Herzlich willkommen zur neuen Ausgabe des
Son Gual Golf Magazins, in dem wir Sie über
Events, News und Turniere informieren, die
Teil einer überaus erfolgreichen Saison sind.
Unser Golfplatz bietet perfekte Bedingungen
das ganze Jahr über, ein Umstand, der sich nicht
zuletzt in der steigenden Zahl der Mitglieder und
der Events, die hier stattfinden, widerspiegelt.
Immer mehr Golffans spielen auf dem besten Golfplatz Mallorcas; aus diesem Grund haben wir die
Anzahl der Greenfees um 25 Prozent gesteigert.
Viele der uns freundschaftlich verbundenen
Unternehmen haben auch in dieser Saison
wieder ihre Turniere, darunter die Rolex Golf
Trophy oder die 1.Bogner Golf Trophy auf Son
Gual veranstaltet und mit ihren Kunden herrliche Golftage verlebt. In Kürze werden wir unsere
Freunde von Porsche und Pinmar begrüβen dürfen, deren Turniere auf Son Gual ausgetragen
werden. Wir danken Ihnen allen für das entgegengebrachte Vertrauen.

Eine der Topneuigkeiten dieses Jahres war die
Aufnahme des Golfclubs Son Gual als Gründungsmitglied der The Leading Golf Courses of Spain.
Die Gemeinschaft, die vor einem Jahrzehnt in
Deutschland, Österreich und der Schweiz aus der
Taufe gehoben wurde, vereint die besten spanischen Golfcourts, die strenge Qualitätsparameter
erfüllen müssen. Die Mitgliedschaft unseres Golfclubs hat in der Golfindustrie und unter unseren
Kunden durchweg ein positives Echo gefunden und
wir sind stolz darauf, an der Spitze dieser Initiative
in Spanien zu stehen.
Das Ziel unseres Teams ist, Ihnen stets die besten

Welcome to the latest edition of the Son
Gual magazine in which we can look back
over another very successful year.
The course has once again been in magnificent condition all year which has continued
to draw in new members and many corporate
golf days. What’s more, we have increased the
number of green fees by more than 25% as
word continues to spread about Mallorca’s top
golf course.
Many of our corporate friends have returned
to Son Gual with their events and we have
hosted many excellent and enjoyable golf days
including the Rolex Golf Trophy and Bogner
Golf Trophy. We will also be welcoming back
soon our friends from Porsche and Pinmar,
who continue to choose Son Gual for their golf
events. We thank you all.
We’d also like to welcome all of our new members and we hope you continue to enjoy the
facilities here at Son Gual for many years to
come.
One of the major changes for us during the
last year was that Son Gual became a founding member of the Leading Golf Courses of
Spain group, which looks to guarantee only
the highest standards at its member clubs
across Spain.
Similar groups have been formed in Germany, Austria and Switzerland, and they have
received a lot of very positive feedback, both
from the golf industry and the consumer. We
are proud to be at the forefront of this movement in Spain.
Don’t forget, Son Gual aims to provide the very
best golf experience possible, so if you think
you know a way in which we can improve our

Bienvenidos a una nueva edición de Son Gual
Golf Magazine, en la que podrá informarse
acerca de eventos, noticias y torneos que dan
cuenta de otra temporada llena de éxitos para
nosotros.
El campo ha estado en unas perfectas condiciones durante todo el año, lo que seguro ha
influido en el incremento de nuevos miembros
y la celebración de más eventos corporativos. Es
más, hemos incrementado en un 25 por ciento
el número de green fees, gracias a que cada vez
más gente quiere jugar en el mejor campo de
Mallorca.
Muchas de nuestras empresas amigas han regresado a Son Gual para celebrar su torneo con sus
clientes, viviendo unas maravillosas jornadas
de golf incluyendo torneos como el Rolex Golf
Trophy y el Bogner Golf Trophy. También recibiremos en breve a nuestros amigos de Porsche
y Pinmar, que volverán a celebrar sus torneos
con nosotros. Os agradecemos vuestra confianza.

