VARIETIES: Cabernet Sauvignon 100%.
STYLE: Structured and balanced, fruity and elegant, with a touch of oak.
PRODUCTION: 5.700 cases.
YIELD: 7 ton/hectare.
AGE OF THE VINES: 14 years.
SOIL TYPE: Alluvial, rocky clay in T. south; sandy loamy T. north.
IRRIGATION: Drip.
HARVEST: Manual. Grapes are carefully transported to the winery in small containers.
ANALYSIS:
Alcohol 13,5% vol.
VINIFICATION:
The grapes were hand picked during the first week of May and carefully transported to the winery. They were destemmed, lightly crushed and
deposited into stainless steel tanks for fermentation. The must was inoculated with selected yeasts and allowed to ferment at 28–30°C
(82°–86°F) with regular pumpovers that ranged from 1.5 times the volume in the beginning to half volume at the end. Upon completion of
the alcoholic fermentation, the wine remained on its skins for another week to develop additional structure and character.
The wine was then separated from the skins, the skins pressed, and the press wine was reserved separately. The free-run wine was aged in oak
barrels for 10 months and then blended 50–50% with the remaining wine that had been held in stainless steel tanks.
The finished wine was cold stabilized, filtered, and bottled.
TASTING NOTE:
An impressive purple garnet, deep and dense introduces an expressive but so elegant “cab” nose. The wise sweetness of the fruit brings
raspberries, wild strawberries, creamy cherries and is refreshed by wet underbrush tones, grilled peppers and spicy dried tomatoes. Stony
notes and candied licorice give even more to this typical Limari picture.
The mouth is straight, vertical and deep. The balance between the whole texture and the tannins grain give birth to a crunchy and juicy palate,
from the attack to the end, without any surrender. Energy has been preferred to exuberance as can tell the vibrant finish where fresh wild
fruits are displayed with smooth spices and licorice accents.
Un impresionante granate púrpura, denso y profundo, introduce una expresiva nariz de cabernet. La justa dulzura de la fruta refleja las
frambuesas, fresas silvestres, guindas cremosas y se ve refrescada por tonos de sotobosque húmedo, pimientos asados y tomates secos
especiados. Notas de piedras y regaliz confitado entregan mas tipicidad aún a esto clásico retrato limarino.
La boca es derecha, vertical y profunda. El balance entre la textura y el grano de los taninos da nacimiento a un paladar crocante y jugoso,
desde el ataque hasta el final, sin nunca perder de su intensidad. La energia se ve acá preferida a la exuberancia, tal como lo cuenta el
vibrante final donde los frutos silvestres frescos estan condimentados por suaves especias y otros acentos de regaliz.
BARREL AGING:
10 months with an average of 25% of new oak, 25% second use, 25% third use and 25% fourth use. 85% is French with different toasts, forest
and coopers. 15% is American. We ideally chose woods dried during 36 months and most of the barrels are 400 Lts but there are also 300 and
225 lts.
