In the name of delicious Béchamel...] Como ocurre con todos aquellos inventos del ser humano que tienen éxito, muchos son los que quieren atribuirse la paternidad de tan deliciosa salsa. Pero la tesis que más credibilidad parece tener es la que concede la autoría de esta receta al francés Francoise Pierre de la Varenne, cocinero de la corte de Luis XIV, de la cual era administrador el marqués Louis de Béchamel. El honor del cual se bautizó esta salsa. Aunque hay teorías que le atribuyen el mérito a él mismo que, al parecer, creó la bechamel para acompañar un bacalao seco. La elaboración de la bechamel es sencilla. Se hace a base de harina (de trigo o maíz) frita en grasa, que bien puede ser aceite de oliva o mantequilla, después se añade leche y se remueve sin descanso para que no se formen grumos y hasta que se cree una crema más o menos espesa, dependiendo de para qué se vaya a utilizar. Se le suele poner un poco de nuez moscada.Y hay cocineros que le fríen un poco de cebollita picada antes añadir la harina. En algunos platos, más que una salsa que acompaña, la bechamel es la verdadera esencia del plato, como ocurre en el caso de las croquetas. Para elaborarlas, en Botín se cocina una bechamel con pollo y jamón y el resultado ahí está… es uno de nuestros entrantes con más éxito. No dejen de probarlo. Podría decirse que la naranja es la reina de las frutas. Es originaria de China pero se cultiva en el Mediterráneo desde hace más de de 3000 años. Fue introducida en el sur de España por los árabes y llevada por Colón a América en 1492. Son muchas sus virtudes, aunque, tal vez, la más reconocida sea su riqueza en vitamina C, el mejor antioxidante natural, ya que combate el envejecimiento y las enfermedades degenerativas. Según recientes investigaciones, el linoleno que contiene la naranja protege eficazmente contra el cáncer de mama.Apenas aporta 35 calorías por cada 100gr. y es muy rica en fibra, por lo que también es adecuada en las dietas de adelgazamiento. Pero lo más importante es que, encima de todas estas ventajas, es refrescante y deliciosa ya sea en zumo o entera. España es uno de los principales productores mundiales de esta fruta, aunque otros países europeos, como es el caso de Alemania, nos superan en consumo. Existen unas 300 variedades de naranjas, de las cuales, 30 son las más producidas y consumidas. En España destaca la producción de las llamadas naranjas Navel (Washington, Navelate, Navelina, etc.). Se llaman así porque tienen una especie de ombligo en uno de sus extremos (navel es ombligo en inglés). Se trata de una variedad muy dulce, con mucho zumo y que no suele tener pepitas.