The Leading Golf Courses of Spain ist eine
Qualitäts- und Wertegemeinschaft, die vor
zehn Jahren in Österreich, Deutschland
und der Schweiz gegründet wurde. Ziel
der Gemeinschaft ist die regelmäßige Zertifizierung der exklusivsten Golfplätze Spaniens
durch das Mystery-Testverfahren, mit dem
anonym Anlagen und Service überprüft werden. Die Clubs müssen dabei strenge Qualitätsstandards einhalten.
Die von The Leading Golf Courses of Spain verpflichteten Golfspieler mit einer Stammvorgabe bis -25 besuchen den jeweiligen Golfplatz
und beantworten im Anschluss einen 100
Komplexe umfassenden Fragebogen, bei dem
sie den Grad ihrer Zufriedenheit auf Fairways,
Greens, Tees und den Driving-Ranges sowie
zur Qualität der Serviceleistungen, des Restaurants und der Infrastruktur angeben.
Die beiden mallorquinischen Golfplätze Son
Gual und Alcanada sind die ersten Plätze, die in
die noble Gemeinschaft aufgenommen wurden.

The Leading Golf Courses of Spain is an
extension of the organisation that started
up in Austria, Germany and Switzerland
ten years ago. The aim is to bring together
the best courses in Spain by periodically
examining their facilities and services completely anonymously. Using this system,
which has been christened the “Mystery
method”, clubs are subjected to a test which
sets out extremely strict parameters.
Players with a handicap below 25, hired by
The Leading Golf Courses of Spain, visit the
courses and assess them, and afterwards fill
out a questionnaire comprised of 100 questions which determine the level of satisfaction during their experience on the fairways,
greens, tees and driving range, as well as
evaluating the service received, the restaurant and other facilities.
Golf Son Gual and Golf Alcanada, both in
Mallorca, are the founding members of this
exclusive organisation.

prolongación de la organización que inició su andadura en Austria, Alemania y
Suiza hace diez años. El objetivo es agrupar
a los mejores campos de España examinando
periódicamente las instalaciones y servicios de
forma totalmente anónima. Mediante este sistema al que han bautizado “método Mystery”,
los clubes sometidos al test deben superar
unos parámetros muy estrictos.
Jugadores con un hándicap menor de 25,
contratados por The Leading Golf Courses of
Spain, visitan los campos y los evalúan, respondiendo después a un cuestionario de 100
preguntas que determina el nivel de complacencia durante su experiencia en los fairways,
greens, tees, driving range, además de valorar
la atención recibida, el servicio restaurante y
el resto de instalaciones.
El Golf Son Gual y el Golf Alcanada, ambos en
Mallorca, son los primeros clubes que forman
parte de esta exclusiva organización.

Zweifellos wegen der hohen Anzahl der
Golfcourts auf der Insel, Golf ist ein bedeutender Sport auf Mallorca. Insgesamt haben
wir zehn Plätze bewertet; nur zwei haben die
hohen Anforderungen für die Aufnahme in
The Leading Golf Courses erfüllt. Einer dieser beiden Golfplätze ist Son Gual, ein Platz
der überdies zu den 100 besten Golfplätzen
Europas zählt.

Why was Mallorca chosen as a starting
point?
Without a doubt because of the large number
of golf courses here, and the importance of
this sport on the island. On arriving we made
a list and we came to examine ten. In the
end only two of them managed to pass the
threshold we demand for becoming part of
The Leading Golf Courses. One of them was
Golf Son Gual, which is also one of the 100
best courses in Europe.
How is Golf Son Gual different from other
courses?
In the “Mystery Test”, the excellent quality of
the greens and tees was valued, as was the
excellent service in the restaurant.
How frequently will Son Gual be submitted
to this test?
Around nine times a year, and always anonymously. In this way, the appraisal of the quality
of the courses and services - without the knowledge of the staff - is more efficient and objective.
¿Por qué se eligió Mallorca como punto
de partida?
Sin duda, por la gran cantidad de campos
de golf que existen, y la importancia de este
deporte en la isla. Al llegar, hicimos una lista
y llegamos a examinar a diez. Al final, sólo
dos de ellos llegaron a superar el umbral que
exigimos para pasar a formar parte de The
Leading Golf Courses. Uno de ellos fue Golf
Son Gual, que además se encuentra entre los
100 mejores de Europa.

