Julian Collado. Hacia 1910 Albacete, Ciudad de la cuchillería, Seña de identidad. Por su historia: Por su presente: Aunque se pueden encontrar referencias anteriores de la cuchillería local, es a finales del siglo XVII y principios del XVIII cuando, con el aumento de la demanda de armas blancas cortas, de tijeras de escribanía y de navajas, empiezan a tomar auge en la ciudad los oficios dedicados a estas manufacturas. Con el inicio del siglo XX, surgen las primeras fábricas en su mayoría de pequeñas dimensiones pero que ya aplican técnicas de producción industrial. Después, a lo largo de la centuria pasada, se mejora la técnica, aumenta y se diversifica la producción con variadas industrias complementarias, destinadas a la fabricación de mangos, remaches, fornituras, envases, ect… La industria de cuchillería y empresas afines es uno de los pilares económicos e industriales de nuestra provincia. Produce el 90% de la cuchillería española. Constituida, fundamentalmente, por pymes, se agrupa en unas 60 empresas, entre las que se encuentran artesanos, fabricantes industriales, comerciantes y empresas auxiliares. La industria de cuchillería se divide en tres grandes apartados: doméstica, profesional y deportiva, que han evolucionado de forma distinta, en función de la demanda del mercado y de la gran competencia que ha surgido en los últimos años. -4- Albacete, City of Knife -Making Knife Craftsmanship, an Identity Mark Through History Although we can find earlier references to local knife making, it is between the end of the 17th century and beginning of the 18th century, when an increasing demand for short, sharp weapons, scissors and folding knives gave rise to this kind of handicraft in the city. At the beginning of the 20th century, factories appeared, most of them small, where industrial production techniques were applied. Later, throughout the last century, modernization advanced and production increased and diversified through several complementary industries (handle making, riveting, accessories…) Presently The Knife making industry and its related businesses is one of the economic and industrial pillar of our province. It produces 90% of the Spanish Cutlery. Formed fundamentally by small and médium businesses, there are 60 entrerprises, including artisans, manufacturers, industries shops, and auxiliary business. The Knife making industry is divided in three important parts: domestic, professional and sporting, which have evolved in the distinct forms, in the function of market demands and the significant competition that has arisen in recent years. Concurso Literario sobre la navaja, a nivel nacional e internacional. Feria de Cuchillería, de exhibición y venta “Ciudad de Albacete & Knife Show. Ha impulsado la Fundación para el Desarrollo de La Cuchillería “FUDECU”, la Escuela de Cuchillería “Amós Núñez” y el Museo Municipal de la Cuchillería, ubicado en la Casa de Hortelano, inaugurado el día 6 de Septiembre de 2004. En el año 2010, organizó el I Congreso Internacional de Cuchillería y Muestra de Cuchillería, Arte y Tradición, celebrado en Albacete. En colaboración con el Ayuntamiento de Albacete, ha creado la Marca de Garantía “AB-Cuchillería de Albacete”, que avala el origen y calidad de los productos de cuchillería de Albacete. La Asociación La Asociación de Cuchillería y Afines, APRECU, es la organización profesional constituida el 28 de Junio de 1977, sin fines lucrativos, por la libre asociación de artesanos y empresarios de cuchillería, comercio e industria auxiliar, que ejerce actividades económicas comprendidas dentro del sector, su ambito es nacional. Cuenta con dotación permanente de personal (secretaria ejecutiva y letrado) y tiene vida autónoma de gran intensidad, siendo una de las asociaciones más dinámicas de esta provincia. En casi cuatro décadas de historia, APRECU ha sido distinguida con numerosos premios y galardones, caracterizándose por su empeño en la difusión de la cultura y las tradiciones, motivo por el cual promueve anualmente las siguientes actividades: Marca de Garantía y actual logopio de Aprecu -6- The association The Albacete Association of Cutlery, APRECU, is a professional non profit organization, formed on the 28th of June in 1977, for the free association of artisans, knife businesses, shops and industries. Aprecu is made up of permanent staff (executive secretary and attorney) and has intense, independent activity, being one of the most dynamic associations in the province. Through nearly four decades of history, APRECU has received several awards. Its main objective is to spread the culture and traditions. It is for this, that APRECU annually promotes the following activities: Regional Knife Making Contest including folding knives, and scissors, in which the winners