans with a kitchen
ring and the dish will take on a more sophisticated appearance, as can be seen from the photo.

There is a standardized system to develop the practice of wine tasting. During the sensory analysis we will examine the visual stage, olfactory stage, tasting stage and tactile sense. These results can be interpreted and used to try to define the various characters of the wine.

En la cocina de su restaurante, mientras elabora una salsa romescu,
nos sentamos para conversar sobre estos años de cocina en Valencia
y sobre cómo piensa celebrar la mayoría de edad. Joaquín Schmidt
cocina para sus amigos o, al menos, así considera a quienes acuden
a su restaurante. Un hombre cercano que ha conseguido engatusar a
sus comensales con su cocina de autor y mediterránea, mientras es
feliz haciendo lo que hace. “Uno se vuelve con los años más sereno,
más tranquilo, pero con mucha ilusión y las ganas del primer día. Estoy feliz de estar en Valencia, a la otra orilla del río, viviendo con, por y
para mis amigos”, señala Joaquín.
Para celebrar su 18º Aniversario, Joaquín ha querido contar con la
colaboración de su amigo Javier Serrano de “Casi todos los sentidos”.
De esta manera, del 7 al 13 de noviembre doce personas podrán sumergirse cada día en un mar de sentidos en el que el único que no
estará invitado será la vista. El tacto, olfato, oído y sobre todo el gusto
se potenciarán para hacer vivir a los clientes experiencias únicas. “Se
trata de una experiencia sutil, sensible, tremendamente emocionante
y con una parte muy importante que es la gastronomía. Dejas de
estar sentado en una silla para levitar y viajar”, apunta Javier. Por su
parte, Joaquín hace una recomendación a quienes quieran disfrutar
de sus cenas de los sentidos. “Cuando lleguen que se miren las caras
y, al final, que se las vuelvan a mirar. Verán que la expresión ha cambiado. Es algo mágico, impresionante.”
Y si para la celebración lo tiene todo a punto, para después qué. Pues
después seguir trabajando. Tanto él como su amigo Javier Serrano
tienen muy claro lo que hacen y lo que les gusta. Así que de momento,
seguirán maravillando a sus comensales, con sus diferentes creaciones, dispuestos a sorprender a todos los sentidos.

In the kitchen of his restaurant, whilst making a romescu sauce, we
sat down to discuss these years of cooking in Valencia and on how
he reckons he’s going to celebrate reaching the “legal age”. Joachim
Schmidt cooks for his friends or at least that’s the way he sees all
those who come to his restaurant; a n approachable man who has
managed to entice diners with his hand-crafted Mediterranean cuisine, whilst being happy doing what he does. “You become calmer over
the years, quieter, but with great enthusiasm and the excitement of
the first day. I’m happy to be in Valencia, on the other side of the river,
living with, for and on behalf of my friends”, says Joaquin.
To celebrate his 18th anniversary, Joaquin has wanted to have the
collaboration of his friend Javier Serrano of “Almost all the senses”.
Therefore, from the 7th to the 13th November 12 people will be able
to immerse themselves each day in a sea of senses in which the only
one not invited will be that of sight. Touch, smell, hearing and especially taste will be increased so permitting the customers to enjoy
unique experiences. “This is a subtle and sensitive experience which
is extremely exciting and with a very important part which is the food.
Allow yourself to be seated on a chair to levitate and travel”, points
out Javier. Meanwhile, Joaquin makes a recommendation to whoever
wishes to enjoy one of his dinners of the senses. “When they arrive,
look at the faces and then, at the end, look at them again. You will see
that the expression has changed. It’s something magical, awesome”.
And if you have everything in place for the celebration, then what
comes next? Well, after that, keep on working. Both he and his friend
Javier Serrano are very clear in what they do and what they like. So for
the moment then, they will keep on delighting their diners with their
different creations, ready to surprise all the senses.

El IVAM presenta una exposición del artista José Manuel Ciria que
recoge sus obras más sobresalientes de la última década (2001-2011)
realizadas entre Madrid y Nueva York. A través de una cuidada selección de más de cien obras, esta muestra destaca las estrategias
aparentemente paradójicas utilizadas por el artista que, vistas en su
conjunto, transmiten un mensaje claro y contundente. Son 28 pinturas
y 82 dibujos distribuidos por series que se mueven entre la abstracción y la figuración, con trazos que abarcan desde el gesto espontáneo hasta el rigor preciso de la cuadrícula.
The IVAM presents an exhibition by the artist José Manuel Ciria collecting all his most outstanding works of the last decade (2001-2011) carried out between Madrid and New York. Through a careful selection
of over one hundred works, this exhibition highlights the seemingly
paradoxical strategies used by the artist that, seen as a whole, convey
a loud and clear message. There are 28 paintings and 82 drawings
distributed over series that move between abstraction and figuration,
with features ranging from the spontaneous gesture to the precise
rigour of the grid.
La exposición muestra la importancia que siempre ha tenido en el
trabajo del artista el tema de la cabeza, motivo central de su obra en
los últimos tres años. Tanto como elemento geométrico o bien como
evocación de la figura humana, la cabeza proporciona a Ciria una
forma constante con la que el artista puede realizar infinitos experimentos con el color, la línea y el gesto pictórico. Al fin y al cabo, es en
dicha variación en la que se fundamenta la obra de Ciria y la que lleva
aún más lejos sus exploraciones artísticas.
The exhibition shows the importance that the theme of the head has
had in the artist’s work, the central motive of his work over the past
three years. Both as a geometric element and as an evocation of the
human figure, the head provides Ciria with a consistent form with
which the artist can carry out infinite experiments with colour, line and
pictorial gesture. At the end of the day, it is this variation that is on
which the work of Ciria is based and that leads his artistic explorations
even further afield.