Der Golfclub liegt auf Mallorca, was halten
Sie von der Insel?
Es ist einfacher, nach Mallorca zu fliegen, als
auf deutschen Autobahnen zu fahren. Ich mag
das Klima der Insel, das Meer, die Sonne und
all meine Freunde, die hier leben.

Quite simply, because it’s the best course in

What do you like best of the whole facility?
The fantastic atmosphere you breathe here,
the building, the views, the terrace, the sauna...
I love it all!
With regard to the course, what do you feel
when you play on it?
I never get bored; it’s always a great challenge,
different every day.
What are the benefits of being a member
of Son Gual?
The feeling of being part of the Pamer family,
the relaxed encounters with other members
and players, the professionalism of everybody
here, the peace and quiet... And maybe, some
day, seeing Gisi and Sabine repeat their “holein-ones”.
What events, relationships, parties, tournaments etc. do you enjoy with the other
members?
All the events organised by the Pamer family
are tremendous fun; they are such a generous,
professional, special family. They are unique.
In your opinion, what makes Son Gual different from other courses?
The family atmosphere, the pleasant sensation
that everyone wants you to be happy, and feeling welcome and like part of the family.
What do you think of the fact that the club
is on Mallorca, and what is your opinion
of the island?
It’s easier to fly to Mallorca than it is to drive
along the German motorways. As for the
island, I love the climate, the sea, the sun, and
all the friends who live on it.

Sencillamente: porque es el mejor campo del
mundo.
¿Qué es lo que más le gusta de toda la instalación?
El fantástico ambiente que se respira, el edificio, las vistas, la terraza, la sauna... ¡Todo me
encanta!
En cuanto al campo, ¿Qué experimenta al
jugar en él?
Jamás me aburro, siempre supone un gran
reto, diferente cada día.
¿De qué acciones se beneficia al ser miembro de Son Gual?
Del sentimiento de formar parte de la familia
Pamer, de las reuniones relajadas con otros
miembros y jugadores, de la profesionalidad
de todo el mundo, de la tranquilidad... Y quizás, algún día, de ver a Gisi y a Sabine repetir
sus “hoyo en uno”.
¿Qué eventos, relaciones, fiestas, torneos,
etc., disfruta con los otros miembros?
Todos los eventos organizados por la familia
Pamer son tremendamente divertidos, son una
familia muy generosa, profesional, especial.
Son únicos.
En su opinión, ¿Qué diferencia a Son Gual
de otros campos?
El ambiente familiar, la agradable sensación de
que todo el mundo quiere que estés feliz, de
que te sientas bienvenida y parte de la familia.
¿Qué le parece que el club esté en Mallorca,
y qué opina de la isla?
Es más fácil volar hasta Mallorca que conducir
por las autopistas alemanas. De la isla adoro
el clima, el mar, el sol, y a todos los amigos
que viven en ella.

Wie empfinden Sie das Golfspielen auf Son
Gual? Ich spiele oft hier, aber ich langweile
mich niemals.
Auf Son Gual fühlt man sich als Teil einer
Familie. Alles ist komfortabel, ruhig und professionell. Man fühlt sich wirklich gemocht.
Welche Events, Feste und Turniere besuchen
Sie mit den anderen Mitgliedern?
Ich erinnere mich gern an letztes Jahr, vor
allem an die Sylvesterfeier. Und freue mich
auf die nächsten Turniere – das Turnier zum
Son Gual-Jahrestag und das Bavarian.
Ich würde sagen, die außergewöhnliche Organisation. Die beginnt schon, wenn man zur Tür
hereinkommt: deine Tasche mit den Golfschlägern steht bereit, während du dich noch mit
dem liebenswürdigen Personal von der Rezeption unterhälst. Und dieses Serviceniveau wird
den ganzen Tag gehalten.
Sie von der Insel?
Nach Mallorca zu reisen, ist das ganze Jahr über
sehr einfach. Mir gefällt das Klima; hier kann
man Golf spielen, an den Strand gehen, sich erholen und auch viele andere Sportarten machen.

again and again, I never get bored.

your bag of clubs is already prepared as you
chat with the friendly reception staff. This hospitality continues throughout the whole day.
What do you think of the fact that the
club is on Mallorca, and what is your
opinion of the island?
It’s very easy to travel to Mallorca at any time
of year. I love the climate and the combination
of playing golf, going to the beach and relaxing, as well as being able to play other sports.