are donated to the Museum of Cutlery of Albacete. National and International Literature Constest about folding knives “ Juan José García Carbonell” Cutlery fair, including exhibits and sales “ City of Albacete” & Knife Show. APRECU has created the Foundation for Development of Cutlery “ FUDECU”, of the School of Cutlery, “ Amós Nuñez” and the Municipal Museum of Cutlery, located in the House of Hortelano, inaugurated on the 6th of September, 2004. Escuela de Cuchillería actual sede de Aprecu -7- -8- Los cuchillos de Cocina Los cuchillos de cocina de calidad pueden durar toda la vida si se utilizan y se mantienen como conviene, por eso no tiene que extrañar que un buen cuchillo tenga un precio elevado, se va a amortizar. El cuchillo es un utensilio básico para el cocinero, no es necesario disponer de todos los tipos de cuchillos que existen aunque cada uno se haya diseñado con una finalidad, pero sí es necesario tener un mínimo de cuchillos con distintas características Un buen cuchillo nos permite hacer un buen trabajo, pelar, cortar, picar… es una tarea más sencilla siempre que se realice con la herramienta adecuada y claro, siempre que esté en buenas condiciones. Consejos básicos para mantener los cuchillos de cocina: de tipo plástico. Las superficies, cuanto más duras sean, con más facilidad desafilan un cuchillo. Por muy buenos que sean los cuchillos, si se utilizan de forma inadecuada, se estropean. No arrastrar el cuchillo para recoger los alimentos cortados, ni sobre ninguna otra superficie, pues de este modo se estropea el afilado. La solución es tan sencilla como dar la vuelta al cuchillo y recoger los alimentos con la parte no afilada del cuchillo. No utilizar el cuchillo de cocina para otras cosas: Es decir, si un cuchillo de cocina está destinado a cortar verduras, pescado o carne, no lo utilices para cortar el hilo de cocina o para abrir una bolsa de plástico (para esto siempre es más práctico una navaja). Por seguridad, tampoco utilices un cuchillo de cocinero para pelar un diente de ajo. Manipular el cuchillo de forma segura: Un cuchillo de cocina es un elemento que puede provocar daños físicos, no hace falta ser un gran chef para utilizar el cuchillo sin problema, sólo hay que tener la precaución necesaria para no lastimarse cuando se utiliza. También es importante tener en cuenta la posición en la que este utensilio se deja en la mesa de trabajo, hacia donde se coloca el filo de la hoja y la punta, siempre debe ser lo más alejado al cuerpo del cocinero, y en superficie estable. No se deben colocar cosas encima que nos impidan verlo, y si por accidente se va a caer al suelo, no hay que intentar cogerlo. Utilizar una superficie de corte adecuada: La mejor superficie de corte y que además favorece el mantenimiento del cuchillo de cocina es una tabla de madera o algunas -9- No introducir sitematicamente los cuchillos en el lavavajillas: Los cuchillos de cocina hay que lavarlos a mano, con una esponja y jabón líquido para la vajilla. Una vez limpios se deben secar bien y guardarlos adecuadamente. Si se introducen en el lavavajillas se pueden desafilar porque choquen con otros cubiertos, además, dependiendo del material con el que se ha fabricado el mango del cuchillo, se puede estropear. Mantener los cuchillos afilados: Es inevitable que con el tiempo, los cuchillos vayan perdiendo el filo, aunque esto se puede retrasar dándoles buen uso y un buen mantenimiento, llegará el momento en el que habrá que afilarlo. Esisten diversos tipos de afiladores que sólo atacan el cuchillo donde es necesario sin arañar la superficie del mismo, y que se pueden adquirir facilmente. Y siempre la mejor solución es llevarlos a un afilador profesional. Guardar los cuchillos adecuadamente: Los cuchillos de cocina no deben guardarse en un cajón sin protección, pues al chocar con otros utensilios de cocina van perdiendo el filo, e incluso pueden dañarse más. Lo ideal para guardar los cuchillos es utilizar un taco de madera que tengamos en la mesa de trabajo o un soporte magnético en la pared, de modo que las hojas del cuchillo están protegidas del contacto con otras herramientas de cocina. Que el cuchillo de cocina esté bien afilado es mucho más importante de lo que pueda parecer, en primer lugar es más seguro, si el cuchillo corta bien será más fácil de controlar, no obligará a realizar más fuerza o movimientos extraños. Además favorece también a los alimentos, un corte limpio daña menos a nivel celular y proporciona mejor aspecto. -10- The Kitchen Knives Quality Kitchen Knives can last a lifetime if you use and maintain them correctly, therefore you shouldn´t be surprise that good knives are expensive, they will pay for themselves. The knife is a basic utensil for the cook, it isn´t necessary to have all kids of