Felcan es una asociación sin ánimo de lucro fundada hace unos años,

Desde hace 1.704 horas y 20 minutos, me llaman Argo, antes tenía
otro nombre, que prefiero olvidar.
Ever since1704 hours and 20 minutes ago I’ve been called Argo; before that I had another name that I’d rather forget.
Mi mamá era una caniche muy bonita y mi papá un apuesto perro
callejero. Pronto vino una niña rubia que me llevó con ella, pese a la
reticencia de sus papás
My mum was a beautiful poodle and my dad a handsome mutt. Soon
came along a little blonde girl who took me with her, despite the reluctance of his parents.
Me mimaban, me cepillaban y me daban chucherías de perro. Cuando los días empezaron a ser más largos salíamos al parque y jugábamos con una pelota. Una noche, cuando mi amita dormía, sus papás
me sacaron de la cama. Yo creía que volvíamos al parque y estaba
muy contento, pero lo dejamos atrás y nos adentramos por carreteras
muy oscuras. Hablaban entre ellos y decían algo de unas vacaciones
y de un hotel que no era para perros. De repente el coche se detuvo y, sacándome bruscamente, me depositaron debajo de un árbol,
volviendo a arrancar sin mí. Yo corrí todo lo que pude, pero no logré
alcanzarlos y, extenuado y sediento, me dormí al borde de un camino.
They used to pet me, brush me and gave me doggy treats. When
the days became longer we used to go to the park and played with
a ball. One night, when my mistress was asleep, her parents took me
out of my bed. I thought we were going back to the park and was very
happy, but we left it behind and entered onto very dark roads. They
were talking amongst themselves and said something about a holiday
and a hotel that didn’t allow dogs. Suddenly the car stopped and they
abruptly took me out and placed me under a tree, leaving without me.
I ran for as much as I could, but I couldn’t reach them and, exhausted
and thirsty, I slept on the edge of the road.
Cuando ya había amanecido, me despertó la voz de una chica que
hablaba por teléfono. Me dejé coger porque me inspiraba confianza y
me subió a una furgoneta con jaulas. En una de ellas había un perro
viejo de ojos tristes, que apartó su mirada de mí sin hacerme ni caso.
Llegamos a un lugar donde había otros muchos perros metidos en
habitaciones con barrotes. Allí por fin pude beber, me hicieron fotos
y me miraron los dientes. Les oí decir que tengo un año, que soy de
tamaño pequeño, unos 6 kilos, y que me van a llamar ARGO.
When it was morning, I awoke to the voice of a girl who was speaking
on the phone. I let her take me because she inspired my confidence
and I got into a van with cages. In one of them was an old dog with sad
eyes that looked away from me without giving me any attention. We
arrived at a place where there were many other dogs stuck in rooms
with bars. There I was finally able to drink, they took photos of me and
looked at my teeth. I heard them saying that I was one year old, of
small size, about 6 kilos, and that they were going to call me ARGO.

España es uno de los países de Europa donde mayor número de
animales se abandonan cada año. Según el estudio anual de la Fundación Affinity, cada 3 minutos y medio, se recoge un animal de compañía. Esta cifra es un gran indicador del abandono de perros y de
gatos que se vive en España y parece que ya no nos afecta lo más
mínimo. Algunos seres humanos carecen de la capacidad o de la inteligencia emocional necesaria para tener conciencia de que la vida
que “tienen en su manos” debe ser respetada y valorada.
Spain is one of the European countries where the greatest number of
animals are abandoned every year. According to the annual survey of
the Affinity Foundation, a pet is picked up every 3 ½ minutes. This figure is a great indicator of the abandonment of dogs and cats that live in
Spain and it seems not to affect us in the least. Some humans lack the
ability or the emotional intelligence necessary to be aware that the life
they “have in their hands” should be respected and valued.
Desde la Perrera de la Mancomunitat de l´Horta Nord, cada semana, voluntarios y trabajadores tienen que dar cabida a decenas de
perros que se han quedado sin familia, se encargan de recogerlos,
cuidarlos y logran la difícil misión de encontrarles un adoptante para
que puedan volver a tener una vida digna. Además en esta perrera no
sacrifican a los perros.
¿Cómo se puede ayudar a los perros de la Perrera de la Mancomunitat de l´Horta Nord?
En primer lugar; adoptando en lugar de comprar cuando se puede y
quiere tener perro, y procurando que nuestras amistades y conocidos
hagan lo mismo.

Each week, from the Kennel of the Free Association of Municipalities
of l’Horta Nord, volunteers and workers have to accommodate dozens
of dogs that have been left without a family, be responsible for picking them up, care for them and manage the difficult task of finding
someone to adopt them so they can go back to having a dignified life.
Besides, in this kennel they don’t put the dogs down.
How can you help the dogs of the Kennel of the Free Association of
Municipalities of l’Horta Nord?
= First of all, by adopting instead of buying whenever you can and by
wanting to have a dog, and making sure that our friends and acquaintances do the same.

adopciones distantes, a los informáticos para gastos web...). También
se pueden donar objetos para perros, en buen uso, que puedan ser
reutilizados (comederos, transportines, sábanas, mantas, medicamentos, pienso, correas, collares…). Asimismo, se pueden donar objetos
decorativos o de cualquier tipo que puedan ser vendibles en mercadillos o tómbolas.

tercera edad, atendiendo un puesto de venta fijo o esporádico para
venta de objetos donados, prestando un local para efectuar dichas
ventas, de manera fija o eventual...)