Imagine you are playing your round and
halfway along the course you suddenly
become incredibly hungry. You feel that if
you don’t have something to eat and drink
you will faint; you won’t even be able to hold
onto your clubs. What do you do? At Son Gual
this is not a problem, as we have a “between
holes à la carte service”. This means you can
order your food in two different ways, the
first using the navigation system installed
in all of Son Gual’s buggies, the screens of
which show the menu so that you can indicate your order choice. And the second, by
calling from the phone booth at the tee of
hole 8, which connects directly to the restaurant. After placing your order using either
of these two methods, it will be delivered to
you wherever you are on the course in less
than 20 minutes.
On the menu you can choose from sandwiches, hamburgers, typical Spanish tapas, starters,
and other dishes prepared using top-quality
produce, as well as a long list of drinks.

Wann erwachte Ihre Begeisterung für
Autorennen und wann wurde daraus eine
ernste Leidenschaft?
Wahrscheinlich, als ich im Alter von fünf Jahren mein erstes Formel 1-Rennen im Fernsehen sah. Ich erinnere mich, wie ich den Helm
meines Vaters aufsetzte und im Wohnzimmer
Schumacher und Irvine zu imitieren versuchte.
Ich habe immer versucht, an Rennen teilzunehmen, ernsthaft betreibe ich diesen Sport
jedoch seit Februar 2010.
When did your passion for racing begin,
and when did you really start to take it
seriously?
It was probably after seeing my first F1 race
on TV, when I was five. I remember I put on
my father’s helmet and ran round and round
the sitting room trying to imitate Schumacher
and Irvine. I always tried to take part in the
races, but I have only been dedicated to it seriously since February of 2010.
What do you need to become a great racing
car driver?
A little bit of everything. You need to have
people around you who you feel comfortable working with, you have to be capable
of concentrating on driving without letting
personal matters affect you... There are lots
of things, some of which are imperceptible,
that demand a high level of concentration and
determination from you and from everyone in
your team.

cuando empezaste a tomártelo realmente
en serio?
Probablemente fue tras ver mi primera carrera
de Fórmula 1 en la televisión, con cinco años.
Recuerdo que me puse el casco de mi padre y

imitar a Schumacher e Irvine. Siempre intenté
participar en las carreras, pero sólo me dedico
en serio a ello desde febrero de 2010.
¿Qué se necesita para ser un gran piloto
de carreras?
Un poco de todo. Necesitas a tu alrededor
gente con la que te sientas a gusto trabajando, debes ser capaz de concentrarte en pilotar
sin que los temas personales te afecten... Hay
muchas cosas, algunas de ellas inapreciables,
que exigen de ti y de cada persona de tu equipo un gran nivel de concentración y determinación.
¿Y qué es más importante, el coche o el
piloto?
Para estar arriba, los dos. Si el coche es lento,
ni el mejor piloto podría estar en el pódium.
Lo mismo que si el piloto es malo, no importa
lo bueno que sea el coche.
¿Cómo describirías la Fórmula 3?
Es sin duda uno de los mejores escaparates
para escalar hasta la Fórmula 1, además de
una gran oportunidad para todos los pilotos
de aprender aspectos esenciales para convertirte en un piloto de éxito.

Von allem ein bißchen. Ein Team, mit dem du
gut arbeiten kannst. Die Fähigkeit, dich auf