knives although each one has been designed specific use, but it is necessary to have a minimum of knives with distinct characteristics. A good knife allows us to do a good job of peeling, chopping, and slicing… which are more basic tasks when they are done with the correct tools and obviously when the knives are good condition. Basic advice for maintaining kitchen knives: nor over any other surface, because in this way you lose the edge. The solution is as easy as flipping the knife to gather the food with the back of the knife. Don’t use Kitchen Knives for other things: That is to say, if a kitchen knife is meant to cut vegetable, fish or meat, you shouldn’t use it to cut kitchen twine or to open a plastic bag, for this it is safer and more practical to use a scissors. The ideal for storing knives is to use a block of wood or a magnetic support on the wall, so that the blades of the knives are protected from contact with other kitchen tools. Keep your knives sharp: It’s inevitable that over time, knives will lose their edge, although this can be delayed by using them correctly and proper maintenance, eventually you will have to sharpen them. There are different types of sharpeners which only affect the edge of blade without scratching it. There are easy obtained. The best solution is to take them to a professional sharpener. That your kitchen knives are sharp is more important than it might seem, in the first place it is safer, if the kitchen knife cuts well, it will be easier to control, and won´t require the use of force or strange movement.. Beside a clean cut is better for the structure and appearance of your food. -12- Cuchillo Mondador o Puntilla Los cuchillos mondadores o puntillas se utilizan para pelar y hacer cortes pequeños, permiten un corte con mayor filo y más fácil. Son los más pequeños y los más usados en la cocina. Su hoja es puntiaguda, un poco ancha , cortante y curva es ideal para pelar frutas y verduras pero también permite hacer composiciones decorativas. Paring Knives: Paring Knives are used to peel and to make small cuts. They are the smallest and the most used knives in the kitchen. The blades are pointed for peeling fruits and vegetables but they also allow you make decorative cuts. -13- Cuchillo para Queso Los cuchillos de queso se emplean en la mesa para cortar rebanadas o tacos de queso. Existen diversos tipos de cuchillos de queso, adaptados al tipo de queso que se desee cortar. Por regla general, depende de la textura del queso. Los cuchillos con dos mangos se usan para quesos más duros y curados, ejerciendo así mayor presión. De un solo mango son empleados para cortar quesos semicurados y quesos mas blandos. Cheese Knives Cheese Knives are used at the table to cut slices or chunks of cheese. There are various types of cheese knives adapted to the kind of cheese you want to cut. As a general rule, it depends on the texture of the cheese. Knives with two handles are used for harder and cured cheeses, giving greater pressure. Those with only one handle are used to cut semicured and softer cheese. -14- Cuchillo Santoku Santoku Knives Los cuchillos Santoku son cuchillos de cocinero japones, son ligeros, con la hoja más fina o delgada, lo que también lo hace más delicado según la superficie de corte a utilizar. Los Cuchillos Santoku son ideales para cortar carnes, pescados, verduras… No es adecuado para cortar piezas de carne con hueso a no ser que las piezas sean finas. Santoku Knives are Japanese kitchen knives. They are light with thinner blade which makes them more delicate depending on the cutting surface. Santoku knives are ideal for cutting meat, fish and vegetables…They are not adequate for cutting meat with bones unless the cuts are very fine. -15- Cuchillo para Lenguado Fillet Knives El cuchillo de lenguado es un cuchillo de hoja larga, estrecha, flexible y filo liso. Filetea lenguado, separándolo con gran facilidad de la espina. Fillet Knives are knives with a log, flexible, strong, smooth blade, used to fillet sole, easily separating it from the bones. -16- Cuchillo Verduras Vegetable Knives Cuchillo ancho y largo para poder hacer valanceo, filo liso y punta estable. Aparte de tener siempre un cuchillo apropiado y bien afilado tienes que dejar que la parte de los dedos que hay entre los primeros y segundos nudillos toque al hoja del cuchillo, dejando las yemas de los dedos hacia dentro. De esta forma el propio cuchillo “empujará” a los dedos hacia dentro, siendo imposible cortarlos. Conviene practicar antes de empezar hacerlo rápidamente, como lo hacen los chefs. Vegetables Knives are long, wide, well balanced knives with smooth rigid blades. Utilice un cuchillo de trinchar para rebanar un pavo horneado, carne asada, rebanar carne cocida o para un corte liso y