persönliche Dinge beeinflussen. Es gibt viele
Dinge, einige sind kaum wahrnehmbar, aber
sie fordern von dir und deinem Team ein hohes
Niveau an Konzentration und Entschlossenheit.
Was ist wichtiger, das Auto oder der Pilot?
Um nach ganz oben zu kommen, beide. Wenn
der Rennwagen zu langsam ist, kann auch der
beste Pilot nicht aufs Siegerpodest steigen.
Und wenn der Pilot schlecht ist, kann auch
das beste Auto dies nicht wettmachen.
Wie würden Sie die Formel 3 beschreiben?
Sie ist sicher eines der besten Sprungbretter
für die Formel 1. Und sie bietet allen Fahrern
die Möglichkeit, das Wesentliche zu lernen,
um eines Tages ein guter Pilot zu werden.
Was braucht man, um in die Formel 1 zu
kommen?
Geld ist sicher ein sehr wichtiger Faktor, ohne
Geld ist es fast unmöglich, in die Formel 1 zu
kommen. Aber mit Geld allein kommt man
nicht nach oben. Man braucht auf jeden Fall
das geeignete Personal, Sponsoren und Talent
als Rennpilot.
Wer ist Ihr Lieblingsfahrer?
Also, da gibt es einige. Vettel, Button und
Hamilton sind meine Favoriten und das
aus mehreren Gründen: zum einen wegen

And what is more important, the car or the
driver?
Both, to get to the top. If the car is slow, not
even the best driver could stand on the podium. And the same is true if the driver is poor
- it doesn’t matter how good the car is.
How would you describe Formula 3?
Without doubt it is one of the best ways of
climbing up the ladder to Formula 1, and also
a great opportunity for all drivers to learn
essential aspects in order to become a successful driver.
What do you need to get to Formula 1?
Money is probably one of the most important things for getting there. Naturally, it isn’t
money alone that will get you up there, but it
is almost impossible to do so without it. You
definitely need a group of sponsors - the right
people -, and to have skill as a driver.
Who is your favourite driver?
Well, I have several. Vettel, Button and Hamilton are my favourite drivers for different

ist. Anfangs hat mir Mallorca nicht besonders
gefallen, aber nach mehreren Aufenthalten
habe ich viele der Orte auf der Insel schätzen
gelernt und denke, dass es ein Privileg ist, auf
der Insel zu sein.

Son Gual is probably the best golf course I
have ever been on. I always love to go there
with my father, who is also a member of the
club. As for Mallorca, whereas some time ago
I didn’t particularly like it, after coming on
repeated visits I have come to like many places
on the island, to the point where I feel that it
is a real privilege to be in Mallorca.

bien hace algún tiempo no me gustaba especialmente, tras venir repetidamente he llegado a apreciar muchos de sus lugares, hasta el
punto de sentir que estar en Mallorca es un
verdadero privilegio.

Im dritten Jahr in Folge war Son Gual Gastgeber

900g Rinderfilet, Maldon-Salz, schwarzer
Pfeffer, Olivenöl. Für die Sauce Béarnaise:
½ Tässchen Estragon-Essig, 200g Butter, 3
Eigelb, Saft einer halben Zitrone, 1 Teelöffel
frisches, gehacktes Estragon, Petersilie, Salz
und Pfeffer.
INGREDIENTS:
900 g. beef tenderloin, Maldon salt, black
pepper, olive oil. For the Béarnaise sauce: 1/2
small glass tarragon vinegar, 200 g. butter,
3 egg yolks, the juice of half a lemon, 1 teaspoonful of chopped fresh tarragon, a little
parsley, salt and pepper.
ZUBEREITUNG:

and sprinkle with the freshly crushed pepper,
a few pinches of Maldon salt, some butter and
olive oil. Bake in the oven for around 30 minutes at a temperature of approximately 160º
C, the time will depend on how well-cooked
we want our meat to be.
SAUCE BÉARNAISE:
Die Butter auf kleiner Flamme zerlassen,
etwas abkühlen lassen und und abseihen.
Essig und Estragon in einen anderen Topf
geben und um drei Viertel reduzieren lassen. Vom Feuer nehmen und die 3 Eigelb
unter ständigem Rühren dazugeben. Einige
Tropfen warmes Wasser und den Zitronensaft zufügen, weiterhin ständig rühren und
ins Wasserbad geben, bis die Sauce fester
wird. Langsam die Butter zugeben und
mit Salz und Pfeffer abschmecken. Warm
stellen.
BÉARNAISE SAUCE:
Melt the butter in a saucepan over a medium heat, leave to stand and then sieve to
remove any impurities. Put the vinegar and
the tarragon into another saucepan and
allow to reduce by 75 percent. Remove
from the heat and add the egg yolks, beating constantly. Now add a few drops of hot
water and lemon juice and, beating all the
while, place over a bain-marie until the
sauce thickens. Slowly incorporate the butter, season with salt and pepper and leave
to stand in a warm place.