minucioso, sin que se desgarre la pieza de carne. Especialmente apto para asados y carnes. El Tenedor de trinchar, compañero del cuchillo, le ayudara a mantener el producto (asado, etc.) en la posición correcta. La disposición de las puntas impide que se dañe la carne mientras se la está troceando. Carving Knives Carving Knives are designed to cut all types of cut meat, fowl and fish. They are uses to carve turkey, roast meat with smooth, fine, cuts leaving the meat intact. They are especially appropriate for roast meat. Carving forks, companion to knives help to maintain the meat in the correct position. The shape of the tines prevents damages to the meat while it is being cut. -18- Cuchillo Panero Bread Knives El cuchillo de pan es un cuchillo empleado para cortar el pan y que posee ciertas caracteristicas especiales, la principal es su filo en sierra de grandes dientes que permite desgarrar las fibras del pan facilmente. Los cuchillos de pan disponen de una hoja larga y fuerte con un filo ondulado, que rompe sin esfuerzo alguno la corteza dura del pan, facilitando asi el corte de rebanadas finas, gracias a su dentado agresivo. Bread Knives are used to cut bread and they have certain special characteristics, principally their serrated blades with large teeth which allow bread to be cut easily. Bread knives have a long, strong, blade with an undulating edge which breaks the hard bread crust without force, facilitating the cutting of fine slices thanks to their aggressive teeth. -19- Cuchillo Tomatero Tomato Knives Cuchillo para tomates tiene el filo con ondas regulares y permite cortar y partir fácilmente tomates o alimentos de corteza dura o piel firme. Diseñado para cortar en rodajas o gajos los tomates sin esfuerzo. Tomatoes knives have finely undulating edges which permit the easy cutting of tomatoes and other foods with a tough skin. They are designed to cut slices or pieces of tomato without effort. -20- Cuchillo Pastelero Cuchillo de hoja larga, ancha y firme. Utilizado para cortar, dividir y servir bases para tartas. Su hoja pastelera larga y ancha permite utilizarlo también para aplicar el relleno y distribuirlo de manera fácil por la superficie del dulce. Pastry Knives Knives of long, wide and firm blades, they are used to cut, divide and serve cake bases. Their long, wide blades permit them to be used for the application of frosting and its easy distribution on the surface of the cake. -21- Cuchillo Deshuesador Boning Knives Cuchillo de hoja delgada, con curvatura característica y filo liso. Perfecto para desprender los huesos de la carne. Se utiliza un cuchillo deshuesador para hacer cortes mariposa a una pierna de cordero, o para deshuesar una pechuga de pollo. El cuchillo deshuesador corta la carne alrededor de los huesos. Boning Knives have a thin, curved, smooth blade. Perfect for removing bones from meat. They are used to make butterfly cuts in leg of lamb or for removing bones from chicken breasts. Boning knives are for cutting the meat around the bones. -22- Cuchillo de Cocinero Chef ’s Knives Este cuchillo tiene una hoja muy ancha y rígida y con mucha punta. Se utiliza sobre todo para cortar en rodajas, en lonchas o en láminas y picar la carne (chuletas de cordero, panceta), el pescado (atún, pez espada, salmón) pero también sirve para cortar ajo y perejil o cortar en rodajas los pimientos. Theses knives have a very wide, rigid and pointed blade. Las características principales del Cuchillo Jamonero son una hoja larga, algo estrecha y con flexibilidad para que se pueda cortar finamente y con precisión mientras se acomoda el movimiento del corte al perfil del jamón. Los expertos del jamón dicen que para degustar el jamón debe ser cortado a mano, con el empleo de este tipo de Cuchillos Jamoneros. Ham Knives are special, of great length used for cutting slices of ham. The principal characteristics of ham knives are long, narrow, flexible blades which allow fine precision cuts. Experts say that the ham should be cut by hand using ham knives. . -24- Cuchillo de Salmón Salmon Knives Cuchillo de hoja larga y flexible con alvéolos alternados en ambas caras, para cortar y servir lonchas de salmón y jamón extremadamente finas. También se usa para cortar y dividir bases de tartas. Un buen cuchillo para salmón es lo que finalmente resultará imprescindible para conseguir unas lonchas finas y presentables. Utilizado por los carniceros para el despiece, es también un cuchillo profesional empleado en las carnicerías para filetear y extraer diferentes porciones de carne. They are used by butchers “chopping” and also by professionals to fillet and extract different cuts of meat. -26- Macheta De hoja ancha , gruesa y fuerte, terminada en filo y con forma rectangular. Apto para trocear piezas grandes de carne