INGREDIENTES:
900 gr. solomillo de buey, sal maldon, pimienta negra, aceite de oliva. Para la salsa bearnesa: 1/2 taza pequeña de vinagre de estragón,
200 gr. de mantequilla, 3 yemas de huevo,
zumo de medio limón, 1 cucharadita de estragón fresco picado, un poquito de perejil, sal
y pimienta.
PREPARACIÓN:
Dorar el solomillo en la plancha por todos los
lados. Acto seguido ponerlo en la bandeja del
horno precalentado y previamente espolvoreado con la pimienta recién machacada, unos
toques de sal maldon, un poco de mantequilla
y aceite de oliva. A una temperatura moderada
de unos 160 grados, tenerlo en el horno unos
30 minutos, dependiendo de cómo queramos
el punto de la carne.
SALSA BEARNESA:
En un cazo derretimos la mantequilla a fuego
moderado, la dejamos reposar y la colamos
para retirar posibles impurezas de la misma.
En otro cazo incorporamos el vinagre junto
con el estragón y lo dejamos reducir un 75 por
ciento. Lo retiramos del fuego y añadimos las
yemas batiéndolas sin descanso. Agregamos
unas gotas de agua caliente y zumo de limón
y, sin dejar de batir, la llevamos al baño maría
hasta que espese. Añadimos la mantequilla
lentamente, salpimentamos y dejamos reposar
en un sitio templado.
PRESENTACIÓN:
Cortar la carne en trozos generosos, y emplatar acompañada de unas verduras salteadas y
patatas nuevas.

ZUTATEN:
Für das Coulant: 100g dunkle Schokolade
(70-80% Kakaoanteil), 100g Butter, 2 Eier,
40g Zucker, 40g Mehl, Puderzucker, Waldbeeren. Für das Kokoseis: 6 Eigelb, 25cl flüssige
Sahne, 50cl Milch, 75g geraspeltes Kokos,
210g Zucker.
ZUBEREITUNG DES COULANT:
Die Eigelb vom Eiweiß trennen und letztere
zu Schnee schlagen. Die Butter im Wasserbad
zerlassen, dann Schokolade hinzufügen und
ebenfalls zerlassen. Die Eigelb mit dem Zucker
verrühren, bis sie das doppelte Volumen haben.
Das ausgesiebte Mehl zugeben und gut durchmischen. Schließlich die zerlassene Schokolade
und Butter sowie den Eischnee zufügen, die
Masse in eingefettete, bemehlte Förmchen füllen
und ins Gefrierfach stellen. 6 bis 7 Minuten vor
dem Servieren die Förmchen aus dem Gefrierfach nehmen und im auf 250 Grad vorgeheizten
Backofen 7 Minuten auftauen. So ist das Coulant
außen knusprig und innen geschmolzen.
ZUBEREITUNG DES EISES:
Die Milch mit dem Kokos und der Hälfte des
Zuckers zum Kochen bringen und 20 Minuten
köcheln lassen, damit die Milch den Kokosgeschmack annimmt. Die Eigelb mit dem restlichen Zucker zu einer weißen Creme schlagen.
Die Milch erneut zum Kochen bringen und
unter ständigem Rühren über die Eigelb-Zucker-Creme gießen. Sobald sich die Zutaten vermengt haben, die Masse ins Wasserbad geben,
bis sie fester wird. Vom Feuer nehmen und
die Sahne zufügen. Im Kühlschrank mehrere
Stunden kalt stellen, bis die Masse eingedickt
ist, dann ins Gefrierfach stellen.
INGREDIENTS:

cocoa, 100 g. butter, 2 eggs, 40 g. sugar, 40 g.
flour, icing sugar, forest fruits. For the coconut
ice cream: 6 egg yolks, 25 cl. single cream, 50
cl. milk, 75 g. grated coconut, 210 g. sugar.
METHOD FOR THE COULANT:
Separate the yolks from the egg whites and
beat the latter until stiff. Melt the butter in
a bain-marie, and when it is ready add the
chocolate for the same purpose. Beat the egg
yolks with the sugar until they have doubled
in volume. Then add the sifted flour and fold
in. Add the melted butter and chocolate and
repeat the process, and then incorporate the
stiffly-beaten egg whites. Put the mixture into
greased, floured crème caramel moulds and
cool or freeze. When you are ready to serve
the coulants, if frozen remove from the freezer
6-7 minutes beforehand and cook in an oven
preheated to 250º C for 7 minutes. This way
they will be cooked on the outside and melted
in the middle.
METHOD FOR THE ICE CREAM:
Bring the milk to the boil with the coconut and
half the sugar, simmer for 20 minutes so that
the milk absorbs the flavour of the coconut. Beat
the egg yolks with the remaining sugar until you
have a pale cream. Bring the milk to the boil
again and pour over the egg yolk mixture, stirring with a whisk all the time. After binding the
mixture, place in a bain-marie and stir constantly until it thickens. Remove from the heat and
incorporate the cream. Cool in the refrigerator
for several hours. Pour into an ice-cream maker
until it sets and store in the freezer.

PREPARACIÓN DEL COULANT:
Separamos las yemas de las claras y montamos
estas a punto de nieve. Fundimos la mantequilla
al baño maría, y cuando está lista añadimos el
chocolate con el mismo propósito. Montamos las
yemas con el azúcar hasta duplicar su volumen.
Luego añadimos la harina tamizada y mezclamos. Repetimos el proceso agregando el chocolate y la mantequilla fundida, y después las
claras a punto de nieve. Ponemos la mezcla en
flaneras engrasadas y enharinadas y las enfriamos o congelamos. Cuando lo queremos servir,
si está en el congelador lo sacamos 6-7 minutos
antes, y lo metemos en el hormo precalentado a
250 grados, durante 7 minutos. De este modo,
queda hecho por fuera y fundido por dentro.
PREPARACIÓN DEL HELADO:
Llevar a ebullición la leche con el coco y la
mitad del azúcar, dejar cocer 20 minutos para
que la leche se pueda impregnar de sabor a
coco. Batir las yemas con el azúcar restante
hasta obtener una crema blanca. Llevar de
nuevo la leche a ebullición y verter sobre las
yemas moviendo constantemente. Una vez ligada la mezcla, poner al baño maría sin dejar de
remover hasta que espese. Apartar del fuego e
incorporar la nata. Enfriar en la nevera durante
varias horas. Meter en la sorbetera hasta cuajar
y dejar en el congelador.

dem langgestreckten Sandstrand findet sich
immer noch ein Plätzchen. Ein Bad im kristallklaren Wasser der von Felsen und Pinien
gesäumten Bucht ist pure Entspannung und
erfrischt den Geist.
CALA PÍ
One of the closest coves to Palma by car
(around 20 minutes’ drive), Cala Pí rises
up as a beautiful, picturesque setting in
which to spend an extremely pleasant day.
Although it is quite busy during the summer months, the sandy area is long and it
is not hard to find a spot where you can
stretch out your towel. The water is fairly
transparent, and bathing in the little funnel
of sea surrounded by cliffs and pine trees
is relaxing and lifts the spirits.

De las calas más cercanas a Palma en coche
(unos 20 minutos de trayecto), Cala Pí se
erige como un bellísimo y pintoresco entorno
en el que pasar un día de lo más agradable. Si
bien los meses de verano suele estar bastante
concurrida, la zona de arena es profunda y
no es difícil encontrar un lugar para alargar
la toalla. De agua bastante cristalina, bañarse en el pequeño embudo de mar separado
por acantilados y pinos es relajante y llena
el espíritu.

sich einmal im Leben gönnen sollte.

The splendid cove where Robert Graves used
to go bathing in the evening. Surrounded by
wholly bucolic spots, Cala Deià is by no means
comfortable, as the boulders on the shore are
large and make it difficult to find the right
position. But spending a few hours sunbathing and splashing around in its transparent
waters is an experience everyone should enjoy
at least once in their life.