y cortar chuletas y partir huesos. Al disponer de una hoja ancha, tiene mayor capacidad de corte en piezas grandes, y aunque sea una utilidad alternativa, resulta práctico incluso para recoger las piezas cortadas a modo de pala. Cleaver These are knives of thick, wide, strong, rectangular blades. They are appropriate for cutting large pieces of meat and cutting chops and bones, because of the wide blade they are better for cutting large pieces and also can be used to gather the cut meat. -27- -28- Clásica Albaceteña Fieles Anilla Classic of Albacete Faithfull Ring Knives Es la navaja clásica de Albacete y utensilio de uso doméstico y rural.. This is the classic folding knife of Albacete for domestic and rural use. Navaja sencilla y de eficaz corte. Se trata del tipo más antiguo. These are simple and efficient knives. The oldest style. -29- Más sólida que la anterior al disponer de muelle con anilla que la singulariza y da nombre. These are stronger than the previous knives due to the spring and the ring which gives these knives the name. . Punta de espada De hoja similar a la de una espada o espadín. Punta Cortada Fruto de las limitaciones legales impuestas a la fabricación y uso de navajas con punta de finales del siglo XIX. Se emplea en la agricultura para realizar injertos por lo que también se le denomina “de injertar”. Estilete Navaja ligera y elegante de hoja aguda y estrecha. Cut point Sword point These have blade similar to a sword or small sword. Mi madre repartía la fuente del guisado por los platos. El buen pan de la Roda mi padre hacia pedazos, el pan grande en el pecho la navaja en la mano. Servia la navaja para todo: Para sacarle punta al tranco, para afilar el lápiz, para el corcho revelde, para el tocino magro, para mondar las naranjas, para mojar la sopa en caldo, para pelar las patatas, arreglar el gazpacho, cortar el nudo, despejar la caja, y poner un cartón a los zapatos. Echar la sal al huevo, y cortar a la vid el primer ramo, Para pelar la vara del camino y poner nuestros nombres en un árbol. ¡Navaja de mi padre cuántas cosas hacías en su mano!. Cada Feria veníamos padre e hijo cogidos de la mano. Comíamos en la “Cuerda” junto al carro con toldo de un paisano, la merienda que madre preparaba. Y después de los toros padre compraba turrón blando que era el que ella quería. Pero siempre el feriado fue renovar la fiel navaja. Años después llevé yo soló el turrón blando. Ahora ya se fueron los dos, mas compro la navaja y me la guardo. ¡Quizá esta Feria un hijo mío me compre una navaja de regalo! We were like the majority, a poor family of artisans. Se les da vueltas hasta que rompe a hervir y se le pone el pan rallado y se le sigue moviendo hasta que dé la grasas por encima. Se decora con el huevo duro picado y las nueces de Nerpio peladas. Se puede tomar tanto frío como caliente. *El bacalao es un elemento imprescindible en nuestra gastronomía, este plato es tradicional comerlo los días que nieva. En el mismo aceite se fríe la cebolla, cuando tome color se echa el pimiento y después se incorpora el calabacín y el tomate, al que se le ha quitado la piel. El tomate tiene que quedar bien frito, que dé el aceite. Un poco antes de estar frito el tomate se le echa sal y si se quiere azúcar para quitar la acidez. Para guisar los gazpachos se pone aceite de oliva en la sartén y si se tiene conejo, liebre o perdiz se fríe bien. Se añaden unos ajos enteros y un poco de tomate y pimiento, y se termina todo de freír. Se añade agua a la sartén y se deja cocer todo añadiendo el laurel, un poco de pimienta, clavo y unas hebras de azafrán. Se deja que el caldo tome el gusto de los ingredientes. Una vez el caldo tome sabor, se echan los gazpachos ya espizcados en trozos pequeños y se deja cocer unos quince minutos. Se comen poniendo los gazpachos en un trozo de torta y se utiliza otro trozo como cuchara. Estos gazpachos se pueden hacer también con carne de conejo o pollo, setas, guiscanos o con caracoles serranos. En una olla se pone la carne de caza(liebre, conejo perdiz), junto a la cebolla partida, una cabeza de ajos, laurel, pimienta en grano, una cucharadita de pimentón, un poco de aceite de oliva y sal. Se deja rehogar hasta que la cebolla este dorada. Añadimos entonces un chorreón de vinagre y cubrimos con agua, dejándola cocer. Cuando esté a medio incorporamos las judías blancas que han estado en remojo. Removemos y dejamos que se hagan a fuego lento hasta que el caldo esté espeso. Ponemos en un perol una pierna de cordero hecha pedazos, con un poco de sal, cebollas cortadas a trozos pequeños, una cabeza de ajos, una hoja de laurel y pimienta en grano. Se ponen a freír el aceite y cuando está hirviendo se echa encima de lo que tenemos en el perol. A continuación un vaso de vino y un vaso de agua.
